국내외 표고 균주의 단백질 및 아미노산 함량

  • 표고는 단백질, 무기질, 비타민과 같은 영양소가 골고루 함유되어 있고 독특한 맛과 향기를 가지고 있어 식용으로 널리 이용되고 있다. 이들 성분 중 단백질 및 아미노산은 생체기능 및 대사에 관여하는 영양소이며 풍미와도 밀접한 관계를 가지고 있다. 본 연구에서는 국내산표고균주와 수입표고균주의 조단백질과 아미노산 함량을 조사하였으며, 국내산표고균주 4종과 수입표고균주 4종의 함량을 비교하였다. 국내산표고균주의 조단백질 함량은 25.36~34.11%, 수입표고균주는 18.91~28.70%로 나타났으며, 아미노산은 16종류의 아미노산이 분석되었다. 국내산표고균주와 수입표고균주의 구성아미노산 함량은 각각 8,318.66~17,672.59mg%와 9,828.10~16,944.87mg%였다. 국내산표고균주와 수입표고균주의 유리아미노산 함량은 각각 466.78~899.82mg%와 407.12~669.34mg%로 나타났다. 국내산표고균주와 수입표고 균주의 필수아미노산 함량은 각각 27.92~37.67%, 33.74~61.59%로 확인되었다. 수입표고균주의 필수아미노산이 국내산표고균주에 비하여 높은 비율을 나타내었으나, 표고의 아미노산 함량이 차이가 있어 수입산표고균주의 필수아미노산 함량이 국내산보다 높다고 보기는 어렵다. 이러한 결과는 표고의 산업화에 유용한 정보를 제공하고 표고의 영양학적 지표 자료로 활용될 수 있을 것으로 보여지며, 추후 더 많은 시료를 수집하고 분석항목을 다양화한 연구를 지속적으로 진행할 예정이다.

The Sensory Properties of Imported and Domestic Pork Bellies in Korean Market (한국시장에 유통 중인 수입산 및 국내산 삼겹살의 관능적 특성)

  • To evaluate the sensory characteristics of domestic or imported chilled and frozen bellies, twelve samples were purchased and tested Sixty panels of sensory evaluation were consisted of six groups by sex and age. Frozen bellies were no difference in flavor, taste and tenderness. However, many panels favor the juiciness and acceptability of imported ones significantly compared to those of domestic ones(P<0.001). Especially, frozen bellies from northern America were tended to be more accepted than other products. The imported ones were significantly preferred to domestic ones irrespective of age. The results of sensory evaluation of frozen bellies between imported and domestic ones were also confirmed by tested people. It was significantly preferred in domestic frozen bellies(P<0.05). However, one of the domestic from C company was not significantly different from northern products, but was more favor significantly than EU ones(P<0.05). According to the age of tested panels, 20's age preferred the domestic ones of C company. In contrast, the groups of 30's and 40's age preferred the northern American produce.

The Geographical Discrimination of Korean and Chinese Soybeans (Glycine max(L.) merrill) Using NMR Relaxation Methods (NMR relaxation 기법을 이용한 한국산과 중국산 대두의 원산지 판별)

  • To discriminate the geographical origin (Korea vs. China) of soybean (Glycine max(L.) merrill) samples (Korean samples n=25, Chinese samples n=24), proximate composition of soybeans and relaxation times were analyzed using low field NMR. Composition results indicate that there are no significant differences in moisture, fat, or ash contents between soybeans. The crude protein content of Korean soybeans, however, was higher than that of Chinese soybeans (p<0.05). The relaxation times of T1-IR (p<0.0001), T1-SR (p<0.0001), and T2-SE (p<0.0086) in Korean soybeans were longer than those in Chinese soybeans. The geographical origin of soybeans could be identified using a canonical discriminant analysis using two relaxation times (T1-IR and T1-SR) with 96% accuracy. Furthermore, in this study, a canonical discriminant analysis using four relaxation times (T1-IR, T1-SR, T2-SE, and T2-CPMG) could discriminate the geographical origin with 100% accuracy. It was possible to identify the geographical origin of Korean and Chinese soybeans using relaxation times from 10 MHz NMR.

