Flour Characteristics and End-Use Quality of Korean Wheat Cultivars II. End-use Properties (국산밀 품종의 밀가루 특성과 가공적성 II. 가공 적성평가)

  • End-use properties of 26 Korean wheat cultivars (KWC) were evaluated to assess consumer satisfaction with 6 imported wheat and 5 commercial wheat flours. In end-use quality testing of cooked noodles, Absorption of noodle dough sheet of ASW (Australian standard white) was similar to Anbaek, Eunpa, Gobun, Hanbaek, Jeokjoong, Jonong, Namhae, and Sukang. Thickness of noodle dough sheet of KWC was showed thin difference. In imported wheat and commercial flour, Commercial flour for baking cookie (Com5) with lower protein flour was lower than those flours. In lightness of prepared noodle dough sheet, Lightness value ($L^*$) of KWC was lower than those of Commercial flour for making white salted noodle (Com1), commercial flour for making for yellow alkaline noodle (Com2), and commercial flour for multi-purpose (Com4). Lightness value ($L^*$) showed significantly negative correlations with particle size of flour, ash, damaged starch, and protein content. Hardness of cooked noodles positively correlated with protein content. In texture of cooked noodles, Hardness of Com1 was similar to that of Alchan, Dahong, Jeokjoon, and Sukang. Also, hardness of Com2 was similar to that of Gobun, Jokyung, Jonong, Keumkang, and Namhae. In end-use quality of bread, bread loaf volume of commercial flour for making bread (Com3) was similar to Alchan, Jokyung, Keumkang, and Namhae but firmness was low. Bread volume showed better relationships with higher SDS-sedimentation volume, longer mixing time of mixograph, higher height of dough during development. Firmness of crumb was negatively correlated with bread volume. Diameter of cookie showed significantly negative correlations with particle size of flour, damaged starch, and protein content. Also, Top gain score became higher as the increase diameter of cookie. In end-use quality testing of cooked cookie, Cookie diameter of Com5 was similar to that of Dahong, Geuru, Olgeuru, Tapdong, and Uri but top grain was low.

  • The seeds of 20 barley cultivars were tested for aflatoxin contamination and susceptibility to infection by an aflatoxin-producing mold. When the samples were tested as they arrived, no aflatoxin was detected on any of them. When their moisture was raised to 25% and they were kept as $25^{\circ}C$ for 2 weeks, all expect 2 cultivars showed aflatoxin contamination. Aflatoxins $B_2$ and $G_2$ were not detected in this incubation period. After wetting (25% moisture) the samples, inoculating them with Aspergillus parasiticus conidia and storing them at $25^{\circ}C$ for 2 weeks, all cultivars were found heavily contaminated with aflatoxin, those with seedcoats more so than those without seedcoats.

Variations of Root and Shoot Characteristics of Barley Cultivars in Different Environmental Condition (대맥의 환경처리에 따른 지상부와 지하부의 형질변화)

  • This experiment was carried out to study the root and the other major agronomic traits of barley cultivars at the greenhouse and natural conditions for the accelerating of breeding generation. The barley cultivars tested in this experiment were Kangbori, Olbori and Suwon 18. In early stages, total dry weight of barley was vigorously increased at the greenhouse condition, whereas it was less increased than that of natural condition after heading stages. In dry root weight, it was decreased at natural condition rather than greenhouse condition. The appearance of harvest dry root weight was at four weeks after heading at natural condition and seven weeks after heading at greenhouse condition, respectively. It showed different tendency in T/R ratio, indicating the continuous increased at natural and greenhouse condition, even if there is more or less decrease until tillering stage at greenhouse condition.

Evaluation of Biomass and Feed Value of Forage Wheat in Central Region at the Paddy by Cultivars (중부지역 논 재배 사료용 밀의 품종별 생산성 및 사료가치 평가)

