Impact of Humectants on Physicochemical and Functional Properties of Jerky: A Meta-Analysis

  • This study aimed to determine the effects of humectants on moisture content, water activity, tenderness, color, microbiological analysis, protein denaturation, and oxidation of jerky. A thorough search for papers published in scientific journals that examined the impacts of humectants on jerky was carried out using Web of Science, Google Scholar, PubMed, and Science Direct. Only 14 studies matched inclusion requirements. They were used in the meta-analysis to synthesise quantitative findings. In the current investigation, jerky produced with beef, poultry, goat, or pork was used. The standardised mean difference (SMD) between treatments with humectants and controls was examined to investigate the effects of humectants using random-effects models. Heterogeneity was investigated using meta-regression. A subgroup analysis was carried out for significant factors. Results revealed that the addition of humectants had no significant impact on water activity, pH, fat, ash, CIE L*, or CIE a* (p>0.05). However, humectant addition significantly increased moisture (SMD=1.28, p<0.05), CIE b* (SMD=1.67, p<0.05), and overall acceptability (SMD=1.73, p<0.05). It significantly decreased metmyoglobin (SMD=-0.96, p<0.05), shear force (SMD=-0.84, p<0.05), and protein (SMD=-1.61, p<0.05). However, it was difficult to get a firm conclusion about how humectants affected the myofibrillar fragmentation index, total plate count, and 2-thiobarbituric acid-reactive substances because there were fewer than ten studies. To sum up, the proper use of humectants in jerky demands careful attention to both type and quantity, needing a delicate balancing act with other contributing factors.

A Numerical Analysis on the Diaphragm Structures for Improving Fatigue Performance in Orthotropic Steel Decks (강바닥판의 피로성능 향상을 위한 다이아프램 구조상세)

  • Orthotropic steel decks are manufactured by welding thin plates therefore it is inevitable that there are abundant works of welding process. On connection of transverse rib web, crossing point of longitudinal rib, transverse rib and deck plate and cut-out parts of transverse rib are the significant position of stress concentration because of out of plane and oil-canning deformation caused by longitudinal rib distortion with shear force and distortion. At the current research, the crossing point where the orthotropic steel decks's effect of improving fatigue performance are high, not placing scallop and diaphragm which have same plane with transverse rib placed inside of longitudinal rib at the same time, the reduce effects of stress concentration at the cut-out section and the crossing are high. Especially the installation of the diaphragm causing great effects based on research results to stress concentration appearance reduce effects at the cut-out section, putting radius of curvature of the diaphragm's top and bottom as a target, as a result of carrying out the parametric analysis an optimal diaphragm form that has great effects in fatigue performance came to a conclusion. Also based on optimal diaphragm form, an advantage of the diaphragm optimal setting position for improvement of the fatigue performance came to a conclusion.

Flexural Behavior of Segmental U-Girder and Composite U-Girder Using Ultra High Performance Concrete (초고강도 섬유보강 콘크리트를 사용한 분절형 U거더 및 합성 U거더의 휨거동)

  • The flexural behavior tests of UHPC segmental U-girder and composite U-girder which has 160MPa compressive strength and 15.4m length were carried out. The test variables are volume fraction of steel fibers and slab over the U-girder. Each U-girder has longitudinal re-bars in web and lower flange. PS tendons which has 2 of 15.2mm diameter in upper flange and PS tendons which has 7 of 15.2mm diameter in lower flange were arranged and prestressed at onetime in U-girder connection stage. Enough strong prestressing force which applied to U-girder due to ultra high performance concrete strength can withstand the self weight and dead load in U-girder stage. By comparison with the brittle behavior of U-girder, composite U-girder showed the stable and ductile behavior. After the construction of slab over U-girder, flexural load capacity of composite U-girder can bear the design load in final construction stage with only one time prestressing operation which already carried out in U-girder stage. This simple prestressing method due to the ultra high strength concrete have the advantage in construction step and cost. The shear key which has narrow space has the strong composite connection between ultra high strength concrete U-girder and high strength concrete slab didn't show any slip and opening right before failure load.

  • Smart sensors embedable in composite wind turbine blades have been required to be researched for monitoring the health status of large wind turbine blades during real-time operation. In this research, the feasibility of packaged FBG sensor probes was studied through the experiments of composite blade trailing edge specimens in order to detect cracking and debonding damages. The instants of cracking and debonding generated in the shear web were confirmed by rapid changes of the wavelength shifts from the bare FBG sensor probes. Packaged FBG sensor probes were proposed to remove the fragile property of bare FBG sensor probes attached on composite wind blade specimens. Strain and temperature sensitivity of fabricated probes installed on the skin of blade specimen were almost equal to those of a bare FBG sensor. Strain sensitivity was measured to be ${\mu}{\varepsilon}$/pm in a strain range from to 0 to 600 ${\mu}{\varepsilon}$, and the calculated temperature sensitivity was to be 48 pm/$^{\circ}C$ in the heating test up to 80 degree.

Identification of Quantitative Trait Loci(QTL) for Meat Color Trait on Chromosome 7 in Pig (돼지 7번 염색체에서 육색 연관 QTL 확인)

  • The objective of this study was to identify the quantitative traits loci(QTL) for meat quality traits in pigs. Three-generation resource population was constructed from a cross between Korean native boars and Landrace sows. The resource population including founders, $F_1$ and $F_2$ was genotyped for 23 microsatellite markers on chromosome 7. The sex average total length of linkage map on chromosome 7 was estimated 154.6 cM. Meat quality traits including meat pH, meat color, drip loss, shear force, heating loss, crude fat, crude protein, crude ash and water content in muscle were collected from $F_2$ animals. For the QTL mapping, we used $F_2$ QTL Analysis Servlet of QTL express for web-based QTL mapping tools(http://qtl.cap.ed.ac.uk/). The QTLs for CIE-a and CIE-b on SSC7 were significantly detected at 1% and 5% chromosome-wide level, respectively.

