Quality Characteristics of Low-Dose X-Ray-Irradiated Imported Navel Oranges during Storage under Low Temperature (3℃) (저선량 X선 조사 수입 오렌지의 저온저장 중 품질 특성)

  • This study evaluated the effects of low-dose X-ray irradiation treatment on quality characteristics and sensory evaluation of imported navel oranges during storage at $3^{\circ}C$ for 45 days. The samples were irradiated at doses of 0.2, 0.4, 0.6, 0.8, and 1.0 kGy, and changes in their color value, hardness, Brix/acid ratio, total sugar content, reducing sugar content, vitamin C contents, and sensory evaluation were investigated. There was no significant increase or decrease in Brix/acid ratio, total sugar content, reducing sugar content, or vitamin C content between the non-irradiated and irradiated samples. Color value of orange peels decreased with increasing levels of irradiation treatment. Color b value of orange pulp increased with an increase in irradiation dose. Difference in hardness between the non-irradiated and irradiated samples decreased at the end of storage. For the sensory evaluation after 30 days, sweetness and overall acceptability of irradiated samples at more than 0.6 kGy were low. These results suggest that X-ray irradiation under 0.6 kGy does not affect quality characteristics and sensory evaluation.

Physicochemical Characteristics of Sangju Traditional Dried Persimmons during Drying Process (상주 전통곶감의 제조과정 중 이화학적 품질특성)

  • This study was performed to investigate change of quality characteristics on traditional dried Persimmons from Sangju varity regions (sun-dried, Namjang and Bokryong). Moisture contents on drying were decreased and constant at from 7th to 14th days drying periods and its periods were recognized to constructing second peel of dried persimmons. Constructed second peel were affected on quality characteristics of traditional dried Persimmons. Also, in case of semi-dried persimmons were processed at 45∼55% level of moisture content. Final products of semi -dried persimmons were estimated in 25th from initial drying periods. Changes of water activity were increased reducing speed at time of water content decreased, second feel constructing during drying persimmons were introduced to decreasing of water activity. Weights of dried Persimmons were quickly decreased in 21th drying periods and slowly decreased after that time. Weight changing and water evaporation of dried persimmons at the Namjang and Bokryong were slowy decreased and controled after 7∼14th in periods of constructing second feel of dried persimmons. Change of brix in dried persimmons have had in 18∼27% value at initial drying periods and quickly increased after 7∼14th in drying periods and have in high value of 40∼50% at 21th drying periods. At the texture of dried persimmons, hardness were decresed after 7∼14th in periods and effected on decreasing of water content, increasing of drying times. Sensory score of dried persimmons were highest score of color, sweetness and texture at dried persimmons of Namjang. Score of astringency, sourness and mold smell were highest at dried persimmons of Bokryong. Value of highest overall acceptance score was at dried Persimmons of Namjang.

Changes of Fruit Characteristics and storage by Gibberellin and Polyamine Treatment of Oriental Pear (Pyrus Pyriflia) (지베렐린 도포와 폴리아민 살포에 의한 배 품질과 저장성의 변화)

  • Gibberellin (GA) treatment on fruit stalk was effective in fruit growth but reduced the shelf life of fruit. This study was carried out to improve the shelf life of GA treated fruit. Fruit characteristics were surveyed according to the treatment part and concentration of polyamine in 'Whangkeumbae', 'Yeongsanbae', and 'Chuwhangbae'. GA was treated on fruit stalk at 30 days after flowering and 100, 200, and 300 ppm of polyamine were sprayed on leaves of fruit cluster and canopy at 7 day before harvest. In GA treated fruit, fruit weight was heavier as $10\%$ and fruit hardness was lower as $0.3\~0.5\;kg$ than control in all cultivar, but sugar content and palatability were no difference in each treatment. In morphological characteristics, the distance from pith to epidermis of GA treated fruit was faraway as $42.0\%$. Fruit hardness and palatability of 'Whangkeumbae' was good in the leaves spray on the fruit stalk with 200 ppm and the leaves spray on the canopy with 500 ppm at 30 day after harvest. 'Yeongsanbae' and 'Chuwhangbae' showed the same to the result. So we knew that the effective treatment to improve the storagibility after GA treatment on fruit stalk was the fruit stalk leaves spray with 200 ppm because it needed small amount of polyamine.

