소비자의 닭고기 원산지 이용 실태 조사 연구 결과

  • 일반 소비자들은 닭고기 구매 시 가격보다는 제품의 품질과 신뢰도를 높이 평가하고 있는 것으로 나타났다. 본회는 지난 3월 25일부터 4월 5일까지 서울 및 수도권, 대구, 부산지역의 만 20세 이상의 성인 여성 600명을 대상으로 한 '닭고기 소비 행태에 대한조사 연구' 결과 이같이 나타났다고 발표했다. 본고는 소비자의 닭고기 원산지 이용 실태 조사 연구 결과에 대한자료를 일부 발췌, 게재한 것이다.

Quality Characteristics of Samgyetang with Medicinal Herbs (전통 약용식물을 첨가한 삼계탕의 품질 특성)

  • This study investigated the effect of traditional medicinal plants on the quality characteristics of Samgyetang breast meat and broth. The traditional medicinal plants used in this study were roots of Panax ginseng, Codonopsis lanceolata, Platycodon grandiflorum, Salvia miltiorrhiza, Adenophora triphylla, and Allium hookeri. There was no significant difference (P>0.05) in the moisture, protein, ash content, water holding capacity, and cooking loss of Samgyetang meat with the addition of traditional medicinal plants. The color values (lightness, redness, and yellowness) of Samgyetang meat and broth were significantly different (P<0.05); the 2-thiobarbituric acid reactive substances and shear force of Samgyetang meat were significantly different (P<0.05); and the pH, turbidity, and viscosity of Samgyetang broth were also significantly different (P<0.05) with the addition of traditional medicinal plants. In the overall acceptability of Samgyetang meat, the addition of S. miltiorrhiza showed the highest score compared to that of other treatments (P<0.05). Thus, the addition of traditional medicinal plants in the production of Samgyetang were found to affect the lipid rancidity beneficially with plant species when compared to Samgyetang with Panax ginseng. In conclusion, with the development of Samgyetang using S. miltiorrhiza, it will be possible to develop products with superior quality characteristics in antioxidant, shear force, and overall acceptability.

Effects of Freezing and Refreezing Treatments on Chicken Meat Quality (동결 및 재동결 처리가 계육의 품질에 미치는 영향)

  • 본 연구는 동결 및 재동결 처리가 계육의 부위별 품질특성에 미치는 영향을 검토하기 위해 서 실시하였다. 드립감량은 동결육이 재동결육보다 낮았으며, 가슴육이 다리 및 날개육보다 높았다. 가열감량은 재동결육, 동결육 및 신선육의 순으로 높게 나타났다. L, a 및 b 값은 동결에 의한 차이는 없었으나, L 값은 가슴육이 다리 및 날개육이 가슴육보다 높았다. 수용성 단백질 추출성의 신선육 및 동결육이 재동결육보다 높았으며 , 다리 및 날개육이 가슴육보다 높았다. 염용성 단백질 추출성의 경우, 신선육, 동결육 및 재동결육의 순으로 높았고, 가슴육이 다리 및 날개육보다 높았다. 보수력은 신선육, 동결육 및 재동결육의 순으로 우수하였고, 부위별로는 다리, 날개 및 가슴육의 순이었다. 신선육 및 동결육의 pH는 재동결육보다 낮았으며 다리 및 날개육이 가슴육보다 높았다. TBA 및 VBN은 재동결육, 동결육 및 신선육의 순으로 높았고, 다리 및 날개육의 TBA는 가슴육보다 높았으나, VBN은 낮은 편이었다. 기호성은 신선육이 재동결육보다 우수하였고, 부위별로는 다리 및 날개육이 가슴육보다 우수하였다.

