Property and Polymerization of Hi-solid PSA's using Seeded Polymerization (Seed 중합을 이용한 고고형분 수용성 점착제의 합성과 물성)

  • The viscosity for hi-solid pressure sensitive adhesive to improve water soluble low viscosity pressure sensitive adhesive polymerized using seeded polymerization. While seed binder polymerizing it produces an optimum polymerization condition, and acrylic acid and seed binder concentration changed were measurement of viscosity variation and adhesive power at the substrate (SUS420J) as flowing results. In adhesive polymerization, seed binder concentration 7 wt%/monomer was recovered 60% of solid content, 2,100 cps of low viscosity and clear adhesive film. When acrylic acid content was 4 wt%/monomer, it was turned excellent adhesive power and holding power.

Effect of Grape Skin on Physicochemical and Sensory Characteristics of Ground Pork Meat (포도과피 첨가가 분쇄돈육의 이화학적·관능적 특성에 미치는 영향)

  • Purpose: This study aimed to investigate the effect of grape skin on the physicochemical properties and sensory score of ground pork meat. Methods: Four types of ground pork were evaluated: T0 without grape skin, T1 with 0.3% grape skin, T2 with 0.7% grape skin, and T3 with 1.0% grape skin. Results: There was no significant group wise difference in VBN content, L-value, b-value, chemical composition of raw and cooked meat, cooking yield, water holding capacity, moisture retention, fat retention, hardness, springiness, cohesiveness, gumminess, chewiness, taste, texture, juiciness, or palatability. Total polyphenol content was highest in T3, and DPPH radical scavenging activity was highest in T2 and T3 (p<0.001). The pH was highest in T0, and was lowest in T3 (p<0.001). The a-value of T2 and T3 were significantly higher than that of T0 (p<0.05). Flavor was highest in T2 among samples (p<0.01). Conclusion: The study results suggest that grape skin may be a useful ingredient in ground pork meat in terms of antioxidant potential, color and flavor.

Effect of the Addition of Schisandra chinensis Powder on the Physico-chemical Characteristics of Sausage

  • The individual and interactive effects of Schisandra chinensis powder (SCP) and sodium nitrite additions on color, pH, water holding capacity, residual nitrite, 2-thiobarbituric acid reactive substances (TBARS), volatile basic nitrogen, texture properties, fatty acids, amino acids and sensory evaluation of cooked pork sausages were investigated after 20 d of storage at $4^{\circ}C$. The powders (0, 0.5 and 1.0%) were added to sausages either alone or in combination with nitrite (0 and 100 ppm). SCP added-sausages showed lower $L^*$ (lightness) and W (whiteness) values, and higher $b^*$ (yellowness) values than sausage containing no nitrite, and exhibited the highest $a^*$ values at a 0.5% addition (p<0.05). Residual nitrite and TBARS values were found to be significantly reduced as the addition levels of SCP increased (p<0.05). As the addition of SCP increased, the sausage showed gradually decreased brittleness, cohesiveness, springiness, gumminess and chewiness, while adhesiveness increased. Polyunsaturated fatty acid, n-6 and n-6/n-3 fatty acid ratio concentrations were significantly higher in sausages containing SCP (p<0.05). The addition of SCP to sausage significantly (p<0.05) increased the ammonia content (by 0.5% SCP) and aromatic amino acid concentrations (by 1.0% SCP) (p<0.05). Inclusion of SCP in sausage meat resulted in a significant deterioration in quality characteristics of flavor, springiness, juiciness and overall acceptability (p<0.05). As expected, the observed changes in $a^*$, W, pH, shear force, texture property, TBARS, fatty acid, amino acid and sensory score of sausages, depended on the rate of addition of nitrite (p<0.05). These results suggest that SCP addition is not an effective way of improving the sensory evaluation of sausages, but may beneficially affect TBARS, nitrite scavenging activity, fatty acid and amino acid content in pork sausages.

Microparticulation/Air Classification of Rice Bran: Characteristics and Application (초미세분쇄/공기분급을 이용한 탈지미강 분획의 특성과 응용)

  • Defatted rice bran was microparticulated using fluidized bed opposed jet mill and air-classified at different air classifying wheel speed (ACWS) in Turboplex classifier. The median particle size and the standard deviation decreased, and concomitantly the specific surface area increased generally with increasing ACWS. The protein, fat and ash contents of the recovered rice bran increased with ACWS. The contents of minerals; magnesium, zinc, iron and manganese; increased positively with ACWS. The phytic acid content, however, was slightly higher at middle ACWS. The dietary fiber content was highest in the ACWS 15,000 rpm fraction showing 31.47%. Higher ACWS resulted in lighter colored powder. The water holding capacity (WHC) showed the maximum value at ACWS 12,000 rpm and decreased with increasing ACWS, while the oil holding capacity (OHC) increased with ACWS. The rheological property of the microparticulated rice bran/water suspension fitted to the linear model. The yield stress and viscosity of the suspension increased with ACWS. The shape of microparticulated rice bran at ACWS 21,000 rpm was spherical, and the median particle size was $3.7{\mu}m$. When cake was prepared with substitution of microparticulated rice bran at 5%, the cake height and volume increased remarkably.

