Apples and pears for investigating the optimal storage conditions were purchased from the farmhouse located in Hadong-Goon and Geochang-Goon Gyeongnam just before the beginning of this experiment. Apples and pears were, stored under 70%(storage temperature : 25$^{\circ}C$), 80%(10$^{\circ}C$) and 90%(5$^{\circ}C$) of relative humidity, respectively and their qualities in microbial counts, decay ratio, surface color difference and chemical attributes were monitored during the storage period. Apples and pears stored under 70% of relative humidity showed the minimal change in weight lass, decrease ratio of ascorbic acid content, surface color difference and degrees contaminated by putrefactive microorganisms. As the results of this experiment, apples and pears stored under 90% of relative humidity showed the optimal storage conditions for maintaining their freshness.

The effects of temperature and length of cold storage on the quality maintenance of fresh "Gold" kiwifruit were investigated. Physio-chemical properties were analyzed in kiwifruit held at $2^{\circ}C$ and $6^{\circ}C$ temperatures compared to fruit at room temperature ($20{\sim}28^{\circ}C$) during 8 weeks of storage. Low temperatures ($2^{\circ}C$ and $6^{\circ}C$) significantly delayed softening and soluble solids content (SSC) accumulation compared to higher temperature ($20{\sim}28^{\circ}C$). Physico-chemical properties of fruits, including weight losses, firmness, SSC, titratable acidity (TA), SSC/TA ratio, and flesh color properties were monitored during storage. Fast firmness loss was detected in fruit stored at higher temperatures compared to low temperature ($2^{\circ}C$). Similar results were observed for acidity according to storage temperature and length of cold storage, whereas SSC increased to the limited values (%Brix) during storage. The soluble solids content (SSC) increased markedly during the first 60 days of storage and remained almost constant thereafter for all treatments. SSC accumulation rates decreased from 5 weeks after storage probably due to differences between initial and ripe kiwifruits, and SSC decreased with each passing week due to natural starch conversion over time. The SSC/acid ratio increased from 18 to 27 until 5 weeks after storage and then slowly declined in all kiwifruit stored at different low temperatures. Sensory evaluation results showed no differences in kiwifruit flesh color stored at two storage temperatures of $2^{\circ}C$ and $6^{\circ}C$.
This study was determined protein reaction, antioxidative activity, nitrite scavening ability and antimicrobial activity of tannins isolated from astringent persimmon fruits. Tannins extracted from green persimmon fruits reacted highly with BSA(bovine serum albumin). Reactions between tannins and BSA were more active when contents of tannin were higher than that of BSA. Antioxidative abilities of green persimmon tannin were comparable to that of BHT(butylated hydroxytoluene). Green persimmon tannins exhibited remarkable nitrite-scavenging activity. Different antimicrobial activities of persimmon tannins were observed depending on the maturity. The growth of V. parahaemolyticus and E coil were highly inhibited by the addition of persimmon tannins. Tannins from soft persimmon did not have antimicrobial activities against B. subtilis and S. typhimurium.

In this study, we evaluated the fruit quality indices and the incidence of physiological disorders of Korean new pear cultivar 'Whasan' to determine appropriate harvest time for exportation and to enhance storability and shelf-life of the fruits during simulated exportation and extending market environment under different temperature conditions. In the experiment of simulated exportation headed for North America including Canada and U.S.A., the fruits transported at $1^{\circ}C$ showed less weight loss than those of $5^{\circ}C$. Market temperature appeared as a key factor for keeping freshness of exported pear fruits rather than transportation temperature. Quality factors such as high flesh firmness and low incidence of fruit rot and physiological disorders including core breakdown and pithiness were attained at the fruits maintained at $18^{\circ}C$ when we compared with $25^{\circ}C$. The fruits of harvested early maturity at 135 day after full bloom showed 28.6 N of flesh firmness when the fruits stored at $1^{\circ}C$ of transportation and $18^{\circ}C$ of market temperature, while the fruits progressed $5^{\circ}C$ of transportation and $25^{\circ}C$ of market temperature dropped to 24.2 N during 30 days of shelf life. Also, a high incidences of physiological disorders and of fruit decay rates were obvious in the fruits distributed at $25^{\circ}C$ were observed approximately two times higher than the those of $18^{\circ}C$. Therefore, temperature management during marketing resulted as an important point for maintaining fruits quality in the process of pear fruit exportation.
