The Physicochemical and Biological Characteristics of Soksungjang with the Addition of Sorghum Koji (수수 코지 첨가량에 따른 속성장의 이화학적 품질 및 생리활성)

  • This study analyzed the quality characteristics of Soksungjang combined with sorghum koji, according to the amount of sorghum added and the length of the fermentation period. The moisture content of Soksungjang was the lowest in the control group when there was no sorghum koji added, but gradually increased as the amount of added sorghum koji increased. The reduction in the sugar content of sorghum Soksungjang did not change according to the fermentation period of the control group, but increased alongside the fermentation period when sorghum koji was added to Soksungjang. The amino nitrogen content increased from 67.20-80.73 mg% from the beginning of the fermentation period to 173.13-383.60 mg% at the end of the fermentation period, and the total polyphenol content increased from 260.25-351.28 mg% from the beginning of the fermentation period to 567.28 mg%-674.93 mg% to the end of the fermentation period. DPPH radical scavenging activity also increased as the fermentation period elapsed, and ABTS radical scavenging activity increased and then decreased slightly over the fermentation period. The antioxidant activity was the highest in the Soksungjang mixture with a 10% concentration of sorghum koji.

Evaluation of Replacement Ratio of Organic Fertilizers for Basal Application of Nitrogen Fertilizer in Pot Cultivation of Rice (벼 재배 시 유기질비료의 질소 밑거름 대체량 평가)

  • The objective of this study was investigated the effect of organic fertilizer(OF) application on the grain yield, protein content, and soil chemical properties in rice cultivation to evaluate the replacement ratio of OF based on basal fertilization of inorganic(nitrogen) fertilizer, In case of soil 1 with optimum range of organic matter for rice growth, the grain yield of rice in 70% and 100% treatments of OF were higher than the other treatments. In soil 2 with higher than the optimum range of soil organic matter, the grain yield of rice of NPK, 30%, 70%, 100%, and 300% treatments of OF showed no significant difference. When the protein criteria of rice quality was below 7%, the treatment of 30%, 70%, and 100% using OF in soil 1 were satisfied with protein criteria of rice. In case of soil 1, ammonium nitrogen content, electrical conductivity, and the organic matter in 30%, 70%, 100%, 300% treatments of OF showed similar tendency to NPK treatment. These results suggested that the substitution ratio of OF 70~100% could be appropriate to increase the yield and commercial quality for rice.

Quality characteristics of distilled soju using Dae-hong peaches (대홍 복숭아를 활용한 증류주의 품질 특성)

  • The study was conducted to confirm the possibility of producing alcohol beverages from Dae-hong peaches. Upon examining the quality characteristics of distilled soju using Dae-hong peaches, the alcohol content was 1.12 to 1.16 times higher than that from the atmospheric distillation method. Soju with 20 % peach extract content had the highest alcohol content and the lowest volatile acid content, indicating a low possibility of causing irritating odors. Acetaldehyde was 1.3-1.94 times lower in vacuum-distilled soju, and methanol was not detected in all samples. The absorbance value of furfural, a burnt component generated during distillation is high in atmospheric distillation, which can cause irritating odors. Upon examining the volatile fragrance components, isoamylalcohol and 1-propanol were found to be the main components, both of which were the highest in the treatment group with 20 % peach extract content. The electronic nose analysis revealed that this group showed the most opposing flavor patterns to the control group, and when distilled under reduced pressure with 20 % addition of Dae-hong peaches can produce high-quality soju.

A New Malting Barley Variety, "Daho" with High Yielding and BaYMV Resistance (맥주보리 호위축병저항성 및 다수성 "다호")

