Domestic and International Trends in Sodium Reduction and Practices (국내외 나트륨 저감화 동향 및 사례)

  • 우리나라의 발효식품 산업의 규모는 2010년 약 4조 원으로 식품 산업 전체의 4.0%정도이며, 이 중 전통 발효식품이 50.0% 수준으로 전체 식품 산업 대비 비중은 2.0%에 불과하지만, 발효제품의 세계 시장 규모는 2000년 152억 달러, 2010년 730억 달러로 급속한 성장으로 확대되고 있다. 국내 소금시장의 규모는 2010년 기준 1,300억 원이며, 전 세계적으로 나트륨 대체 염미제의 시장수요는 절실히 필요한 실정으로, 최근 2,000억 원대 규모를 유지하고 있는 간장 시장에서 염도를 낮춘 '저염 간장'매출 성장세를 보이고 있어 소금을 줄이는 식생활 개선에 대한 교육 홍보와 더불어 '나트륨 저감화 식품 개발의 필요성'이 국민건강증진, 경제성 측면에서 날로 커지고 있다. 또한, 2007년부터 웰빙 열풍으로 자연조미료 제품의 비중이 크게 늘어나는 추세이며, 100% 천연재료로 사용하여 소비자용 제품 출시 등 다양한 변화를 가져온 결과, 자연조미료 시장은 2008년 151억 3,200만 원의 매출규모에서 215억 2,600만원으로 무려 42.3%를 차지했으며, 저염을 위하여 활용하는 저염 소금도 연령대가 높아질수록 선호도가 높아지는 있다는 보고가 있다. 식품의약안전처의 '나트륨 저감화 사업'은 2012년부터 연차별로 가공식품의 나트륨 저감화 가이드라인을 개발하여 가공식품 생산업체들의 참여를 유도하며, 다양한 홍보를 펼쳐 2014년 6월 기준으로 165개 제품의 나트륨이 저감화 되었으며, 2015년에는 95종의 면류제품의 나트륨 함량이 약 20% 이상 저감되는 실적을 보여주었다. 여러 지역자체 단체들은 지역의 특성을 최대한 살려 다양한 발효산업 육성을 진행하고 있음에 영남권의 장류 업체를 대상으로 나트륨 섭취량을 줄일 수 있도록 '경북 발효식품 수출농업기술지원단'은 식품의약품안전처와 연계하여 지속적으로 가공식품 중 나트륨 저감화에 노력을 할 것이며 이에 대기업과 함께 중소기업들의 참여도를 높이기 위해 현장 컨설팅을 지역적으로 실시할 계획으로 각 지역별 업체들의 참여도를 높일 계획이다. 이를 통해 전통 발효식품이 기능성을 유지하면서 나트륨 함량을 줄인 건강식품으로 우리나라 식품산업 발전에 기여하고자 노력할 것이다. 향후 발효산업 중 한류의 매운맛, 김치 등을 시작으로 고성장이 기대되는 세계화 전략 품목이며 지역 농산물을 활용한 발효식품 세계화를 위하여 나트륨 저감화는 반드시 선행되어야 할 것으로 생각된다.

Hazard Analysis, Determination of Critical Control Points, and Establishment of Critical Limits for Seasoned Laver (조미김의 제조공정별 위해요소분석, 중요관리점 결정 및 한계기준 개발)

  • The purpose of this study was to establish the critical limit of CCP (Critical Control Point) of a HACCP (Hazard Analysis Critical Control Point) system used in the production of seasoned laver products. The hazard analysis examined microbial evaluations and developed a HACCP management plan for the heating process. The results were determined to be capable of reducing the biological element of CCP via the secondary roasting process. This study examined general bacteria and pathogenic microorganisms such as Escherichia coli, Staphylococcus aureus, Salmonella spp., Listeria monocytogenes, Vibrio parahaemolyticus, and Bacillus cereus at temperatures ranging from $170^{\circ}C$ to $230^{\circ}C$ and for 3.0 to 5.5 seconds at a time. Before the secondary roasting process, pathogenic microorganisms were all negative, although the presence of general bacteria was still detected. General bacteria was reduced to $1.0{\times}10CFU/g$ after the temperature was set at $230^{\circ}C$ for a period of 5.5 seconds. In conclusion, it suggested that a HACCP plan was necessary for management standard and systematic approach in the establishment of critical limit, problem resolution, verification method, education, and records management through a secondary roasting process.

