The Study on the Quality of Pre-Processed Vegetables in School and Institutional Food-Service (단체급식에서 사용되는 전처리 농산물의 품질 특성 분석)

  • This study was performed to investigate the quality of pre-processed vegetables used in school and institutional food-services. Pre-processed food materials (carrot, potato, and cabbage) frequently used in food-service were collected from 14 various processing company sources. The sensory and physico-chemical qualities of the pre-processed food materials were determined using sensory and instrumental analysis. For the physico-chemical analysis of the food materials, pH, total acidity, hardness, Hunter colorimeter value, reducing sugar and vitamin C content were determined. For the sensory quality evaluation, 15 panelist were trained and consensus was reached on the quality standards of the preprocessed materials (carrot, potato, and cabbage). Finally, appearance, color, texture, off-odor/taste, and overall quality were determined. In the physico-chemical analysis, there were no significant differences among samples collected from various processing companies. In sensory quality evaluations, the color quality of pre-processed potato was lower than that of other materials. From the coefficient correlations and partial least squares regression analysis between sensory and instrumental data, pH, total acidity, colorimeter values, and hardness were considered important components in assessing the quality of pre-processed vegetables.

Outbreak Pattern Forecasting of Food-borne Disease in Group Food Services in Korea (미래 집단급식 식중독 발생 양상 예측)

  • This study was undertaken to analyze the hygienic problems of group food services and to predict the outbreak patterns of future food-borne diseases. A delphi survey with 20 experts identified the main causes of food-borne outbreaks in group food services as improper hygienic management of raw food materials, washing of worker's hands, dividing the spaces and unsanitary retail storage. Vibrio parahaemolyticus, Escherichia coli (EPEC), non-typhoid Salmonella serotypes, Staphylococcus aureus, Escherichia coli (ETEC), norovirus, and the hepatitis A virus all have potential to cause outbreaks of food-borne disease. We analyzed the daily food use and the possibility of food-borne outbreaks in school food services for fruits, milk, fish, pork, eggs, and meat as raw food materials, and bibimbab, soybean sprouts muchim, spinach namul, cucumber sengchae, jabchae, and pork bulgogi as prepared food items. Frozen (${\leq}\;-20^{\circ}C$) and refrigerated ($0{\sim}10^{\circ}C$) processed foods are popular items in group food services. Their storage, heating, and chemical sanitization methods are potential sources of food disease outbreaks. Our results can be applied to a well-organized hygiene control system and can be used to develop menus for preventing food-borne outbreaks.

A Spatial Structure of School Meal Foods in Elementary and Middle Schools in Hwaseong City, Korea (경기도 화성시 초.중학교 급식품 공급의 공간구조)

  • The purpose of this paper in the case of elementary and middle schools in Hwaseong city is that clarify spatial structure by seasonal changes of supply region of school meal foods and changes in food mileage. This paper used account registers of school meal foods of the subject schools as data for this analysis. And this paper analyzed data in March, June, September, and December in order to understand seasonal changes of school meal foods. The spatial structure of school meal foods in elementary and middle schools in Hwaseong city take four with private contracts, limited competition, and bidding quotation by suppliers. With the crops in Hwaseong city, they consist of eco-friendly vegetables in Gyeonggi-do, domestic eco-friendly vegetables and fruits, general vegetables and fruits, and imported processed foods and agricultural products. In case of food mileage, around Hwaseong city, there are spatial structure with about 17 $ton{\cdot}km$, 26 $ton{\cdot}km$, and 11,000 $ton{\cdot}km$ respectively. The spatial structure of school meal foods supplies was determined by difference in feed rate of crops, eco-friendly agricultural products, imported processed foods, and imported agricultural products.

