한국인 상용 식품의 아연함량표를 보완하여 평가한 한국농촌성인의 아연 섭취 실태 (Supplementation of Zinc Nutrient Database and Evaluation of Zinc Intake of Korean Adults Living in Rural Area)

  • This study was conducted for two purposes ; (1) to develop a database for zinc levels in commonly usef Korean food items ; and (2) to calculated the zinc intake fo Korean adults living in a rural area. The currently used Korean food compositinotable was supplemented in term sof zinc content using several methods ; (1) analyzing 98 Korean Food items frequently consumed by Korean adults living in rural area. ; (2) adapting values from U.S Minnesota for 71 items ; and (3) imputing values from similar food for 282 items. A new zinc nutrient databse was constructed including zinc contentrs of 1,195 food items. Zinc intake of rural Korean adults was estimated by a 240hours recall method from 2 ,037 adults over 30 over 30years of age in Yeonchon -gun , Kyunggi province of Korea. Mean daily zinc intake of all subjects was 61mg an dmean intake level of males (7.0mg/day, 46.85 of RDA) was significantly thigher than females(5.2mg/day, 43.0% of RDA). Subjects in their 40's had the highest zinc intak ewhile those over 70 years of age consumed the least amount of zinc. The food group that contributed most to the dietary ainc intake of subjects was cereals and grain products supplying 38% of total zinc intake. The next most important group for zinc intak ewas the meat, poultry , and product group supplying 26% ot total intake. This group was followed by fishes and shellfishes, legumes and their products, and vegetales . For individual food items , reicecontribued most, supplying 27% of total zinc intake follwoed by beef(10%) and prok(9%) . Altogether, plant foods supplied 68% of zinc intake suggesting that the bioabailability of dietary ainc is low. In conclusion, these results show ethat the zinc intake of rural Korean adults is low and that sources of dietary zinc are mainly plant foods, suggesting low bioavailability . Further studies are needed to determine zinc intake and status of Korean population. The zinc database developed in this study will be very valuable for such studies.

Effect of zinc on the immune response and production performance of broilers: a meta-analysis

  • Objective: This study performed a meta-analysis of published trials to determine the effects of zinc on the immune response and production performance of broilers. Methods: A database was built from published literature regarding the addition of zinc forms or doses and their relation to the immune response and production performance of broilers. Different doses or forms of zinc were identified in the database. The recorded parameters were related to the immune response and production performance. The database contained a total of 323 data points from 41 studies that met the criteria. Then, the data were processed for a meta-analysis using a mixed model methodology. The doses or different forms of zinc were considered fixed effects, different studies were treated as random effects, and p-values were used as the model statistics. Results: An increase in zinc dose increased (p<0.05) pancreas metallothionein (MT) and zinc concentrations in the plasma, tibia and meat, all in quadratic patterns, but linearly decreased (p<0.05) the heterophil/lymphocyte (H/L) ratio. Regarding the different zinc forms, both inorganic and organic zinc increased (p<0.05) the zinc concentrations in the plasma and tibia, the calcium and phosphorus contents in the tibia, and the antioxidant activity of superoxide dismutase in meat as compared to control. An increase in zinc dose increased average daily gain (ADG) and decreased feed conversion ratio (FCR) following a quadratic pattern (p<0.05). Inorganic and organic zinc decreased (p<0.05) FCR and H/L ratio than that of control, but these two forms were similar for these parameters. Conclusion: Zinc addition has a positive impact on immunity and broiler production. Zinc can suppress stress and inhibit the occurrence of lipid peroxidation in broilers, and it can also improve ADG, FCR, and the quality of broiler carcasses.

한국 유아의 아연 섭취 수준 평가를 위한 데이터베이스 구축 (Development of a Zinc Database to Estimate the Zinc Intake Levels in the Korean Toddlers and Preschool Children)

  • Objectives: The objective of this study was to develop a zinc database (DB) to estimate the intake levels of zinc in Korean toddlers and preschool children using the data from the Korea National Health and Nutrition Examination Survey (KNHANES). Methods: A total of 3,361 food items for the DB representing the usual diet of Korean toddlers and preschool children were selected based on KNHANES (2009~2013) and the food composition table of Rural Development Administration (RDA). The existing values of zinc in foods were collected from the latest food composition tables of RDA (9th revision) and the US Department of Agriculture (legacy release). The zinc contents were filled preferentially with these collected values. The missing values were replaced with the calculated values or imputed values using the existing values of similar food items from the data source. The zinc intake levels of Korean toddlers and preschool children were estimated using KNHANES and zinc DB Results: A total of 1,188 existing values, 412 calculated values, and 1,727 imputed values were included in the zinc DB. The mean intake levels of zinc for 1-2-year-old children and 3-5-year-olds were 5.17 ± 2.94 mg/day and 6.30 ± 2.84 mg/day, respectively. There was no significant difference in the zinc intake levels between boys and girls in each group. Conclusions: This newly developed zinc DB would be helpful to assess the zinc nutritional status and investigate the association between the zinc intakes and related health concerns in Korean toddlers and preschool children.

