머루 발효주의 제조 및 품질 특성 (Manufacture and Quality Characteristics of Wild Grape Wine)

  • 새로운 기능성 과실주 개발의 일환으로 영동 지역에서 재배되고 있는 야생 머루를 이용하 머루 발효주를 제조하여 이들의 품질특성과 생리기능성을 조사하였다. 머루 발효주의 에탄올 함량은 11.0% 이었고 총산함량과 휘발산 함량은 각각 0.63%와 0.0402%이었다. 또한 총 기호도는 신맛이 살아있고 단맛이 적어 우수하였고 노화억제에 관련된 항산화 활성이 41.6% 로 우수하였다. 따라서 본 연구의 머루 발효주는 품질이 우수한 과실주로 사료된다.

  • With the rapid economical and technological progress in China, the demand for wine increased tremendously along with the need for wine storage furniture and wine related products. Although demand for furniture increased, consumers' emotional need toward high quality design product has not been met properly. As the quality of people's life improves, they pursue better materials providing them with higher mental satisfaction. To meet the specific demand of Chinese market stated above, the direction of this report is set as to study pattern elements of Chinese traditional lattice and combine them with wine storage furniture design and crafting, which is originated from western culture. By doing that, the study is aimed to suggest a new direction of Chinese modern design and to improve the fundamental notion of Chinese furniture design. Although wine and wine racks are from western world, the wine mini-bar designed in this study stands out for its beauty and taste of eastern culture. It not only fits perfectly to the habits and taste of wine lovers, but also goes very well with fusion style interior design trend in modern China. The furniture carries the charm of eastern cultural tradition and elegance of modern furniture design in one.

발효·침용 기간을 달리한 Muscat of Alexandria 와인의 발효 기간별 품질 특성 (Qualitative Characteristics of Fermentation Periods in Muscat of Alexandria Wine Having Different Fermentation·Maceration Periods)

  • In this study, we attempted to compare the maceration processes in the white wine made of Muscat of Alexandria grape having different the fermentation· maceration periods. These wine were sampled and analyzed by fermentation periods. The pH of wines ranged from 3.25 to 3.27 and the total acidity of wines ranged from 0.85~0.91% (w/v) on the 12th day of fermentation period. The ethanol concentration in these wines increased during the alcoholic fermentation period, on the other hand, the soluble solid concentrations (°Brix) decreased. The b value (yellowness) of Muscat of Alexandria wine was the highest at 8.31 in C treatment, which is a wine with a long maceration period, and B (7.19) and A (5.27) were significantly decreased as the maceration period was shorter. The total polyphenol and tannin content of wine increased with the period of maceration. Total polyphenol and tannin contents had the highest values (64.20 and 67.11 mg%, respectively) in the C treatment, which is a wine with a long maceration period on the 12th day of fermentation period. The physiological activities of Alexandria wine were highest level in the treatment with a long maceration period. As a result, this study provides useful scientific information that quality characteristics and physiological activities in white wine.

국내산 무화과를 이용한 와인 제조 및 품질 개선 효과 (Manufacturing of Wine with Korean Figs(Ficus carica L.) and Quality Improvement by Adding Fig Leaves)

  • Fig(Ficus carica L.) which belongs to Moraceae family has been used as digestion promoter, cure for ulcerative inflammation and eruption in Korea. Figs have very short preservation period and can be kept only 1 week even in the refrigeration system. The possibility of wine-making from Korean figs was tested by analyzing the fermentation characteristics, proximate analysis and free sugar contents of wine made of slices with 20% sugar addition. Ethanol fermentation of the figs by Saccharomyces cerevisiae was done rapidly. The ethanol contents, pH, total acidity and sugar content were 12.1%, 3.91, 0.42% and 9.9 °Brix, respectively. The results from the sensory evaluation were as follows. The wine made from the sliced figs were better than that from fig juices in their sensory scores. The wine made with frozen figs was not different from that made with fresh ones. To improve the quality of wine, the addition of dried leaf powder in the concentration of 100 ppm were tried and found it was superior to the one made without leaf.