Modified Atmosphere Storage of 'Shingo' Pears Packages with Polyethlene Film (폴리에틸렌 필름을 사용한 '신고'배의 Modified Atmosphere 저장)

  • 'Shingo' pears were seal-packaged in polyethylene (PE) film with different thickness of 0.04. 0.06, 0.07, and 0.08mm and stored for five months in an experimental storehouse with the temperature varyine 0 to $7^{\circ}C$ and relative humidity varying 86 to 89%. The atmosphere in PE film bags was modified to 5-l4% oxygen with 3-5% carbon dioxide depending on the film thickness and the storage period. Packaging of pears with PE film effectively reduced the weight loss, which resulted in good appearance after 5 months' storage, while non-packaged pears showed a slight wilt. Decay occurrence was not significantly different among the treatments. but role browning occurred a little more in packaged lots than in non-packaged lot. The sensory panel rated the pears front 0.07mm-thick bag highest in flavor, texture, and juiciness, which might be due to the high sugar content and low titratable acidity. The firmness of pear flesh decreased with the stogare time and its change was found to be highly correlated with that of cellulase activity (correlation coefficient= -0.946). Thisresult indicated that cellulase might be one of the enzymes responsible for the softening of pear fruit during storage.

Selection of Oriental Melon (Cucumis melo L. var. makuwa Makino) Cultivars for Second Cropping in Summer Season (여름철 2기작 재배용 참외 품종선발)

  • This experiment was conducted to selecting of oriental melon cultivars suitable for second cropping at summer season. At 20 days after transplanting, 'Supergumssaragi' and 'Gumhwangeunchun' were rapidly growing. Chlorophyll contents of 'Gumgigaeeunchun', 'Gumnodazieunchun', 'Gonggongcheelkkul' and 'Gumboddari' were higher than other cultivars. Days required from transplanting to harvesting of 'Gumboddari', 'Gumdongieunchun', 'Gonggongcheelkkul' and 'Gumgaeeunchun', 'Gumbora' and 'Supergumssaragi', 'Gumssaragieunchun', 'Gumnodazieunchun', 'Gummieunchun' and 'Gumhwangeunchun', 'Diamond' were 51, 52, 53, 55, 56 and 60 days, respectively. The fruit weigh tended to heavy in 'Supergumssaragi' and 'Gumgigaeeunchun'. The flesh thickness was thick a little in 'Gumgigaeeunchun'. The hardness tended to high in 'Gumgigaeeunchun', 'Gumnodazieunchun' and 'Gumgaeeunchun', but it was not difference between treatments. 'L', 'a', 'b' and Y.I. value of the fruit were not difference between the cultivars, but 'a' value was the highest at 'Gumgigaeeunchun', The yield per ha of 'Gumgaeeunchun' and 'Gumgigaeeunchun' increased 8%, 2% than 'Gumssaragieunchun', respectively. From above result, 'Gumgigaeeunchun', 'Gumdongieunchun', 'Gumnodazieunchun' and 'Gumgaeeunchun' cultivars are suitable in summer season.

Effect of Cultural Regions or Methods on Postharvest Physiological Characteristics and Qualities of Paprika Fruits (재배지역과 재배방법이 파프리카 과실의 수확 후 생리 및 품질에 미치는 영향)

  • This study was conducted to compare the postharvest physiological characteristics of 2 paprika cultivars; 'Special', 'Fiesta' grown in 2 regions: Chuncheon(plain region) and Hwacheon(semi-high land region), and by 2 cultural methods; soil and hydroponic(rock wool culture). Respiratory rate of paprika fruit was higher in soil culture, and ethylene production was higher in Chuncheon region of both cultivars. As the thickness of fruit flesh showed thicker in Hwacheon region and hydroponic culture, the firmness of fruit was in proportion to thickness. Vitamin C content was higher in red-cultivar, 'Special'. and in Chuncheon region. Soluble solids was higher in 'Special', but there was no different between cultural regions. The fruit of both cultivars was grown smaller in Chuncheon region, and the fruit shape of 'Fiesta' progressed faster in soil culture. The surface color of fruit was higher in Hwacheon, and although there was no significantly different between cultural method, both cultivars grown by hydroponics was shown vivid color. As above results, for the long term circulation and high quality of fruit, paprika may be cultivated by hydroponics in high-altitude region.

