새송이버섯의 절임전처리 조건에 따른 품질 변화 특성

  • 새송이 버섯은 맛과 향이 좋고 영양적으로 우수하여 성인병 예방과 개선 효과가 있다고 알려져 있으나 재배농가의 급증으로 인한 가격하락과 집중출하로 신선도의 하락 등이 문제가 되고 있어 새송이 버섯의 활용성을 향상시키고, 소비자의 기호를 충족시킬 수 있는 버섯류 가공품 개발이 요구되고 있다. 전통절임식품을 응용한 새로운 버섯류 장류절임 가공법을 개발하기 위하여 절임 전 처리에 따른 품질특성을 비교하였으며, 이를 위하여 먼저 절임 전처리 조건으로 블랜칭처리, 적정 염농도와 처리시간 및 탈염법을 개발하고 건조 등의 전처리에 따른 품질 평가는 수분함량, 염도, 색상, 조직감, 관능특성 등을 평가하였다. 새송이 버섯을 전처리하기 위한 블랜칭 처리조건은 7$0^{\circ}C$에서 10분간 처리한 구가 조직감이 우수하고 갈변이 적었으며 염 침지시간은 침지 72시간까지는 증가하였으나 그 이후로는 증가하지 않았고 4$0^{\circ}C$에서 탈염하는 것이 가장 우수하여 전처리 조건으로 선정하였다. 전처리 방법에 따른 중량변화는 블랜칭 처리가 약 10% 정도 중량이 더 많았으며 이 영향은 건조 후에도 지속되었다. 수분함량도 블랜칭 처리가 높았으며 염도 또한 건조 처리에 따라 높은 함량을 보였으나 블랜칭 처리를 병행했을 경우 낮은 값을 나타내었다. 조직의 강도는 무처리에 비하여 전처리를 함에 따라 많은 힘이 소요되어 질긴 조직 특성을 나타냄을 알 수 있다. 관능평가 결과 블랜칭 처리를 단독으로 실시한 B(B)처리구가 관능적 특성치 모두 높은 값을 보여 전처리 방법으로는 가장 우수한 전처리 방법임을 알 수 있었다.저온 장시간 처리한 경우에 비하여 낮은 수준이지만 약간의 증감 경향을 보이다가 고른 평형 상태를 유지하였다. 산소 농도는 저온 장시간 처리 직후 급격히 저하된 후 다시 증가하였으며 저장 7일 후에는 4$0^{\circ}C$ 3시간 처리구를 제외하고는 평형 상태를 유지하였다. 고온 단시간 처리구의 경우 처리 직후부터 저장 7일 후까지 고른 평형 상태를 유지하였다. 에틸렌의 경우 저온 장시간 처리구는 처리 직후 그 농도가 급격히 상승하였다가 저장 1일 후부터 대조구보다 낮은 값을 나타내었다. 고온 단시간 처리구의 경우 저온 장시간 처리구와는 달리 저장 1일 후부터 그 농도가 다소 상승되었다가 다시 감소는 경향을 보였다. 한편 열처리하여 냉각시킨 직후 및 저장1주 후 사과의 pH, 산도, 당도, 경도, 과육의 갈변도 등을 조사하였던 바 대조구 및 처리구간에 일부 항목에 있어서는 약간의 차이를 나타내었다. 대치할 수 있을 것이라고 사료된다. 수분함량은 기계적 검사보다 관능검사와 더욱 높은 상관관계를 나타냈다.내었다. 항균활성이 우수한 생약재를 농도별로 활성을 조사한 결과, 물 추출물과 10% Ethanol 추출물 모두 낮은 농도에서도 우수한 항균활성을 나타내었다.취와 함께 점질성 갈변물질이 생성되었다. 이와 같은 결과로 볼 때, BAAG의 처리는 BAAC의 경우보다 가격은 저렴하면서도 항균력은 우수한 천연 항균복합제재로써 농산물 식품원료에 적용하여 선도유지 기간을 연장할 수 있는 효과를 기대할 수 있었다. 과일 등의 포장제로서 이용할 가능성을 확인하였다.로 [-wh] 겹의문사는 복수 의미를 지닐 수 없 다. 그러면 단수 의미는 어떻

Studies on the Characterization of Black Goat Meat and Bone Beverage Containing Honey with Red Ginseng (홍삼꿀을 첨가한 흑염소 육골액 음료의 특성에 관한 연구)

  • This study was designed to investigate the characterization of black goat meat and bone beverage containing honey of red ginseng. The crude proteins and moisture contents of black goat meat were higher than those of pork and beef, but the crude lipid content of black goat meat was lower than that of those. The potassium content of black goat meat was lower than that of chicken, but similar to the pork and beef. The sodium content of black goat meat was lower than that of chicken, pork and beef. The result of the sensory evaluation of black goat meat and bone beverage added honey with red ginseng by 25 panels, was that the beverages added $7.5\%\;and\;8.0\%$ honey with red ginseng were better than any other beverages. Thus, the results suggest that the black goat meat bone beverage added honey with red ginseng could be one of valuable drinks.

