Monitoring the Sugar Content and Intake in School Meals from Incheon and Chuncheon (인천, 춘천 지역 학교급식 메뉴의 당 함량 및 당 섭취량 실태조사)

  • The purpose of this study was to analyze the content and consumption of total sugar from school lunches at Incheon and Chuncheon. The samples were collected from eight elementary schools and eight middle schools in Incheon and Chuncheon for 15 days. The analysis of total sugar content was performed for 1334 main dishes, side dishes, and desserts, which were supplied by elementary and middle school foodservices. Total sugar content was extracted from various types of food with 50% ethanol after defatting. We simultaneously analyzed sugars such as fructose, glucose, sucrose, maltose, and lactose by a high performance liquid chromatography with refractive index detector. The average lunch intake for elementary school and middle school students was $372.6{\pm}72.2g$ and $449.2{\pm}81.1g$, respectively. The total sugar content in desserts was $7.21{\pm}6.32g/100g$, $1.69{\pm}2.44g/100g$ in side dishes, and $0.32{\pm}0.77g/100g$ in main dishes. Among side dishes, fried foods, stir-fried foods, and sauces contained the highest amounts of total sugar. The total sugar intake was $4.63{\pm}5.11g$ in desserts, $0.64{\pm}1.01g$ in side dishes, and $0.55{\pm}1.48g$ in main dishes. Main and side dishes with a high total sugar intake included cooked rice with seasoning, fried foods, stir-fried foods, and preserved foods. The average total sugar intake per meal for elementary school, middle school, and all students was $4.03{\pm}3.67g$, $6.97{\pm}6.59g$, and $5.50{\pm}5.53g$, respectively. We have provided useful information to decrease the intake of total sugar in school lunches. It is recommended that total sugar intake be continuously monitored.

Changes of Sugar Content by Different Storage Durations in Sweet Corn and Super Sweet Corn (단옥수수와 초당옥수수의 저장기간에 따른 당함량의 변화)

  • Sweet corn hybrid GCB 70 and super sweet corn hybrid NES were cultivated at vinyl tunnel in 1991 to determine the physiologically optimum harvest time for higher eating quality and sugar contnent of kernel by eat parts after silking and stored in refrigerator of 4$^{\circ}C$ and in the air. The development of ear increased continuously from silking to 30th day after silking, and sugar content was the hightest on 15th day after silking. The physiologically optimum harvest time for GCB 70 and NES was about 15~20th day and 20~25th day after silking, respectively. The sugar content of kernel by ear parts for two hybrids were high in order of basal, middle and top parts of the ear and showed significant differences among the parts of the ear. Changes of total sugar content during the storing period at 4$^{\circ}C$ for NES was almost the same by 9th day, but for GCB 70 rapidly decreased from 3rd day. The content of sucrose, glucose and fructose in super sweet corn NES were much higher than those of sweet corn GCB 70, but the maltose content of NES was lower than that of GCB 70.

Ginsenoside Concentration and Chemical Component as Affected by Harvestin Time of Four-Year Ginseng Root (4년생 인삼의 수확시기에 따른 ginsenoside 및 일반 화학성분의 변화)

  • This study was conducted to know the change pattern of chemical components, especially proximate constituents, saponin and free sugars in roots of 4-year ginseng according to different harvesting time, and to find out the optimum harvesting time on the basis of chemical components in fourth year ginseng root. The crude protein content was 20.77% of the highest on the April (shootinzg stage),13.13% of the lowest on the June among all growing stages, and was constant at 17% after the August. But crude oil and fiber contents showed the highest value on the May (flowering stage). The content of total sugars which was the largest constituent among the chemical components in ginseng root was in the range of 60~7(1% during the all growing stages. It showed the highest value of 7l% on the June, but the lowest of 60% on the May. The total free sugar contents was the highest on the April (20.40%), but the lowest on the May (11.89%). The change pattern of sucrose contents (10.96-19.60%) was same as the total sugars contents (11.89-20.40%), on the other hand, the contents of glucose and maltose were not changed significantly during all harvesting times. The contents of crude saponins and total ginsenosides had the value of 7.60% and 4.09% on the May, respectively. That was statistically significant, but the other harvesting times were not. Therefore, on the basis of the only chemical characteristics in the four year-old ginseng root, we suggest that the harvesting on the May at flowering stage was most proper time.

Monitoring on Alcohol and Acetic acid Fermentation Properties of Muskmelon (참외의 알콜 및 초산발효 특성 모니터링)

  • To use overproduction muskmelon effectively, muskmelon vinegar was prepared by two stage fermentations of alcohol and acetic acid. In the alcohol fermentation using muskmelon, alcohol content showed maximum value (7.47%) in $17.83^{\circ}Brix$ of initial sugar concentration and 82.65 h of fermentation time. Acetic acid content in alcohol fermentation revealed minimum value (0.46%) in $12.17^{\circ}Brix$ of initial sugar concentration and 60.56 h of fermentation time. The fermentation conditions for minimum residual sugar were $10.02^{\circ}Brix$ of initial sugar concentration and 105.61 h of fermentation time. The optimum conditions predicted for each corresponding physical properties of acetic acid fermentation were 200 rpm (agitation rate), 250 h (fermentation time) in acetic content and 200 rpm, 150 h in residual alcohol content.