자리깃(왕겨) 중요성 이해와 바람직한 접근 방향

  • 최근 계사 내 바닥관리의 중요성과 더불어 자리깃의 관리가 중요시되고 있다. 소비자의 계육에 대한 까다로운 품질의 요구가 증가되고 있고, 2007년 개체 포장 실시에 따라 유통의 변화에 따라 닭고기의 품질이 더욱 중요시되고 있기 때문이다. 따라서 품질 좋은 닭고기 생산을 위해서는 사육 환경 개선이 필수적인데, 현재 우리나라 계사들의 노후화가 빠르게 진행되고 있다. 일부 농가들이 선도로 시설 재투자 및 닙플 급수기, 단열 및 환기 등 계사 환경개선을 획기적으로 리모델링하여 여러 농가에 희망을 주고 있으며 이런 붐을 타고 많은 농가가 개선을 서둘고 있는 상황이어서 다행한 일이라고 볼 수 있다. 하지만, 이제는 계열사가 주도하여 농가에 지속적인 투자를 독려하고 시설에 대한 개선을 해야 한다고 판단된다. 최근 닭고기 품질과 관련하여 각 계열사는 그 동안 사각지대였던 사육의 환경개선에서 그 해법을 찾고자 노력하고 있지만, 주변 환경과 농가들과의 수익 변수 때문에 항상 평행선을 달려 왔다. 그러나 이제는 성숙한 대화와 조심스런 개선책을 함께 공유해야 할 것이다.

Effects of Addition of Green Tea Extracts on Physicochemical Properties of Seasoned Chicken with Soy Sauce during Cold Storage (녹차 추출물의 첨가가 간장 양념계육의 냉장 저장 중 이화학적 특성에 미치는 영향)

  • The objective of this study was to investigate the effects of addition of green tea extracts on physicochemical properties and shelf-life of seasoned chicken with soy sauce during cold storage. Treatments (C, T1 and T2) containing various levels (0, 1 and 2%, respectively) of green tea extracts were manufactured, and we investigated pH, meat color ($L^*,a^*,b^*$), volatile basic nitrogen (VBN), thiobarbituric acid reactive substances (TBARS), total plate counts, fatty acid composition and sensory scores during cold storage for 16 days. T1 and T2 have more dark color than control during storage time. VBN, TBARS and total plate count of control were significantly higher than those of T1 and T2 at the latter storage time (p<0.05). Also, VBN, TBARS and total plate count of all treatments was increased with storage time. Linoleic acid was the highest value in control which had the highest value of TBARS in day 16 (p<0.05). Aroma value of control was significantly higher in storage time except day 16 than those of T1 and T2 (p<0.05). Acceptability value of control was significantly higher than those of T1 and T2 in day 4, 8 and 12 (p<0.05).

Effects of Dietary Saccharomyces cerevisiae on Growth Performance and Meat Quality in Broilers (효모(Saccharomyces cerevisiae)의 급여가 육계의 생산성과 계육의 품질에 미치는 영향)

  • An experiment was conducted to investigate whether Saccharomyces cerevisiae(S. cerevisiae) could improve the growth performance and meat quality of broiler chicks. Day old 160 male broiler chicks were fed one of the two experimental diets without (0.0 %) or with S. cerevisiae (3.0 %) for five wks. Each treatment consisted of eight cages with 10 chicks per cage. Feed and water were provided ad libitum. Although not significant, BW gains of S. cerevisiae fed chicks tended to increase during 4∼5 wk of age. The addition of S. cerevisiae into the control diet significantly lowered the shear force in raw drumstick meat (P<0.05). After 10 d of incubation, significantly lower levels of oxidation products were found (P<0.05) in drumstick meats and skin samples from broiler chicks fed diets enriched with S. cerevisiae compared to those of the control group, while in breast meats the significant difference was monitored after 6 d of incubation. It is concluded that dietary S. cerevisiae could improve the tenderness and oxidative stability of broiler meats.

Comparison of Physiological Changes in Broiler Chicken Fed with Dietary Processed Sulfur (식이유황 급여에 따른 계육의 생리적 변화)

  • The purpose of this study was to evaluate the mortality rate, weight gain, and protein, lipid cholesterol, and total amino acid contents in processed-sulfur-diet chicken meat. Also investigated were the antioxidant activity and glutathione content of blood plasma. The mortality of the processed-sulfur-diet chickens was relatively reduced, and their weight increased compared to the normal-diet chickens. Although the glutathione content decreased in the processed-sulfur-diet chicken blood plasma, the antioxidant activity increased compared with the normal-diet chickens. Also, there was no difference in the total cholesterol contents of the blood, but the level of HDL cholesterol increased while that of LDL cholesterol decreased. Furthermore, there were no changes in the total amino acid and protein contents, but the fat content was significantly reduced. As no toxicity was found in the DT 40 cells in the MTT assay, it can be concluded that dietary sulfur in chicken feed can improve the quality of poultry products.