Flexural Behavior of Large-Diameter Composite PHC pile Using In-Filled Concrete and Reinforcement (속채움 콘크리트와 철근으로 보강된 대구경 합성 PHC말뚝의 휨성능 평가)

  • A demand of high bearing capacity of piles to resist heavy static loads has been increased. For this reason, the utilization of large diameter PHC piles including a range from 700 mm to 1,200 mm have been increased and applied to the construction sites in Korea recently. In this study, in order to increase the flexural strength capacity of the PHC pile, the large diameter composite PHC pile reinforced by in-filled concrete and reinforcement was developed and manufactured. All the specimens were tested under four-point bending setup and displacement control. From the strain behavior of transverse bar, it was found that the presence of transverse bar was effective against crack propagation and controlling crack width as well as prevented the web shear cracks. The flexural strength and mid-span deflection of LICPT specimens were increased by a maximum of 1.08 times and 1.19 times compared to the LICP specimens. This results indicated that the installed transverse bar is in an advantageous ductility performance of the PHC piles. A conventional layered sectional analysis for the pile specimens was performed to investigate the flexural strength according to the each used material. The calculated bending moment of conventional PHC pile and composite PHC pile, which was determined by P-M interaction curve, showed a safety factor 1.13 and 1.16 compared to the test results.

Lateral-Torsional Buckling Strength of I-girder with Corrugated Steel Webs under Linear Moment Gradient (선형 모멘트 구배가 작용하는 파형강판 I-거더의횡-비틂 좌굴 강도)

  • Corrugated steel plates have several advantages such as high resistance for shear without stiffeners, minimization of welding process, and high fatigue resistance. To take advantage of these benefits, several researchers have attempted to use corrugated steel plate as a web of I-girders. The lateral-torsional buckling is the major design aspect of such I-girders. However, lateral-torsional buckling of the I-girder with corrugated steel webs still needs to be investigated especially for a real loading condition such as non-uniform bending. This paper investigated the lateral-torsional buckling strength of the I-girder with corrugated steel webs under linear moment gradient by using finite element analysis. From the results, it was found that the buckling behavior of the I-girder with corrugated steel webs differed depending on the number of periods of the corrugation. Also, a simple equation for the moment gradient correction factor of the I-girder with corrugated steel webs was suggested. The inelastic lateral-torsional buckling strength of the I-girder with corrugated steel webs was then discussed based on current design equations for ordinary I-girders and the results of finite element analysis.

Linkage Map and Quantitative Trait Loci(QTL) on Pig Chromosome 6 (돼지 염색체 6번의 연관지도 및 양적형질 유전자좌위 탐색)

  • The objective of this study was to identify the quantitative traits loci(QTL) for economically important traits such as growth, carcass and meat quality on pig chromosome 6. A three generation resource population was constructed from cross between Korean native boars and Landrace sows. A total of 240 F$_2$ animals were produced using intercross between 10 boars and 31 sows of F$_1$ animals. Phenotypic data including body weight at 3 weeks, backfat thickness, muscle pH, shear force and crude protein level were collected from F$_2$ animals. Animals including grandparents(F$_0$), parents(F$_1$) and offspring(F$_2$) were genotyped for 29 microsatellite markers and PCR-RFLP marker on chromosome 6. The linkage analysis was performed using CRI-MAP software version 2.4(Green et al., 1990) with FIXED option to obtain the map distances. The total length of SSC6 linkage map estimated in this study was 169.3cM. The average distance between adjacent markers was 6.05cM. For mapping of QTL, we used F$_2$ QTL Analysis Servlet of QTL express, a web-based QTL mapping tool(http://qtl.cap.ed.ac.uk). Five QTLs were detected at 5% chromosome-wide level for body weight of 3 weeks of age, shear force, meat pH at 24 hours after slaughtering, backfat thickness and crude protein level on SSC6.

Cyclic Seismic Performance of RBS Weak-Axis Welded Moment Connections (RBS 약축 용접모멘트접합부의 내진성능 평가)

  • In steel moment frames constructed of H-shapes, strong-axis moment connections should be used for maximum structural efficiency if possible. And most of cyclic seismic testing, domestic and international, has been conducted for strong-axis moment connections and cyclic test data for weak-axis connections is quite limited. However, when perpendicular moment frames meet, weak-axis moment connections are also needed at the intersecting locations. Especially, both strong- and weak-axis moment connections have been frequently used in domestic practice. In this study, cyclic seismic performance of RBS (reduced beam section) weak-axis welded moment connections was experimentally investigated. Test specimens, designed according to the procedure proposed by Gilton and Uang (2002), performed well and developed an excellent plastic rotation capacity of 0.03 rad or higher, although a simplified sizing procedure for attaching the beam web to the shear plate in the form of C-shaped fillet weld was used. The test results of this study showed that the sharp corner of C-shaped fillet weld tends to be the origin of crack propagation due to stress concentration there and needs to be trimmed for the better weld shape. Different from strong-axis moment connections, due to the presence of weld access hole, a kind of CJP butt joint is formed between the beam flange and the horizontal continuity plate in weak-axis moment connections. When weld access hole is large, this butt joint can experience cyclic local buckling and subsequent low cycle fatigue fracture as observed in this testing program. Thus the size of web access hole at the butt joint should be minimized if possible. The recommended seismic detailing such as stickout, trimming, and thicker continuity plate for construction tolerance should be followed for design and fabrication of weak-axis welded moment connections.
