근대 한식문헌 속 일제강점기 구황식품(救荒食品) 고찰 (Contemplation on the Emergency Foods in Korea under the Japanese Occupation)

  • This research analyzed emergency foods in Korea during the Japanese occupation through the food literature of that era, and attempted to determine the cultural history of food through recorded contents of emergency foods literature. The examination was mainly conducted on the basis of the four excerpts within the emergency foods literature of the Japanese occupation: "Emergency plants of the Joseon", "Wild Fruits and Plants of the Joseon", "Guhwangginam", and "Emergency Plants and How to Eat of the Joseon". After a thorough examination, each of the excerpts had unique data regarding amounts of ingredients, such as Namuls, trees, grain, and beans. "Emergency Plants of the Joseon" listed 142 Namuls, 54 trees,"Wild Fruits and Plants of the Joseon" listed 32 Namuls, 29 trees, "Guhwangginam" 4 grains, 205 Namuls, 84 trees, "Emergency Plants and How to Eat of the Joseon" listed five grain, three beans, 37 Namuls, and eight trees. Emergency foods literature demonstrated the utilization of various wild and edible plants as excellent ingredients for meals. Additionally, changes in traditional cooking methods using sugar, preservation through canning, and frying substantiate the subtle influence of foreign influence on Korean food. Perhaps the carefully structured components of the Korean food can be interpreted as a direct result of a scientific approach. It can be argued that creative application of methods ingredients, approach, of emergency foods is necessary to this modern age.

각종 야생대두의 생육습성과 단백질함량 (Growth Habit and Protien Content of Various Wild Soybean Strains)

  • Wild soybean plants(Glycine ussuriensis) collected from Korea(47 strains) and abroad(41 strains) were grown under field condition and classified according to the growth habit. Seeds were analyzed for protein content. The results were as follows: 1. Wild soybean plants were classified into three groups each by seed size, growth habit of stem, leaf size and flowering time. 2. Seed protein was higher in the strains with large leaves, tendril, stem or late flowering. 3. Glycine gracilis, supposed to be the intermediate species between cultivated and wild soybean(according to the stem growth habit, straight or semitendril, and seed size) was medium in protein content of seeds. 4. The average protein content of Glycine ussuriensis, 43.2%, was highest in comparison with those of others such as G. gracilis, 37.5%, or G. max, 36.2%. 5. One hundred seed weight of Amphicarpaea trisperm, similar to the wild soybean, was almost same as Glycine ussuriensis, but protein content of this species was lower than wild soybeans.

비탈면 조기수림화를 위한 녹화용 식물의 활용에 관한 연구 (Seeding of the Woody Plants for the Quick-coverage of the Slopes)

  • This study was conducted to investigate the germination rates and ground coverage rates of the 16 native wild flower, herbaceous, shrub and woody plants according to temperature and seeding timing for the revegetation and rehabilitation of the roadside slopes. Also, this study was conducted to suggest design criteria to select revegetation plants and to decide proper seed mixture for ecological restoration of the disturbed manmade slopes as a environmentally friendly construction. The results are summarized as follows. 1. Most of the plants germinated after 10~14 days. Woody plants germinated more slowly than wild flowers and herbaceous plants because of the hard seed. 2. Most of the plants showed the highest percentage of the germination rates under $15/25^{\circ}C$ temperature. The next was in order of under the $20/30^{\circ}C$ temperature, normal temperature(October) and $25/35^{\circ}C$ temperature. 3. At the chamber experiment, the Sorbaria sorbifolia var. stellipila showed the highest germination rates. Most of the native wild flowers germinated well and showed high germination rates under the various temperature. 4. As the field germination experiments, the seeding at August shows higher germination rates than that of the seeding at September, but showed lower surviving percentage of the germinated seedlings and lower ground coverage percentage than those of the seeding at September. After one year, Chionanthus retusus, Acer palmatum, Albizzia julibrissin are germinated and showed 10% coverage rates. So, they can be used as revegetation plants for the restoration works. 5. As seed mixture experiment, it was not effective only to increase the proportion of the ratio of the tree seeds, relatively high price, for making woody vegetation. It would be more successful to make vegetation structure by natural competition among wild flowers, shrubs and trees. 6. The excessive dominance of trees in revegetation works may destroy the lower layer of vegetation and it will be undesirable on the species diversity. It is more important to recover the species diversity of the plant community by seed mixture with the considering the germination, the growth characteristics and the correlation effect among revegetation plants. 7. To recover the manmade slopes quickly, increasing the ratio of the wild flower was recommended.

