Comparison on Physicochemical Properties of Amaranth Starch with Other Waxy Cereal Starches (아마란스 전분과 곡류 찰전분의 특성 비교)

  • Physicochemical properties of amaranth starch were compared with those of waxy rice and waxy corn starches. Amaranth starch granules vary from $1.1{\sim}1.9\;{\mu}m$ in diameter and are polygonal in shape. Total amylose contents from waxy rice, waxy corn and amaranth starches were 0.01, 0.03 and 0.07%, respectively. Swelling power of amaranth starch granule was slightly different from waxy rice. The swelling power of amaranth increased at $70^{\circ}C$. X-ray diffraction patterns of amaranth and other waxy cereal starches showed an A-type crystalline structure. Relative crystallinities of their starches were similar. According to pasting properties by Rapid Visco-Analyzer, amaranth starch showed a very high gelatinization temperature $(75.1^{\circ}C)$ and lower viscosity and higher stability than other waxy cereal starches during heating and cooling cycle. Peak onset temperatures (To) of starches from waxy rice, waxy corn and amaranth in DSC thermograms were $58.7{\sim}64.0$, 67.2 and $71.5^{\circ}C$, respectively, and their peak enthalpies were similar. Enthalpy of reheated amaranth starch after 3 day storage at $4^{\circ}C$ was higher than those of waxy corn and rices starchs.

Changes in the Quality Characteristics of Sulgidduk by the Addition of Persimmon Peel (감 과피를 첨가한 설기떡의 품질특성 변화)

  • This study is to examine nutrients in the persimmon peel develop processed products and analyze their quality properties. The persimmon peel powder was rich in nutrients with 4.35% of moisture, 3.01% of protein, 1.02% of lipid, 2.02% of ash and $5.7^{\circ}Brix$ of Sugar concentration as well as 82.5 mg% of total carotenoid. As far as quality properties of Sulgidduk were concerned when the 5% addition persimmon peel resulted in the highest level of watery content and the more colors were added the lower the L value became and the higher a and b values. As the result of measurements using a texture analyzer, hardness, adhesiveness, cohesiveness, springiness and chewiness property decreased flexibility increased. The sensory test results revealed that the 3% added persimmon peel Sulgidduk was the best.

Effects of Irradiation and Fumigation on Color and Sensory Properties in the Parts of Dried Red Pepper during Storage (방사선과 훈증 처리된 건고추의 저장 중 부위별 색도 및 관능적 특성)

  • Associated with microbial decontamination and quarantine treatment of dried red pepper, the samples was gamma-irradiated (5, 10 kGy) and fumigated (methyl bromide/MeBr, phosphine/$PH_3$) to compare their Hunter's color (L, a, b, ${\Delta}E$) and sensory properties by types (whole, powder, pericarp, seed) during storage under room conditions($18{\pm}12^{\circ}C$). Whole pepper maintained higher lightness (L value) than other groups, while powdered pepper showed higher redness (a value) during storage. Immediately after treatments there was little difference in the overall color difference (${\Delta}E$) among the groups. After 8 months, a higher redness was observed in $PH_3$ group of whole pepper and 5 kGy group of powdered pepper, respectively(p<0.05). Redness of irradiated pericarps was apparently reduced following 8 months of storage and a similar pattern was found in fumigated samples. The yellowness (b value) of pepper seed was lowest in 10 kGy sample (p<0.05), but insignificant difference was observed among treatment groups with storage time. Sensory properties of whole and powdered peppery were little changed by both treatments under commercial conditions. Sensory scores of irradiated or fumigated samples were higher than that of non-treated control with storage time, which was more significant in the powdered than in the whole samples.

