노인의 생활환경이 식품섭취에 미치는 영향에 관한 연구 (Effect of Living Conditions an Food Intakes of the Aged)

  • The purpose of this study was to investigate effect of living condition and aging on food intake in Korea. 98 free-meal receivers and 81 members in well-being center for the aged were asked about their food frequency and food consumption and their socioeconomic status by a questionnaire. All data were analyzed by SPSS (Statistical Packages for the Social Sciences) 10.0 program. There were statistical differences of living condition, marital status, former job and teeth status between free-meal receivers and people with stable lives. Moreover, all age groups of free-meal receivers had lower income, living expenses, educational period and frequency of physical activity than those of people with stable lives. But smoking and drinking was much higher in free-meal receivers. Arthritis was the most prevalent disease in both groups. And free-meal receivers had higher blood pressure and lower Body Mass Index than people with stable lives. Food consumption of free-meal receivers was definitely lower than that of people with stable lives in terms of food frequency and standard amount of food eaten. But noodles, bean sprouts and eggs were very important foods for free-meal receives. Food consumption of the aged was affected by age, educational period, income, blood pressure, duration after retirement, frequency of physical activity and Body Mass Index. Therefore, as various socioeconomic status affects on food intakes of the aged, more effective and practical nutritional programs which consider the receivers'socioeconomic status are needed for the nutritionally at-risk groups like the aging free-meal receivers.

Selection and Characteristics of Fermented Salted Seafood (jeotgal)-Originated Strains with Excellent S-adenosyl-L-methionine (SAM) Production and Probiotics Efficacy

  • This study is executed to develop probiotics which produce S-adenosyl-L-methionine (SAM), a methyl group donor of the 5-methyltetrahydrofolate methylation reaction within the animal cell. SAM is an essential substance for the synthesis, activation, and metabolism of hormones, neurotransmitters, nucleic acids, phospholipids, and cell membranes of animals. The SAM is also known as a nutritional supplement to improve brain functions of the human. In this study, the SAM-producing strains are identified in 18 types of salted fish, and then, the strains with excellent SAM productions are being identified, with 1 strain in the Enterococcus genus and 9 strains in the Bacillus genus. Strains with a large amount of SAM production include the lactic acid bacteria such as En. faecium and En. durans, En. sanguinicola, as well as various strains in the Bacillus genus. The SAM-overproducing strains show antibacterial activities with certain harmful microbes in addition to the weak acid resistances and strong bile resistances, indicating characteristics of probiotics. It is possible that the jeotgal-originated beneficial strains with overproducing SAM can be commercially utilized in order to manufacture SAM enriched foods.

인증농산물의 구매편향성에 관한 연구 - 두부를 사례로 - (The Effects of Consumer Beliefs for Food Certifications on Purchasing Intention Biases for the Certified Agricultural Products - A Case Analysis based on Tofu -)

  • The objective of this study is to examine the effects of consumer beliefs regarding three food certifications on their behavioral intention and the behavioral intention biases to purchase (purchasing intention biases) certified agricultural products as predicted by a subjective probability model. The food certifications used for this study are 'Organic food', 'Traceability system of food products,' and 'Hazard Analysis Critical Control Point (HACCP)'. Tofu (bean curd) was selected as being representative of agricultural food products, for the purposes of this study. In 2016, we surveyed 243 consumers regarding the strength of their belief regarding their prior beliefs relative to each certification, as well as the strength of their intention to purchase certified tofu based on their belief strengths for this study. The study resulted in the following findings: Firstly, consumers hold more than two different prior beliefs for each of the three certifications included in this study. Consumers' prior beliefs regarding these certifications have an impact on their consideration as to whether they plan to buy those certified agricultural products. Secondly, consumers try to persuade themselves to ensure that their particular belief about the product's certification could lead to a purchasing decision regarding that agricultural product.