An Analysis of the Effect of the Pilot Project for the Management of the Elderly's Food Service in Cheongju City: Focused on improving hygiene control (청주시 노인급식 관리지원 시범사업의 효과분석 : 위생관리개선을 중심으로)

  • In this study, the hygiene control status of meals for the elderly was investigated for the elderly care facilities, communal living families, and day care centers, which are members of the Cheongju Social Welfare Food Management Support Center, and the improvement of food hygiene management was compared and analyzed to find out the effectiveness of the pilot project after conducting management support such as hygiene education for the elderly and providing related supplies and information. The study found that after the first support, the average score of overall feeding hygiene control increased significantly from 63.13 points (out of 100) to 75.10 points (p<0.001) and from 75.10 points (out of 100) to 80.89 points (p<0.001). After primary support, 16 out of 29 items showed significant differences in average scores in the checklist, and 7 out of 29 after secondary visit support (p<0.05, p<0.01, p<0.001). Based on the effectiveness of the above-mentioned pilot project to support senior citizens' meal service management, more welfare facilities for senior citizens should be continuously supported by the Foodservice Management Support Center.

The effect of School Milk Program for Junior & Senior High School Students on Milk Consumption (Tobit 모형을 이용한 중·고등학교 우유급식이 우유소비에 미치는 효과 분석)

  • Today’s teenagers were significantly deficient of calcium intakes, taking on the average only 55.4 percents of the recommended. Milk was the major source of calcium intakes, and therefore the school milk program need to be readdressed to remedy this problem. However, school milk program(SMP) was said to be simply the substitute for milk at home, so that no more than a minimal effect on total milk consumption be warranted. This Study aimed to find out whether or not the school milk program was an effective measure to increase teenager’s milk consumption and explored the relation between school milk and total milk consumption for 1,079 junior and senior high school students who were surveyed by questionnaire from 15th June to 15th July in 2006. A Tobit model was used for the statistical analysis. In this model, we first regressed milk consumption on 5 variables i.e. degree of satisfaction, participation in SMP, sex, school, region. But the variable region was not significant statistically. Then we regressed on 4 variables except for region. The results showed 4 variables were all significant and the marginal effect of variable ‘participation in SMP’ was 1.3. Especially, the marginal effect 1.3 means that the students participating in the school milk program consumed 1.3cups more than the non-participants, which indicated the effectiveness of school milk program to improve the calcium deficiency program of teenagers.

Dietary Habits and Foodservice Attitudes of Students Attending American International Schools in Seoul and Gyeonggi Area (서울.경기지역 외국인 학교 학생들의 식습관 및 급식만족도 -미국계 외국인 학교를 중심으로-)

  • This study was designed to obtain basic data for the globalization of Korean food and the expansion of food exports through contract foodservices. A survey of dietary habits and attitudes toward school foodservices was given to students in three American international schools served by a domestic contract foodservice management company located in Seoul and Gyeonggi area. The results showed an average of three meals taken daily 3.39 times for male students and 2.95 times for female students and the time required for a meal was about 24~26 minutes. The average breakfast frequency was 5.10 times(4.59 times for male students and 5.35 times for female students) and many students reported skipping breakfast due to a lack of time. The average weekly frequency of dining out was 1.78 times(2.15 times for male students and 1.60 times for female students). In all schools, irrespective of gender and grade, students responded that a desire for snacking was 'why they want to have cookies', and snacking hours were frequently listed as 'between noon and evening'. Many also responded that an unbalanced diet is the reason some snacks are 'not to their taste'. Overall, students were highly satisfied with the foodservice menu, although there was a significant difference in what was considered proper food temperature, proper food seasoning, suitable amounts of food, and freshness of food. Male and female students were specifically highly satisfied with the 'freshness of food materials' and 'variety of menu' respectively. Overall, all students were highly satisfied with the foodservice, including the 'cleanliness of tables and trays'.

  • By the government policy, the number of school which is routing a school lunch system is increasing. Since school lunch play an important part of the basis of physical strength in high, middle and elementary schools. There are many arguments over the safety of the soy-sauce made from acid-hydrolyzate. We study public and private high, middle and elementary schools located in Uijeongbu-city and the northern Seoul area. As a result, it showed us that the using rate of commercial fermented soy sauce was $46.3\%$, which was the highest. Chemical soy sauce followed it on presenting $4l/8\%$ and acid-hydrolyzated soy sauce was$11.9\%$.

