Correlated Relationships Between Vitamin A Concentration in Serum and Liver and Carcass Characteristics of Hanwoo Steers (거세한우의 혈청 및 간장내 비타민 A 농도와 도체형질간의 상관관계)

  • The current study was conducted to determine the relationships of vitamin A on meat quality of Hanwoo as a basic study to manipulate vitamin A contents in feeds to produce high quality beef. Concentrations of vitamin A in serum and liver of Hanwoo steers(n=328) were analyzed and correlation coefficients with carcass properties were evaluated. Mean vitamin A concentration in the serum of Hanwoo steers in the early fattening period was 212.0$\pm$32.7 IU/dl, and that in the late fattening period was 117.56$\pm$43.15 IU/dl. Mean vitamin A concentration in the liver of Hanwoo steers in the late fattening period was 143.62$\pm$110 IU/g expressing large variations might be depended on animals, feeds and farms. There were negative correlations between serum vitamin A concentration and marbling degree(r=-0.24, P<0.01), fat contents in M. Logissimus dorsi (r=-0.21, P<0.01), and beef quality grade(r=-0.20, P<0.01). Vitamin A-palmitate in liver also expressed negative correlations with fat contents in M. Logissimus dorsi (r=-0.18, P<0.01) and beef quality grade(r=-0.16, P<0.05). From the results obtained in the current study, we concluded that it might be possible to produce high quality beef in Hanwoo by manipulating vitamin A contents in the feeds. Further detailed studies, however, are necessary to determine vitamin A contents in feeds, feeding levels, and feeding periods.

사육고도에 따른 거세 한우육의 냉장중 보수력, 육색 안정성 및 전자코에 의한 향기 패턴 비교

  • 본 연구는 강원도 지역의 사육고도에 따른 비육후기 28개월령 거세 한우육의 냉장중 보수력, 육색 안정성 및 전자코에 의한 향기패턴 비교를 구명하고자 실시하였으며, 도축전 6개월 동안 사육고도(200, 400, 800 m)에 따라 공시한 후 등심(M. longissimus) 부위를 $3{\pm}0.2^{\circ}C$에 8일 동안 저장하면서 실험하였다. pH는 저장기간 동안 400 m 한우육이 200 m 한우육보다 높았으며(p<0.05), 드립 감량은 저장기간 동안 200, 800 m 한우육이 400 m 한우육보다 낮았다(p<0.05). 표면 육색에서 $L^*$은 저장 4일까지 800 m 한우육이 가장 높았으며(p<0.05), 저장 8일에는 200, 800 m 한우육이 400 m 한우육보다 높았다(p<0.05). $a^*$$C^*$는 저장 0일에는 200, 800 m 한우육이 400 m 한우육보다 높았으며(p<0.05), 저장 4일부터는 800 m 한우육이 가장 높았다(p<0.05). $b^*$는 저장 0일에는 200 m 한우육이 가장 높았으나(p<0.05), 저장 4일부터는 800 m 한우육이 가장 높았다(p<0.05). MetMb과 $R_{630}/R_{580}$ 값은 저장기간 동안 400 m 한우육이 200, 800 m 한우육보다 높았다(p<0.05). 전자코의 PCA에 의한 향기 패턴은 신선육에서만 사육고도에 따라 명확히 구분되었다. 따라서 200, 800 m에서 사육한 거세 한우육의 보수력과 800 m에서 사육한 거세 한우육의 육색 안정성이 냉장저장기간 동안 가장 우수하였으며, 전자코에 의해 사육고도에 따른 향기 패턴의 분별을 성공적으로 수행하였다.

Changes of Carcass Traits and Surface Meat Color of Korean Cattle (Hanwoo) Reared Different Altitudes or Transferred from Different Distance (고도 및 수송거리별 출하 한우의 도체특성 및 표면육색의 변화)