A Comparison of Quality and Volatile Components of Two Cucumber Cultivars Grown under Organic and Conventional Conditions (유기 및 관행재배 오이(청낙합, 입추낙합)의 품질특성 및 휘발성 향기성분 특성)

  • This study was performed to compare the quality and volatile components of two cucumber (Cucumis sativus L.) cultivars (Cheongnakhab, Ipchunakhab)-grown under organic and conventional conditions. The levels of pH and soluble solids in the organic system were similar to those in the conventional system. The hardness of the pulp in the organic cucumbers was slightly higher than that in conventional cucumber regardless of cultivar. However, the contents of chlorophyll a, b, and total chlorophyll in organic cucumbers were significantly (p<0.05) higher than those in conventional cucumber. The major volatile compound of fresh cucumber was (E,Z)-2,6-nonadienal regardless of cultivar and farming system. When classified by the identified components' functional group, the rate of aldehydes was the highest of all samples. The results indicate that the quality and volatile components in organic cucumbers were similar to those in conventional cucumbers except for hardness and chlorophyll contents regardless of cultivar.

Physicochemical Analyses and Korean Consumers' Acceptability of Environment-Friendly and Conventionally Grown Cucumber (친환경오이와 일반오이의 이화학적 특성 및 소비자 기호도)

  • Environment-friendly agricultural products are consumed widely, but little is known about consumers' acceptability. The objectives of this study were to 1) determine consumers' acceptability of cucumber when consumed raw, 2) determine differences in appearance liking between environment-friendly and conventionally grown cucumber samples, and 3) analyze the physicochemical properties of cucumber. White dadagi, gasi, non-pesticide mini cucumber, organic gasi, and organic Joseon cucumber samples were evaluated for consumers' acceptability using a nine-point hedonic scale; White dadagi, organic Joseon, and organic gasi cucumber samples showed the highest acceptability scores. However, there were three consumer segmentations differing their degree of cucumber liking and preference. Consumers liked the appearance of organic gasi best. Consumers' preference of cucumbers did not change upon evaluation of the acceptability of the appearance of whole fruit with and without a label indicating an environment-friendly status. Additionally, the physicochemical properties of the cucumbers-including color (skin and flesh), length, circumference, weight, water activity, brix, and texture (hardness and fracturability)-were measured. All measurements showed significant differences among samples, with the exception of water activity and hardness. White dadagi was 3.8 brix, which was the highest among cucumbers, followed by non-pesticide mini cucumber and organic Joseon. White dadagi, organic Joseon, and organic gasi showed greater fracturability than the other cucumber samples.

Quality Properties of Semi-dried Persimmons with Various Drying Methods and Ripeness Degree (다양한 건조방법과 감의 성숙도에 따른 반건시 품질특성)

  • This experiment was carried out to compare the quality of semi-dried persimmon according to various drying methods and ripeness degree of persimmons. Most of persimmons were dried naturally there were much opportunities of contamination by impurities, microorganism and discoloration. There were need for developing various drying methods and knowing proper mature degree of persimmons in order to enhance the quality of semi-dried persimmons. Drying time of semi-dried persimmons by hot-air, far infrared ray and dehumid drying could be shorten approximately 11∼12 days, comparing with natural drying. And the loss ratio of natural drying and artifical drying were 7.0% and 0.0%. The moisture content of natural drying and dehumid drying were simillar and the hardness were very low in comparing other drying methods. Average pannel scores in semi-dried persimmons after drying showed that dehumid drying and natural drying were excellent in total prefernce ; 3.9 and 3.4, respectively. Unriped persimmons showed lower moisture content, color values and higher hardness than riped and overriped persimmons. The total preference of riped and overriped fruit were superior than unriped fruit.

Hot Water Dipping Treatment to Improve Storage Quality of Green Red Pepper (풋고추의 저장성 향상을 위한 열처리 조건 구명 및 저장 중 품질 변화)

  • We investigated the efficacy of heat shock treatments to improve storage quality of green red pepper. Green red pepper were stored at 10$^{\circ}C$ for 4 weeks after no treatment (control) or hot water dips at 50-65$^{\circ}C$ for 10s. Treatments at 65$^{\circ}C$ generally caused high levels of heat injury on the surface of fruit. The hot water dips had no effect on firmness, Hunter ‘a’ and ‘b’ values and viable cell count by 3 weeks of storage. But color of fruit changed toward darker and redder direction and firmness was decreased by heat treatment at 4 weeks of storage. The contents of capsaicin and dihydrocapsaicin were not caused significant influence by different heat treatment, were decreased through the storage. The optimal hot water dip condition for maintaining fruit quality after prolonged storage was found to be 55$^{\circ}C$ for 10s, which can lead to reduced chilling sensitivity of green red pepper.