2009년도 낙농육우산업 발전을 위한 설문조사 - 학교급식우유급식 제도화로 소비확대 '절실'

  • 사료값 폭등, 육우 가격 및 젖소 송아지 가격 폭락 등의 현 위기 상황을 반영하듯, 올해 낙농육우산업 발전을 위해서는 송아지 값 안정, 사료안정화기금 마련, 단체우유급식 제도화 등이 가장 시급하게 해결되어야 할 낙농현안으로 꼽혔다. 협회가 지난해 말 전국순회낙농인대토론회 기간 중 낙농가들을 대상으로 실시한 '2009 낙농육우산업 발전을 위한 설문조사' 결과에 따르면, '낙농산업발전에 있어 가장 해결이 시급한 과제는 무엇이라 생각하는가'라는 질문에 대해 ${\bullet}$사료기금안정화 기금 설립 ${\bullet}$송아지 값 안정 ${\bullet}$학교우유급식 등 단체우유급식의 제도화로 우유소비 확대 등의 답변이 각각 20%의 응답률을 보이며 나란히 최우선 해결과제로 지목도T다. 또한 ${\bullet}$낙농제도개선을 통한 전국단위 우유수급의 안정 문제도 19%의 응답을 얻어, 최근 진흥회의 70%유대 물량을 폐지하는 잉여원유차등가격제 개정문제 역시 농가들을 불안케 하고 있는 것으로 분석됐다. 이번 설문조사는 협회가 중장기 낙농산업발전을 위한 세부적인 활동방향 모색을 위해 농가현장의 여론을 수렴코자 지난해까지 실시한 전국순회 낙농육우인 대토론회 기간('08.11..27${\sim}$12.8)동안 강습회 참석자들을 대상으로 이뤄졌으며 설문조사에 참여한 응답자는 총 376명이다. 설문조사 내용은 낙농산업 발전방안, 낙농환경 문제개선. 목장경영 현안(경영지속 여부, 부채문제, 조사료확충의 애로점, 분뇨처리문제 등), 낙농자조금사업, 월간 "낙농육우" 및 협회 홈페이지 등에 대한 농가들의 의견 등이다. 협회는 이번 설문조사 결과를 향후 협회활동에 참고할 예정이다.

An Analysis on Students' Behavior for Consumption of Chicken Meat at the Cafeterias of University (대학교 급식 식당의 닭고기 메뉴 소비 실태 분석)

  • The cafeteria of university is one of the largest consumption point for the chicken meat of university students. However, few papers conducted research to analyze the consumption behavior of university students. The object of this paper is to conduct survey analysis about the students' behavior for consumption of chicken meat at the cafeterias of university and to measure WTP (Willingness-to-pay) for food cooked with domestic chicken meat. The results present that most of students show higher preference of domestic chicken meat and that they can pay 4,426 Korean won for food cooked with domestic chicken meat.

The Effect of the Cooks' Job on School Foodservice Management (학교급식 조리사 직무가 급식경영에 미치는 영향)

  • The aim of this study was to improve the school meal service and promote customer satisfaction by showing the importance of the cooks' job in school. For this, the discriminant analysis of merchandise development policies based on customer participation strategies. It is based on the questionnaire survey conducted from July 1st to July 31st 2008 at five middle schools in Jeonlado because it is relatively easy to collect objective data. 144 copies of questionnaire were distributed to each school, from which a total of 120 copies were collected. Statistical techniques employed include the reliability analysis and the regression analysis. SPSS 12.0 package program is used for statistical analysis. The results of the test of hypotheses can be summarized as follows. The analysis shows that cooks' job has a significant effect on the school foodservice management. Therefore, it is necessary to make a cooks' job more efficient to contribute to school foodservice management.
