A study of hen egg lysozyme extraction using reversed micelles and pressurized CO₂ phase was conducted. The relationship between the lysozyme extraction and water content (W/sub 0/) under the pressurized CO₂ conditions was investigated. The water content of the micellar organic phase was a significant parameter affecting the mass transfer of protein and enzymatic activity in reversed micellar process. It was found that the reversed micelles in the organic phase with pressurized CO₂ were larger than the organic phase without CO₂. Therefore, the extractionrate of lysozyme in the interface of the aqueous phase and the organic phase was increased. W/sub 0/ value was increased at the high surfactant concentration and the extraction rate of lysozyme was enhanced.
Microcrystalline collagen was manufactured from raw pigskins and its functional properties were measured. It showed a thixotropic behavior. The maximum viscosity was obtained at pH 3.5 and the viscosity increased with the increase of concentration in a nonlinear manner. The increase in temperature decreadsed the viscosity while the effect of temperature was greater at pH below 4.5. Foaming capacity was similar to that of gelatin but superior to that of egg white at 1%. The foam stability was inferior to that of egg white. Emulsifying capacity was lower than that of pork. Values from physical and chemical analysis were somewhat different from those of medical-grade microcrystalline collagen made from bovine cerium collagen.
This study was conducted to compare three commercially available egg testing devices for measuring egg quality. The devices used were a Laser-type (automatic), a Ultrasonic-type (automatic), and a Probe-type (manual). Fresh eggs weighing 60~68 grams were obtained from a commercial hen farm. Three trials were conducted. In Trial 1, a total of 50 eggs were successively analyzed by the three egg testing devices. In Trial 2, fresh eggs were successively analyzed by a combination of two egg testing devices. In Trial 3, a total of 600 eggs (weighing 60~68 grams) laid by same flock were selected, further divided into three sub-groups with a total of 200 eggs, and analyzed by an egg testing device. In Trials 1 and 2, no apparent difference was observed in egg weight between egg testing devices. However, albumin height was scored highest in the Ultrasonic-type egg tester followed by the Probe-type and Laser-type (Trials 1 and 2). Consequently, the Haugh unit was similarly altered. Yolk color was highest in the Laser-type egg tester followed by the Ultrasonic-type and Probe-type (Trials 1 and 2). When fresh eggs laid by a single flock were independently analyzed by three devices, egg weight did not differ, but albumin height and Haugh unit were higher (p<0.05) in the Ultrasonic-type egg tester than in the Probe-type or Laser-type testers. However, Laser-type testers produced higher (p<0.05) yolk color values than the Ultrasonic-type or Probe-type egg testers. In conclusion, the commercially available egg testing devices exhibited performance differences in measuring egg qualities, which warrants further consideration as to whether the magnitude of bias and precision between the devices could be acceptable in the egg grading system, especially when assessing eggs stored for certain durations.
This study was conducted to estimate heritabilities and genetic correlations on egg shape index and egg qualities in Korean Native Ogol fowl. The date analysis were a total of 58,320 eggs in 450 pullets bred from 150 dams and 20 sires of korean Native Ogol fowl raised at Chungnam National University from June 18, 1987 to April 6, 1989. The results obtained are summarized as follows:1. On the egg shape index and egg qualities, the egg shape index at first egg, 300 and 500 days of age were 75.044, 74.169 and 72.601 ; the shell thickness were 0.342, 0.320 and 0.326 mm: the albumen height were 6.014, 5.161 and 4.807mm:the Haugh units were 83.903, 71.348 and 71.136, respectively. 2. The heritabilities estimates of egg shape index and egg qualifies based on the varience of sires, dams and combined components were 0.120-0.827, 0.485-0.503 and 0.232-0.872 for egg shape index at first egg, 300 days and 500 days of age: 0.197-0.819. 0.184-0.756 and 0.279-0.557 for shell thickness at first egg, 300days and 500days of age:0.202-0.678, 0.119-0.394 and 0.225-0.527 for albumen height at first egg, 300 and 500 days of age 0.108-0.669, 0.237-0.251 and 0.354-0.443 for Haugh units at first egg 300days and 500days of age. 3. The genetic correlation coefficients of egg shape index and egg qualifies were as follows; between egg shape index and shell thickness, albumen height and Haugh units were 0.596-0.909, 0.384-0.943 and 0.121-0.619:between shell thickness and albumen height. Haugh units were 0.082-0.596, -0.076-0.167:between albumen height and Haugh units were 0.374-0.964.