Effects of Dietary Supplementation of Pine Needle Powder on Meat Quality and Physico-chemical Properties of Chicken Meat (솔잎 분말 첨가 사료가 계육의 품질 및 이화학적 특성에 미치는 영향)

  • This study were carried to investigate to the effects of diet supplemented with pine needle powder on pH, total phenol contents, DPPH (1,1-diphenyl-2-picrylhydrazyl) radical scavenging activity, TBARS (thiobarbituric acid reactive substance), WHC (water holding capacity), shear force, sensory evaluation, meat color, and fatty acid composition of chicken meat. Broiler chicks were fed the corresponding diets containing 0% pine needle powder (Control), 0.3% pine needle powder (T1), 0.6% pine needle powder (T2), or 0.9% pine needle powder (T3) for five weeks. The pH and TBARS was significantly decreased by the supplementation of pine needle powder compared to the control (P<0.05). The total phenol contents and DPPH radical scavenging activity were significantly increased by the supplementation of pine needle powder compared to the control (P<0.05), and T3 showed the most effective (P<0.05) more effective in improving self-life compared to the other treatment groups. The CIE $a^*$ value of treatment groups showed significantly higher value compare to the control, however, CIE $L^*$ values was decreased. In fatty acid composition, the level of oleic acid in chicken meat was significantly (P<0.05) increased by the supplementation of pine needle powder compared with the control group. In conclusion, dietary supplementation of pine needle powder was effective in decreasing pH and TBARS, and increasing total phenol contents and DPPH radical scavenging activity in broiler meats.

Effects of Vacuum Packaging on the Quality Characteristics of Frozen Tteokgalbi Made from Spent Laying Hen Meat and Mechanically Deboned Chicken Meat (산란 성계육과 기계발골 계육으로 제조된 냉동 떡갈비의 품질에 미치는 진공포장 효과)

  • This study aimed to investigate the effects of vacuum packaging on the quality characteristics of frozen Tteokgalbi made from spent laying hen meat and mechanically deboned chicken meat (MDCM). The samples were prepared with different levels of added MDCM; C (0%), T1 (20%), T2 (40%), and T3 (60%). The samples were allocated for microbiological and physico-chemical analyses after 0, 45, and 90 days at $-18^{\circ}C$, with or without vacuum packaging. After 90 days of storage, the values of volatile basic nitrogen were significantly lower in the vacuum packaged samples compared to the non-vacuum samples, irrespective of the added levels of MDCM (p<0.05). Sensory results at day 0 of storage showed that the texture scores of C and T1 samples were significantly higher than those of T2 and T3, while the flavor scores were the lowest for the T3 samples (p<0.05). In addition, with increased storage duration, the texture and flavor attributes of the vacuum-packaged samples were found to be higher than those of non-vacuum samples. In general, the vacuum-packaged samples tended to show superior physico-chemical quality characteristics compared to the non-vacuum samples, when the storage time was extended up to 90 days.

Relationship between the Economical Defects of Broiler Meat Carcass and Quality Grade A with a Meat Grader (경제성 관련 계육 도체 결함과 축산물등급사에 의한 품질 A등급의 상관관계)

  • To investigate the relationship between the carcass defects considered by a meat grader and quality grade A, a total of 59,700 broiler carcasses, which were reared from September 1, 2007 to August 31, 2008 and randomly selected from 597 broiler farms with 100 broilers in each farm, were graded by a meat grader using the Korean meat grading system. The average slaughter weight of the broilers increased at the 31- to 33-d age but decreased after the 37-d age. The average daily gain to grade A ratio of the broilers was highest in autumn, and the bruises, flesh blemishes, and abnormalities of the carcasses were found to have been most frequent in winter (p<0.05). The number of economical defects (EDs) increased with the increase in the slaughter age, and the correlation coefficients of the EDs and grade A were -0.88, -0.48, and -0.12 in terms of the conformation, exposed flesh/cuts/tears, and skin discolorations of the carcasses, respectively. The correlation coefficients of the non-economical defects (NEDs) and the grade A of the broiler carcasses were -0.16, -0.22, and -0.32 in terms of the feathers, alien substances, and carcass treatment, respectively. The total number of defects (EDs + NEDs) and the grade A were highly correlated (-0.93), and in particular, the correlation between the grade A and the EDs was -0.91. It can be deemed that the grade A from a meat grader is highly correlated with the EDs. Therefore, the results suggest that broiler carcass grade evaluation using a meat grading system can provide direct information on profits in the market. The resulting carcass grade of broilers can also provide the information needed to decide on a proper incentive for a farm that has attained a good quality grade.