Dietary zinc intake and sources among Koreans: findings from the Korea National Health and Nutrition Examination Survey 2016-2019

  • BACKGROUND/OBJECTIVES: Zinc is an essential trace mineral which is important for the growth and development of the human body and immunological and neurological functions. Inadequate zinc intake may cause zinc deficiency with its adverse consequences. In this study, we aimed to estimate the dietary zinc intake levels and sources among Koreans. SUBJECTS/METHODS: For this secondary analysis, we obtained data from the Korea National Health and Nutrition Examination Survey (KNHANES) 2016-2019. Individuals aged ≥ 1 yr who had completed a 24-h recall were included. The dietary zinc intake of each individual was calculated by applying data from a newly developed zinc content database to the KNHANES raw data. We also compared the extracted data with the sex-, age-specific reference values suggested in the Korean Dietary Reference Intakes 2020. The prevalence of adequate zinc intake was then evaluated by the proportion of the individuals who met the estimated average requirement (EAR). RESULTS: The mean zinc intake of Koreans aged ≥ 1 yr and adults aged ≥ 19 yrs were 10.2 and 10.4 mg/day, equivalent to 147.4% and 140.8% of the EAR, respectively. Approximately 2 in 3 Koreans met the EAR for zinc, but the zinc intake differed slightly among the different age and sex groups. In children aged 1-2 yrs, 2 out of 5 exceeded the upper level of intake, and nearly half of the younger adults (19-29 yrs) and the elders (≥ 75 yrs) did not meet the EAR. The major contributing food groups were grains (38.9%), meats (20.4%), and vegetables (11.1%). The top 5 food contributors to zinc intake were rice, beef, pork, egg, and baechu kimchi, which accounted for half of the dietary intake. CONCLUSION: The mean zinc intake among Koreans was above the recommended level, but 1 in 3 Koreans had inadequate zinc intake and some children were at risk of excessive zinc intake. Our study included zinc intake from diet only, thus to better understand zinc status, further research to include intake from dietary supplements is needed.

일부 여대생의 구리와 아연 영양상태 평가 (Evaluation of Zinc and Copper Status in Korean College Women)

  • This study was conducted to assess dietary intake and nutritional status of zinc and copper in Korean college women. Dietary survey was conducted by 24-hour recall method and fasting serum samples were collected from 111 apparently healthy subjects. Intake levels of zinc and copper were calculated using newly developed database for Zn & Cu of Korea food. Serum levels of Zn, Cu and activities of ALP, EC-SOD were measured from fasting serum sample. Mean daily zinc and copper intakes were 6.72mg/day(56.0% RDA) and 1.11mg/day respectively. Mean values of serum ALP activity, zinc and copper concentration were 43.9U/L, 14.8umol/1, 15.5umol/1and these values were mostly within normal range. EC-SOD activitis of the subjects were low and had no correlation with intake or serum levels of Zn, Cu. In conclusion, these results show that zinc and copper intake of Koran college women are lower than those from other counties but higher than those of adults in rural area of Korea. Their serum levels of Zn, Cu, ALP are relatively normal. These results indicate that marginal deficiency of Zn and Cu may be quite prevalent in these subjects but serum indicators measured may not be sensitive enough to detect such marginal deficiency. Further study in needed to develop a biochemical index sensitive enough to evaluate Zn and Cu status.

기본유의 변화가 안료의 발색에 미치는 영향과 Computer D-base해석 (Effect of Variable Base Glaze on the Gradation of Colouring and Analysis of The Computer D-Base)

  • This research was performed to investigate how the basic glaze change affected colour development at high temperature with a stable colorant (spinel structure CoAl2O4 pigment) The compounded pigment which is widely used for porcelain was also tested for the basic glazes adaptability. The data from the test were recorded in a computer data-base program. Therefore could be easily used in the study related with a pottery field. CoO : Al2O3 system spinel pigment of barium glaze lime glaze zinc glaze lead glaze and talc glaze were chosen for this study. The colors of Cobalt blue bright blue, blue purple were seen at the wave lengths of 455-480nm at the firing temperature of 1250$^{\circ}C$. Stable color were obtained from lime glaze bar-ium glaze zinc glaze. All the information in the database were used to examine all the possible result of the test in the study of porcelain. When the test results database were examined in all temperature ranges the lack of adhesion with the pigment occurred at the temperature of 1150$^{\circ}C$. The lack of adhesion is seen due to vaporization of the lead glaze.

일부 초등학생의 식이조사 및 섭취 식품의 아연 함량 분석에 의한 식이 아연 섭취량 평가 - 충남 벽지와 도시간의 비교 - (Dietary Zinc Intake Assessed by Dietary Survey and Zinc Analysis of Foods Consumed by Elementary Schoolchildren in Chungnam Province in Korea - Comparison between Remote Rural and Urban Areas -)