전주천 참종개 Cobitis Koreensis 의 생태 (Ecological studies of Cobitid Fish, Cobitis koreensis in Jeonju-cheon Creek, Jeonrabug-do province, Korea)

  • The study was made to expand the knowledge of the ecology of Cobitis koreensis which is very common in the upper and middle part of rivers in western part of Korea. A number of C. koreensis are found in the creek of Jeonju-cheon located at Segjang-ri, Wanju-gun, Jeonrabug-do Province. The area studied has pebble bottoms. The flow velocity of the river ranges from 20cm to 40cm per second under normal conditions. The sex ratio of male to female was 1:1.34 and the female was 10~25mm larger than the male in total length. Length-frequencies in this population indicate that 20~40 mm fish group is underyearling, 40~60mm is a yearling, and 60~85mm is two-year-old. And the fish longer than 90mm in total length is regarded as being over three-year-old. Based on the ratio of gonadal weight to body weight, spawning in this species began in April and expanded well into June with water temperature 20~26。C, and the individuals became sexually mature over the two-year-old. The number of the eggs was counted from ten matured female fishes. The mean number of eggs in seven 72.6~81.4mm fishes was 908 (595-1, 229) and that of the rest three 86.0~89.0mm was 1, 674 (1, 337-2, 023). The contents of stomach in the other fifteen specimens captured in September 1977 were investigated. While the younger fed almost on the algae, the foods in the adult were largely aquatic insects.

Formal versus Informal Credit: Which is Better in Helping Rural Areas in Vietnam?

  • The study seeks to evaluate the impacts of three types of credit - formal, semi-formal, and informal credits - on the well-being of households in Vietnam's rural areas. Based on data from the Vietnam Household Living Standard Surveys in 2014 and 2016, the research uses the instrumental variable fixed-effect models to estimate the effects of three kinds of credit on household's per capita income and expenditure. There are some significant findings. First, in rural areas, formal credit is the most popular source with stable and cheap borrowing costs. Informal credit is a complement to formal credit to meet urgent needs. Funding agriculture activities is the most commonly cited purpose of borrowing, followed by purchasing assets. The highest misuse rate belongs to the group of loans for agriculture production. Second, the results show that credit helps smoothen consumption rather than generate income for rural households. Three types of credit have insignificant or negative effects on household's per capita income. Formal loans significantly improve total expenditure and spending on healthcare and education. Informal and semi-formal credits show a little influence on consumption. Informal loans have a significantly positive effect on healthcare expenditure. In contrast, having semi-formal loans tends to decrease spending on foods.

Phytochemical Study on Aloe vera

  • Aloe plants have been used as herbal medicine for centuries and the name aloe means the dried exudate from the cut leaves of Aloe ferox Mill. (Cape aloe, Liliaceae), Aloe ferryi Baker. (Socotrine aloe), A. bainesii Th. Dyer. (Natal aloe) and Aloe vera L. (Curacao aloe) (Namba, 1986). Among them, Aloe vera has not only been one of the most used natural drug well known for its cathartic properties, but also has been widely used as raw materials of cosmetics and health foods (Leung, 1978, Hoffenberg, 1979). Although previous investigations showed that the leaves of A. vera contain a number of anthracene and chromone derivatives such as aloin A, aloin B, 1, 3, 6, 8-tetra-nitro-4,5-dihydroxy-2-hydroxymethyl anthraquinone and 7-hydroxy-aloin, its chemical composition is far from being completely investigated (Hoffenberg, 1979, Rauwald and Voetig, 1982). As a part of our chemical investigations on the constituents of aloe, we report chemical investigation of the freeze dried ground leaves of A. vera which is led to the isolation of five compounds from the ethyl acetate soluble fraction of the methanolic extract.

The Plant-Stress Metabolites, Hexanoic Aacid and Melatonin, Are Potential "Vaccines" for Plant Health Promotion

  • A plethora of compounds stimulate protective mechanisms in plants against microbial pathogens and abiotic stresses. Some defense activators are synthetic compounds and trigger responses only in certain protective pathways, such as activation of defenses under regulation by the plant regulator, salicylic acid (SA). This review discusses the potential of naturally occurring plant metabolites as primers for defense responses in the plant. The production of the metabolites, hexanoic acid and melatonin, in plants means they are consumed when plants are eaten as foods. Both metabolites prime stronger and more rapid activation of plant defense upon subsequent stress. Because these metabolites trigger protective measures in the plant they can be considered as "vaccines" to promote plant vigor. Hexanoic acid and melatonin instigate systemic changes in plant metabolism associated with both of the major defense pathways, those regulated by SA- and jasmonic acid (JA). These two pathways are well studied because of their induction by different microbial triggers: necrosis-causing microbial pathogens induce the SA pathway whereas colonization by beneficial microbes stimulates the JA pathway. The plant's responses to the two metabolites, however, are not identical with a major difference being a characterized growth response with melatonin but not hexanoic acid. As primers for plant defense, hexanoic acid and melatonin have the potential to be successfully integrated into vaccination-like strategies to protect plants against diseases and abiotic stresses that do not involve man-made chemicals.

