Quality Characteristics of Backsulgi Added with Job′tears and Brown Rice (율무쌀과 현미를 첨가한 백설기의 관능적 품질 특성)

  • This study attempted to examine the sensory quality, the degree of gelatization, color, texture and moisture content of Backsulgi added with Jobs'tears and Brown rice. The results were as follows: In sensory quality Backsulgi added with 10% Jobs'tears and Brown rice showed the most favorable sensory evaluation. In view of color, flavor, afterswallowing and overall quality, 10% Backsulgi was preferable than those of other Backsulgi added with Jobs'tears and Brown rice. The moisture contents was about 36-40%. There are not changed after 24hr and 48hr. L-value on the control group was high, 90.08. and Al, A2, A3 and A4 group were 80.65, 71.63, 68.66 and 61.50 respectively. L-value on the Backsulgi added with Jobs'tears was decreased as the amount of Jobs'tears. The gelatinization of Backsulgi added with Jobs'tears and Brown rice was Increased as the amount of Jobs'tears and Brown rice.

Physical and Sensory Properties of Peeled Ginkgo Nuts Prepared under the Different Dehydration Conditions (내피제거 은행의 물리적 및 관능적 품질 특성)

  • The effects of different dehydration conditions for the removal of ginkgo nut inner coat on peeled ginkgo nuts were examined using physical and sensory methods. Dehydration of ginkgo nuts at $90^{\circ}C$ for 120 min resulted in greater hardness, lightness (L), redness (a), yellowness (b), and firmness. Higher roasted flavor and larger holes were observed with dehydration at $150^{\circ}C$ for 30 min and greater cooked ginkgo flavor and green color with dehydration at $120^{\circ}C$ for 50 min. Based on these findings, dehydration at $120^{\circ}C$ for 50 min was determined as the adequate hot air dehydration condition for the removal of ginkgo nut inner coat. Ginkgo nuts stored at $25^{\circ}C$ maintained overall desirability up to 4 weeks. In ginkgo nuts stored at $4^{\circ}C$, all sensory desirabilities evaluated were reasonably high until 60 days of storage; desirability of appearance decreased moderately at 80 days of storage, and appearance became very undesirable at 180 days. Ginkgo nuts stored at $-18^{\circ}C$ showed little changes until 10 months of storage, but slight decreases in overall desirability, flavor, and texture were noted at 12 months.

Comparative Study of Food Components and Sensory Properties of Common Porphyra yezoensis and Functional Porphyra yezoensis (일반 김과 기능성 김의 식품성분과 관능평가 비교 분석에 관한 연구)

  • This study is to compare food components and the sensory properties of common and functional Porphyra yezoensis, Pyroligneous liquor, Salicornia herbacea L. and Salicornia herbacea L. treated with oak charcoal. The samples used in this study were provided by a local manufacturer. We analyzed their proximate composition, mineral content, heavy metal content and amino acids. We conducted the sensory evaluation before and after grilling Porphyra yezoenis. Common components are more plentiful in functional Porphyra yezoenis than in common except for carbohydrate and crude fiber. In the case of mineral content, generally functional Porphyra yezoensis contains much more mineral than common except for magnesium and zinc. Especially Salicornia herbacea L. treated with oak charcoal contains abundant iron. Also, Salicornia herbacea L. contains a lot of calcium potassium, copper and sodium. There is a little more heavy metal except for chromium, cadmium and lead in Salicomia herbacea L. treated with oak charcoal than in common that contains a lot of chromium, cadmium and lead, although a wide difference was not discovered between them. In the case of composed amino acid, there are much glutamic acid, glycine, isoleucine and phenylalanine in both Porphyra yezoensis. Especially alanine and phenylalanine are trebled in functional Porphyra yezoensis. Also, there are far more serine and lysine in Salicornia herbacea L. and Salicornia herbacea L. treated with oak charcoal than in common Porphyra yezoensis and Pyroligneous liquor. In the case of the sensory properties, there isn't a big difference before grilling Porphyra yezoensis; however, after grilling, most functional Porphyra yezoenis had good sensory properties results, especially Salicornia herbacea L. were better than Pyroligneous liquor.

