Physicochemical and Microbiological Properties of Yogurt-cheese Manufactured with Ultrafiltrated Cow's Milk and Soy Milk Blends

  • The objective of this study was to develop yogurt-cheese using cow’s milk, ultrafiltrated cow’s milk, and soy milk. The addition of soy milk and ultrafiltrated milk increased the amount of protein in the yogurt-cheese. Yogurt-cheeses were made using cheese base using 10% and 20% soy milk with raw and ultrafiltrated cow’s milk, and stored at 4°C during 2 wk. The yield of yogurt-cheeses made with added soy milk was decreased and the cutting point was delayed compared to yogurt-cheese made without soy milk. Yogurt-cheese made using ultrafiltrated cow’s milk showed the highest yield. However, yogurt-cheese made with added soy milk had higher protein content and titratable acidity than yogurt-cheese made using raw and ultrafiltrated cow’s milk. Fat and lactose contents in the yogurt-cheese made with added soy milk were lower. Yogurt-cheeses made with added soy milk contained several soy protein bands corresponding to the sizes of α2-, β-, and κ-casein band. Yogurt-cheese made with added soy milk had similar elasticity to yogurt-cheese made without soy milk but had lower cohesiveness. There was no significant difference in the number of lactic acid bacteria in the different cheeses, as all had over 8.0 Log CFU/g. Considering these data and the fact that proteins and fats of vegetable origin with high biological value were observed as well as unsaturated fats, yogurt-cheese made with added soy milk can be considered to be a functional food.

Some Properties of Fresh and Ripened Traditional Akcakatik Cheese

  • Akcakatik cheese (yogurt cheese) is produced by drying strained yogurt with or without adding cloves or black cumin. The main objective of this study was to detect the properties of both fresh and ripened Akcakatik cheeses and to compare them. For this purpose the biogenic amine content, volatile flavor compounds, protein degradation level, chemical properties and some microbiological properties of 15 Akcakatik cheese samples were investigated. Titratable acidity, total dry matter, NaCl, total nitrogen, water soluble nitrogen, ripened index, histamine, diacetyl and acetaldehyde levels were found to be higher in ripened cheese samples than in fresh cheese samples. On the other hand, the clove and black cumin ratios were found to be higher in the fresh cheese samples. Sodium dodecyl sulphate polyacrylamide gel electropherograms of cheese samples showed that protein degradation was higher in ripened cheese samples than in fresh samples, as expected. The dominant Lactic acid bacteria (LAB) flora of Akcakatik cheese samples were found to be Streptococcus salivarius subsp. thermophilus and Lactobacillus delbrueckii subsp. bulgaricus.

Quality and storage characteristics of yogurt containing Lacobacillus sakei ALI033 and cinnamon ethanol extract

  • Background: This study was conducted to examine the quality and storage characteristics of yogurt containing antifungal-active lactic acid bacteria (ALH, Lacobacillus sakei ALI033) isolated from kimchi and cinnamon ethanol extract. The starter was used for culture inoculation (1.0 % commercial starter culture YF-L812 and ALH). Results: The antifungal activity of cinnamon extracts was observed in treatments with either cinnamon ethanol extracts or cinnamon methanol extracts. Changes in fermented milk made with ALH and cinnamon extract during fermentation at $40^{\circ}C$ were as follows. The pH was 4.6 after only 6 h of fermentation. Titratable acidity values were maintained at 0.8 % in all treatment groups. Viable cell counts were maintained at $4{\times}10^9CFU/mL$ in all groups except for 1.00 % cinnamon treatment. Sensory evaluations of fermented milk sample made with ALH and 0.05 % cinnamon ethanol extract were the highest. Changes in fermented milk made with ALH and cinnamon ethanol extract during storage at $4^{\circ}C$ for 28 days were as follows. In fermented milk containing ALH and cinnamon ethanol extracts, the changes in pH and titratable acidity were moderate and smaller compared with those of the control. Viable cell counts were maintained within a proper range of $10^8CFU/mL$. Conclusions: The results of this study suggest that the overgrowth of fermentation strains or post acidification during storage can be effectively delayed, thereby maintaining the storage quality of yogurt products in a stable way, using cinnamon ethanol extract, which exhibits excellent antifungal and antibacterial activity, in combination with lactic acid bacteria isolated from kimchi.

발효유제품의 유단백질 기능성 연구 동향 (Functional Properties of Milk Protein in Fermented Milk Products)

  • An understanding functional properties and molecular interactions of milk proteins was critical to improve qualities of fermented dairy products including yogurts and cheeses. Extensive rearrangements of casein particles were important factors to enhance whey separation in yogurt gel network. The use of high hydrostatic pressure treated whey protein as an ingredient of low fat processed cheese food resulted in the production of low fat processed cheese food with acceptable firmness and enhanced meltabilities. Milk protein-based nano particles produced by self-association of proteins could be better nutrient delivery vehicle than micro particle since particle size reduction in nano particles could lead to increased residence time and surface area available in GI tract.

