해조류 첨가 가정간편식(HMR) 즉석밥의 소화율 및 항산화 활성 (Digestibility and Antioxidant Activity of Instant Cooked Rice with Seaweed for Home Meal Replacement)

  • In recent years, the home meal replacement (HMR) market has expanded and the consumption of ready-to-heat (RTH) rice has significantly increased. In this study, RTH rice products containing seaweed were prepared with different types of grain: white rice, a mixture of white rice and barley, barley, and mixed grains. The control was a commercial RTH white rice without seaweed. The proximate components, total dietary fiber, in vitro starch digestibility, and antioxidant activity were compared. The ash content of the RTH seaweed rice was higher than that of the control (P<0.05). The total dietary fiber of the RTH seaweed rice was in the range of 1.03-6.57%, which directly impacted the in vitro starch digestibility. The in vitro antioxidant activity including total phenolic content, reducing power, DPPH (2,2-diphenyl-1-picryl-hydrazyl) and ABTS+ (2,2'-azino-bis-3-ethylbenzthiazoline-6-sulphonic acid) radical scavenging activity of the seaweed rice with barley and the white rice/barley mixture was greater than that of the other rice products (P<0.05). These results indicate that the in vitro digestibility and antioxidant activity of the HMR RTH seaweed rice were greater than those of the control. In addition, when the RTH seaweed rice was prepared with barley, the functional activity improved.

성별에 따른 중년층의 가정간편식에 대한 소비행동과 선택속성 (Consumption Behaviors and Selective Attributes of Home Meal Replacement in Middle-aged Adults according to Gender)

  • The purpose of this study was to investigate and compare the consumption behaviors for purchase of Home Meal Replacement (HMR) products and importance and satisfaction on selective attributes of HMR in middle-aged adults by gender. The subjects were 919 middle-aged adults (400 males and 519 females; 40 to 64 years) residing in Seoul and its metropolitan area, who have HMR purchasing experience. The survey was conducted from January to August 2018. Statistical analysis was performed using SPSS 23.0 program. Consumption frequency of HMR products in male and female subjects was 1-2 times a month by 42.3% and 40.8% and 4-6 times a month by 26.8% and 19.8%, respectively (p<0.05). Reasons for purchasing HMR in male and female subjects were shown significantly different from saving time by 44.8% and 50.5% and easy cooking by 25.8% and 16.6%, respectively (p<0.01). HMR products with high preference and satisfaction for the subjects included Gimbap, precooked dried rice, and frozen food. According to the Importance-Performance Analysis (IPA), selective attributes of HMR with high importance and low satisfaction in the second quadrant were food additives, origin, nutrient content, and price, for both male and female subjects; additionally, hygiene was a factor included only by female subjects. Therefore, these results suggest that it is needed to consider to produce HMR products with improved qualities using reliable food materials and ingredients and to maintain competitive pricing for the expansion of HMR products consumption of middle-aged adults.

구독서비스를 통한 HMR 제품 구매에 있어 소비가치가 소비자태도에 미치는 영향 (Effects of Consumption Value on Consumer Attitude in Purchasing HMR Products through Subscription Service)

  • 최근 몇 년 사이에 한국인의 소비 트렌드는 급격한 변화를 맞이하고 있다. 또한 새로운 쇼핑 방법으로 구독경제가 등장하여 성장하고 있다. 본 연구는 구독경제 기반 구독서비스에 대한 소비가치가 소비자태도와 지속사용의도와의 관계를 검증하는데 목적으로 이루어졌다. 이를 위해 구독서비스를 통한 HMR 제품을 사용한 소비자 300명을 대상으로 구조방정식모형을 사용하여 분석하였다. 연구결과는 다음과 같다. 첫째, 구독서비스 이용자가 지각한 HMR 제품의 소비가치(기능적, 감정적, 사회적, 경제적)는 경제적 가치를 제외하고 모두 소비자태도에 유의미한 긍정적 영향을 미치는 것으로 나타났다. 둘째, 소비자태도는 소비자의 지속사용의도에 긍정적인 영향을 미치는 것으로 나타났다. 본 연구를 통해 현재 초기단계인 구독서비스에 관련한 학구적 이론 발전에 기여하고, 구독서비스를 활용하고자 하는 HMR 관련 기업들에게 관리적 시사점을 제공하고 있다.

한국에서 시판되는 가정간편식 제품의 당류 함량 평가 (Assessment of the Sugars Contents in Home Meal Replacement Products Sold in Korea)

