열처리가 유자의 과피 색상에 미치는 영향

  • 중온처리가 유자의 품질에 미치는 영향을 조사키 위해 유자를 4$0^{\circ}C$에 1~3일간 처리한 후 이를 5$^{\circ}C$에 저장하면서 유자의 품질인자로서 중요한 과피의 표면색상 변화를 무처리구와 비교하였다. 열 처리한 유자를 5$^{\circ}C$의 저온 저장고에 1일 방치하여 품온을 낮춘 후 유자의 과피 색을 분석하였던 바 “L”값과 “b” 값은 무처리구와 뚜렷한 차이를 보이지 않았으나 “a”값은 무처리구에 비해 낮은 값을 보였는데 이러한 차이는 열 처리시간이 길수록 현저하였다. 또한 열처리 정도에 따라 hue angle값과 chroma값은 차이를 보이지 않았으나 $\Delta$E값과 hue값은 처리구간에 뚜렷한 차이를 보였다. 열처리한 유자의 저장 중 과피의 색상 변화를 조사하였던 바 “L”값과 “b” 값은 감소하였으나 “a”값은 증가하였다. 이 중 열 처리구의 “a”값 증가율과 “b” 값 감소율은 무처리구에 비해 낮았는데 이와 같은 차이는 열처리 정도에 따라 보다 뚜렷하였다. 또한 저장기간이 경과함에 따라 $\Delta$E값은 증가하였고 chroma값, hue값 및 hue angle값은 감소하였는데 이들 값의 변화정도 역시 열 처리정도에 따라 차이를 보였다. 한편 이와 같은 열 처리구와 무처리구의 과피 색상 차이는 과피의 미세구조 관찰 결과 열처리가 과피 표면 왁스의 분포에 영향을 주었고, 과피 색소를 과피 표면 부위에 고정시켰으며, 저장중 과피색소의 내부침착을 억제하였기 때문이었던 것으로 판단되었다.

  • 비타민C가 많이 함유되어 있는 감귤류는 과육과 과피에 많은 영양성분을 함유하고 있다. 과육에는 비타민C, 각종 유기산, 비타민B복합체 등이 다량으로 함유되어 있고, 과피에는 펙틴과 비타민C, 베타카로틴 등이 함유되어 있어 암세포의 발달을 억제하고 생리활성물질로 피부노화를 지연시키며 미백효과를 가져다주고 있다. 또한 과피내의 '테레빈유'라는 기름성분으로 세포 노폐물의 배출을 양호하게 하여 다이어트와 복부비만을 억제하는데 좋은 효과가 있다고 알려져 있다. 이러한 감귤류는 다른 과수품종보다 비타민P, 비타민B군과 단백질 등이 많이 함유되어 있어 모세혈관을 보호하며 심혈관질환과 뇌졸중, 뇌출혈 등을 억제하는 효과를 가지고 있다고 보고되고 있다. 따라서 본 실험에서는 유자, 당유자, 청귤, 하귤, 병귤, 사두감, 레몬, 자몽, 오렌지 등의 과피와 과육 추출물로부터 항산화 활성을 조사하였던 바, 대부분의 감귤류에서 좋은 폴리페놀 함량을 보였으며 특히 과피에서 더 양호한 결과를 나타내었다. 이러한 결과들은 레몬, 자몽, 당유자, 유자, 청귤 등의 과피에서 과육보다 더 양호한 항산화 활성을 나타내었다. 이러한 결과들로 미루어 볼 때 감귤류 과육과 더불어서 과피에서도 매우 양호한 영양성분과 항산화 활성이 있다는 것을 확인 할 수 있었다.

A Study on the Flavor Constituents of the Citron (Citrus junos) (유자의 향미성분에 관한 연구)

  • To accept basic data of utilizing of citron (Citrus junos) as a raw material of industrial produce, major chemical components of citron were investigated. Weight ration of poet flesh md seed of citron were 44.7, 42.9 and 12.4%, respectively. Comparing proximate composition of peel and flesh of citron, peel showed higher in crude protein crude fat and crude ash than flesh but lower in moisture, carbohydrate and soluble solid. The major free sugars of citron were fructose, glucose and sucrose. Peel contained higher in sucrose than flesh, but lower in fructose and glucose. The content of K md P were 309 and 15.9 mg% in peel and 175 and 22.4 mg% in fresh, respectively. The main organic acids of citron were citrate, malate and oxalate. Total organic acid content of flesh (6.6%) was higher than that of peel (4.6%). Total amino acid content of peel and flesh were 671.9 and 315.7 mg%, respectively. Free amino acid content of peel and flesh were 324.3 and 280.7 mg%, respectively, and the major ones were proline, serine, glutamic acid, aspartic acid, and histidine. Total 49 volatile compounds were detected and 26 of these ones were identified in cion. The major volatile component of citron was limonene, which consists of 80% among the total volatiles in peel by all extract methods.