  • This study was conducted to evaluate the productivity of whole crop silage wheat utilizing the paddy fields during a couple of years from 2019 to 2021 in Suwon, Korea. This investigation was used the two maturity types of wheat cultivar 'Cheongwoo' (early) and 'Taeu' (late). The heading date of 2nd year (Oct. 2020 to May. 2021) cultivation was delayed about 11 to 13 days by more than 1st year (Oct. 2019 to May. 2020). The growth characteristics were shown that the plant height was increased in 2nd cultivation, while the number of culms and the panicle part ratio were decreased. Moreover, the nutritive value of 'Cheongwoo' and 'Taeu' were also decreased in 2nd cultivation. These changes have thought to a difference of the precipitation by cultivation years. Because, the precipitation during the period from the end of winter dormancy to the harvesting stage in 2nd (337 mm) cultivation was more about twice than 1st (169.3 mm) cultivation. However, the dry matter yield of 'Cheongwoo' was not shown a statistical difference by cultivation years, while 'Taeu' was shown to decrease tendency. The total dry matter yield regardless of the cultivation years were higher in 'Cheongwoo' than 'Taeu', and especially 'Cheongwoo' was more 3 tons per hectare (15.3 t/ha) than 'Taeu' (12.6 t/ha) at 2nd cultivation (p<0.01). The trend of dry weight in 'Cheongwoo', early mature type, showed a relatively high ratio of dry matter (p<0.05) was considered that due to a high panicle ratio by a fast heading and an adequate weight of panicles by a sufficient maturing. In conclusion, selecting the early maturity cultivars could achieve a higher and more stable total dry matter yield considering the cropping system in the central region. Furthermore, it also has the advantage of being able to double-cropping system with forage rice, which has considered the maximum whole-crop forage production year-round. These results suggest that the 'Cheongwoo' be optimum cultivar to produce the year-round forage on paddy fields in the central region.

Variation in Heading States of Korean Winter Wheat under Winter Temperature Rise of Toluca in Mexico (멕시코 톨루카 지역의 겨울 기온상승에 따른 한국 밀 품종의 출수생태 변이)

  • The shuttle breeding of Korean winter wheat has been able to develop high-yielding and day-length-intensive varieties with a wide range of ecologic adoption. However, the phenology of winter wheat has been changed due to recent rises in the winter temperature of Toluca and increasing frequency of high temperatures. We defined two wheat groups (group II and III) with vernalization and evaluated the impact of cold exposure duration and heading ratio due to changes in sowing dates by measuring changes in cold exposure duration and corresponding heading states of each group. The wheat cultivars were sown on three dates in two years. The cold exposure requirement of wheat sown on 6 November 2013 was unfulfilled. The cold exposure requirement of wheat sown on 22 November and 6 December 2013 was fulfilled. However, in 2014, the cold exposure requirement of wheat sown on 5 and 20 November was fulfilled, but that of wheat sown on 5 December was unfulfilled. The differences for the two early November sowings were because winter temperature rises, which caused high temperatures in 2013, whereas early November 2014 saw normal temperatures for the area. The heading ratio of group II did not show a clear difference among the three sowing dates, while the heading ratio of group III was reduced by about half. This implies that the efficiency of shuttle breeding of group III will be high since it showed strong sensitivity to changes in sowing dates. We calculated future sowing dates of each group under near future climate scenarios; the future available sowing dates of group II were projected, but the dates of group III were never estimated in the temperature rise scenario in Toluca. Our findings suggest that change of sowing dates should be considered in the strategy for shuttle breeding of Korean winter wheat.

Relation of the Fertility and Grain Weight of Wheat and Barley to their Spike Differentiation and Development (대소맥에 있어서 소수 및 소화의 분화, 발육정도가 임성 및 립중에 미치는 영향)

  • In three diverse wheat and one barley cultivars were used to examine the relation of the spikelet and floret differentiation to fertility and an winter wheat Norin 61 was used to examine the spikelet size gradients in the mature ear in relation to their grain development. The greatest number of grains and florets per spikelet, and the heaviest grains occurred in the low-mid part of the ear. Within the spikelets, the 2nd grain from the base was heavier than the I st or the 3rd one. In this region, the fertility of the 1 st floret was 97%, the 2nd 93%, the 3rd 88%, and 4th floret was 15%. The fertility of the wheat and barley was closely related to spikelet and floret differentiation. Barley spikelets was fertile as their differentiation stage was X that is 25 days before heading. Wheat florets were fertile as their differentiation stage was X that is 15-20 days before heading. But, they were sterile or reduced in fertility if they were not reached to the stage X.

Development of Proteomics-based Biomarkers for 4 Korean Cultivars of Sorghum Seeds (Sorghum bicolor (L.) Moench) (국내 수수 종자 분석을 위한 프로테오믹스-기반 바이오마커 개발)