  • The purpose of this study is to propose a documentary plan for the 7th Gyeongbuk Intangible Cultural Property, Andong-Notdaribapgi. Most of the records of Andong-Notdaribapgi. are produced centering on play. Thus this study aims to the method of recording it so that it can be accessed and utilized in the long term. This is a study at the beginning stage for documenting the Andong-Notdaribapgi. First of all, at the stage of the basic framework, the concept and characteristics of the recording of the Andong-Notdaribapgi were derived, and the meaning and necessity of recording was raised. In addition, the entire category of records was set through the analysis of the behavior process of Andong-Notdaribapgi, and the occurrence records and the contents of the records were organized focusing on the behavior processes occurring in various forms through the analysis of the recording target. In addition, materials that can be used are organized by focusing on the details and contents, including related records, and records that can be produced in the course of action are organized by type characteristics. Lastly, record analysis was based on performance behavior, and management functions were organized based on producers. The management of the records is to make it easier for users with various purposes to access the Intangible Cultural Property, the Andong-Notdaribapgi, and it is expected that it will provide directions and guidelines that can be applied to the recording plan in fields with similar characteristics.

Development of Self-Managed Food Sanitation Check-List and On-Site Monitoring of Food Sanitation Management Practices in Restaurants for Control of Foodborne Illness Risk Factors (식중독 발생 위험요인 관리를 위한 외식업체 자가위생관리점검표 개발 및 현장모니터링)

  • Based on recent dramatic increases in foodborne outbreaks in restaurants, self-managed sanitation systems are now recommended to control contributing risk factors. This study aimed to improve sanitation management practices in restaurants and had two objectives. First, we tried to develop a self-managed sanitation check-list, including risk factors contributing to foodborne illness and Korean food hygiene regulation articles. We also tried to evaluate current sanitation management practices in restaurants according to operation and restaurant type. Thirty restaurants were evaluated by on-the-spot inspectors using an auditing tool consisting of four dimensions, seventeen categories, and forty-one items. Total compliance rate categorized by operation type significantly differed between chain restaurants and self-managed restaurants, with values of 85.5% and 51.6%, respectively. Therefore, self-managed restaurants, which showed the lowest compliance rate of below 30.0%, need more strict control to improve current unsanitary management practices, specifically relating to 'sterilization of knives, chopping boards, and wiping cloths', 'sanitation training', 'not allowing access into the kitchen to outsiders', 'handling of food or utensils on shelves at a 15 cm distance away from floor', 'prevention of cross-contamination of cooked foods or vegetables', and 'records of kitchen access or inspection'. Thus, an effective food sanitation system is essential and should be implemented to improve the existing sanitary conditions in restaurants. However, the most important factor to achieving food sanitation management objectives is food handlers' self-motivation.

The Economic Impacts of Marine Bio-energy Development Project (해양바이오에너지 개발사업의 경제적 파급효과)

  • We need to develop new renewable energy that could fundamentally replace fossil fuel, since the volume of economy and industry of our time becomes uncontrollably enormous. One of the alternative is to develop energy based on marine biomass, which would meet environment and energy needs at the same time. The marine bio-energy productions is supposed to occupy 50% to 500 million TOE in bio-energy production that is based on the Korean 3rd new renewable energy technology development, utilization, supply plan until 2030. This study attempts to apply input-output analysis to investigating the economic impacts of marine bio-energy development project in the Korean national economy. More specifically, this study shows what national economy effect of production-inducing effect, value-added inducing effect, employment-inducing effect, and R&D-inducing effect are explored with demand-driven model. Furthermore, this study attempts to define and classify the marine bio-energy development project sector from I-O table. Also, this study pays particular attention to marine bio-energy development project by taking the industry as exogenous specification and then investigating its economic impacts. The Marine bio-energy development project case 223 billion won, production-inducing effect, value-added inducing effect, and employment-inducing effect are 312 billion won, 87 billion won, 1,151 persons, and 5 billion won respectively. These quantitative information can be usefully utilized in the policy-making for the industrialization of marine bio-energy development project.