Quality Characteristics of Bread with Persimmon Peel Powder (감 과피 분말을 첨가한 식빵의 품질특성)

  • This study was performed to evaluate the physiological and sensory properties of breads with different ratios of persimmon peel. Moisture activation of the bread loaf decreased as storage period increased with a smaller range of decrease in the persimmon peel added group. The amount of weight increased, and volume fell to some degree. Adding persimmon peel increased the RVA temperature, whereas maximum decreased. The color change during storage was due to the addition of control and 4% in group a values except there was no significant difference. As the result of measurements using a texture analyzer, hardness, springiness, cohesiveness, gumminess, and chewiness properties decreased. The sensory test results revealed that the 4% and 6% added persimmon peel bread was the best.

Chemical compositions and antioxidant activities depending on cultivation methods and various parts of yuza (유자 재배방법에 따른 부위별 화학적 성분 및 항산화 활성)

  • This study was conducted to investigate the quality properties depending on the cultivation methods (general, organic, pesticide-free) of yuza and its various parts (peel, pulp, seed). The contents of hesperidin were the highest in yuza feel grown by pesticide-free method (13.23 mg/g). The contents of naringin presented a higher content in the peel, especially which of the general (4.62 mg/g) showed the highest value. Vitamin C analysis showed the highest content in the peel, significantly varied according to the cultivation method and various parts (p<0.05). Vitamin C value was significantly highest in organic peel, which was 770.02 mg/100 g, whereas among the peel, the pulp and the seed were it the lowest in the seed. The content of total polyphenols were the highest in general peel (0.85 mg/g). Flavonoid content of pesticide-free seed was significantly higher than those of the other yuja samples which was 0.89 mg/g (p<0.05). The DPPH radical scavenging activity was relatively more active in the peel among the above-mentioned three parts, especially the pesticide-free peel was most active, which was 73.94%. The ABTS radical scavenging activity of organic peel was significantly active among the samples, which was 84.47% (p<0.05). Based on these results, it can be said that yuja has variety of useful components in the pulp and the seed as well as the peel: and thus it's hight recommended to develop more varied yuja products.

Interitance of Pericarp Thickness of Waxy Maize (찰 옥수수 과피두께의 유전)

  • The amount of maize being imported from other countries to meet the national demand are increasing every year. Regardless of the usage whether it is for silage or for human consumption, amount of seeds for farmers are ever being increased. In order to solve the problems arising from the seed import, a program for developing waxy hybrids with high quality was set up at the College of Agr., Chungnam National University. The main breeding targets for high quality waxy hybrids are focused on the pericarp thickness. In order to obtain basic information needed for developing hybrids with thin pericarp, six inbred lines all derived from open pollinated Korean waxy lines were diallel crossed. Results obtained indicate that waxy hybrids with thin pericarp can be developed by choosing proper parental lines. Of the six inbreds, Jewon inbred had utmost thin pericarp compared with other lines. Hybrids crossed with Jewon showed also thinner pericarp than other hybrids. However, Danyang which has thick pericarp showed thicker pericarp in hybrid combinations. Variance due to general combining abilities was greater than the variance due to the specific combining abilities, indicating that additive gene effects are more important. The pericarp thickness of waxy hybrid endosperm varied with the parts of pericarp. The germinal side of the pericarp is comparatively thinner than the abgerminal side. The upper part (crown) has thicker pericaip than lower part (tip) of the kernel.

Antioxidant Activities from Pericarp and Flesh Extracts of Citrus spp. in China (중국(中國) 유품종(柚品種)(Citrus spp.)의 과피(果皮)와 과육(果肉)의 항산화물질(抗酸化物質) 효과(效果))

