Determination of Several Phenolic Compounds in Cultivars of Grape in Korea (국내산 포도 품종의 주요 페놀계 화합물 함량 비교분석)

  • Natural polyphenolic compounds such as catechin, epicatechin derivatives, quercetin, and resveratrol, have been reported to have a wide range of biological activities against carcinogen and reactive oxygen species. The compounds can act together in synergy or can independently affect the activity. Contents of four compounds in different grape cultivar groups with different skin color were determined through HPLC. There were not significant differences in content of four phenolic compounds among the different skin color groups of the same grape cultivar groups, but were among different grape cultivars within the same skin color groups. Totally, contents of catechin, epicatechin derivatives were much higher than those of quercetin and resveratrol. In each skin color group, Campbell Early in Black, Seneka in Green, and Benigard in Red group showed highest contents, respectively. Nothing or a very small amount of four phenolic compounds was detected in some cultivars. This information would be useful for grape breeders and manufactures.

Effects of Night Temperature at Veraison on Berry Skin Coloration of 'Kyoho' Grapevines (포도 '거봉' 품종의 변색기 야간 온도 처리가 과피 착색에 미치는 영향)

  • We analyzed berry skin coloration, anthocyanin accumulation, and plant hormone contents in berry skins to determine the effect of night temperature at veraison on berry skin coloration in 'Kyoho' grapevines (Vitis labruscana L.). Vines were grown under 21, 24, and 27℃ at night for 20 days at veraison, from 40 to 60 days after full bloom (DAFB). Berry skin coloration of 'Kyoho' grapes was more suppressed in 27℃ treated vines, followed by that in 24℃ treated vines, than that in 21℃ treated vines. Cluster and berry weight and soluble solids content was lower in 24 and 27℃ treated vines than in 21℃ treated vines. Anthocyanin started to accumulate from 60 DAFB in berry skin of 21℃ treated vines, and malvidin and total anthocyanin content increased until 100 DAFB. The total and most of the individual anthocyanins decreased in 24 and 27℃ treated vines; however, peonidin did not decrease in 24℃ treated vines compared to that in 21℃ treated vines. Abscisic acid (ABA) peaked at veraison in berry skins of 21℃ treated vines and decreased thereafter until 100 DAFB. The increase in ABA content was inhibited in berry skins of 24 and 27℃ treated vines. Gibberellin (GA) content in berry skins decreased rapidly at veraison, with the decrease being slower under 27℃ than under 21℃. ABA/GA in berry skins of 21℃ treated vines peaked at 60 DAFB and decreased thereafter until 100 DAFB. However, ABA/GA decreased in berry skins of 24 and 27℃ treated vines, with reduced anthocyanin accumulation. Therefore, high night temperature (above 24℃) at veraison suppressed the berry skin coloration of 'Kyoho' grapes with changes in anthocyanin contents and composition due to the decrease in ABA/GA ratio and fruit soluble solids contents.

Effects of Binding Treatment of Branch on Fruit Enlargement and Coloring of 'Fuyu' Persimmon Fruits (단감 '부유'의 과실 비대와 착색에 대한 결박 처리 영향)

  • To investigate effects of binding treatments of branches (FMB, fruiting mother branch; PSB, secondary scaffold branch; SSB, primary scaffold branch) on enlargement and coloring of persimmon 'Fuyu' fruits in ripening period, the branches were bound by steel wire. For eight weeks after binding treatments, Hunter $a^*$ of fruit peel in FMB and SSB binding treatments was more increased than in the others. In fruit characteristics harvested at eight weeks after the binding treatments, the fruit weight was heavier in the binding treatments than in control, the first of those was in SSB binding. The fruit height was higher in SSB binding than in the others, but the fruit diameter was longer in FMB and SSB binding treatments. Solid soluble content was higher in FMB and PSB binding treatments. $Chroma^*$ of the fruit peel was higher in FMB and PSB binding treatments as Hunter $a^*$ and $b^*$ values were higher and lower in FMB and SSB binding treatments, respectively. Lycopene and $\beta$-carotene content in the fruit peel were higher significantly in PSB and SSB binding treatments, total chlorophyll content in all the binding treatments was lower than in control.