  • The purposes of the study were to examine the changes in carcass traits and surface meat color, and cortisol concentration by different altitudes and shipping distances for steer and cow. The experimental animals were shipped from Kangwondo, Kyunggido, Choongchungdo, and Kyungsangdo to Wonju LPC. The animals were examined for yield traits, quality traits, carcass grade, lightness, redness, yellowness, croma value, and cortisol concentration by different altitudes and shipping distances. The results showed that the carcass traits of steer like back fat thickness were not different by shipping distances of 100 km, 150 km, and 200 km. However, the fat thickness was higher in steers shipped from 250 km than 100 km, 150 km, and 200 km distance. Ribeye area was reduced significantly in 200 km and 250 km than 50 km. Yield index and yield grade were significantly low in 250 km than 50-200 km. However, meat color, fat color, texture, mature, and quality grade had no differences between shipping distances. Marbling score was not different in 50-200 km. However, the marbling score in 250 km was significantly lower than that of 50 km. In case of surface meat color by shipping distance, redness, yellowness, chroma value, and hue-angle were not different in shipping distance of 250 km. The lightness had similar result in 50-200 km. However, in case of 250 km the lightness was significantly low. The REA of cow carcass by shipping distance had no differences by shipping distance. The BET had similar results in 50-150 km. However, it had significantly thick in 200 km. The yield index and yield grade had no differences in 50-150 km. However, yield index and grade were significantly low in 200 km. The carcass trait of cow had no differences in all items by shipping distance. Although the carcass traits and the BET for steer by altitude had no differences between 100, 200, 300 and 500 m, but those were significantly thick in 400 m. And the yield index and the yield grade at altitude 400 m were lower than that of other altitudes. The quality traits and the quality grade had no differences between 100, 200, 300, 400, and 500 m altitudes. The yield traits, quality traits, yield grade, and quality grade had no significant differences by altitudes. In case of yield index of cow for 300 m was low than the cases of 100 m and 200 m. The surface meat color for steer and cow had no differences by altitudes. However, the lightness of cow had positive result in 100 m than 200 m and 300 m. In case of steer and cow the cortisol concentration by shipping distance was high as the shipping distances were longer. However, the cortisol concentrations of steer and cow by altitudes were decreased as the altitudes were increased. From the above results carcass traits and carcass grade were decreased and the cortisol concentration was increased as the altitudes were decreased for steer and cow.

Comparison of Growth Performance, Carcass and Meat Characteristics According to the Feeding Method of Concentrate and Total Mixed Fermentation in Hanwoo Steers (TMF와 배합사료의 급여방법이 거세한우의 성장 및 도체특성에 미치는 영향)

  • This study was carried out to investigate the effect of the feeding method of total mixed fermentation (TMF) and concentrate feed on the growth performance, carcass and meat characteristics of late fattening Hanwoo steers. Twenty-four Hanwoo steers were used in this study. The control group was fed with concentrate feed + rice straw from the growing to the late fattening period, while the T1 group was fed with TMF from the growing to the early fattening period and concentrate feed + rice straw for the late fattening period. The T2 group was fed with TMF from the growing to the late fattening period. The average daily gain (ADG) and feed conversion ratio (FCR) were not different between the treatment and control group. Serum cholesterol and high density lipoprotein (HDL) cholesterol concentrations were higher in the T2 groups than in the control group (p<0.05). The yield grade and quality grade were not different between the treatment and control group. The lightness of longissimus muscle was higher in the T1 group than in the control and T2 groups (p<0.05). Poly-unsaturated fatty acid (PUFA) of longissimus muscle was increased in the T2 groups than in the control group. Therefore, the method of feeding TMF and concentrate feed could have a positive effect on the lightness and fatty acid composition of longissimus muscle without affecting the growth and carcass grades of Hanwoo steers.

Effects of Dietary Barley on the Growth Performance and Carcass Characteristics in Hanwoo Steers (보리의 사료가치평가와 한우 거세우 급여에 의한 발육 및 육질개선효과 구명)

  • This study was carried out to determine the effects of processing methods of barley as a proper source of grain in diets of Hanwoo on fermentation pattern in the rumen fluid and digestibility of the diets, the growth performance and carcass characteristics of Hanwoo. The degree of ruminal pH change in the cows fed diets of the Corn(corn basis) and GDRB(ground and dry-rolled barley) tended to be greater than those in the cows fed other two diets (ground barley, GB and dry-rolled barley, DRB). The diet of GDRB showed the lowest ruminal pH(5.5), indicating the rapid degradation of the diet in the rumen. Although ammonia concentration was not affected by diet, the GR and DBR diets maintained the low concentrations of ruminal ammonia compared with other two treatments. And the effects of feeding processed barley grain on body weight gain and meat quality of Hanwoo steers were as follows. Steers fed DRB diet had the highest body weight, 683.0kg at 28 months old, while those fed the GDRB showed the lowest body weight, 653.3kg. The average daily gain(ADG) was similar between the steers fed Corn and GR throughout the whole period, but the GDRB showed the lowest ADG. The steers fed the DRB showed the significant increase in ADG(0.89kg/d from 19 to 23 months old and 0.43kg/d from 24 to 28 months old) compared with those fed other diets. Feeding diets containing corn and/or barley did not influence live body weight, cold carcass weight, carcass yield, back-fat thickness and carcass grade of Hanwoo steers.
