Flour Characteristics and End-Use Quality of Korean Wheat Cultivars I. Flour Characteristics (국산밀 품종의 밀가루 특성과 가공적성 I. 밀가루 특성)

  • Flour characteristics of 26 Korean wheat cultivars (KWC) were evaluated to assess consumer satisfaction with 6 imported wheat and 5 commercial wheat flours. In physical characteristics of flours, Particle size of SW (soft white) was similar to Dahong, Geuru, Milsung, Olgeuru, Seodun, Tapdong, and Uri. DNS (dark northern spring) was similar to Jeokjoong, Joeun, Sukang, and Younbaek. Ash and damaged starch content of KWC was similar to that of imported wheat and commercial flour (Com), but lightness value ($L^*$) were lower than those of Com. Particle size of flour positively correlated with ash, damaged starch, and lightness value ($L^*$) of flour. L ($^*$) value of flour negatively correlated with ash, damaged starch, and particle size of flour. In protein characteristics, Protein content of SW and commercial flour for baking cookie (Com5) was similar to Baekjoong, Jinpoom, Milsung, Olgeuru, Saeol, and Uri. HRW (hard red winter) and commercial flour for baking bread (Com3) was similar to Hanbaek, Joeun, Jopoom, Keumkang, and Sukang. SDS sedimentation volume based on a constant flour weight (SDSS) of KWC was lower than those of DNS and Com3. Mixograph water absorption of KWC similar to imported wheat and Com. Mixing time and maximum dough height (Hm) of KWC were higher than those of imported wheat and Com. Protein content positively correlated with SDS sedimentation volume and water absorption of mixograph. SDS-sedimentation volume positively correlated with water absorption of mixograph, mixing time of mixograph, and height of dough development. In starch characteristics of flour, ASW (Australian standard white) flours showed lower amylose content, higher peak viscosity, breakdown, and setback in pasting properties than other flours. KWV flours showed higher amylose content and lower peak viscosity than those of AH (Australian hard), ASW, commercial flour for making white salted noodles (Com1), commercial flour for making yellow alkaline noodles (Com2), and Com3.

Quality characteristics of Tteokbokki (Rice Cake) depending on cultivars and particle sizes of dry-milling rice flour

  • This study was examined to establish a conditions for producing Tteokbokki using dry-milling rice flour which can save manpower and labor time. Since the cost of producing rice flour milled in a wet condition is 500 to 700 won/kg, which is more than twice as much as that of 300 won wheat flour, it is necessary to directly make rice flour from raw rice. The dry-milling rice flour used in the experiment was produced by Air mill (Nara machinary co. ltd., Tokyo, Japan) from 5 rice cultivars (Samkwang, Dasan-1, Boramchan, Seolgaeng, Hanareum-2), which were cultivated in A-san in 2015 year. Their particle sizes were 50, 100 and $150{\mu}m$ for each cultivar, respectively. A control was a wet-milled rice flour milled with a roll mill after the rice was soaked in water for 4 hours. The moisture content of dry-milling rice flour based on cultivars was 11 ~ 12%, and added water up to 50~55% of dry-milling rice flour weight. The RVA characteristic of peak viscosity was the highest in Dasan-1 and Hanareum-2, the lowest in Seolgaeng. The setback value used as an indicator of aging was the highest in Dasan-1, therefore Dasan-1 was expected to be quick solidification, resulting in the low tendency of sensory evaluation. The damaged starch was high in Dasan-1 and Boramchan (p<0.05) compared to others. The Hunter color L were no significant among cultivars and b value increased in all cultivars of dry-milling rice flour compared with control. The hardness of dry-milling rice flour was higher than that of the control, especially Dasan-1 and Hanareum-2 were the highest. Based on the sensory evaluation, the best cultivars were Boramchan, Hanareum-2 and Samkwang. The overall preference of dry-milling rice flour was good in particle size of 50~100um.