A Study on the Space Forming through Urban Agricultural Theory, Paradigm and Typology (도시농업의 이론, 패러다임, 유형을 통한 공간연구)

  • This study analyzed the situation of urban agriculture development through theories, paradigms, and typology to determine the application frequency and development keywords about space forming. The results showed that urban space by distance determines "Dimension of space forming" through self-production, public-production, and nation-social operation. Second, the complex space by shape determine "Identity of space forming" through "Flat Shape" for using the widespread land, "Compact Shape" for overcoming the small and poor land, and "Fusion of Flat Compact Shape" for systematic use between Flat and Compact. Third, building and interior space according to location determine the "Utility of space forming" through land, roof, wall, veranda, interior, and infrastructure space. The concepts about space forming of urban agriculture have an organic correlation and will be developed sustainably by the evolved cases from now on. In addition, space forming of urban agriculture produces new creation space by various fusion processes and will be a development trend of new urban agriculture.

Economic Evaluations for the Carbon Dioxide-involved Production of High-value Chemicals (이산화탄소를 활용한 고부가화합물 제조기술의 경제성 평가연구)

  • Economic evaluation of the manufacturing technology of high-value chemicals through the carbonation reaction of carbon dioxide contained in the flue gas was performed, and analysis of the IRR (Internal Rate of Return) and whole profit along the production plan of the final product was conducted. Through a carbonation reaction with sodium hydroxide that is generated from electrolysis and by using carbon dioxide in the combustion gas that is generated in the power plant, it is possible to get a high value products such as sodium bicarbonate compound and also to reduce the carbon dioxide emission simultaneously. The IRR (Internal Rate of Return) and NPV (Net Present Value) methods were used for the economic evaluation of the process which could handle carbon dioxide of 100 tons per day in the period of the 20 years of plant operation. The results of economic evaluation showed that the IRR of baseline case of technology was 67.2% and the profit that obtained during the whole operation period (20 years) was 346,922 million won based on NPV value. When considering ETS due to the emissions trading enforcement that will be activated in 2015, the NPV was improved to a 6,000 million won. Based on this results, it could be concluded that this $CO_2$ carbonation technology is an cost-effective technology option for the reduction of greenhouse gas.

Production of Transgenic Orchardgrass Overexpressing a Thermotolerant Gene, DgP23 (내열성 유전자 DgP23을 도입한 형질전환 오차드그라스의 생산)

  • To develop transgenic orchardgrass (Dactylis glomerata L.) resistant to high temperature, a thermptolerance gene, DgP23, was introduced into orchardgrass using Agrobacterium - mediated transformation method. PCR and Southern blot analyses using genomic DNA showed specific DNA band on agarose gel and hybridization signal on X- ray film in transgenic orchardgrass harboring the recombinant DgP23 gene, but not in the wild type and empty vector control plants. RT-PCR and Southern blot analyses using total RNA also showed specific DNA band and hybridization signal. Transgenic orchardgrass did not showed ny morphological aberration both in the green house and field cultivation. Thermotolerance of transgenic plants was not detected in laboratory test. but may detected in field test.