  • 중국유(中國柚)의 주요성분은 비타민 C가 레몬보다 10배나 많이 함유되어 있고 또한 과피 안쪽에 펙틴 성분이 다량으로 함유되어 있다. 특히 과피가 일반 감귤류 보다 10배 이상 두꺼워 비타민P의 ?량 또한 다량으로 함유되어 있다. 즉, 유기산, 비타민P와 비타민C가 매우 많이 함유되어 있어서 예로부터 중국에서는 감기와, 피부노화, 피로를 방지하는데 사용되어져 왔으며 이러한 효능은 유기산에서도 많이 발생되었다. 그 밖에 비타민B군과 당질, 단백질등이 다른 감귤류 품종보다 많고, 모세혈관을 보호하는 헤스페리딘(비타민P)이 다량으로 함유되어 있어서 심혈관 질환 장애와 뇌졸증, 뇌출혈 등을 억제하는 효과를 가지고 있다. 또한 몸 안에 쌓여 있는 노폐물 등을 밖으로 배출시켜주는 효과가 양호하여 피부미용에 효과가 있는 것으로 알려져 있다. 본 실험에서는 중국유(中國柚)의 항산화활성과 총 폴리페놀 함량을 조사하였던 바, 과육보다 과피에서 폴리페놀 함량이 높게 나타났으며 항산화 활성도 과피에서 매우 양호한 결과를 나타내었다. 중국유(中國柚)의 품종별로 보면 과피가 두껍고 과육이 붉은색을 띈 품종에서 항산화 효과가 더 양호한 반응을 나타내었다. 이러한 결과는 과육에 함유되어있는 안토시아닌의 함량의 차이인 것으로 생각된다. 특히 과피가 과육의 추출과정에서 에탄올보다 메탄올 추출물에서 더 양호한 결과를 보였다. 이러한 결과들로 미루어볼 때 중국유(中國柚)의 항산화 활성은 천연화장품의 신소재로서의 가치를 가지고 있다고 판단된다.

Occurrence of Skin Browning by Mechanical Injuries on the Fruits of 'Mansu' Pear (만수 품종 배의 과피 갈변 원인 구명)

  • This research was carried out to elucidate the causes of fruit skin browning in 'Mansu' pear for the last 2 years. It was observed that skin browning was induced even by the small mechanical injury produced during grading and packing for the market supplies after harvest on the fruits of 'Mansu' pear. The incidences of fruit skin browning in pears treated with artificial mechanical injuries were investigated between 'Niitaka' and 'Mansu' pears. The results showed that fruits of 'Mansu' are more susceptible to skin browning than those of 'Niitaka', We also found that the epidermis of fruits in 'Mansu' pear was thinner than that of 'Niitaka', and that there was lower incidence of fruit browning in epidermis of pears with high chlorophyll content than those with low chlorophyll content. The skin browning in fruits could be considerably reduced by sorting and grading them wrapped with paper bags for the fruits of 'Mansu' pear.

Effects of Addition of Citron Peel Powder on the Quality Characteristices of Emulsion-type Sausages (유자과피 분말 첨가가 유화형 소시지의 품질특성에 미치는 영향)

  • This study was carried out to investigate the effects of addition of citron peel powder(0.3%, 0.6%, 0.9%) on the quality characteristics of emulsion-type sausages. The pH, color, TBARS, residual nitrite content and textural properties were evaluated. The pH values of sausage containing citron peel powder were significantly(P<0.05) lower compared to those for control. The CIE $L^*$ and $a^*$ values of sausage containing citron peel powder tended to similar to control, but the CIE $b^*$ values were significantly(p<0.05) higher in the sausage containing citron peel powder. The TBARS values of sausage containing 0.9% citron peel powder were significantly(P<0.05) lower than those of control at 20, 40 and 60 days of storage. The residual nitrite content of sausage containing citron peel powder were significantly(P<0.05) lower compared to control. The hardness values of sausage containing citron peel powder were significantly(P<0.05) higher than those of control, but the cohesiveness, springiness and gumminess were significantly(P<0.05) lower in the sausage containing citron peel powder.

The Antioxidative and Antibrowning Effects of Citrus Peel Extracts on Fresh-cut Apples (Citrus 과피 추출물의 항산화 및 사과 슬라이스에 대한 항갈변 효과)

  • This study was designed to evaluate the usability of the following citrus peel extracts (CPEs): Citrus sinensis (orange), C. unshiu (mandarin orange), C. limon (lemon), and C. paradise (grapefruit) as natural antibrowning agents. Overall, 0.1% of the CPEs were effective in reducing the browning of apple slices. The appearance of apple slices dipped in C. limon peel extracts (LPE) were found to be excellent and their Hunter L and ${\Delta}E$ values were similar to the values obtained when apple slices were dipped in ascorbic acid. The pH values of the different CPEs were not significantly different from each other, but were higher than that of ascorbic acid. LPE was found to possess the highest total phenolic content, flavonoid content, DPPH radical scavenging activity, and copper ($Cu^{2+}$) chelating activity. All these results suggest that citrus peel extracts, especially lemon peel extract, can be used as natural antibrowning agents.