Characteristics of Biochemical Markers and Whole-Wheat Flours Using Small-Scaled Sampling Methods in Korean Wheats

  • To investigate the application of biochemical markers' and small-sample methods using whole-wheat flours for screening in early generation in Korean wheat breeding system, 74 Korean wheats, including cultivars, local breeding lines and experimental lines, were analyzed. Seed storage protein and amylose contents of grains were evaluated. Biochemical makers, including granule bound starch synthase (GBSS), high molecular weigh glutenin subunits (HMW-GS) and friabilin were also evaluated by using one-dimensional sodium dodecyl sulfate-polyacryla-mide gel electrophoresis with a single kernel. The small­sample methods, including modified SDS-sedimentation test (MST), micro-alkaline water retention capacity (AWRC) and whole-wheat flour swelling volume (WSV) were also tested in this study. Protein content, MST and AWRC was $11.0 - 15.8\%$, 2.7 - 26.2 ml and $71.9 - 109.7\%$, respectively. Apparent and total amylose content and WSV was $20.6 - 25.0\%$, $26.1 - 32.4\%$ and 9.0 - 16.9 ml, respectively. There were highly significant correlations between MST and AWRC (r=0.592, P<0.001), but Korean wheats showed no significant difference in protein content, amylose content and small-sample methods. In the biochemical markers, Korean wheats contained all three GBSS encoded by Wx loci, except for Suwon 252. Korean wheats showed the high frequency ($58.1\%$) of 1Dx2.2 + 1Dy12 subunits of HMW-GS. Friabilin band was present in 46 lines ($62.2\%$) and absent in 28 lines ($37.8\%$). Friabilin-absence lines showed the higher MST (14.9 ml) and AWRC ($92.1\%$) value than friabilin-presence lines (8.5 ml and $82.4\%$, respectively).

  • By RH-531 treatments in Buheung, Suweon # 165 and Suweon # 18 of barley and Jangkwang, Namkwang and Suweon # 85 of wheat, heading date and maturing date were delayed as the time of treatment delayed and as the concentration increased, field lodging in barley and lodging index in all cultivars were reduced, leaf growth after treatment showed erect elongation and darker green color, culm length and spike length and extrusion length were shortened, ripening ratio and yields were reduced, and protein contents in grain were increased. The effect of RH-531 treatment on each characteristics of each cultivars of barley and wheat was influenced more by treating time than concentration.

Growth of Seedling from Immature Kernel Harvested at Different Days after Flowering in Rye, Triticale, Wheat and Oat Cultivars (맥류미성숙 종자와 초기생육과의 관계)

  • This study was conducted to investigate whether seedling growth be affected by immature kernels from different stages after flowering in rye, triticale, wheat and oats cultivars, for two years in Suwon. Kernels reached a near-maximum test weight at 35 days after flowering in Paldanghomil and Dooroohomil (Rye), and 30 days in Sinkihomil (Triticale), Geurumil (Wheat), and Megwiri (Oats). Test weight of immature kernels from different days after flowering were not significantly correlated with germination percentage, but highly positively correlated with their seedling height, fresh and dry weight. However, seedling height is not different among seedlings from kernels harvested at 20, 25 and 30 days (maturing time) after flowering of Sinkihomil and Megwiri, and between 25 and 30 days (maturing time) of Geurumil. Also between seedlings from 25 day and 30 day-kernel after flowering are little difference of fresh and dry weight of Sinkihomil and Megwiri. In Suwon, located at the middle part of Korea, it was suggested that Paldanghomi1 and Dooroohomil could be harvested at 35 days (June 19, and June 24, respectively) after flowering, and Sinkihomil, Geurumil, and Megwiri, at 25days (June 24, June 14 and July 4, respectively) after flowering for seed of for2:ge production.

  • This experiment was conducted to know the effects of mutagen treatments on callus induction, plant regeneration and their ploidy in the anther culture of wheat. The winter wheat cultivars, 'apos;and 'apos;Wonkwang'apos;, were treated at the mid or late-uninucreate stage under 4 different doses (100, 200, 500 and 1,000 rad.) of X-ray and 3 different levels(0.1, 0.2 and 0.3 mole) of Ethyl Methane Sulphonate. The anthers treated were set on the C$\_$17/medium for callus induction, and callus induced was transfered to 1/2 MS medium for plant regeneration. The mutagen treatments inhibited the callus induction but increased the plant regeneration in the callus which were induced from the anther set on the medium for the long time of 60 to 80 days. Also, the chromosome number to the regenerated plant varied largely by increasing of haploid plants(n=3x=21) and by occurring of aneuploidy having n=20 and n=22 of chromosome number.aried largely by increasing of haploid plants(n=3x=21) and by occurring of aneuploidy having n=20 and n=22 of chromosome number.