  • A new malting barley variety, "Daho", was developed from the cross between "Milyang85 and Suwon335" at the Department of Rice and Winter Cereal Crop (DRWCC) NICS, in 2007. An elite line, YMB2064-B-8-2-4-1-1, was selected in 2004 and designated as "Milyang134". It showed good agronomic performance in the regional adaptation yield trials (RYT) from 2005 to 2007 and was released with the name of "Daho", having high yielding and BaYMV resistance. The average heading and maturing dates of "Daho" were April 19 and May 27, which were 2 days later and 1 day earlier than those of "Jinyang", leading variety, at the regional adaptation yield trials (RYT), respectively. "Daho" had longer culm length (84 cm), more spikes per $m^2$ (915) and higher 1,000 grain weight (39.2 g) than those of "Jinyang" in paddy field condition. "Daho" was showed resistance to BaYMV at the regions of Naju, Jinju, and Milyang but moderately resistance at Iksan. However, the response of "Daho" to other environmental stresses was similar to "Jinyang". The yields of "Daho" at upland and paddy fields were about 5.20 MT/ha, 4.81 MT/ha, respectively, which is about 38%, 25% higher than those of "Jinyang" in the regional adaptation yield trials (RYT), respectively. It has higher grain assortment, germination capacity, water sensitivity and Kolback index but lower malt extract, diastatic power and filtration speed than those of "Jinyang".

Quality Properties of Makgeolli Brewed with Korean Sweet Potato Cultivars (Ipomoea batatas (L.) Lam) (한국 고구마 품종을 발효하여 만든 막걸리의 품질 특성)

  • This study examined the quality characteristics of Makgeolli to investigate the availability of Korean sweet potato cultivars as alcoholic beverages. The following sweet potato varieties were used: Gogunmi, Daeyumi, Shingunmi, Shinyulmi, Shincheonmi, Jinyulmi, Jinhongmi, Jeungmi and Pungwonmi; their alcohol contents ranged from 12.20% to 14.20%, with the lowest value in Makgeolli made with Jeungmi and the highest value in Makgeolli made with Jinhongmi. The DPPH radical scavenging activity was in the range of 37.51~77.02%, with the lowest value in Makgeolli made with rice (control) and the highest value in Makgeolli made with Gogunmi. As a result of analyzing the aroma component of sweet potato Makgeolli, 27 kinds of aroma components were detected, and six kinds of alcohols, 13 kinds of esters, four kinds of acids, and four kinds of other compounds were found. Regarding the number of aroma compounds, Makgeolli made with Shinyulmi showed the lowest number with 14 kinds, while Makgeolli made with Pungwonmi showed the highest number with 27 kinds.

Quality Characteristics of Byeolmijang Prepared by Different Variety of Roasted Grain Powders (볶은 잡곡 종류를 달리하여 제조한 별미장의 품질 특성)

  • The purpose of this study was to examine the quality characteristics of byeolmijang prepared several roasted whole grain powders (oat, brown rice, black soybean, corn) for eight weeks. As the fermentation progressed, the pH decreased from 6.10~6.12 to 4.48~4.92 and the total acidity increased dramatically from 0.41~0.48% to 1.67~2.24%. There were no differences in the moisture content. The content of reducing sugar decreased, in particular, brown rice sample(C) decreased significantly than the other samples during fermentation. In color, L and b-value decreased all samples, whereas a-value showed a tendency to slightly increase. The total cell counts and lactic acid bacteria revealed an increasing tendency during fermentation. In case of the amino-type nitrogen contents, it increased significantly during the fermentation period, especially control sample (A) showed the highest content significantly. The total polyphenol of all samples increased in the fermentation period. ABTS and DPPH radical scavenging activities also increased, especially corn sample (E) had the highest levels. In by electronic tongue analysis, corn sample (E) revealed higher umami and sourness than the control. So, by adding roasted corn powder, it can enhance function and taste of byeolmijang.

A New Sweetpotato Variety for Table Use, 'Pungwonmi' (식용 고구마 신품종 '풍원미')