  • This case demonstrates the rare occurrence of a radiolucent temporary resin bridge aspiration in adults while they are in a conscious and awaken state and the resultant formation of inflammatory polyps. Although no unique findings were noted in a chest x-ray, careful history taking accompanied by physical examinations can lead to clinical suspicion of foreign body aspiration in an earlier stage. Moreover, flexible bronchoscopy is a tool useful not only for the evaluation process but also for managing the aspirated foreign material.

Quality Characteristics of Yanggeng Sweetened with Trehalose and Textural Changes During Storage (트레할로스 첨가량과 저장시간에 따른 양갱의 품질 특성)

  • This study investigated the quality characteristics of Yanggeng sweetened with various amounts of trehalose (0, 40, 60, 80, 100 % of trehalose) and their changes during storage times. The moisture content, color value, $^{\circ}Brix$, pH, texture profile, QDA and acceptance for samples were tested. As a result of the mechanical tests, moisture content and pH were increased while hardness were decreased with increased trehalose content. Also, moistness, gloss and after taste were increased with increased trehalose in the sensory attribute difference test. Acceptance test showed Yanggeng with 60% trehalose and 40% sucrose obtained the highest scores on flavor, taste and overall acceptability. During storage in refrigerator, Yanggeng sweetened with higher % of trehalose showed significantly higher moisture content, and lower syneresis and hardness than the control sweetened with only sucrose. The results of the sensory test showed that 60% trehalose Yanggeng was the highest in flavor, after taste, and overall acceptability.

Manufacturing and Physical and Chemical Characteristics of Fruit Leathers Using Flesh and Pomace of Japanese Apricots (Prunus mume Sieb. et Zucc) (매실과육과 매실착즙박을 이용한 Fruit leather의 제조와 그 특성)

  • Fruit leathers were manufactured from flesh and pomace of Japanese apricots and evaluated for their physical, chemical, microbiological and sensory properties. The contents of total dietary fiber(TDF) in Japanese apricot leathers(JAL) and Japanese apricot pomace leathers(JAPL) were 4.06% and 7.82%, respectively. One hundred grams of leather contained 368kcal in JAL and 352kcal in JAPL. Water activities of fruit leathers were 0.36 in JAL and 0.48 in JAPL. None of the factors had an effect on the microbiological counts of any of the organisms. The L, a and b values of the fruit leathers were higher in those made of JAF than those made of JAP. The fruit leathers made of JAF were harder than those made of JAP. Sensory panelists preferred fruit leathers made of JAP to those made of JAF in all attributes, except for their color.

Reduction in bitter taste and quality characteristics in pickled bitter melon (Momordica charantia L.) by different pretreatment conditions (전처리 조건에 따른 여주(Momordica charantia L.) 초절임의 쓴맛 감소와 품질평가)

  • This study was performed to investigate the reduction in bitter taste and quality characteristics by pretreatments (brining; 1, 5% and blanching; 1, 3 min) in pickled bitter melon, respectively. We prepared picked bitter melon samples at 1%-1 min, 1%-3 min, 5%-1 min, 5%-3 min. Total polyphenol and total flavonoid contents were found to be the highest in 5%-1 min at $14.23{\pm}0.40mg\;CE/g$ (dry) and $4.46{\pm}0.10mg\;RE/g$ (dry), respectively. L-ascorbic acid level was the highest in control samples. Arginine and glutamic acid were increased by brining and blanching. ABTS and DPPH radical scavenging activity were found to be the highest at $43.60{\pm}0.40$ and $44.88{\pm}0.20%$ at 5%-1 min, respectively. ${\alpha}-glucosidase$ inhibitory activity was the highest at 5%-1 min. The a value was statistically different, whereas L and b values were similar among different pretreatments. Hardness in pretreated samples was decreased as compared to that in the control. Among sensory evaluations, 'color' did not indicate any statistical difference, while 'texture', 'bitterness preference' and 'overall preference' increased with pretreatments, and 'bitter intensity' decreased.

A Study on Food Safety of Distribution Foods in the Northern Gyeonggi Area (경기북부권역에서의 유통식품 안전성 연구)

  • This study was performed to investigate food safety of 18,446 distribution foods in the northern Gyeongii area from 2010 to 2014 year. Food safety analysis was conducted by using Korean food code and food additives code. Fail determination about standards and specifications was 184 cases of 18,446 distribution foods, which represented about 1.00% fail rate of total cases. In the case of collected by food sanitation inspector, fail determination was 124 cases of 13,706 foods and showed about 0.90% fail rate. In the case of requested for food safety inspection, fail determination was 42 cases of 3,419 foods and showed about 1.23% fail rate. Results of fail determination by years, 61 cases (about 1.66%) detected fail among 3,683 foods in 2010 year, 37 cases (about 0.96%) detected fail among 3,863 foods in 2011 year, 44 cases (about 1.18%) detected fail among 3,721 foods in 2012 year, 25 cases (about 0.68%) detected fail among 3,669 foods in 2013 year, and 17 cases (about 0.48%) detected fail among 3,510 foods in 2014 year. In distribution of fail rate by month, september was showed the highest fail rate at 2.54% compared with other months. Fail determination by type of foods showed that 23 cases of perilla oil detected fail in 204 foods (about 11.27%), 32 cases of sesame oil detected fail in 394 foods (about 8.12%), 9 cases of pickles detected fail in 177 foods (about 5.08%), and 10 cases of red pepper powder detected fail in 283 foods (about 3.53%). For analysis of fail determination by examination items, microorganism was 28 fail cases (15.22%) and that was the highest level among examination items, linolenic acid and acid value were 27 fail cases (14.67%), iodine value was 19 fail cases (10.33%), content amount was 16 fail cases (8.70%), and sulfur dioxide was 9 fail cases (4.89%). In conclusion, the result of this study indicate that various fail determination items were detected of distribution foods on the market during the past five years and it was showed to higher hazard occurrence potential due to food. Therefore, more strict food safety control will be need for improving human health by prevent food health problem and ensure food safety.