최근 우리나라 조선산업의 모습과 장래 전망

  • 우리나라 조선산업이 21세기에 명실상부한 선진 조선국으로 발돋움하기 위해서는 단기적으로는 가격경쟁력의 강화가 요구되나 장기적으로는 기술자립화를 통해 과거 가격위주의 경쟁체제에서 기술위주의 경쟁체제로 전환함으로써 질적인 성장을 추구해야 할 것이다. 또한 우리나라의 조 선산업은 세계조선시장을 리드하는 선도국으로서 세계선박수급구조의 안정화에 노력하고 지구 해양환경보호를 위한 국제적인 프로그램에 적극 참여하는 한편, 후발조선국에 대한 기술협력, 기술지도 등 국제협력도 강화하여 명실상부한 선진조선국의 면모를 갖추어야 할 것이다. 이를 효과적으로 추진하기 위해서는 다음과 같은 과제를 해결해야 할 것이다. 첫째, 효율적 기술개발을 통한 건조기술의 재고가 그 무엇보다도 중요하다. 즉 단기적으로는 주요 대체수요 선박이면서 국내 주력건조선박인 탱커, 벌크케리어 등 재래단순형 선박에 대해 성에 너지화, 성인력화 및 표준선형화하고, 선박 생산공정의 개선, 생산성 향상을 통해 가격경쟁력을 지속적으로 확보해야할 것이다. 그러나 중장기적으로는 가스운반선,카페리선, 초고속선 등의 부가가치선박에 대한 건 조기술의 자립화로 이들 선종을 주력선종화하여 해외 수주 경쟁력을 재고시켜야 한다. 이와함께 심해탐사장비, 해양구조부유물 등의 해양개발장비의 개발로 사업영역을 확대해야할 것이다. 상 기의 각종 기술재발을 효율적으로 추진하기 위해서는 범국가적인 연구체제의 구성을 통한 산학연 공동연구형태로 추진하는 것이 바람직하다. 둘째, 핵심 조선기자재의 국산화와 품질 향상이 필 요하다. 향후 조선기자재의 국산화추진은 과거 개발 품목의 확대에서 벗어나 핵심적이고 부가 가치가 높은 품목 위주의 질적 국산화로 전환되어야 할 것이며, 이때 국산화이후 조선소의 적 극적인 구매가 전제되어야 할 것이다. 또한 기자재의 품질, 성능검사기능의 강화와 다수요 품목을 중심으로한 표준화, 규격화의 확대 추진으로 지속적인 품질향상과 원가절감을 도모해야한다. 특히 조선기자재업체의 영세상을 감안하여 조선소 인근지역에 단지화함으로써 생산설비의 현 대화, 자재의 공동구매, 물류비용의 절감 등을 기해 가격경쟁력을 강화해야 할 것이다. 또한 업계 공동의 해외판매망, A/S망의 직수출을 늘려야 할 것이다. 셋째, 국제협력 강화로 통상환경에 적극 대응해야 한다. 다자간조선협정 발효에 따른 제소 가능성에 대비하여 관민차원의 국제협 력을 강화하는 한편, 회계 기준의 통일, 제소사례의 연구 등을 업계 공동으로 추진하는 것이 바 람직하다. 또한 향후 2010년이후에 중국을 비롯한 후발조선국에 대해 조선협정에의 참여를 유도, 세계조선시장의 수급안정화에 노력해야할 것이다. 그외에 국제적으로 추진되는 지구그린화에 주도적 역할을 수행해야 할 것이다. 넷째, 선박금융제도의 개선과 신금융상품의 개발이 요구된다. 내수 수요인 계획조선의 지원조건을 개선하고 연불수출자금을 BBC자금으로 활용토록하여 국내 선주들의 신조를 유도해야 할 것이다. 그 외에 향후 금융개방화에 맞추어 해외자금을 활용한 리스금융, 상사금융 등의 민간신용제도를 더욱 활성화하고 선진국의 선박금융기법에 대한 연구 및 도입 등 선주들에게 다양한 선박건조자금을 제공하여 내수기반 확충에도 노력해야 할 것 이다.

Practical Radiation Safety Control: (II) Application of Numerical Guidance for the Discharges of Radioactive Gaseous and Liquid Effluents (방사선안전관리 실무: (II) 배기중 및 배수중 배출관리기준의 적용)

  • Radioactive materials are in use and have many applications from the generation of electricity to the purposes of research, industry and medicine such as diagnosis and therapy. In the course of their use some of radioactive substances may be discharged into the environment from facilities using the unsealed radioactive materials, which are main artificial sources occurring the public exposure. Discharges are in the form of gases, particles or liquids. This paper provides procedures to estimate the level of the public exposure based on the conservative assumptions and simple calculations in the facility using unsealed liquid sources. They consist of two processes; (1) to calculate maximum concentration of gaseous effluents discharged through the exhaust pipe and average concentration of liquid effluents discharged through the drain of the storage tank, (2) to compare each of them to numerical guidances for the discharges of radioactive gaseous and liquid effluents mentioned in the related notification. For this purpose followings are assumed properly; daily usage, form and dispersion rate of radionuclides, daily amount of radioactive liquid waste and exhaust and drainage equipment. The procedures are readily applicable to evaluate environmental effects by planned effluent discharges from facilities using the unsealed radioactive materials. In addition they may be utilized to obtain practical requirements for radiation safety control necessary for the reductions of the public exposure.