Leaf blight and fruit rot of sweet persimmon (cv. Fuyu) caused by Pestalotia diospyri were observed during the growing season and postharvest such as storage and transport, respectively. Typical symptoms on leaves developed with small brown spots and were later reddish brown colors. In the storage fruit, the white mycelial mats formed between fruit and calyx. The pathogenic fungus was isolated from infected fruits and cultured on potato dextrose agar (PDA). Colony color of the fungus was white at first on PDA. Conidia were ovoid or fusiform, 5 cells, middle 3 cells were olive, upper and lower 2 cells were colorless, and their size were $16{\sim}22\;{\times}\;6{\sim}8\;{\mu}m$. They had were $2{\sim}3$ appendage at basal cell and size $9{\sim}18\;{\mu}m$. Based on the cultural and mycological characteristics and pathogenicity test on host plants and fruits, the fungus was identified as Pestalotia diospyri Syd.&P. Syd. This is the first report on the leaf blight and fruit rot of sweet persimmon caused by Pestalotia diospyri in Korea.
The fruit rot of pumpkin caused by Sclerotium rolfsii occurred sporadically at Gyeongsangnam-do Agricultural Research and Extension Services, Korea in 2004 and 2005. The typical symptom of the disease included water-soaking, fruit rotting and wilting. White mycelial mats were spread over infected fruits and then sclerotia were formed on the lesions and near soil surface. The sclerotia were globoid in shape, 1$\sim$3 mm in size and white to brown in color. The optimum temperature for mycelial growth and sclerotia formation was at $30^{\circ}C$ on PDA and the hyphal width ranged from 4 to 8 ${\mu}m$. The typical clamp connections were observed in the hyphae of the fungus grown on PDA. On the basis of mycological characteristics and pathogenicity to host plants, this fungus was identified as Sclerotium rolfsii Saccardo. This is the first report on the fruit rot of Cucurbita spp. caused by S. rolfsii in Korea.
Postharvest skin sooty dapple and decay disease of pear fruit often originates at small stain symptoms that occurred during harvest and handling. Experiments were conducted to characterize the effect of timing of application of disease control materials, and to evaluate sequential postharvest applications of fungicides or fungicides and bio-control agents. Fungicides and bio-control agents were increasingly less effective when the period between harvest and application was prolonged. Thiabendazole (TBZ) applied to fruit without artificial wounding or inoculation effectively reduced skin sooty and decay disease when applied within 3 weeks or 6 weeks in 2 years of study. TBZ, Fludioxonil and pyrimethanil were effective in controlling skin sooty and decay disease at artificial wounds inoculated with Cladosporium tenuissimum up to 14 days after inoculation. Application of TBZ at harvest followed 3 weeks later by application of Fludioxonil was superior to application of TBZ at harvest alone. Two bacterial biocontrol agents reduced skin sooty and decay disease at pear wounds inoculated with C. tenuissimum up to 14 days after inoculation with C. tenuissimum, but were ineffective when applied at 28 days after inoculation. Of possible sequential arrangements of fungicide and bio-control treatments, application of the most effective material promptly after harvest generally resulted in the highest level of disease control.

Grapes(Vitis labruscana B) were fumigated with acetic acid at 20mg/liter to reduce storage decay and packaged with polyethylene film(0.03mm), then stored for 90 days at 2$^{\circ}C$. Modified atmosphere packaging reduced slightly weight loss and soluble solids content during storage. Acetic acid fumigation decreased effectively berry shattering and achieved remarkable control of rotting for storage. Two grape cultivars, 'Campbell Early' and 'Sheridan', fumigated with acetic acid had only 0.7~2.9 berries rot compared with 8.3~27.6 berries rot of cluster for grapes that were not fumigated.