Analysis of Component Factors Concerned in Taste of Korean Hot Pepper by Sensory Evaluation (관능평가를 이용한 고추의 맛에 관여하는 성분 요인 분석)

  • The contents of capsaicinoid, free sugars and organic acids of six varieties of Korean hot pepper, Supermanita, Dokyacheongcheong, Shinseokyeoi, Wangdaebak, Hanbando, and Chungyang, were measured. The sensory evaluations of its extracts were compared in order to investigate the indirect effect or reaction of the composition of taste components on sensory acceptability of Korean hot pepper. The contents of capsaicinoid were considerably from $37.8mg{\cdot}100g^{-1}$ to $164.1mg{\cdot}100g^{-1}$, and the contents of free sugars were from 9.3% to 18.2%, and the contents of organic acids were from 8.1% to 14.7% in Korean hot peppers. Although the pungent sensory evaluation of water extract of pepper powder was completely accordant with instrumental analysis result of capsaicinoid contents, they did not show a significant relationship to the sensory of taste. Multiple regression with capsaicinoid (CAP), total sugars (TS) and total organic acid (TOA) contents increased the correlation coefficient for sensory of taste to r = 0.927 and the coefficient of determination for them to $R^2=0.906$. However, we suggest the more efficient function for it which is composed of two independent variables only. As the result, a regression equation of Y = 0.69 X + 0.11 with $R^2=0.884$ was obtained for quantitative analysis of sensory evaluation of pepper taste by two factors between capsaicinoid and total free sugar.

Characteristics of p-Xylene Adsorption using Functionalized Mesoporous Silica (관능기화 메조포러스 실리카를 이용한 파라자일렌 흡착 특성)

  • This study was designed to examine the feasibility of functionalized mesoporous silica as the adsorbent for benzene, toluene, ethylbenzene, and xylene isomers (BTEX) in groundwater. p-Xylene was used as the model compound of BTEX. A series of functionalized mesoporous silica with MCM-41 type of structure was synthesized using a co-condensation method. Monoamine, triamine, nitrile, phenyl, and octyl groups were functionalized to the mesoporous silica structure. Adsorption sites for p-Xylene in a functionalized mesoporous silica were Si-O-Si covalent bond, the surfactant, and the functional group. Octyl-functionalized mesoporous silica with stearyltrimethylammonium chloride as a surfactant showed the highest adsorption ability. The maximum xylene adsorption capacity of the octyl-functionalized mesoporous silica with stearyltrimethylammonium chloride based on Langmuir model was 4.17 mmol/g on $20^{\circ}C$, which was 2.9 times higher than that of MCM-41.

Effect of Cooking Tools and Concentration of Egg Solution on Textural Characteristics in Coagulation of Egg Solution (조리기구와 난액의 농도가 알찜의 품질특성에 미치는 영향)

  • The purpose of this study is to investigate textural characteristics of egg solution coagulated with steamer and microwave oven, and egg solution diluted various concentration of it with water or milk. Textural Characteristics of the samples were evaluated by the Sensory test and Rheometer. The results obstained were as follow; 1. Rheometer measurement indicated that the thicker is concentration of egg solution, the harder is samples 2. In sensory evaluation on the various concentration of egg solution, the panels on the overall quality showed the most favorite tendency that the sample diluted with 50% of water and the one with 70% of milk in use steamer; the sample diluted with 30% of water and the one with 70% of milk in use microwave oven.

Studies on the Sensory Characteristics of Korean Tea and Related Products (국산차(國産茶)의 관능적 품질특성에 관한 연구)

  • The sensory quality characteristics of 7 different types of Korean traditional tea products were analyzed. For the standardization of sensory testing condition, the optimum drinking temperature were measured with 50 students, and all the samples tested were found to fall in the range of $60-70^{\circ}C$. The optimum concentrations of tea for drinking were generally met with the amount recommended by the producer. A total of 45 sensory describing terms expressing the taste, odor, and mouthfeel were collected. Using the sensory describing terms as the character notes, flavor profile analysis was made for each tea product with 8 members of trained panel. The differences in quality characteristics of 29 test samples were evaluated and shown in the chart constructed by the quantitative descriptive analysis method.