Packaging of dairy products: an overview

  • Dairy products, including milk, cheese, cream, yogurt, and butter, constitute excellent sources of essential nutrients such as calcium, proteins, and vitamin D; therefore, nutritionists recommend a constant daily dietary intake of dairy products. Packaging is an important feature that ensures high-quality products are delivered to consumers; different packaging materials and forms are required depending on the products. Packaging forms include pouches for butter, cheese, and milk powder; cartons for liquid, frozen, and coagulated milk; packets for pasteurized liquid milk; bottles for milkshakes and other liquid products; and cups for frozen and coagulated products. The increase in mobile lifestyles among consumers will lead to smaller households and greater preference for convenience, which will promote individual and smaller packaging for dairy products. This article reviews the development of packaging materials and forms, packaging requirements, and future considerations for the packaging of dairy products.

사균화 Enterococcus Species 첨가에 의한 요구르트 스타터 생장에 미치는 영향 (Effect of Heat-Killed Enterococcus Species on the Viability of Yogurt Starters)

  • Enterococcus species have been reported to produce unique flavoring ingredients in fermented dairy products. Generally, they were found in cheese and fermented dairy products. Enterococcus spp. produce extracellular polysaccharides and reduce blood cholesterol levels in humans. This study used heat-killed E. faecalis and E. faecium in yogurt production to increase safety during consumption. The addition of heat-killed E. faecalis and E. faecium to milk did not affect the fermentation time of yogurt production, the growth of starter cultures, and the viscosity of yogurt. These results concluded that heat-killed Enterococcus, rather than live Enterococcus, is sufficiently possible and even safer to be added to milk products. Enterococcus species could be used as a safe and functional food additive to fermented milk products and supplements in health foods.

Distribution and Content of Geometric Isomers of Conjugated Linoleic Acid in Dairy Foods from the Quebec Province of Canada

  • The distributions and content of geometrical isomers of conjugated linoleic acids (CLA) in dairy foods such as milk, yogurt, and cheese, produced or being sold in the Quebec province of Canada, were investigated by gas chromatographic analysis. The mean contents of total CLA (mg/g fat) were $5.06{\pm}0.74$ in 4 low-fat milk samples, $14.14{\pm}4.95$ in 6 yogurt samples, and $18.22{\pm}7.89$ in 5 natural ripened cheeses. Among the yogurt samples, YY contained the highest content of total CLA ($20.68{\pm}5.17\;mg/g$ fat). Among the cheese samples, Gruyere contained the highest amount of total CLA ($29.86{\pm}0.62$) as well as c-9,t-11 ($22.03{\pm}0.36\;mg/g$ fat), followed by Jarlsberg ($22.76{\pm}0.14$), Provolone ($16.42{\pm}0.52$), Cheddar ($13.83{\pm}0.81$), and Swiss ($8.23{\pm}1.11$). Based on the distribution ratios of CLA isomers in these dairy foods, the c-9,t-11 isomer appeared to be the major CLA isomer in both the low-fat milk ($89.87{\pm}2.39%$) and yogurt ($90.98{\pm}4.42%$). In the cheeses, however, the ratio of c-9,t-11 ($54.86{\pm}13.06%$) was slightly higher than that of c-10,c-12 ($40.81{\pm}13.40%$).

단백분해 효소 활성(蛋白分解 酵素 活性)이 Cheddar Cheese의 품질(品質)에 미치는 영향(影響) (Effect of Proteinase Activity on the Cheddar Cheese Quality)