  • The purpose of this study was to assess the sugars contents of home meal replacement (HMR) products currently sold in Korea. This study surveyed and examined the sugars contents in 835 popular HMRs (294 ready-to-eat foods; RTE, 499 ready-to-cook foods; RTC, 42 fresh-cut vegetables; FCV) through the nutrition labels. The average price, weight and energy content of 835 HMR products were 3,917.5 Korean won, 336.0 g, and 522.7 kcal, respectively. The sugars content per product was significantly higher in the RTCs (13.4 g) and RTEs (10.3 g) than that in the FCVs (4.2 g) (P<0.001), and the percentage of energy from sugars was 9.7% for the RTEs, 10.2% for the RTCs, and 8.7% for the FCVs without any significant difference. The sugars contents of 9 RTE types were in the order of side dishes (34.3 g), sunsik (22.5 g) and hamburgers (12.1 g) per package. The percentage of energy from sugars was highest in side dishes (28.1%), followed by kimchi (24.9%), sunsik (17.2%), and hamburgers (10.6%). Among 14 RTC types, the sugars contents were in the order of hot dogs (52.9 g), tteokbokki (30.4 g) and noodles (21.2 g) per package. The percentage of energy from sugars was the highest at 22.9% for sauces, followed by side dishes (17.3%), porridges (14.4%), instant stews (14.3%), and hot dogs (13.1%). Strategies and practices are needed to reduce the sugars contents of HMR producers and the sugars intakes of HMR consumers.

한식 가정간편식(home meal replacement)에 대해 도출된 중국인과 한국인의 감정 용어 비교 (Comparison of emotional terms elicited for Korean home meal replacement between Chinese and Koreans)

  • 그룹 인터뷰를 통해 도출된 총 24개의 감정 용어 중 한국인과 중국인 결과 모두에서 대부분의 감정 용어가 긍정적 정서가를 가졌고, 중국인과 한국인에게 유사한 정서가를 유발하였으나, 몇몇 용어에서 정서가와 각성가의 차이가 나타났다. 그러나 한 국가에서 부정적 정서가나 낮은 각성가를 가지는 용어가 다른 국가에서 긍정적 정서가나 높은 각성가를 가지는 정반대의 평가 결과는 나타나지 않았다. 본 연구에서 동일한 의미를 가지는 단어에 대해 국가 별로 정서가/각성가가 다르게 나타났으므로, 향후 평가를 통해 도출된 감정 결과에 대한 해석을 할 때 이러한 부분들이 반영되어야 할 것으로 생각된다.

영양표시타입이 가정간편식 건강성 평가와 구매의도에 미치는 영향 (Effect of Type of Nutrition Labeling on the Healthfulness Evaluation and Purchase Intentions of Home Meal Replacements (HMR) in South Korea)

  • Objectives: The purpose of this study was to examine the effects of the types of nutrition labeling on the processing fluency, health evaluation and purchase intentions of home meal replacements. Methods: This online experimental study was conducted from December 29 to 31, 2019 and included 134 participants. The research design was 2 (Objective nutrition labeling: present vs. absent) × 2 (Evaluative nutrition labeling: present vs. absent) and each participant was randomly assigned to one of four groups. As stimuli, five types of ready-to-heat foods sold in the market were used. Results: Processing fluency (4.91 points) and purchase intention (4.13 points) were significantly high when both evaluative nutrition labeling and objective nutrition labeling were presented, and healthfulness evaluation (4.47 points) was significantly high when only evaluative nutrition labeling was presented. All three variables were measured to be high when evaluative nutrition labeling was presented. The evaluative nutrition labeling that visually represented nutritional values was found to be more effective for processing fluency, healthfulness evaluation, and purchase intention than the objective nutrition labeling representing the nutritional value of the product in numbers and proportions. Conclusions: These results show that it is necessary to develop various types of evaluative nutrition labeling to enable consumers to choose and purchase healthful home meal replacements. Also, consumer education and public campaigns are needed to encourage consumers to select healthier home-cooked meals using nutrition labeling.

국내 가정간편식의 시장 규모, 구매 및 섭취 실태 분석의 문제점 (Problems Encountered in Analyzing the Market Size, Purchase, and Consumption of HMR in the Republic of Korea)

  • Objectives: This study examined the problems encountered when analyzing the market size, purchase, and consumption of HMR (home meal replacements) in the Republic of Korea. Methods: The macro data relevant to the market size and purchase status of HMR were critically summarized. The micro data retrieved from the 2019 & 2020 Korea National Health and Nutrition Examination Survey (KNHANES) were analyzed to understand the consumption of HMR. Results: The Korea Agro-Fisheries & Food Trade Corporation and the Ministry of Food and Drug Administration reported the market size of HMR, whereas the Korean Rural Economic Institute and the Rural Development Administration reported the purchase expense and frequencies of HMR. Since the values on the market size and purchase status were calculated or surveyed using different scopes of HMR, there have been reliability issues for the data presented. Additionally, lack of consensus on the use of Korean terms corresponding to HMR was found to be a problem. To examine the consumption of HMR, analysis of the food intake data from KNHANES presented results with very low validity due to the inappropriate survey and coding scheme not reflecting the inclusion of new food types. Conclusions: Several problematic discrepancies were encountered in the statistics on HMR. The fundamental cause of these problems was the absence of agreement on the scope of HMR and the Korean terms corresponding to it. Considering the increasing importance of HMR in Korean diets, urgent cooperative efforts are required between the government and academia to derive an agreed Korean term and establish the scope of HMR.