  • BACKGROUND: Sorghum (Sorghum bicolor (L.) Moench) ranks as the 6th most planted crop in the world behind wheat, rice, maize, soybean, and barley. The objective of this study was to identify bio-marker among sorghum cultivars using proteomics approach such as two-dimensional polyacrylamide gel electrophoresis (2-DE) coupled with mass spectrometry (MS). METHODS AND RESULTS: Proteins were extracted from sorghum seed, and separated by 2-DE. Total 652 spots were detected from 4 different sorghum seed after staining of 2-DE with colloidal Coomassie brilliant blue (CBB). Among them, 8 spots were differentially expressed and were identified using MALDI-TOF/TOF mass spectrometry. They were involved in RNA metabolism (spot1, spot 4), heat shock proteins (HSPs, spot 2), storage proteins (spot 3, spot 5, and spot 6), and redox related proteins (spot 8). Eight of these proteins were highly up-regulated in Whinchalsusu (WCS). The HSPs, Cupin family protein, and Globulin were specifically accumulated in WCS. The DEAD-box helicase was expressed in 3 cultivars except for WCS. Ribonuclease T2 and aldo-keto reductase were only expressed in 3 cultivars except for Daepung-susu (DPS). CONCLUSION(S): Functions of identified proteins were mainly involved in RNA metabolism, heat shock protein (HSP), and redox related protein. Thus, they may provide new insight into a better understanding of the charactreization between the cultivars of sorghum.

Studies on the Procedures of Accelerating Generation Advancement in Wheat and Barley Breeding IV. Advancement of Two Generations of Wheat Materials a Year at Suweon by Growing a Summer Generation (맥류의 세대촉진방법에 관한 연구 IV. 수원지역에서 소맥 1년 2기작 세대촉진재배)

  • To establish a generation acceleration technique, two crops a year at field condition of Suweon, 10 varieties different in their spring growth habit were tested with 6 different seeding time after harvesting. These materials were harvested on June 10, 19, 79 and tested for their seed production ability at varions seeding time from July I I to August 15 with a week interval. An immatured seed germination technique and green vernalization methods were applied in cycling generations and the results obtained were summarized as follows. 1. In summer growing, seedlings establishment after transplanting was better in earlier transplanting. 2. Heading time was remarkably enhanced by earlier transplanting. Considering the results of two years early or mid of July was the suitable time to plant the second summer crop. 3. Those varieties of spring growth habit expressed little variations in plant height among the varieties. In 1978 which is referred as warm year produced plant height as tall as 8-16cm and poor crop but produced good crop with 25-65cm plant height in 1979. 4. No definit tendency in the length of spike was. observed among the cultivars but longer spike was found in winter wheat compared to the spring. 5. Number of spikes per plant was ranged from 1 to 3 regardless the transplanting time in 1979. However, more spikes per plant were produced in early or mid of July transplanting and those varieties of higher growth habit than V did not produces any spikes. 6. Higher number of grains per spike was found at earlier transplanted varieties. Therefore, it is concluded that those materials of I-IV growth habit with mid or early July transplanting would be suitable in practical sense considering their ability of seed production. 7. Two-year results indicated that wheat crop can not tolerate the temperature level higher than average 32$^{\circ}C$ C at Suweon. In this regard, the cultivation schedule was established assuming average temperature condition like the year of 1979 which was possible to grow wheats.

Growing Process of Tillers in Wheat and Barley and Its Contribution to Grain Production (맥류의 분벽별 생육상 및 생산능력의 변이에 관한 연구)

  • This experiment was conducted to investigate the growing process, nitrogen content of leaves and grain weight of the tillers of three wheat and one barley cultivars under space planting condition. The rates of the ear-bearing tillers were highest in the main stem (MS) and followed by the Ist, 2nd, 3rd tiller of the first order tiller. The leaf emergencies on main stem and tillers of barley were found simmilar results to synchronously emerging leaf theory reported by katayama, however, one or more leaves were emerged from the tillers of wheat comparing to the theoretical numbers. The orders of the ear primordia development were MS 1st 2nd 3rd tiller. The differences of ear development between main stem and tillers were greatter in wheat than in barley. Total nitrogen content in leaf decreased accompanying with growth and the highest content were found on the higher ordered tillers. The order of the proportion of each stem grain weight to the grain yield per unit area was MS > 1st≒2nd > 3rd tiller.

  • A comparison was made for growth and yield of two rowed and six rowed barley varieties to differentiate their fundamental characteris in relation with brewing quality. Heading and maturing time of two rowed barley varieties were similar to those of six rowed covered but were earlier than those of six rowed naked ones. Most of two rowed varieties were spring barley and low temperature susceptible, but they were relatively photoinsensitive compared to six rowed varieties. Eventhough malting barley has heavier stands and grains, they were quite similar in yielding ability with six rowed cultivars with decreased number of grains per spike. In quality characters, malting barley has better germination energy and rate, lower protein content than the common six rowed barley and decisively better for brewing that six rowed barley with higher malt yield, extract yield and quality and enzyme activity. In comparison of malting barley varieties produced in Korea and Japan indicated that those varieties produced in Japan were better in germination characters, extract yield and quality, Kolback index and enzyme activity than those produced in Korea.