Properties of Nutritional Compositions and Antioxidant Activity of Acorn Crude Starch by Geographical Origins (도토리묵 제조용 조전분의 원산지별 성분 및 항산화 특성)

  • Nutritional compositions of acorn crude starch were analyzed according to country of origin, especially the mineral and sugar contents. Regarding the three kinds of starch of domestic (South Korea, KAS), Chinese (CAS), and North Korea (NAS) origins in the Korean market, NAS had the lowest moisture content as well as the highest contents of crude protein, crude fat, and carbohydrate. Regarding mineral contents, NAS contained the highest amounts of magnesium, calcium, sodium, potassium, and phosphorous, whereas CAS contained the highest iron and zinc contents. There were no significant differences in acidity and pH. Analysis of the monosaccharide contents of the starches showed that glucose was the highest in KAS while sucrose was the highest in CAS. The Hunter color L value was the lowest in NAS, whereas a and b values were the lowest in CAS. Total phenolic content was the highest in NAS. NAS had the highest DPPH and hydroxyl radical scavenging activities ($IC_{50}$: 47.0 mg/mL for DPPH, 0.038 mg/mL for hydroxyl) whereas KAS had similar DPPH ($IC_{50}$: 73.7 mg/mL for CAS, 86.8 mg/mL for KAS) and hydroxyl radical activities ($IC_{50}$: 0.041 mg/mL for CAS, 0.044 mg/mL for KAS) as compared to CAS.

Physiological Activities of Korean and Chinese Viola mandshurica Extracts (국내산과 중국산 자화지정(Viola mandshurica) 추출물의 생리활성)

  • This study was carried out to compare the physiological activities of the extracts from Korean and Chinese Viola mandshurica W. Baker. The water extract from leaves of Chinese V. mandshurica exhibited the highest extraction yields of 30.45 g/100 g and the highest content of total flavonoids as 102.30 mg/g. Also, its ethanol extract showed the best content of polyphenol compounds as 136.16 mg/g. The leaf extract of Korean V. mandshurica produced higher electron donating abilities (EDA) of 92.69% (KLW) and 93.61% (KLE) than the other fractions. The strongest SOD-like activity was shown in the ethanol extract from Korean leaves of 17.28% at the concentration of 1.0 mg/mL. The nitrite scavenging abilities (NSA) of the leaf extracts of V. mandshurica from China were intense over 50% at pH 1.2 and 3.0. In the results of inhibitory rates of xanthine oxidase (XO), both ethanol extracts from Korean and Chinese leaves were higher than the other fractions as 98.67% and 93.80% respectively. Effect of tyrosinase inhibition was the highest in the water extract (45.04%) of Chinese leaves, followed by its ethanol extract (31.36%). The results of EDA, SOD-like activity and XO inhibition of the leaf extracts from Korean V. mandshurica were higher than those of Chinese, on the other hand, determinations on total polyphenol contents, NSA and tyrosinase inhibition were higher in those of Chinese.

  • 본 연구에서는 율무(국산, 중국산)를 볶음온도를 $190^{\circ}C$, $210^{\circ}C$와 볶음시간 15, 20, 25분으로 처리하여 이화학적 특성 및 항산화능에 대하여 살펴보았다. 수분, 지방, 회분함량의 경우 볶음조건에 따라 큰 차이는 나타나지 않았고, 국내산과 중국산의 함량은 비슷하게 나타났다. pH의 경우 볶음온도, 볶음시간이 높아질수록 감소하는 경향을 나타내었다. 국내산, 중국산 율무에 따라서의 pH의 차이는 나타나지 않았다. 분말의 L값과 b값은 볶음온도가 높아짐에 따라 감소하는 경향을 나타내었다. 율무 분말의 갈변도 볶음온도, 볶음시간이 높아질수록 증가하였고, 중국산 율무가 갈변도의 영향을 많이 받는 것으로 나타났다. 총당의 경우 볶음온도, 볶음시간이 높아질수록 증가하였고, 국내산, 중국산 율무에 따라서의 값의 차이는 나타나지 않았다. 페놀성 물질 함량도 볶음온도, 볶음시간이 길어질수록 증가하는 경향을 나타내었다. 국내산, 중국산 모두 $210^{\circ}C$의 조건에서 큰 폭의 변화를 보였다.