Effect of Leaf Removal Fruit Bearing Branch in Maturation Stage on Fruit Enlargement and Coloring of Persimmon (감 '부유'의 과실 비대 및 착색 증진에 대한 과실 성숙기에 결과지의 잎 제거 효과)

  • To investigate the effect of leaf removal on enlargement and coloring of persimmon fruits (Diospyros kaki L. cv. 'Fuyu'), four treatments control (0%), 20%, 50%, and 100% depend on leaf removal of fruit bearing branch were applied to persimmon trees. Sunlight intensities around fruits with treatments depend on removal level, compared with natural sunlight intensity (100 percentage level), was 7.9%, 13.6%, 16.4%, and 30%, respectively. Hunter $a^*$ of the fruit with control and 20% removal treatments to harvest season increased continuously. $Chroma^*$ of the fruit since the removal treatments of leaves increased continuously in all treatments, but from seventh week that had a decreasing tendency. The fruit weight and diameter were significantly heavy and short in treatments with 100% removal level. L/D ratio of the fruits had a significant difference between control and the other treatments. Soluble solids of the fruits lowed significantly in treatment with 50% removal level. Hunter $a^*$ of the fruits was better in treatments with control and 20% removal levels, Hunter $b^*$ and $Chroma^*$ lowed significantly in treatment with 20% removal level. $\beta$-Carotene and lycopene concentration of the fruits lowed in treatment with the higher of removal level, total chlorophyll contents had the opposite tendency to the pigments. All results considered, removal level of leaves around fruit on bearing branch in fruit maturation stage had effect on fruit coloring improvement.

The Effect of Several Paper Bags on Fruit Skin Coloration of Red Skin European Pear 'Kalle' (봉지종류가 적색과피 서양배 'Kalle'의 과피색 발현에 미치는 영향)

  • This study was conducted to elucidate the relationship between light and coloring and to obtain basic results for promoting redness expression in 'Kalle' (Pyrus communis L.) pear skin. It was investigated in location of anthocyanin layer by microscopic observation and differences in skin color expression of 'Kalle' bagged with paper bag which has different light transmittance rate and inside temperature. However, there was no anthocyanin layer in the brown skin and golden yellow color, anthocyanin layer was distributed in epidermins or hyperdermis of red skin pear and apple. Dark red colored 'Kalle' had more anthocyanin content, $29.8mg{\cdot}100g^{-1}$ FW than light red colored apple 'Hongro'. Light transmittance rate of physical characteristics used paper bags was the highest in white paper bag, 42.2% and it also had more light quantity, $8.9{\mu}mol$ than any other tested paper bags in specific wave length 650-655 nm. The maximum temperature of inner bag was higher about $3^{\circ}C$ in yellow paper bag. The red coloration and anthocyanin contents in no bagged fruits were higher than in any other bagged fruit. However, red color expression among the bagged fruits was higher in white paper bag than in double layered black paper bag and yellow paper bag. Also, chromaticity value seemd to be a good index to explain variation of fruit skin color, because anthocyanin content and chromaticity value were higher. Based on these results, it is desirable to cultivate 'Kalle' without bag for stable redness expression but bagging is essential for decreasing damage by insect in Korea. Further examination to find suitable time of removing paperbag for redness expression and decreasing insect damage. In addition, it is required to develop paperbag whose transmittance rate is high in specific light wavelength or temperature of inner bags is low. Skin Coloration and Endogenous Hormonal Changes of 'Kyoho' Grape by High Temperature at Veraison (변색기 고온에 의한 포도 '거봉'의 과피 착색 및 내생 호르몬 변화)

  • We analyzed the anthocyanin accumulation, abscisic acid (ABA), gibberellic acid (GA) contents and metabolic genes expression in berry skins under high temperature (High T) at veraison, in order to investigate the cause of bad coloration of 'Kyoho' grape due to High T in summer season. The coloration of 'Kyoho' grapes was stopped by High T for 10 days from veraison, and the fruit quality was not affected except skin color. Total anthocyanin of skins was decreased by High T treatment and malvidin and peonidin were decreased compared to control. In berry skins, ABA content did not decrease by High T treatment, but it was rather higher than that of control. GA content was increased about two times compared to the control after 10 days of High T treatment, which caused decreased ratio of ABA/GA. Analysis of expression of anthocyanin biosynthetic genes showed that the early biosynthetic genes were not affected by High T and the expression of UFGT was decreased by temperature treatment. ABA biosynthetic gene expressions were not affected by High T and the expression of GA20ox1 and GA2ox1/2, which are known to regulate the biosynthesis and inactivation of GA, were increased and decreased by High T, respectively. Therefore, the bad coloration of 'Kyoho' grapes under the High T at veraison was due to inhibition of anthocyanin biosynthesis of skin, and it was suggested that the anthocyanin biosynthesis was controlled by the ratio of ABA and GA rather than ABA content.