충청지역 대학생의 가정간편식 섭취 실태 및 섭취 정도에 따른 식사의 질 평가 (Home Meal Replacement Use and Dietary Quality according to Its Use Frequency among University Students in Chungcheong Area)

  • The purpose of this study was to analyse factors related to Home Meal Replacement (HMR) use among university students and to determine the dietary quality according to its consumption. A survey on the consumption of HMR and Nutrition Quotient (NQ) was conducted from September to November 2021. The study included 232 university students (88 males, 144 females) from Chungcheong. The proportion of consumption at least once a week was 71.55% for ready-to-eat foods, 55.60% for ready-to-cook foods, 40.95% for fresh-cut products, and 21.12% for meal-kits. The preference ratings were as follows: ready-to-eat foods, 3.77 out of 5 points, meal-kits, 3.53 points, fresh-cut products, 3.52 points, and ready-to-cook foods, 3.45 points. In terms of satisfaction, convenience (4.06 out of 5 points), taste (3.71 points), variety (3.67 points), and food hygiene (3.62 points) were rated the highest. The scores in the moderation NQ were significantly lower in the groups that consumed ready-to-eat foods (p=0.0002), ready-to-cook foods (p=0.0002), and meal-kits (p=0.0068) at least once a week compared to the groups that consumed them less than once a week. In conclusion, the results will serve as basic data for nutrition education for proper consumption of HMR among university students.

지진 시 파괴면을 고려한 중력식 안벽의 영구변위 평가 (Estimation of Permanent Displacement of Gravity Quay Wall Considering Failure Surface under Seismic Loading)

  • 지진에 대한 중력식 안벽의 안정성은 구조물의 허용변위를 기준으로 평가하며, 외력으로 발생하는 변위를 계산하기 위하여 Newmark 활동블록 이론에 기초한 변위 경험식 혹은 수치해석을 사용한다. 수치해석의 경우 복잡한 지형 및 구조물에 대한 정밀한 분석이 가능하나 적절한 입력변수 및 환경설정의 어려움으로 전문가가 아니면 신뢰성 있는 결과 도출에 한계가 있다. Newmark 법의 변위 경험식은 지진파만을 가지고 영구변위를 추정하기에 수치해석보다 간편하여 널리 사용되고 있다. 하지만 변위 경험식들은 구조물의 특성과 활동면에 대한 파라메터가 없으며, 강체로 가정된 활동면에서 흙의 비선형 거동과 구조물과의 상호작용을 고려하지 않았다. 따라서 중력식 안벽의 지진 안정성 평가를 위해서는 앞서 언급한 한계점을 보완하는 새로운 변위 경험식이 필요하다. 본 연구에서는 수치해석을 통해 구조물 뒷채움재의 응답특성을 분석하여 최적의 활동면 산정법을 제시하고자 하였다. 이를 위해 유한요소해석을 수행하여 다양한 지진파에 따른 응답특성과 응력-변형률 관계를 분석하였다. 그 결과 뒷채움재의 응답특성과 활동면은 입력 지진파에 따라 달라지는 것으로 나타났다.

정전기적 힘을 이용한 실내공기 미세부유먼지 제거 요소기술의 개발을 위한 기술별 시장현황 및 연구 동향 분석 (Analyses of the current market trend and research status of indoor air quality control to develop an electrostatic force-based dust control technique)

  • 본 연구에서는 실내공기 오염물질의 제어를 통하여 공기질을 개선 할 수 있는 요소기술의 개발을 위하여 최근의 관련 기술 및 시장 현황을 살펴보고, 실내공기질 오염물질의 특성과 최근에 이루어진 연구를 바탕으로 실내공기질 제어 기술의 특징 및 장 단점을 분석하였다. 적용기술에 따른 공기청정장치의 종류 중에는 현재 필터를 이용한 기계식 여과기술 및 장치산업이 대부분을 차지하고 있으나, 최근에는 설치와 작동이 간편하고 에너지 효율과 기술의 적용성도 좋은 전기전자식 기술이 주목받고 있으며 기계식 장치(5.5%), 이온화 장치(-0.3%), 오존청정(-0.5%) 등 다른 기술에 비하여 향후 시장 발전가능성(성장률 6.3%)이 높은 것으로 분석되었다. 실내 공기질의 오염은 가스상의 VOCs와 입자상의 미세먼지들이 주 원인물질인데 특히 입자가 매우 작은 미세먼지들은 그 특성으로 인체 내부에 깊숙이 침투하여 건강을 위협하고 가스상 오염물질과 반응하여 2차 오염물질을 낼 수 있어 근본적인 제어 기술이 필요하다. 전기전자식 기술 중 유전영동 및 정전기력을 이용한 먼지 제어 기술은 전기적으로 미세먼지와 같은 입자를 부유시켜 제어하는 기술로서 미세부유먼지에 많은 사람들이 노출될 수 있는 다중이용시설 등에 적용될 수 있으며 이를 위해 실내 온도 및 습도, 대상물질의 수분 함량과 같은 주변 조건에 의한 부유먼지의 이동 특성이 함께 고려되어야 한다. 미세 부유먼지를 효과적으로 제어할 수 있는 전기전자식 기술을 이용하여 다중이용시설 뿐 아니라 사무실 및 일반가정 등의 실내 공기질 개선을 위한 핵심기술로 발전할 수 있는 가능성이 높을 것으로 판단된다.