The Effect of Drying Temperature and Time on Ginseng Tea Quality (건조온도(乾燥溫度) 및 시간(時間)이 인삼차(人蔘茶)의 품질(品質)에 미치는 영향(影響))

  • Contents of moisture, sugar and saponin, and color intensity of red ginseng tea (RGT) prepared at various drying conditions were investigated for quality evaluation. 1. The sorption isotherm of RGT showed step-wise isotherm. 2. The moisture content of RGT dried at $80,\;90\;and\;105^{\circ}C$ reached at nearly constant values below 1.5% after 3 hours. 3. The HPLC patterns of sugar and saponin at various drying temperatures were quality same but different in quantity. 4. The color intensity of RGT was changed little below $80^{\circ}C$, but significantly above $90^{\circ}C$. 5. A significant relationship was found between decrease of sugar content and increase of color intensity above $80^{\circ}C$.

Properties of Chemical Components of Camellia japonica L. loaves According to Picking Time (동백잎의 채취시기에 따른 화학적 성분 특성)

  • The purpose of this study was to analyze the chemical component of Camellia japonica L. according to picking time. Leaves of Camellia japonica L. were picked in April and May,2003. Free sugars (fructose, glucose and sucrose) and organic acids (citric acid, tartaric acid, succinic acid, acetic acid) were present in the Camellia japonica L. leaf. The contents of total free sugars and organic acids increased as picking time was delayed. The major components of free amino acids were aspartic acid, glutamic acid and histidine, and those of total amino acids were histidine and alanine. The contents of total free amino acids and total amino acids were decreased as picking time was delayed, while the ratio of essential amino acids to the total amino acids increased. The amount of minerals (P, Ca, K, Na and Fe), chlorophyll and total polyphenol increased as picking time was delayed.

Sugar Contents Analysis of Retort Foods (레토르트식품에 함유되어 있는 당 함량 분석)

  • The purpose of this study was to provide trustworthy nutritional information by analyzing sugar contents of commercial retort foods. A total of 70 retort food samples were collected, which included curry (n=21), blackbean- sauce (n=16), sauce (n=17), and meat (n=16) from markets in Seoul and Gyeonggi-do. Contents of sugars such as glucose, fructose, sucrose, maltose, and lactose were analyzed in retort foods by using a high performance liquid chromatography-refractive index detector and compared to their assigned values on nutritional information labels. Analyzed sugar contents of curries, black-bean-sauces, sauces, and meats ranged from 1.05~4.63 g/100 g, 1.76~5.16 g/100 g, 0.35~25.44 g/100 g, and 1.98~11.07 g/100 g, respectively. Sauces were found to contain the highest amounts of total sugar. These analysis values were equivalent to the reference values indicated on nutrition labels, which were 40~119.5% for curries, 29~118% for black-bean-sauces, 18~118% for sauces, and 70~119.8% for meats. Therefore, this study provides reliable analytical values for sugar contents in retort foods.

Survey on Contents of Sugars and Sodium in Bakery Products Sold at Bakeshops Located in Seoul Area (서울지역 제과.제빵점에서 판매되는 빵류와 과자류의 나트륨 및 당 함량 조사)

  • The objective of this study was to investigate the extent of total sugar and sodium in 129 different kinds of bakery products, breads and cookies, sold at bakeshops in Seoul metropolitan area. The bakery products produced by bakeshops on a small scale were not applied by clauses of mandatory nutrition label for children's taste food. All types of free sugars -fructose, glucose, sucrose, lactose and maltose- were detected in breads, but only fructose and sucrose were detected in cookies. The average amount of sucrose per 100 g of breads was 6.24 g, of cookies was 30.03 g. Breads and cookies amounting to 100 g of sample contained total sugar of 11.19 g and 30.38 g, respectively. The average amounts of sodium in breads and cookies were 120.71 mg/100 g, 70.76 mg/100 g, respectively. When the contents of total sugar in breads and cookies per one serving size were compared to WHO guidelines, the percentages were 15.7% and 18.2% about recommended daily intake of total sugar of 50 g. When it come to sodium, the bakery products had range of 1.1-6.5% to 2000 mg of daily intake of sodium recommended by WHO.

Instrumental and Sensory Analysis of Fruit Quality in Relation to Storability of 'Niitaka' Pear Fruit ('신고' 배 과실의 품질특성 및 관능검사에 따른 적정 저장기간 판정)

  • Quality of 'Niitaka' pear fruit was evaluated by instrumental and sensory analysis in relation to storability. Fruits harvested at commercial maturity were stored in a common storage room or in a cold storage at $2^{\circ}C$. During storage, fruits were sorted by instrumental measurement of soluble solid content (SSC) and flesh firmness. Then, overall acceptability was evaluated by organoleptic test. Critical storage period was determined by sensory evaluation index for different storage methods. After 60 days of storage, eating quality was acceptable when flesh firmness was higher than $3.3kg/8mm{\emptyset}$. As for soluble solid contents, high eating quality was obtained when pear fruit contained soluble solids higher than $13.0^oBrix$. In 'Niitaka' pears, however, changes in soluble solid content seemed not to be an appropriate parameter to determine storability since SSC increased during both common and cold storage. Data of organoleptic test and postharvest changes in flesh firmness suggested that storability of 'Niitaka' pear fruit seemed to be 30 days in a common storage and 120 days in a refrigerated storage.

  • The change in total and reducing sugar in germinating mung bean seeds were examined. The mung bean seeds were treated with ash(ash group), gibberellin(gibb group) and chlorocholine cholide(ccc group) ; one group was untreated and used as a control (none group). As germination proceeds, the content of total sugar decreased while the opposite was the case in reducing sugar. The content of total sugar appears in the order of ash group > ccc group>none group> gibb group. The content of reducing sugar in ash group in the highest followed by none group, gibb group and ccc group.