  • Cheddar cheese의 품질(品質)을 향상(向上)시키기 위하여 Streptococcus lactis KCTC 1913으로부터 curing에 의하여 선발(選拔)된 proteinase-negati변이주(變異株)로 제조한 Cheddar cheese 숙성중의 단백질 분해 양상(蛋白質 分解 樣相)을 전기영동(電氣泳動) 및 액체 chromatography에 의해 연구하였으며, 그 결과(結果)를 요약(要約)하면 다음과 같다. 1. Starter bacteria의 생균수(生菌數)는 cheese의 숙성(熟成)이 진행(進行)됨에 따라 감소(減少)하였으며 야생형 균주(野生型 菌株)로 제조한 cheese에서는 급격히 감소(減少)했으나 변이주(變異株)로 제조한 cheese에서는 완만하게 감소(減少)하였다. 2. 전기영동(電氣泳動)에 의한 cheese casein의 분해 양상(分離 樣相)은 야생형 균주(野生型 菌株)와 변이주(變異株)로 제조한 cheese간에는 차이가 없었으나, 숙성 진행(熟成 進行) 단계에 따라 차이가 나타났다. 3. Sephadex G-25 column에 의해 cheese의 고미성분(苦味成分)을 분별(分別)한 결과 green cheese와 3개월 숙성(熟成)시킨 cheese에서 각각 3개의 fraction으로 분별(分別)되었으며 숙성(熟成)이 진행(進行)됨에 따라 분자량(分子量)이 비교적 적은 bitter peptide나 유이(遊離) 아미노산으로 전환(轉煥)되는 경향(傾向)을 나타내었다. 4. 3개월 숙성(熟成)된 cheese를 관능검사(官能檢査)한 결과 색택(色澤)에는 별 차이가 없었으나 조직(組織)과 풍미(風味)에 있어서는 변이주(變異株)로 제조한 cheese가 야생형 균주(野生型 菌株)로 제조한 cheese보다 기호성(嗜好性)이 더 좋았다. 5. Cheddar cheese의 생산수율(生産收率)은 변이주(變異株) 사용시, 야생형(野生型)균주를 starter로 사용한 것보다 0.14% 높았다.첨가 식빵이 가장 기호에 맞는 것으로 평가되어 Sourdough 첨가 %와 method에 따라 score 차이를 보였다. 등의 단계별로 약간의 차이를 보였지만, 동결 80일 후의 활력은 대부분이 유사한 것으로 나타났다. 각각의 처리구간에 점도의 차이는 있지만, sucrose와 sorbitol의 비율이 1:2인 것이 점성면에서는 가장 좋은 것으로 나타났다. Frozen yogurt mix의 보수력은 점도와 밀접한 관계가 있었다(p<0.05). Sorbitol함량이 증가될수록 hardness와 cohesiveness는 증가되었지만, elastisity는 감소되었다. 또한 Str. thermophilus는 처리구간에 큰 차이를 보였지만(p<0.05), L. bulgaricus와 mixed culture는 차이를 보이지 않았다(P>0.05).)의 발생율(發生率)이 감퇴(減退)되고 있음을 관찰(觀察)할 수 있었는 바, 이것은 유산균 발효유(乳酸菌 醱酵乳)의 음용효과(飮用效果)인 정장(整腸)과 면역증진효과(免疫增進效果)에 따라 소화기질환(消化器疾患)의 예방(豫防)이 가능했던 것으로 확인된다. 그리고 유산균 발효유(乳酸菌 醱酵乳)의 소비량(消費量)과 소화기질병(消化器疾病)의 발생율간(發生率間)에는 r = -0.704 (p<0.01) 과 같은 매우 유의(有意)한 상관계수(相關係數)가 성립(成立)되고 있었다.효과에 대한 연구가 시행되어야 하며 분자생물학적인 방법을 사용하여 그 기전을 규명하여야 한다.아니라 주의집중력(注意集中力)에 직접적으로 효과를 나타내는 것으로 해석할 수 있었다. 또한 이같은 소견으로 주의력결핍(注意力缺乏)${\cdot}$과잉운동장애환아(過剩運動障碍患兒)에서의 충동성(衝動性)은 이 장애의 중심증상이 아니거나, 이들 약물투여에 의해 호전되지 않거나, 호전의 측정에 문제가 있을 수도 있겠다. 마지막으로 주의력결핍(注意力缺乏)${\cdot}$과잉운동장애(過剩運動障碍)에서

중학생들의 체격에 따른 식습관과 식생활 태도에 관한 비교 연구 (A Comparative Study on Dietary Habits and Dietary Attitudes among Middle School Students with Different Obesity Indexes)

  • The object of this study was done to assert the dietary habits, food intake, and dietary attitudes of 332 middle school students in a small city. The subject were divided into doe groups based on weight length index (WLI). Anthropometric data showed that the mean height and weight were 169.5 $\pm 8.2 cm and 55.1 $\pm 11.5 kg in the male students and 158.9 $\pm 5.9 cm and 48.1 $\pm 7.6 kg in the female students. The mean WLIs for male and female students were 103.0 $\pm 19.7 and 96.3 $\pm 12.8, respectively. Of the male students 27.9% and of the female students 32.1% were underweight, and of the male students 28.9% and of the female students 13.0% were overweight based on WLI index. Lack of good dietary habits in the overweight group tended to be the highest, the normal group was the second highest, and the underweight group was the lowest. The regularity of eating breakfast and flood prejudice scores in the overweight group were significantly higher than those in the normal and underweight group. With respect to flood intake, the normal group tended to consume grains, yellow or green vegetables, vegetables with light color, fruits, milk, yogurt, cheese, seaweeds, fat-floods, instant floods, sweet floods, carbonated drinks, and spicy and salty floods more frequently. The underweight group tended to consume meat-ham, eggs, fish and fried, stir-fried flood more frequently In dietary attitudes, the overweight group tended to have more favorable dietary attitudes, and the normal group tended to have negative dietary attitudes. The underweight group showed more negative responses to trying to eat/drink milk, yogurt, or cheese everyday than the overweight groups. It might be suggested that more effective nutritional programs should be developed and implemented to ensure good dietary habits in middle school students, including the overweight, as well as the underweight group. Further research on the comparison of dietary characteristics is needed, with consideration of the subjects WLI.