  • This study was performed to compare the dietary intake and food sources of zinc (Zn), using a database of Zn composition developed in this study, between elementary schoolchildren in a remote rural area (RA, n=58, $9.9{\pm}1.7\;yrs$) and those in an urban area (UA, n=60, $9.4{\pm}1.8\;yrs$) in Chungnam province in Korea. A dietary survey for three days by food record method was performed. All kinds of foods (n=273) consumed by subjects were collected by aliquot sampling method, and the Zn content of these foods were analyzed by wet technique. The results showed that the daily mean intakes of energy, calcium, iron, and vitamin C from diet in the RA were in the range of 49-88% of the Korean DRI (KDRI), while those in the UA were similar to or greater than the KDRI, except for calcium and iron. The daily mean intake of Zn from the RA diet was $7.0{\pm}0.5\;mg/d$ ($114.1{\pm}8.4%$ of the KDRI), and $16.0{\pm}1.0\;mg/d$ ($258.3{\pm}16.3%$ of the KDRI) in that of the UA (p<0.001). The percentage of dietary intake of Zn less than 2/3 of the KDRI was 19.0% in the RA, in comparison to 1.7% in the UA. Those in the RA consumed Zn from plant foods more often than did those in the UA (p<0.001). Beef rib stew was the food source with highest Zn amount for the total subjects, followed by beef rib meat, roasted; and beef soup w/seasoned red pepper sauce. These results showed that some children in the RA had poor Zn nutrition based upon low intakes and poor food sources of Zn, while overall, children in the UA had good Zn nutrition. Therefore, those in RAs should have their Zn nutrition improved through government policy and nutrition education.

근·현대 시대 오지호와 구본웅 유화작품에 사용된 백색계 안료의 특성 연구 (Characteristics of White Pigments Used in Jiho Oh and Bonung Gu's Paintings Produced in Modern and Contemporary Period)

  • 근 현대 유화작품에 사용된 안료 연구를 위해 오지호와 구본웅 작품 32점을 분석대상으로 선정하여, 바탕칠층과 물감층에 사용된 백색안료 특성을 확인하였다. 분석 결과 대상작품에 사용된 백색 안료는 lead white(염기성탄산납), zinc white(산화아연), titanium white(아나타제 또는 루틸형의 이산화티탄), calcite(탄산칼슘), barite(황산바륨)로 확인되었으며, 작품에 사용된 안료의 종류는 작가 및 제작시기에 따라 차이가 있는 것으로 나타났다. 하지만 zinc white가 모든 작품에 사용되고 lead white가 titanium white, barite 및 calcite로 대체되는 점은 두 작가 모두 동일한 것으로 확인되었다. 또한 문헌자료로 알려진 국외 안료 및 유화물감 연구와 비교했을 때 안료의 변화 양상은 동일하게 나타났으나, 부분적으로 사용시기가 다른 것으로 확인되었다. 이는 유화의 도입기부터 서구권과의 직접적인 교류가 이루어지지 못하고 일본을 거쳐 재료와 기법이 유입되었던 시대적 배경과 연관이 있는 것으로 보인다. 이에 따라 국내 유화에 사용된 백색안료의 종류는 세계적인 변화 양상과 시기적인 차이를 지니는 것으로 해석된다. 본 연구 결과를 통해 다양한 작품분석이 진행된다면 시기에 따른 유화물감의 재료적 특성과 작가의 표현기법 및 편년 연구 등 향후 보존과학과 미술사 연구에 중요한 근거자료가 될 수 있을 것으로 기대된다.

변수화 반도체 모델을 이용한 Cubic Zinc-blonde CdSe의 유전함수 분석 (Dielectric Function Analysis of Cubic CdSe Using Parametric Semiconductor Model)

  • 본 연구에서는 광전자 소자에 폭넓게 사용되는 ZnCdSe 화합물 반도체의 end-point인 CdSe의 유전함수 spectrum을 Vacuum Ultra Violet spectroscopic ellipsometry(타원편광분석법) 측정하여 분석하였다. 측정 결과는 변수화 모델을 이용하여 분석하였으며 그 결과 6 eV 이상에 존재하는 전자전이점들을 확인할 수 있었고 CdSe의 Critical Point(CP) 구조를 수치화 함으로써 온도나 화합물 함량에 따른 광특성 의존성 연구 등에 활용될 수 있는 database를 확보하였다.

국내 화장품 원료성분에 대한 유해성 조사 (Hazard Investigation of Cosmetic Ingredients in Korea)

  • Objective: The purpose of this study was to investigate the hazards of cosmetic ingredients in Korea. Methods: An Excel database of cosmetic ingredients was developed on a website(Korea Cosmetic Ingredient Dictionary) and used for a hazard assessment based on Tox-free, a database containing toxic information such as on carcinogens, mutagens or reproductive toxicants(CMRs) and endocrine disrupting chemicals(EDCs), as well as other regulated chemicals in Korea. Results: A total of 16,605 chemicals were registered with the cosmetic ingredient dictionary and 308 of them were identified as either CMRs or EDCs. CMRs included formaldehyde and nickel gluconate, and EDCs included parabens, benzophenon, styrene, and toluene. Reproductive toxicants such as xylene, zinc chloride, toluene, and formaldehyde were regulated by the Occupational Safety and Health Act and the Act on the Registration and Evaluation, etc. of Chemical Substances(the Chemical Control Act). Conclusions: Regulations on cosmetics components should be strengthened, and the right to know about cosmetics containing hazardous chemicals should be guaranteed.