대사 제어된 스피아민트와 야생 스피아민트 기내배양배지의 터페노이드 성분 비교 분석 (Comparative Analysis of Terpenoids in in vitro Culture Media of Metabolically Engineered Transgenic and Wild Type Spearmint (Mentha spicata L.))

  • IPP isomerase (Iso) and Limonene synthase (Limo) are important enzymes in terpenoids biosynthesis pathway. The wild type and each metabolically engineered (Iso and Limo) transgenic spearmint (Mentha spicata Linne) plants were compared for their growth patterns and the contents of essential oil in in vitro culture media. The profile of terpenoid metabolites was obtained from the essential oil of the metabolically engineered transgenic spearmint, which was extracted using a modified SDE method, by GC-MS analysis. The growth of wild spearmint was more profuse in B5 culture medium than in other media. Significant differences in leaf and root growth patterns were observed between metabolically engineered transgenic and wild type spearmint plants. The leaves of the transgenic spearmint plants were slightly elongated but were dramatically narrower than those of wild type spearmints. The content of essential oil of transgenic spearmint was different slightly depending on the target terpenoid genes. The content of essential oils in Limo transgenic plants was higher than that of Iso, except for transgenic plant in B5 medium. The transgenic spearmint produced more terpenoids than the wild type. Iso spearmint extracts showed eleven terpenoids and a phenylpropane, while Limo spearmint extracts contained nine terpenoids. However, extracts from the wild type showed the presence of only four terpenoids.

Shoot Rot of Spikenard Caused by Rhizoctonia solani AG-2-1

  • In January 2021, unusual outbreak of shoot rot symptoms was observed in young spikenard (Aralia cordata) plants growing in vinyl greenhouses located in Chuncheon and Yanggu, Gangwon Province, Korea. The symptoms initially appeared on young shoots of the plants at or above the soil surface level. Later, the infected shoots wholly rotted and blighted. The incidence of diseased plants in the vinyl greenhouses investigated ranged from 5% to 30%. Eight isolates of Rhizoctonia sp. were obtained from shoot lesions of the diseased plants. All the isolates were identified as Rhizoctonia solani AG-2-1 based on the morphological characteristics and anastomosis test. Three isolates of R. solani AG-2-1 were tested for pathogenicity on young shoots of spikenard plants using artificial inoculation. All the tested isolates induced shoot rot symptoms on the inoculated plants. The symptoms were similar to those observed in spikenard plants from the vinyl greenhouses investigated. This is the first report of R. solani AG-2-1 causing shoot rot in spikenard.

수종식물의 분비물질이 종자 발아와 균류 생장에 미치는 알레로파시 효과 (Allelopathic Effects on Seed Germination and Fungus Growth from the Secreting Substances of Some Plants)

  • Phenolic compounds from 7 species of naturalized invader species and Korean wild plants were analyzed by high performance liquid chromatography. Eleven phenolic compounds including benzoic acid were identified. The extract of naturalized plants was significantly more inhibitory to seed germination and seedling growth of the both naturalized and Korean wild plants. The content of total phenolic compounds in each extract were 43.5 mg/l in Ailanthus altissima as the maximum amount and 25.5 mg/l in Phytolacca americana as the minimum. Phytotoxic substances of ethanol extracts was investigated for antifungal activity against 23 selected fungus species. The antifungal activity of Phytolacca americana showed the greatest clear zone of 23 mm in Aspergillus awamori and its activity had an effect against 6 fungus species. Ailanthus altissima formed the greatest clear zone of 26 mm in Erwinia carotovora sub. sp. carotovora and had an effect agsinst 2 fungus species.