  • The objectives of this review are to be aware of the differences between the smear-ripened and mold-ripened cheeses and to compare the sensory attributes of smear-ripened and blue-vein cheeses. Sensory attributes of cheese occupy a prominent place for the desirable overall quality of smear-ripened and blue-vein cheeses. Smear-ripened cheeses characterized by a smooth and brittle texture. Furthermore, smear-ripened cheeses have common grittiness characteristics, also slightly salty and sour flavor compared to blue-vein cheeses. Blue-vein cheeses are characterized by a softer, creamy texture and stronger smells when goat milk is used. Blue-vein cheeses have a fresh, clean, somewhat salty and acid with a slightly bitter tastes compared to smear-ripened cheeses. Finally, the differences in sensory attributes of smear-ripened and blue-vein cheeses such as texture, aroma, and flavor, can make them useful to determine the quality of cheeses.

Microbiological and Sensory Evaluations on Sesame Leaf of Bio Soybean Paste (깻잎 바이오 된장의 미생물 및 관능평가)

  • Microbiological and sensory evaluations of bio soybean paste prepared by sesame leaf and immobilized cells of Bifidobacterium animalis DY 64 were assessed. Bio soybean paste treated with 3.0-5.0% (w/w) of sesame leaf combined with 10% (w/w) immobilized cells increased a consumer acceptance due to enhancing odor and flavor. Aerobic microorganisms in bio soybean paste were significantly (P < 0.05) increased during 15 days of storage and then decreased slightly (P < 0.05) after 30 days of storage at room temperature. Food pathogens of Salmonella spp., Staphylococcus aureus and Escherichia coli were not detected in bio soybean paste during storage. It is concluded that preparation of bio soybean paste using sesame leaf, and immobilized cells of Bifidobacterium animalis DY 64 could be used to industrial application for enhancing consumer acceptance.

Assessment of Sensory Attributes and Safety of Cook-Chilled Buchu-jeon (Cook-chill 부추전의 관능성 및 안전성 평가)

  • The sensory and safety of cook-chilled Buchu-jeon were evaluated to provide to foodservice operation during chilled storage for 5 days. The sensory evaluations of cook-chilled Buchu-jeon were conducted according to 3 reheating methods which was frying pan, steam/convection oven and microwave oven. The sensory evaluations were made on 4 sensory attributes (taste, odor, color, and texture) by a 9-member panel using quantitative descriptive analysis (QDA). The Buchu-jeon reheated in the steam/convection oven, after 1 day storage at $3^{\circ}C$, obtained higher score in taste, odor and texture than the ones reheated in a frying pan and microwave oven. Three reheating methods didn't show any difference in taste, odor, color, and texture of Buchu-jeon at $3^{\circ}C$ for 3 days. The Buchun-jeon reheated in microwave oven at $3^{\circ}C$ for 5 days had a significant $(p\leq0.05)$ lower score odor and color than the ones reheated in frying pan and steam/convection oven. The safety of Buchu-jeon was also evaluated by measuring total count, coliform count, psychrotrophic count, acid value and peroxide value during 5 days of storage periods at $4^{\circ}C$C. Total counts of Pajeon was ranged from $5.0\times10^{1}$ CFU/g to $2.2\times10^{2}$ CFU/g and the coliform and psychrotroph were not detected at most experiments. The acid values were ranged from 1.80 to 2.18 mg of KOH/g of fat until 5 days at $4^{\circ}C$. And the peroxide values were ranged from 4.44 to 17.87 meq of peroxide/kg of fat until 5 days of storage period. Therefore, these results demonstrated that the cook-chilled Buchu-jeon is microbiologically and chemically safe during 5 days of storage period at refrigeration temperature.