온라인 와인 매장 품질, 신뢰와 지각된 위험간의 구조적 관계 (Structural Relationships between Online Wine Store Quality, Trust, and Perceived Risk)

  • 해외 여러 나라와의 FTA 체결 효과를 제고하는 방안의 하나로 수입와인에 대한 인터넷 판매에 대한 의견이 제시되고 있어 온라인 와인 판매 가능성이 매우 높아지고 있다. 본 연구에서는 온라인 매장에서 고객이 와인을 구매할 때 지각하는 위험을 감소시킬 수 있는 주요 영향요인을 도출하고 검증하고자 한다. 문헌연구를 통해 온라인 와인 매장의 사이트품질과 신뢰를 지각된 위험의 주요 결정요인으로 도출하였으며, 이를 통하여 연구모형 및 가설을 설정하였다. 와인구매 경험자를 대상으로 한 설문조사 데이터를 이용하여 사이트품질(정보품질, 시스템품질), 온라인 와인매장에 대한 신뢰, 지각된 위험(시간위험, 품질위험, 심리적 위험)간의 구조적 관계를 검증하였다. 연구검증결과, 정보품질과 시스템품질은 온라인 와인매장에 긍정적인 영향을 미쳤다. 또한 정보품질과 시스템품질은 시간위험에 유의미한 영향을 주는 것으로 나타난 반면에, 품질위험과 심리적 위험에는 영향을 주지 않는 것으로 나타났다. 마지막으로 온라인 와인매장에 대한 신뢰가 시간위험, 품질위험 및 심리적 위험과 관련성이 있는 것으로 나타났다.

가열 양념돈육의 품질 및 기호성에 미치는 적포도주 숙성효과 (Aging Effect of Red Wine on the Quality Properties and Sensory Score of Cooked Seasoned Pork)

  • This study was conducted to investigate the effect of red wine on the quality properties and sensory score of seasoned pork meat. Pork meat was treated with 25% water (control), 20% water and 5% red wine (RW5), 15% water and 10% red wine (RW10), or 10% water and 15% red wine (RW15). The moisture, crude protein, crude fat, $L^*$ value, springiness, cohesiveness, gumminess, chewiness, and VBN content were not significantly different among the samples. Cooking yield, moisture retention, and fat retention were significantly higher in the RW5, RW10, and RW15 (p < 0.05) compared to those in the control. The $a^*$ value of RW5 was the highest among the samples, and the $b^*$ value increased significantly in the control and RW5 (p < 0.05). The hardness of the control was the highest among all samples (p < 0.05). The pH was significantly lower in RW5, RW10 and RW15 (p < 0.05) compared to that in the control. The TBARS value and total bacteria were significantly lower in RW5, RW10, and RW15 (p < 0.05) compared to those in the control. Adding red wine altered the fatty acid and free amino acid of cooked seasoned pork. These results suggest the possibility that red wine could be used an additive to improve the quality of cooked seasoned pork.

Skin Contact와 Suspended Solid가 백포도주 품질에 미치는 영향 (The Effects of Skin Contact Time and Suspended Solid on The White Wine Quality)

  • Danored is considered as the most favorable grape variety for national wine manufacturing in terms of sugar, organic acid contents, annual production amount, as well as quality control convenience after harvest. This study was canied out to know the influence of suspended solid(SS) and skin contact time(SCT) with Danored variety on the white wine quality. The results are summarized as follows; 1. Suspended solid and skin contact time did not greatly influence on the chemical composition of Danored juice. But skin contact time provided slightly increaseness to the content of phenol compounds 2. Suspended solid accelerated fermentation rate of white wine manufacturing. Although the content of suspended solid are less amount than 0.3% in must, wine fermentation was completed to dryness in concentration of sugar. 3. When the content of suspended solid was around 3%, higher alcohol in white wine was increased by the 20%. This result is relatively small increasement compared to the other reported results. 4. Because Danored contained less amount of phenol compounds comparison with other grape varieties, browning capacity in white wine was much favorable to quite low concentration. Especially, phenolic compounds was decreased remarkably as one of fermentation characteristics of Danored variety. 5. As a result of sensory evaluation, wine quality was A-1> B-1> A-2> B-2 in its favorable ranking orders. It was so concluded that A-1 might be the most acceptable one from this study.