Damping-off of Coastal Hogfennel Caused by Rhizoctonia solani AG-4

  • Damping-off symptoms were frequently observed on young plants of coastal hogfennel (Peucedanum japonicum) grown in a farmer's vinyl greenhouse located in Goseong, Gangwon Province, Korea during a disease survey in June 2019. Incidence of the diseased plants was 50-70% in the vinyl greenhouse investigated during the disease survey. Eight isolates of Rhizoctonia sp. were obtained from the diseased plants. All the isolates were identified as Rhizoctonia solani AG-4 based on the morphological characteristics and anastomosis test. Three isolates of R. solani AG-4 were tested for pathogenicity on coastal hogfennel by artificial inoculation. All the tested isolates induced damping-off symptoms on the inoculated plants. The symptoms were similar to those observed in the farmer's vinyl greenhouse investigated. This is the first report of R. solani AG-4 causing damping-off in coastal hogfennel.

고려와 조선시대의 문헌으로 본 한국의 나물 (A Bibliographical Study on Namul of Koryo and Chosun Dynasty)

  • The "Namul" is a Korean common vegetable food composed of edible young leaves and soft stalks of wild plants or cultivating vegetables and treated with traditional condiments. It has been widely used as not only a regular diet but seasonal foods or special ceremonial foods. In this thesis, the kinds of edible plants for namul were philologically approached by books published in Korea from Koryo to Chosun dynasty. The first historical record about cultivated vegetable as food in Korea was a garlic and a gourd in $\ulcorner$Samkuksaki$\lrcorner$. According to numerous records, edible wild plants might have played an important part as food resources, since they have variable edible portions as famine relief foods. Four kinds of namul were first introduced in Koryo age, but in Chosun dynasty over eighty kinds were recorded. The root of ballonflower and white radish were most commonly used for raw namul and bamboo shoot and squash for boils ones. Most kinds of namul were introduced in $\ulcorner$Zeungtosanrimkwungiae$\lrcorner$ and $\ulcorner$Limwonsiprwukji$\lrcorner$ influenced by pragmatism in later half period of Chosun. The chronic state of famine in later half period of Chosun caused to introduce various edible wild vegetables, and had greatly influenced on the Korean people to acquire vegetarian food habits and to favor salty taste. It seems to need a further study on recent nutritional problems including dietary fiber.ary fiber.

미나리과 산채의 성분분석 및 육가공품에 대한 항산화 효과 - 참당귀.돌미나리.고수 - (Analysis of Umbelliferaeceae Wild Plants and Antioxidative Activity of Pork Meat Products Added with Wild Plants -Angelica gigas NAKAI., Ostericum sieboldii NAKAI. and Coriandrum sativum LINNAEUS.-)

  • The proximate composition of 3 kinds of Umbelliferaeceae Wild Plants (Angelica gigas NAKAI., Ostericum sieboldii NAKAI. and Coriandrum sativum LINNAEUS) were analyzed and used for making pork sausages as a functional ingredient. In the proximate composition, crude protein content was the highest in Ostericum sieboldii, 37.87%, and crude lipid and crude ash contents were the highest in Coriandrum sativum. Vitamin C was contained in Angelica gigas at 0.30mg%. but was not detected in Ostericum sieboldii and Coriandrum sativum. $\beta$-carotene content in Angelica gigas was the highest at 19.96%, but selenium was not detected in any of them. Total phenol content in Coriandrum sativum was the highest as 1107.43mg%. TBA and VBN values of all sausages with wild plants increased gradually during four-week-storage and were lower than those of control. Coriandrum sativum-added sausage had the lowest TBA as well as VBN valuew. During the four-week-storage at 4$\^{C}$, TBA value and VBN value were in the very safe range at all sample. Total phenol contents in sausages appeared to have more antioxidative activity than vitamin C, $\beta$-carotene and selenium, and consequently decreased the TBA values of sausages.