  • 'Pungwonmi', a new sweetpotato variety, was developed for table use by Bioenergy Crop Research Institute, National Institute of Crop Science (NICS), RDA in 2014. This variety was derived from the cross between 'Benisatsuma' and 'Luby3074' in 2006. The seedling and line selections were performed from 2007 to 2009, and preliminary and advanced yield trials were carried out from 2010 to 2011. The regional yield trials were conducted at five locations from 2012 to 2014, and it was named as 'Pungwonmi'. This variety has cordate leaf shape, and its leaves, stems, nodes, and petioles are green. Storage root of 'Pungwonmi' has an elliptical shape, red skin, and light orange flesh. 'Pungwonmi' was moderately resistant to fusarium wilt, and resistant to root-knot nematode. Dry matter content was 31.2%, and texture of steamed storage root was intermediate. Total sugar content of raw and steamed storage roots of 'Pungwonmi' was higher than that of 'Yulmi'. ${\beta}$-carotene content of 'Pungwonmi' was 9.1 mg/100g DW. Yield of marketable storage root over 50 g of 'Pungwonmi' was 24.3 MT/ha under the early season culture, which was 46% higher than that of 'Yulmi'. The number of marketable storage roots per plant was 2.8 and the average weight of marketable storage root was 156 g under the optimal and late season culture. Marketable storage root yield of 'Pungwonmi' was 24.1 MT/ha under the optimum and late season culture, which was 26% higher than that of 'Yulmi'. (Registration No. 6428).

Quality Characteristics of Byeolmijang Prepared with Corn and Starter (옥수수와 종균을 달리 첨가한 별미장의 품질 특성)

  • This study investigated the quality characteristics of beyolmijang prepared with corn (steamed and roasted corn) with different pretreatments and simultaneously added starter (Bacillus velezensis JH1). pH decreased, whereas total acidity showed a tendency to increase. The moisture content decreased slightly according to the fermentation period. In color, the L and b values decreased in all samples, whereas the a value showed a tendency to increase significantly. In microorganisms, sample D had more lactic acid bacteria, whereas the mold content was lower. The total polyphenol content was highest at six weeks in sample E, and other samples showed a tendency to decrease over eight weeks. Antioxidant activity increased significantly. In particular, the content in sample E was significantly higher. Reducing sugar showed a tendency to increase as the fermentation period increased. The highest content was found in sample C containing roasted corn at six weeks of fermentation. Amino nitrogen and ammonia nitrogen content increased in all samples. As a result of electronic tongue, sample E prepared with steamed corn, roasted corn, and lactic acid bacteria showed a low salty taste, sour taste, and high umami taste and was considered a good material for the development of byeolmijang.

Reduction of Stem Cavity and Improvement of Flower Quality in Chrysanthemum 'Baekma' by Hydroponic Culture (양액재배에 의한 국화 '백마'의 줄기공동 경감과 절화품질 향상)

  • This study was conducted to investigate effect of ionic strength and feeding times of a nutrient solution on reduction of stem cavity size and improvement of flower quality in chrysanthemum 'Baekma'. A nutrient solution was applied with different strengths at three stages, namely, transplanting, budding, and flowering. The solution EC was adjusted as 1.61.82.0, 1.81.81.8, 1.82.01.8, and $2.02.02.0dS{\cdot}m^{-1}$ in four treatments. Feeding frequency per a day were 4 times for 12 min., 8 times for 6 min., 12 times for 4 min., and 18 times for 2.7 min. each. Cut flower length as affected by different strengths of a nutrient solution was the greatest in the plot of EC $2.02.02.0dS{\cdot}m^{-1}$. However number of leaves, stem diameter, and leaf size were greater in EC $1.82.01.8dS{\cdot}m^{-1}$ than in other treatments. Also, petal number of petals was the greatest and stem cavity size was the smallest in the plot of EC $1.81.81.8dS{\cdot}m^{-1}$. Plant height, number of leaves, stem diameter, leaf size were greater in the plot with 12 times feed ing per a day. number of petal was most in the plot with 8 times feeding per day, while stem cavity size was the smallest in the plot with 12 times feed ing per a day. Therefore, the better plant growth, the smaller stem cavity size.

Breeding of Purple Standard Carnation "Jasujung" with Fragrance for Cut Flower (향기 있는 자주색 대형 스탠다드 카네이션 "자수정" 육성)

  • New standard carnation cultivar "Jasujung" was bred from the cross of red standard cultivar "Francesco" and purple standard cultivar "Saturn" at the National Institute of Horticultural & Herbal Science. It was crossed in 1996 and finally selected in 2000 after investigation of the characteristics for 4 years from 1997 to 2000. "Jasujung", purple standard cultivar for cut flower, has good fragrance and long stem. Especially, it is strong resistance against Fusarium wilt. This cultivar is recommended to grow over $8^{\circ}C$ at night and under $25^{\circ}C$ at days.