  • Wood Polymer Composite (WPC) has attracted a great deal of attention in environmental industries due to renewable resources, processability, excellent physical properties and logging regulations for application to housing units and engineering construction materials. In this study, commercial WPCs were prepared by using a modular intermeshing co-rotating twin screw extruder. The effect of three main factors such as wood flour contents, coupling agent concentrations and pre-treatment of wood flour on the properties of WPCs was extensively investigated. It was found that tensile strength and thermal stability were decreased with increasing wood flour contents whereas the water absorption was increased. Addition of maleic anhydride grafted polypropylene (PP-g-MA) into WPC exhibited better physical properties. On the contrary, the water absorption was slightly decreased with PP-g-MA. Finally the sample, which was prepared with pre-treated wood flour, represented the highest tensile strength. However, the water absorption of the sample was increased due to the transition of crystalline structure of cellulose.

Quality Characteristics of Black Sesame Gruel with High-Dietary Fiber Rice 'Goami 2' (고아미 2호를 기반으로 한 흑임자죽의 품질 특성)

  • The objective of this study was to develop black sesame gruel with high-dietary fiber rice, 'Goami 2'. Physical and sensory properties of black sesame gruel with various ratios of black sesame by weight (20, 40, 60%) and various water volumes(1100, 1200, 1300 mL) were investigated using colorimeter, consistometer, viscometer, sensory evaluation panel and consumer evaluation. The black sesame content significantly(p<0.001) affected the mechanical characteristics(color, consistency and viscosity), sensory characteristics(blackness, glossy, nutty, astringent taste, bitter taste and viscosity) and sensory acceptance(color acceptance, taste acceptance, viscosity acceptance and overall acceptance). The water content significantly(p<0.05) affected the mechanical characteristics(consistency and viscosity), sensory characteristics(viscosity) and sensory acceptance(taste acceptance, viscosity acceptance and overall acceptance). In the black sesame gruel, as black sesame weight ratio increased, the brightness, redness, yellowness and viscosity were decreased while the consistency, blackness, glossy, nutty, astringent taste and bitter taste were increased. In the sensory evaluation results, the optimal material mixing ratio for gruels was black sesame : Goami 2 = 40(80 g) : 60(120 g), water 1200 mL.

Effects of Antioxidants on Shelf-life of Yukwa (유과의 유통기간 연장을 위한 항산화제 첨가의 효과)

  • This study was carried to investigate the changes in physical and chemical properties of Yukwa during preparation with addition of antioxidants and to develop its storage condition. Antioxidants (tocopherol and Oxyfos) were used in syrup coating and the packaging materials used were PET/EVOH $(16\;{\mu}m)/PL$ : P1 and PET/EVOH $(24\;{\mu}m)/PL$ : P2 (YOP1: P1 with Oxyfos, YOP2 : P2 with Oxyfos, YTP1 : P1 with tocopherol, YTP2 : P2 with tocopherol). Color values measured for Yukwa showed that L values of YOP1, YOP2, YTP1 and YTP2 were changed little during storage while a and b values of YOP1, YOP2, YTP1 and YTP2 were slightly decreased. Hardness and chewiness in textural properties were also decreased during storage. Yukwa packed in YOPl and YOP2 maintained less than 40 in peroxide value during for 12 weeks of storage period. The major fatty acid composition of frying oil were linoleic acid (54.2%), oleic acid (23.4%), palmitic acid (11.3%), linolenic acid (6.5%) and stearic acid (4.6%). There was no difference in composition of fatty acid during storage. Sensory evaluation (Yukwa odor and rancid odor) showed very similar results with determined by electronic nose. YTP1 and YTP2 had maintained sensory characteristics of Yukwa during 10 weeks storage.

Quality Characteristics of Yanggeng Sweetened with Trehalose and Textural Changes During Storage (트레할로스 첨가량과 저장시간에 따른 양갱의 품질 특성)

  • This study investigated the quality characteristics of Yanggeng sweetened with various amounts of trehalose (0, 40, 60, 80, 100 % of trehalose) and their changes during storage times. The moisture content, color value, $^{\circ}Brix$, pH, texture profile, QDA and acceptance for samples were tested. As a result of the mechanical tests, moisture content and pH were increased while hardness were decreased with increased trehalose content. Also, moistness, gloss and after taste were increased with increased trehalose in the sensory attribute difference test. Acceptance test showed Yanggeng with 60% trehalose and 40% sucrose obtained the highest scores on flavor, taste and overall acceptability. During storage in refrigerator, Yanggeng sweetened with higher % of trehalose showed significantly higher moisture content, and lower syneresis and hardness than the control sweetened with only sucrose. The results of the sensory test showed that 60% trehalose Yanggeng was the highest in flavor, after taste, and overall acceptability.

