  • The purposes of the study were to assess the multicultural competencies and to identify potential barriers toward improving multicultural competencies of food and nutrition majors at the university level. A total of 500 students were surveyed and 457 responses were analyzed for the study. The multicultural competencies, based on a literature review, included food culture knowledge, multicultural attitude, and multicultural skills. Approximately half of the respondents took a food culture class as a college course. The food and nutrition majors showed positive multicultural attitudes; however, food culture knowledge scores for traditional Korean food culture and 11 other food cultures remained low (average score: 63.7 out of 100 points). In addition, familiarity with cultural foods and knowledge of food-related cultures were not necessarily related. As a result of factor analysis, multicultural skills, required for dietitians, were classified into three factors: professional skills, food preparation skills, and communication skills. Overall, students rated their professional skills the highest and communication skills the lowest. Multicultural attitudes and skills increased with school years, and students who took a food culture class showed significantly higher multicultural attitudes and knowledge scores compared to their counterparts. Economical issues, lack of time, and lack of opportunities for learning multicultural competencies in majors and experiencing different cultures were highly rated potential barriers for improving multicultural competencies. Our research indicates that food and nutrition educators should review their curriculums to incorporate content that encourages food and nutrition majors to learn about other food cultures and improve their multicultural competency. These skills will be critical for food and nutrition professionals in the multicultural age.

  • Recently, plastic waste in Korea has been recognized as a critical issue due to an increase in massive production of plastics, difficulty in disposal of waste plastics, and public recognition of toxicity in micro-plastics, etc. To resolve those problems, the regulation to reduce plastics consumption may be primarily considered but, in this case, clarification should be made on the rationales and the action plans in the regulation for individual waste plastic items. Another problem is the small capital sizes of domestic recycling companies, which leads to poor R&D capacity, low recycling yields and thus lowering values of recycling items. This adversely affects consumers' perception. The R&D toward recycling technical progress should take into account the environmental friendliness and recyclability from the early product design stages. Certainly, this should be supported in governmental policy and public action plans. In addition, by referring to advanced policies of i.e. European Union, the recycling industry should be recognized as an opportunity toward new investment & employment. If necessary, the regulation of plastic consumption through a formal evaluation process such as Life Cycle Assessment (LCA) will also be helpful. The values of recycled plastics should be improved through the identification and elimination of harmful chemical substances potentially contained in the products.

  • With the advent of the 4th Industrial Revolution, interest in AI education is increasing. In order to cultivate talented people with AI competencies who will lead the future, AI education must be conducted in a sound manner at the school site. Although AI education is being conducted at home and abroad, it was determined that the role of the AI education platform is important to implement better AI education, so this study investigated the perception of experts on the AI education platform. A perception survey was conducted based on five criteria: teaching and learning management, educational contents, accessibility, performance of AI education platform, and level suitability of elementary school students. As a results, the number of 103 educational experts selected 'Entry' as the most proper platform among the eight platforms - 'Machine learning for Kids', 'Teachable Machine', 'AI Oceans(code.org)', 'Entry', 'Genie Block', 'Elice', 'mBlock' and etc. Analysis shows that this is because 'Entry' provides quality educational content, has convenient accessibility, is easy to manage teaching and learning, as well as an AI education platform suitable for the level of elementary school. In order to apply various AI education platforms to the school field, it is necessary to train teachers in AI-related training to train them as AI education experts, and to continuously provide opportunities to experience AI education platforms. In this study, there are limitations to what is called 'a population perception survey'. because only 103 people were surveyed, and most of the experts are working in a specific area(Gyeonggi-do). In the future, it is judged that research targeting experts at the national level should be conducted to supplement these limitations.

Based on a questionnaire survey on Korean universities, this study examined the current status of programs and the operating mechanism for co-operative education and internship to provide policy suggestions for promoting the depth and width of co-operative education in Korean universities. The results of the survey shows that the majority of students carry out internships on a short-term basis and the universities usually lack the capabilities for effectively running the programs of co-operative education and internships. In particular, as a part of the academic curriculum, co-operative education should be focused on the balance and effective linkage between the occupations given to students and the majors in university.