Quality Characteristic and Antioxidant Activities Maejakgwa Added Cedrela sinensis Powder (참죽 분말을 첨가한 매작과의 품질 특성 및 항산화 활성)

  • Cedrela sinensis is a Korean traditional wild herb that has a special taste and aroma. This study is conducted to investigate the effect of Cedrela sinensis powder on the antioxidant activity and the quality characteristics of Maejakgwa (Korean traditional cookie). Maejakgwa was prepared with different amounts of Cedrela sinensis powder (in ratios of 0, 5, 10, 15 and 20% to the flour quantity). The antioxidant activity was estimated by DPPH free radical scavenging activity and the total phenol content in Cedrela sinensis powder and Maejakgwa. For analyzing the quality characteristics, the bulk density and pH of the dough, moisture contents, volume, color, texture profile analysis, and sensory evaluations were measured. The bulk density, moisture contents, volume, total phenol contents and DPPH free radical scavenging activity of Maejakgwa significantly increased with increasing Cedrela sinensis powder (P<0.001), while the pH of the dough, L values and b values of Maejakgwa significantly decreased with increasing Cedrela sinensis powder content (P<0.001). The consumer acceptability score for 10% Cedrela sinensis Maejakgwa ranked significantly higher (P<0.001) than those of the other groups in overall preference, flavor, taste, crispiness and color. From these results, we suggest that Cedrela sinensis is a good ingredient for increasing the consumer acceptability and functionality of Maejakgwa.

Studies on Bacterial and Fungal Contamination in the Herbal Medicines (한약재에서의 세균과 진균 오염에 관한 연구)

  • The study has been done for about two months through June 2 to July 30 of 2010. The study subjects are three herbal-pharmaceutical companies located in Seoul. Each of them purchased thirteen types of medicinal herbs, then the study did analysis for microbial contamination status of bacteria and fungi. Here, the study focuses on settling out fundamental data bases regarding the investigation standards of microbial contamination. As comparing the study results with contamination limits of bacteria and fungi which are represented by $10^7$ CFU/g and $10^4$ CFU/g in number respectively, the total percentage of fungi contamination which is 12.8% is higher than that of bacteria is only 7.7%. In the DNA homology analysis regarding 16S rRNA gene, 117 of colonization have been selected as study subjects. Including B. cereus composing of resistant spores, soil microbes account for approximately 96.6%. It indicates that it is important to establish collection and preservation systems in handling medicinal herbs. Also, it is critical to manage microbial contamination limits. In conclusion, the study proposes the needs to study on possible mingling of bacteria and fungi in manufacturing process, and microbial contamination status in medicinal herbs.

Characteristics of Taste Compounds of Red Snow Crab Cooker Effluent and Hepatopancreas for Developing a Crab-like Flavorant (게향 소재 개발을 위한 붉은 대게 자숙액 및 내장의 정미 성분 특성)

  • In order to develop materials of crab-like flavorant, taste compounds including physicochemical characteristics were analyzed in red snow crab cooker effluent(RSCCE) and hepatopancreas. The $30\;^{\circ}Brix$ was a suitable condition in from 1.5 to $40\;^{\circ}Brix$ RSCCE by sensory evaluation. Lactic acid and succinic acid were major compounds in non-volatile organic acids detected in both $30\;^{\circ}Brix$ RSCCE and hepatopanceras. The 5 compounds such as AMP, HxR, IMP, ATP and GMP were major in ATP related compounds of $30\;^{\circ}Brix$ RSCCE, whereas 3 compounds including IMP, GMP and Hx in hepatopanceras. The content of total free amino acids in hepatopancreas was 5.6 times higher than in $30\;^{\circ}Brix$ RSCCE. The major compounds in $30\;^{\circ}Brix$ RSCCE were followed by methionine, lysine, arginine, valine, histidine, alanine, hydroxy proline, and glycine in that order, whereas methyl histidine, leucine, alanine, glutamic acid, glycine, valine, threonine, taurine, isoleucine, and serine were followed in hepatopancreas. By adding 0.5%(w/w) hepatopancreas in $30\;^{\circ}Brix$ RSCCE, crab meat-like odor was kept high level by sensory evaluation.