The objective of this study was to compare the change of S. Enteritidis with S. Typhimurium populations in liquid egg products. S. Enteritidis or S. Typhimurium was inoculated into egg white and egg yolk and stored at 8, 10, 15, 25, and $35^{\circ}C$, respectively. In egg white, no growth of S. Enteritidis and S. Typhimurium was observed at 8, 10, 15, and $35^{\circ}C$, while both S. Enteritidis and S. Typhimurium in egg white stored grew more than 1 log CFU/ml after 50 hours storage at $25^{\circ}C$. In egg yolk, there was no growth of S. Enteritidis and S. Typhimurium at $8^{\circ}C$ but growth of both strains was observed at 10, 15, 25, and $35^{\circ}C$. Since growth of S. Enteritidis and S. Typhimurium was only observed in egg yolk, primary growth models for both strains were developed using modified Gompertz equation and then secondary models for lag time (LT), specific growth rate (SGR), and maximum population density (MPD) were developed as a function of temperature. At all temperatures, more rapid growth of S. Enteritidis than S. Typhimurium was observed in egg yolk, indicating the greater risk of S. Enteritidis than S. Typhimurium in egg products. In conclusion, the results indicate that temperature control less than $8^{\circ}C$ is very important to ensure safety of liquid egg products, especially liquid egg yolk.
This experiment deals with lycopene-enriched egg production in chicken and their effects on egg quality, especially antioxidant status of eggs upon their long term storage. Forty two laying hens(Hyline, 36 weeks of age) were assigned randomly to 1 of 2 diets containing 0 mg and 2 mg lycopene per kilogram feed for 4 weeks. There was a comparable concentration of lycopene in egg yolk($1.57{\mu}g$/1 g yolk) of chickens supplemented with dietary lycopene. No measurable concentration of lycopene was detected in egg yolk of chickens fed the control diet. Dietary lycopene supplementation increased egg yolk color(P<0.01), egg yolk height(P<0.08), egg yolk diameter(P<0.19), egg shell intensity(P<0.19), egg white height(P<0.33), and Haugh unit (P<0.34). After 4 week of storage of eggs in room temperature, lycopene treated eggs were tested for freshness. The ESI, EYH, EWH, HU, and EYC of lycopene treated eggs were comparably higher than those of control groups, even though there was not statistically significant difference between two groups whereas EYD of the control group was smaller than that of lycopene treated group. In conclusion, dietary lycopene supplementation to chickens might be improved egg quality.

10% salted egg yolk containing 12-21% e99 white (RI 42-45) was stored at $-15^{\circ}C\;and\;-25^{\circ}C$. Changes of appearent viscosity and emulsification capacity were measured monthly(1-6 months). Viscosity, oil particle size and emulsion stability of mayonnaise which was prepared with these yolks for each storage time were also tested . In salted e99 yolk, viscosity was increased gradually with increasing the storage time, and further increased in the yolk of less egg white (higher RI), stored at $-25^{\circ}C\;than\;-15^{\circ}C$. Emulsification capacity was decreased gradually with increasing the storage time. In mayonnaise, which was Prepared with these frozen egg folks, oil Particle size became smaller gradually with increasing the storage time of egg folk, and further became smaller in the egg yolks containing low levels of egg white , stored at $-25^{\circ}C\;than\;-15^{\circ}C$. The viscosity of mayonnaise was decreased by about 2 months storage of e99 yolk, and restored thereafter, emulsion stability was decreased by 3-4 months storage of egg yolk and restored slightly thereafter.