Effects of Urea and K2SO4 treatment on the mineral nutrient concentration and fruit skin color of 'Mibaekdo' peach fruits at harvest (Urea와 K2SO4 처리에 의한 복숭아 '미백도'에서 수확 시 과실의 무기성분 농도 및 과피색 변화)

  • This study has been conducted to investigate the effect of Urea and K2SO4 treatment at stone hardening stage and 20 days before harvest on soil chemical properties, mineral nutrient concentration and quality of 'Mibaekdo' fruit peach. K concentration after Urea and K2SO4 treatment in soil was increased significantly by Urea 162g+K2SO4 188g/tree(standard amount) treatment at stone hardening stage, K2SO4 1.0% tree-spray, Urea 81g+K2SO4 94g/tree(half amount), Urea 162g+K2SO4 188g/tree and Urea 324g+K2SO4 376g/tree(double amount) soil treatment before harvest 20 days compared to control. T-N, K and Ca concentration in leaf was increased significantly by all treatment. but Na concentration in leaf was increased by Urea 0.5% and K2SO4 1.0% tree-spray treatment before harvest 20 days. T-N concentration in fruit skin was increased significantly by standard amount soil treatment, which decreased by K2SO4 1.0% tree-spray and half amount soil treatment. T-N, K and Ca concentration in fruit flesh(1~10mm depth flesh from peel) were increased markedly by all treatment excepted Urea 0.5% tree-spray. The leaf weight at harvest was increased markedly by Urea 0.5% tree-spray, standard amount and double amount treatment before harvest 20 days. Fruit weight was increased significantly by standard amount compared to all treatment. Red fruit skin(Hunter a value) progress was effective by K2SO4 tree-spray, half amount and double amount treatment before harvest 20 days. Fruit SSC was increased significantly by Urea 0.5% and K2SO4 tree-spray before harvest 20 days, standard amount treatment at stone hardening stage compared to control.

Effect of Storage Temperature on Fruit Quality Attributes and Storage Disorders in Cold-stored 'Sangjudungsi' Persimmon Fruit (저온저장 온도가 '상주둥시' 감의 과실품질 및 저장장해 발생에 미치는 영향)

  • The objective of this study was to evaluate the effect of storage temperature on fruit quality attributes and physiological disorders including peel blackening in 'Sangjudungsi' persimmon (Diospyros kaki Thunb.) fruit stored in air at -1, 0.5 or $3^{\circ}C$ for up to 3 months. Higher storage temperature reduced ethylene production but not respiration rate, compared with lower storage temperature. Flesh firmness decreased continuously as storage time passed but firmness was reduced rapidly in the fruits stored at higher storage temperature. Fresh weight loss increased at higher storage temperatures. Soluble solids content was higher at lower storage temperature than at higher storage temperature. All color variables ($L^*$, $a^*$, $b^*$) were reduced by lower storage temperature, compared with higher storage temperature, regardless of tissue regions. Fruit softening increased as storage duration advanced and with the increase in storage temperature. Results indicated that the 'Sangjudungsi' persimmon fruits stored at higher storage temperature ($3^{\circ}C$) could not retain fruit quality properly on account of lower flesh firmness and higher incidence of peel blackening and fruit decay, compared with lower storage temperature.

Effects of Tree-spray of Calcium Formate Compound Extracted from Oyster Shell and Active Agent on the Calcium Concentration, Fruit Skin Shape, and Quality of 'Fuji' Apple Fruit (굴 껍데기에서 개미산으로 추출한 칼슘화합물과 활성제의 수관살포가 사과 '후지' 과실의 칼슘농도, 과피 형태 및 품질에 미치는 영향)

  • This study was carried out to investigate the effects of tree-spray of calcium formate compound extracted from oyster shell with several active agents on the calcium concentration, fruit skin shape and quality of 'Fuji' apple. The tree-spray of calcium formate compound extracted from oyster shell (Os-CaF, $52.4\;mg{\cdot}kg^{-1}$) appeared to have more effectiveness on the calcium translocation into leaves, fruit skin and flesh than control. Addition of adjuvants to Os-CaF increased calcium concentration of 'Fuji' apple when sprayed three times before harvest. Among the active agents examined, the treatment ascorbic acid and poly-vinyl alcohol (PVA) in leaves, Ag-colloidal and PVA in fruit skin, ascorbic acid, Ag-colloidal, and PVA in fruit flesh exhibited highest effectiveness. Fruit qualities (fruit weight, firmness, soluble solids, acidity and Hunter value) were not affect by Os-CaF on different concentrations and solutions of active agents.
