  • Antioxidant activities of ethanol and water extracts of flesh, leaves, and peels of green and purple Kohlrabi were measured by rancimat method, total phenolic compound (TPC), DPPH radical scavenging effect, chelating effect, and reducing power analysis. The highest TPC was observed in ethanol extract from green peel and water extract from purple leaf with 12.00 and 11.70 mg/g of dry sample, respectively. The ethanol extracts from purple Kohlrabi leaf and peel exhibited strong DPPH radical scavenging effects with reducing power while water extracts from purple Kohlrabi leaf and peel also showed strong DPPH radical scavenging with chelating effects. Antioxidant index of ethanol and water extracts from green and purple Kohlrabi measured by rancimat was lower than butylated hydroxytoluene. These results suggest that extracts from purple Kohlrabi leaf and peel exhibited higher antioxidant activities than those of green Kohlrabi, and can be potentially used as proper natural antioxidants.

  • This study was carried out to investigate the physiological activityof the water extract from EA. The present study was done to investigate the effects of EA on cultured hepatocyte cell system and lipid peroxidation in $A{\beta}$ treatment conditions. Pretreatment of EA attenuated in cell cytotoxicity enhanced by increasing concentrations of $A{\beta}$. MDA level induced by $A{\beta}$ treatment was significantly increased and the level was slightly reduced by pretreatment of EA. The ability of EA to reduce cell death and MDA level induced by $A{\beta}$ suggest that EA may be a protective agent against free radical generating compounds such as $A{\beta}$. EA exhibited anti oxidative activity at all concentration tested. The extract was as good as antioxidative activity of the synthetic antioxidants, butylated hydroxy toluene and ascorbic acid. Furthermore, this was superior to that of natural antioxidant, a-tocopherol. In the presence of heavy metal ions ($Fe^{2+},{\;}Zn^{2+}$), EA showed strong antioxidative activity. The extracts showed about 3075% in the nitrite scavenging effect under pH 1.2 and $37^{\circ}C$ for 1 hr. There was significant difference among concentration of extracts.

  • This study was conducted to determine the antioxidant activities of ethanol and water extracts of Sargassum hemiphyllum. Antioxidant activities were evaluated by assessing total phenolic contents, 2,2-diphenyl-2-picrylhydrazyl (DPPH) radical scavenging activity, chelating effect, reducing power, and using the rancimat method. Total phenolic contents in the ethanol and water extracts were 17.91 and 13.44 mg gallic acid equivalents/g, respectively. Ethanol extract showed higher DPPH radical scavenging activity than water extract and similar activity to that of BHT. The reducing power of ethanol and water extracts increased in a concentration-dependent manner. Particularly, ethanol extract was more effective than water extract. Water extract showed a higher chelating effect compared to ethanol extract. The antioxidant index measured by rancimat was lower than those in BHT, but the ethanol extract showed a higher value than the water extract. The ethanol extract showed higher antioxidant activity than the water extract, except for the chelating effect. These results suggest that the ethanol extract of Sargassum hemiphyllum has more potent antioxidant activity and may be used as a source of natural antioxidants.

  • An alginate degrading enzyme from the Vibrio crassostreae PKA 1002 strain was used to hydrolyze the water extract of Sargassum thunbergii. To obtain the optimum degrading conditions for the S. thunbergii water extract, the mixture of the water extract and enzyme was incubated at 30℃ for 0, 3, 6, 12, and 24 h, and its alginate degrading ability was measured by reducing sugar and viscosity. A temperature of 30℃ for a period of 6 h was found to be the optimal condition for the enhancement of the alginate’s degrading ability. The pH of the enzymatic hydrolysate was not significantly different from that of the water extract. Overall lightness decreased, but redness and yellowness increased after enzymatic hydrolysis. Total phenolic compounds did not differ between the water extract and the enzymatic hydrolysate. DPPH radical scavenging activity and the reducing power of the enzymatic hydrolysate were lower than those of the water extract. However, the chelating effect of the enzymatic hydrolysate (80.08% at 5 mg/ml) was higher than that of the water extract (62.29%). These results indicate that the enzymatic hydrolysate possesses an anti-oxidant activity by way of the action of the chelating effect.

  • Seaweeds have a number of secondary metabolites, such as polyphenols, polysaccharides, and carotenoids, and have received much attention as a source of natural antioxidants. Thus, this study was carried out to examine the antioxidant activities from ethanol (EE) and water (WE) extracts of Zostera marina. Their antioxidant effects were investigated using total polyphenol contents (TPC), 2,2-diphenyl-1-picrylhydrazyl (DPPH) radical scavenging activity, reducing power, and chelating effect. TPC of EE and WE was 2.12 mg/g and 3.88 mg/g, respectively. DPPH radical scavenging activities of EE and WE were increased in a dose-dependent manner. In particular, EE had DPPH radical scavenging activity of 93% at a concentration of 0.5 mg/ml, and was higher than that of WE (71%). EE and WE increased reducing power in a concentration-dependent manner, but their effects were lower than that of the control (ascorbic acid). In case of chelating effect, WE was 66% at a concentration of 1 mg/ml, and was stronger than EE (6%). These results suggest that extracts of Zostera marina can be potentially used as proper natural antioxidants in the food industry.