포도 중 캠벨얼리 품종은 색이 검붉고 당도가 높아 우리나라 대표적인 품종 중에 하나로 알려져있다. 그러나 수확 후 저장 유통 중 품질이 저하되기 쉽다. 따라서 예냉 조건 및 수송, 저장, 유통조건에 따른 품질조사를 비교실험하여 가장 안전한 저장 유통 방법을 개발하고자 하였다. 실험재료는 2003년 8월20일경에 포도 주산지인 영천 농가에서 수화 한 후 바로 예냉처리를 하였다. 이때 사용한 예냉기는 원예연구소에서 개발한 시제작품을 사용하였다. 대조구로 무예냉을 두었으며 예냉 후 수송온도도 관행적인 상온과 저온(2$^{\circ}C$)로 구분 처리하였으며 저온온도별로도 함께 실험하였다. 포장단위도 2kg 와 5kg로 각각 처리하여 수행하였다. 예냉이 품질에 미치는 영향을 조사하기 위하여 예냉처리에 따른 호흡패턴 변화와 이화학적 특성변화를 조사하였다. 또한 저장 중 중량감소율, 부패율 및 탈립율을 조사하였다. 포도 ‘켐벨얼리’의 수확 시 품온 29.5$^{\circ}C$를 적정 저장 온도인 2$^{\circ}C$로 저하시키는데 일반 저온 저장고에서 10시간 정도 걸리는 데 반하여 차압예냉기 이용시 3시간으로 단축시킬 수 있었으며 예냉 포도의 처리구별 호흡량은 초기 6.65$m\ell$/kg/hr 였으나 상온무예냉 및 예냉 처리구의 경우에는 저장해가면서 급격히 증가되었고 저온에서는 무예냉의 경우에는 계속 증가되는 반면 예냉 처리구의 경우에는 포장 규격과는 상관없이 다른 처리구 보다 호흡억제 효과가 있었다. Ethylene 발생량 역시 호흡과 비슷한 경향을 보여 주어 예냉 시 과실의 품질 저하 요인 발생량을 억제시킬 수 있었다. 경도는 저장 기간이 경과됨에 감소되나 저온 예냉 처리구의 경우가 초기 1.26N을 높게 유지하였고 자연중량 감모율은 상온저장 2주째 무예냉처리구 8.40%로 감소된데 비하여 예냉 저온 수송 구의 경우에는 0.25%로 매우 낮았다. 포도 ‘켐벨얼리’의 저온 저장중 부패율은 저장 2주째 상온 무예냉 처리구의 경우 19.8%이었으나 저온 예냉 처리구의 경우는 부패과가 발생하지 않았고 탈립율 역시 상온무예냉처리구의 경우 53.5%인데 반하여 저온 예냉 처리구는 저장 4주경과 시까지 탈림과가 없었다. 당도 및 pH변화 역시 차압 예냉 후 저온 수송 처리구가 초기당도(12.0Bx)$^{\circ}$값과 초기 pH(3.8)를 저장 25일 경과시까지 유지하였다. 수확 시 높은 품온을 갖고 있는 과일을 산지에서 예냉 처리를 한 후 저온 냉장차를 이용하여 유통한다면 관행 유통 구조보다 고품질의 포도를 유통시킬 수 있는 것으로 사료되며 앞으로는 완숙된 고 당도(12.0~15.0Bx)$^{\circ}$ 포도를 수확 한 즉시 예냉 처리하고 저온 유통한다면 보다 신선한 과일을 소비자에게 전달 할 수 있을 것이다.
Traditionally, lactic acid bacteria(LAB) is microorganism that has been used for food fermentation. Bacteriocinogenic culture and by-products of lactic acid bacteria have the antimicrobial effect. The antimicrobial effect of lactic acid bacteria enable to extend the shelf life of many foods through fermentation processes. Therefore, a lot of investigation of antimicrobial compounds from LAB have been studied on the effect of foods preservation of fish, meat, dairy product, refreserated nonfermentive food and so on. However a little research on the effects of LAB in fruit and vegetables preservation has been reported. In this study, effectiveness of LAB as a quality preservative in fruit and vegetables storage were reviewed.