Muscat Bailey A 품종 포도주의 청징과 여과에 따른 이화학적 특성 (Physicochemical Characteristics Based on Fining and Filtering of Muscat Bailey A Grape Wine)

  • 본 연구에서는 국내산 포도 품종을 이용한 'unfined' 혹은 'unfiltered' 포도주의 제조 가능성을 알아보고자 하였다. 경북 영천에서 재배된 Muscat Bailey A 품종을 이용하여 제조하였으며 가당을 하여 $28^{\circ}Brix$로 조절하였다. 알코올 발효 후 정제 과정에 들어가기에 앞서 청징제 첨가와 여과기 사용 여부에 따라 시료 A, B, C로 나누어 청징, 여과, 병 숙성 후의 각 시료별 이화학적 성분을 측정하여 비교 분석하였다. 시료 A는 청징제를 첨가하고 여과기도 사용하였고 시료 B는 청징제만 첨가하고 여과기는 사용하지 않았으며, 시료 C는 청징제도 여과기도 사용하지 않았다. 병 숙성을 마친 후의 각 시료별 총 페놀 함량, intensity, hue, color, 유기산 함량, 휘발성 향기 성분을 측정하여 비교 분석하였다. 총 페놀 함량은 시료 C가 다른 시료들에 비교해 최대 19% 정도 높은 수치를 나타내었고, intensity와 hue, color의 측정 결과는 예상대로 여과 과정을 거친 시료 A가 다른 시료들과 비교하여 가장 선명하고 투명한 색상을 나타냈으나 색의 안정성 면에서는 떨어졌다. 유기산 함량과 휘발성 향기 성분의 측정은 전체적인 결과에서 각 시료별로 차이가 크게 나타나지 않았다. 이는 청징 과정과 여과 과정의 유무에 따른 차이라고 하기보다 다른 요인들에 의해 영향을 받게 된다고 사료된다. 실험 결과 중에서 시료별 큰 차이를 나타내지 않았던 유기산 함량은 발효 중 malo-lactic fermentation 과정이 이루어졌더라면 더욱 좋은 결과를 얻을 수 있었을 것이라 생각되며, 휘발성 향기 성분은 청징 과정이나 여과 과정이 아닌 다른 양조 과정에서의 조건의 변화가 필요할 것으로 보인다.

포도주 품질에 미치는 알코올 발효전 포도 전처리 효과 (Effect on Wine Quality of Pre-treatment of Grapes prior to Alcohol Fermentation)

  • 본 연구는 국내 주요 포도 품종인 캠벨얼리(Campbell Early)를 이용하여 발효전 원료의 전처리방법(열처리, CM처리)이 포도주 품질에 미치는 영향을 파악하고자 수행되었다. 총산에 있어서 CM처리를 할 경우 대조구나 열처리구에 비해 포도주의 총산이 낮아지는 결과를 보였다. 총안토시아닌과 탄닌 함량에 있어서, 열처리한 후 발효시킨 포도주가 대조구에 비해 높은 함량을 보인반면 CM처리의 경우는 대조구나 열처리에 비해 낮아지는 결과를 보였다. 적색도는 안토시아닌이나 탄닌이 높은 열처리구에서 높게 나타나는바, 폴리페놀류 함량이 와인의 적색도와 상관이 높은 것으로 생각된다. 이상의 결과에서와 같이 발효전 원료의 전처리 방법이 포도주 품질에 큰 영향을 미치는 것으로 나타났다. 따라서 이러한 전처리 기술은 원료 포도의 단점을 극복하는 유용한 수단이라고 생각된다.

국산 시판 머루 와인의 품질 특성 (Quality Characteristics of Korean Domestic Commercial Meoru Wines)

  • This study was carried out to investigate quality characteristics of Korean domestic commercial meoru wines, 8 kinds of wines were purchased from the Korea Wine Festival in 2016 and we compared the characteristics and physiological activity of 8 domestic wine. The results of this study have shown that the alcohol contents of wines ranged from 9.8 to 14.3%, pH of wines ranged from 3.86 to 4.22 and the total acidity of wines ranged from 0.56~0.75%. The hue value of meoru wines ranged from 0.81 to 1.02, The brightness of meoru wines ranged from 0.77 to 5.55, the redness from 3.97 to 31.16, and the yellowness from 0.99 to 5.63. The organic acid analysis of wine revealed lactic acid content at 4.281~9.606 mg/mL, followed by malic acid, tartaric acid, and acetic acid. The concentrations of total polyphenol and anthocyanin contents in the samples were investigated by spectrophotometric methods. Total polyphenol contents of the M8 (172.24 mg%) wine was higher than those of the other wines and total anthocyanin contents represented from 356.69 to 601.33 mg/mL. The DPPH radical scavenging activity of meoru wines was between 57.23 to 73.98%. Volatile flavor component analysis of meoru wines identified 7 alcohols, 16 esters, 5 acids, 3 terpenes and 4 other compounds.