Comparison of Biological Activities of Epimedium koreanum Nakai Produced in Korea and China (국내산과 중국산 삼지구엽초의 생리활성 비교)

  • This study was carried out to compare the biological activities of Epjmedium koreanum Nakai grown wild in Korea and China. The antioxidative effect of E. koreanum Nakai-extracts grown wild in Gangwondo was 78%, which was higher than that in China as 71%. The inhibition ratio of growing cancer cells was estimated as 89, 91 and 86% for human liver, lung and breast cancer cell lines, respectively in adding 0.1 g/l of ethanol extracts of E. koreanum grown in Korea. The hepatoprotective effect and Angiotensin Converting Enzyme (ACE) inhibiting effect of Korean one were also observed as 124 and 87%, respectively, which were also higher than those produced in China. There was not much difference between Korean and Chinese one in inhibiting ${\alpha}-glucosidase$ activities in all ranges of supplement. It was proved that most effective extraction solvent was mixed type as water and ethanol (1:1, v/v) to have higher biological activities from both Korean and Chinese ones.

Determination of Polycyclic Aromatic Hydrocarbons in Sesame Oils Derived from Sesame Seeds of Different Places of Origins (원산지가 다른 참깨로 제조한 참기름에서의 polycyclic aromatic hydrocarbons 함량 분석)

  • Polycyclic aromatic hydrocarbon(PAH) contents were evaluated in sesame oils from sesame seeds of different origins and in commercial samples using HPLC with fluorescence detection. The sesame seeds, which had been harvested from India, China, and Korea, were roasted at $250^{\circ}C$ for 25 min, and the commercial sesame oils were purchased from a local market. The recoveries for eight PAHs spiked into the sesame oils ranged from 80.2 to 99.2%. The mean levels of total PAHs in the sesame oils harvested from China, Korea, and India were 3.97, 1.57, and 1.20 ${\mu}g$/kg, respectively. The PAH contents in the commercial sesame oils ranged from 0.79 to 2.15 ${\mu}g$/kg.

Application of Electronic Nose in Discrimination of the Habitat for Black Rice (전자코를 이용한 검정현미의 산지판별)

  • The discrimination of the agricultural origin, especially locally produced of imported products such as black rices was investigated by using electronic nose. Volatile components from these products were discriminated by six metal oxide sensors without pretreatment. Pattern recognition was carried out. Principal component analysis showed the differences between imported and locally produced ones. The number of 57 from 69 species of black rices were recognized as locally produced one (83.33%) and 11 from 13 species one (imported black rices) was correctly discriminated. Unknown habitat of black rice could be identified by artificial neural network system whether the imported or not. Also commercial electronic nose (E-nose 5000) that was combined with metal oxide sensor and conducting polymer sensor showed 92.75% (locally produced black rices) and 92.31% (imported one) of discrimination.

Comparative Studies on the Fatty Acid Composition of Korean and Chinese Sesame Oils and Adulterated Sesame Oils with Commercial Edible Oils (국내산 및 중국산 참기름과 변조 참기름의 지방산 조성에 관한 연구)

  • This study was carried out to determine the composition of fatty acids from the samples such as Korean and Chinese sesame oils and adulterated sesame oils with commercial edible oils including soybean and corn oils collected in Gyeongnam area. The fatty acid composition of sesame oils extracted from commercial Korean and Chinese sesame showed similar pattern except the result that Korean sesame oils contained lower levels of palmitic acid, stearic acid and higher level of linolenic acid than Chinese sesame oils. In adulterated sesame oils with commercial soybean oil, the composition of linolenic acid was increased 0.73$\pm$0.05%, 1.25$\pm$0.04% by adding of commercial soybean oil, 3%, 9%, respectively. And that of the linoleic acid was 50.22$\pm$0.06%, 51.14$\pm$0.05% by 5%, 9% addition of commercial corn oil, respectively. From these results, sesame oils and adulterated sesame oils with commercial edible oils will be verified by the composition analysis of fatty acids.