『조선녀성』을 통해 본 북한의 식생활 연구 - 1999~2017년 식생활 관련 기사를 중심으로 - (A Study of North Korea's Dietary Life through Joseon Nyeoseong - Focus on dietary life articles from 1999 to 2017 -)

  • This study was conducted to understand the dietary life of North Koreans by analyzing dietary life-related articles published in Joseon Nyeoseong, which is the only women's magazine in North Korea. This study employed content analysis of 769 articles from 1999 to 2017. The major findings of this study were as follows. Out of the 769 articles, 131 (17.0%) were about dietary culture, 541 (70.4%) were about the food and nutrition, and 97 (12.6%) were about food production. The articles emphasized ethnic food and North Koreans ingredients, spices, cooking methods, containers, and etiquette. A variety of foods and ingredients were used to maintain health, as well as to treat common illnesses and health problems. There were 173 recipes mentioned in the magazine, but no foreign food recipes. There were many dishes that could be preserved for a long time such as Kimchi and pickles. For food security, many vegetables and plant-eating animals such as rabbits were cultivated. Overall, the results indicate that North Korea has been maintaining its unique dietary life without being influenced by foreign countries.

Research on the Senior Food Industry and Revitalization: focusing on HMR products

  • As the elderly population is rapidly increasing not only domestically but also globally, convenience foods for the elderly population are receiving attention. Therefore, the senior food market continues to grow rapidly both domestically and overseas. In relation to this, this study seeks to explore convenience food preferences through the growth status of the convenience food market and the demand for convenience food among the elderly population. We would like to consider various factors that influence the increase in convenience food consumption among the elderly population. This study uses meta-analysis and systematic literature research to find ways to revitalize the convenience food market targeting the elderly population. As a result of the analysis, it was mentioned that in order to revitalize the convenience food market for the elderly population, it is important to develop products with high nutritional value, suitable for the physical characteristics of the elderly population, and low price, and to consider convenience and accessibility. Through a multifaceted approach, we aim to increase the need for convenient food products that meet the needs of the elderly population, contribute to improving the health and well-being of the elderly, and further efficiently manage the health of the elderly nationally and globally.

Effects of Rosa multiflora root extract on adipogenesis and lipogenesis in 3T3-L1 adipocytes and SD rat models

  • BACKGROUND/OBJECTIVES: Obesity is a major cause of metabolic disorders; to prevent obesity, research is ongoing to develop natural and safe ingredients with few adverse effects. In this study, we determined the anti-obesity effects of Rosa multiflora root extract (KWFD-H01) in 3T3-L1 adipocytes and Sprague-Dawley (SD) rats. MATERIALS/METHODS: The anti-obesity effects of KWFD-H01in 3T3-L1 adipocytes and SD rats were examined using various assays, including Oil Red O staining, gene expression analyses, protein expression analyses, and blood biochemical analyses. RESULTS: KWFD-H01 reduced intracellular lipid accumulation and inhibited the mRNA expression of peroxisome proliferator-activated receptor γ (PPARγ), cytidine-cytidine-adenosine-adenosine-thymidine (CCAAT)/enhancer binding proteins (C/EBPα), sterol regulatory element-binding transcription factor 1 (SREBP-1c), acetyl-CoA carboxylase (ACC), and fatty acid synthase (FAS) in 3T3-L1 cells. KWFD-H01 also reduced body weight, weight gain, and the levels of triglycerides, total and LDL-cholesterol, glucose, and leptin, while increasing high-density lipoprotein-cholesterol and adiponectin in SD rats. PPARγ, C/EBPα, SREBP-1c, ACC, and FAS protein expression was inhibited in the epididymal fat of SD rats. CONCLUSION: Overall, these results confirm the anti-obesity effects of KWFD-H01 in 3T3-L1 adipocytes and SD rats, indicating their potential as baseline data for developing functional health foods or pharmaceuticals to control obesity.