Quality Characteristics of Noodles added with Tomato Powder (토마토 분말 첨가 국수의 품질 특성)

  • As an effort to increase the use of tomato as a food ingredient, this study prepared noodle with adding tomato powder and measured its quality characteristics. In the noodle containing tomato powder (0.5~2% of flour in volume), the water content was lower in the 1.5% and 2% tomato powder addition groups, and with increase in the tomato powder addition ratio the crude protein content and the crude fat content decreased and the carbohydrate content increased. The weight and volume of boiled noodle decreased with increase in the tomato powder addition ratio, and the pH of the water that boiled the noodle decreased and its turbidity increased with increase in the tomato powder addition ratio. Value L went down, and as to value a, the tendency of (-) green was stronger in the tomato powder addition groups than in the control. In addition, value b went up with increase in the tomato powder addition ratio. All the measurements of mechanical texture became significantly higher with increase in the tomato powder addition ratio, and DPPH radical scavenging activity and the total polyphenol content also went up. As to sensory palatability, the tomato powder addition groups were significantly higher than the control group in color, chewiness, and overall palatability. Specifically, palatability in terms of color and chewiness was highest in the 1.5% and 2% tomato powder addition groups, and overall palatability was highest in the 1.5% tomato powder addition group.

Quality Characteristics of Gruel Added with Ramie Leaves (모시잎을 첨가한 죽의 품질 특성)

  • This study was performed to investigate the quality characteristics of gruel added with ramie leaves. For this study, ramie leaves were made into powder, which consists of 5.37% of moisture content, 27.10% of crude protein, 5.99% of crude lipid, 47.17% of carbohydrate, 14.37% of crude ash. The gruel was prepared with rice powder, salt, and various levels (0, 2, 4, 6, 8%) of ramie powder. After making the gruel, it was examined for the effect of adding ramie on quality characteristics using a mechanical test and a sensory evaluation. The solid contents of gruel tended to decrease with increased amounts of ramie powder. As the amount of ramie powder increased, there were several changes in the sample groups as follows. The pH increased, and the lightness(L) and redness(a) decreased, while yellowness(b) increased; the viscosity decreased, whereas spreadability increased gradually. The results of the sensory evaluation showed that overall-acceptability had the highest scores in the gruel containing 6% level of ramie. In conclusion, the gruel added with 6% of ramie is the best in quality and acceptability.

Reinforcement, Thermal and Fire Retardant Improvement of Phenolic Composites by Surface Treatment of CFRP Chip (CFRP Chip 표면처리에 따른 페놀복합재료의 강화, 내열성 및 난연성 향상)

  • CFRP chip is the byproduct from carbon fiber reinforced plastic (CFRP) processing. CFRP chip is not simply a waste mainly composed of fine carbon fiber and epoxy resin. CFRP chip keeps matrix to maximize their reinforcing effect. To obtain a uniform length of carbon fiber in CFRP chip, chip was chopped ina mortar. CFRP chip should be purified to get better interface adhesion. Epoxy resin on the carbon fiber was removed by $H_2O_2$ surface etching treatment. Optimal dispersion and fabrication conditions of CFRP chip embedded in phenolic resin were determined by thermal stability for fire retardant applications. CFRP chip-phenolic composite exhibits better mechanical and thermal properties than neat phenolic resin. Surface condition of CFRP chip-phenolic composite was evaluated by static contact angle measurement. Contact angle of CFRP chip-phenolic composite was greater than neat phenolic due to heterogeneous condition of fine carbon fibers. From the evaluation for fire retardant (ASTM D635-06) test, thermal stability of CFRP chip-phenolic composite was found to be improved with higher concentration of CFRP chip.