Characteristics of Solid Culm and Solidness Variation in Winter Wheat and Triticale (Solid형 맥류의 줄기의 특성과 Solidness 변이)

  • To evaluate the suitability of solid-culm crops for silage, culm characteristics and the variation of solidness in several solid-culm and hollow-culm cultivars of wheat and triticale were examined both in the field and greenhouse. The degree of culm solidness and the voiume of air space in each internodes were measured at heading. The solidness of solid-culm were increased by the development of pith connected with vascular bundles. There was a variation in solidness among the crops tested. The degree of solidness in hollow -culm crops was 14.6% and 15.0% for 'Wonkwang' wheat and 'Shinkihomil' triticale, whereas in solid-culm crops the degree was 77.0-100% for durum wheats, 61. 0-95.8% for bread wheats and 18,7-57,0% for triticales. For 'Golden ball' which had the most solid culms among durum wheats tested higher solidness was observed in the greenhouse than the field, in the high internodes than low ones and in tiller culms than main stems. The solid-culm crops had a smaller air volume in internodes (1.01-2.30ml) than did 'Shinkihomil' (4.85ml) and this characteristics was considered to be advantageous for air removal and lactic fermentation at ensilaging.

Genotype and Environment Effects on Gliadin Content and Polyphenol Oxidase Activity in Wheat

  • The environment in which a given genotype is grown may influence its grain quality characteristics. When varieties are $\times$ evaluated over numerous environments, a variety environment interaction usually is observed, but the relative magnitude of environmental(E), genetic(G), and G $\times$ E effects on quality is unclear. In order to determine relative contribution of genotype, environment, and G $\times$ E interaction to the variations observed in grain quality characteristics, 18 Korean wheat cultivars and experimental lines were evaluated in two environments in 1998 and 1999. Correlation coefficients between grain quality and agronomic characteristics were also estimated. The analysis of variance for the optical density obtained by reaction bet- ween gliadin and anti-gliadin polyclonal antibody (AGPab) indicated that gliadin content measured by Enzyme-Linked Immunosorbent Assay(ELISA) was significantly in- fluenced by environment and cultivar differences. The significant differences of year and year $\times$ location were also found. The ratio of the variances associated with environmental effects to the variances associated with genetic effect gave relatively greater influence of environmental factor on gliadin content. The different protein content from same genotype grown in different environment might be associated with degree of storage protein accumulations. Significant relationships between ELISA and protein content, yield, ten spike weight, and ten spike number were detected. Polyphenol oxidase (PPO) activity was significantly influenced by year, location, cultivar and year $\times$ location. The variance in grain PPO activities among growing years appeared larger than the variation produced by the cultivar examined. This suggested that the growing environment contributed more to variability in grain PPO concentration.

Relationship between Mixograph Properties and Bread Quality of Korean Wheat Cultivars and Breeding Lines (한국산(韓國産) 밀의 Mixograph특성(特性)과 제(製)빵적성(適性)과의 관계(關係))

  • Quality of flours of 166 different wheat varieties and breeding lines from the 1980-1982 year crop was evaluated with Mixograph. Protein content had a correlation coefficient of 0.68 with sedimentation value and of 0.67 with bread volume. Sedimentation value showed highly significant correlation (r = 0.74) with bread volume. Positive significant correlations were found between protein content and sedimentation value vs. Mixography water-absorption, however the protein content and sedimentation value were not consistently related with mixing time or height to peak. Mixograph curve of the flour in a cultivar showed the specific pattern regardless the environmental conditions.

Antioxidant Activity and Total Phenolic Compounds in Grain Extracts of Wheat, Barley, and Oat

  • Cereal grains are rich in phenolic compounds that give beneficial effect in human health. Although several research works have been reported on the effects of phytochemicals of plant origin, such as fruits, vegetables, few studies have examined the antioxidative effects of whole cereal grains. The objective of this study was to determine total antioxidant capacity of 80% ethanolic extracts of cereal grains by testing the ability of the extracts to inhibit UV -induced lipid peroxidation in vitro using linoleic acid in comparison to well-known antioxidant such as ascorbic acid and tannic acid. The total phenolic content of the cereal grain (80% ethanolic extracts) investigated in this study varied from 2.1 mg/g (wheat cv. Olgeurumil) to 10.4 mg/g (barely cv. Seodunchalbori). Highly positive relationship between total phenol compounds and antioxidant activity was found. When the antioxidant activities of all investigated extracts were measured with application of same quantity of phenol compounds, oat grain extracts showed similar antioxidant activity of barely cultivars. However, barely extract appeared as the most potent antioxidant activity of inhibition of UV -induced lipid peroxidation. This indicated that factors such as phenolic compound composition and their individual antioxidant activity could playa crucial role in the total antioxidant activity of cereal grains.