Textural Properties of Jumbo Squid Kamaboko as Affected by Edible Starches (대왕 오징어 연제품의 Texture에 영향을 미치는 전분의 종류)

  • The effect of starches such as potato, corn and wheat starch on the rheological properties of ocean jumbo squid kamaboko was investigated. Changes in the water holding capacity and color values of those kamaboko gels was also studied using the maximum gel strength endowing starch, Wheat starch could ive the better water holding capacity and breaking stress than potato or corn starch within $10{\%}$ additional level but corn starch resulted the highest those value at $20{\%}$ added. Wheat starch had higher level of breaking strain and jelly strength at $10{\%}$ then in descending order were corn starch, potato starch. But those starches were decreased after $15{\%}$ level. Texture map showed the simple rheological properties of each starches heat gel with jumbo squid kamaboko, Corn starch map showed more tough and brittle than the other. Potato starch map showed more elastic gel than corn starch. Wheat starch map could make elastic-mushy gel. There was no significant color differences of each starches but the whiteness of each starch showed increase when the starch rate was increased.

Effect of Temperature and Water Content of Soil on Creeping Bentgrass(Agrostis palustris Huds) Growth (토양의 온도와 수분이 크리핑 벤트그래스(Agrostis palustris Huds) 생육에 미치는 영향)

  • The high temperature and water content in soil profile probably affect the physiological disorder especially on cool-season turfgrasses in warm and humid weather of Korean summer. The purpose of this research was to analyze the effect of soil temperature and water content on the growth and stress response of creeping bentgrass(Agrostis palustris Huds.) under a humid and warm temperature. USGA(United State of Golf Association) green profile in laboratory test, Daily temperature changes were tested under a dried sand, 70% water content of field capacity, and saturated condition at $34^{\circ}C$ of the USGA green in lab. In this test, the dried sand reached to $80^{\circ}C$, however, the surface temperature decrease of $10^{\circ}C$ on the saturated condition. In the thermal properties test in field, thermal conductivity, thermal diffusivity, and soil temperature were increased followed by irrigation practise. In the water-deficient condition, the highest soil temperature was reached temporally right after irrigation, however, the excessive soil water content higher than field water holding capacity showed the highest soil temperature after a while. This result indicated that a heat damage to root system was caused from the thermal conductivity of a high surface soil temperature. The excessive irrigation when a high turf surface temperature should occur a negative result on tufgrass growth, moreover, it would be fatal to root growth of creeping bentgrass, especially when associated with a poor draining system on USGA sand green. Overall, this study shows that high soil temperature with water-excessive condition negatively affects on cool-season grass during the summer season, suggesting that excessive irrigation, over 70% field capacity of soil condition, does not help to reduce soil temperature for summer season in Korea. In the study that cool-season grass were treated with different water content of soil, The soil had higher temperature and more water holding capacity when treatment rate of soil conditioner was increased. The best growth at the normal water condition and the worst state of growth at thee water-excessive condition were observed.

Effects of dry aging on physicochemical properties of beef cattle loins (건조숙성에 따른 육우 등심의 이화학적 특성에 미치는 영향)

  • This study investigated the quality change in dry aged beef cattle loins (temperature: $3{\pm}1$, lative humidity: $75{\pm}5%$, period: 14 days), compared to non-aged beef cattle loins (control). The water content of dry aged loins was lower than that of the control (p<0.001). The fat content, protein content, pH value, and redness in dry aged loins were higher than in the control. Moreover, dry aging significantly improved the water holding capacity and cooking yield of beef cattle loin (p<0.001). The shear force of dry aged loins was significantly lower than in the control (p<0.01). The flavor, tenderness, juiciness, and overall acceptability of dry aged loins were higher than in the control according to sensory evaluation. Therefore, dry aging can improve the quality properties of beef cattle loins.

Optimum Physical Property of Media for the Production of Small Potted Ardisia in Capillary Mat Irrigation System (매트재배에서 Ardisia 소형분화 생산에 적합한 배지의 물리성)

  • Adequate conditions of water content and aeration of container media are major environmental factors in the production of pot plant. This experiment was carried out to find optimum physical property of media for the production of small potted Ardisia in capillary mat irrigation system. The plant materials used in this experiment were Ardisia pusilla and Ardisia japonica. Seven substrates were formulated by blending perlite or fresh rice hulls at 20%, 40%, 60% (v/v) with sphagnum peat. Total pore space (TPS) increased by blending sphagnum peat with fresh rice hulls, but decreased by blending sphagnum peat with perlite. As fresh rice hull (FRH) and perlite content increased, air filled pore space (AFP) of substrate increased but container capacity (CC) decreased. Substrate blended with fresh rice hull was higher AFP than blended with perlite and the rate of increase was higher for FRH-containing substrate. As AFP increased, the $CO_2$ concentration in the pot decreased and the $CO_2$ concentration of substrate blended with FRH was higher than blended with perlite. The fresh and dry weight of Ardisia pusilla and A. japonica was the highest in the substrate contained 60% FRH, but the ratio of shoot dry weight to root dry weight was the lowest. The optimum total pore space, air-filled pore space, water holding capacity of substrate for the growth of Ardisia pusilla and A. japonica in the capillary mat irrigation system were 82.8%, 25.6%, and 57.2% respectively.

Comparison of pH, Water Holding Capacity and Color among Meats from Korean Native Chickens

  • This study investigated the initial pH measured at 15 min post-mortem, ultimate pH, water holding capacity (WHC), and color of meats obtained from five lines of Korean native chicken (KNC) for the development of breed for high-quality meat. In addition, the effect of sex was examined. In total, 595 $F_1$ progeny (Black [B], Grey-Brown [G], Red-Brown [R], White [W] and Yellow-Brown [Y]) from 70 full-sib families were used. Chickens were slaughtered at 20 wk of age and the measurement traits of all breast and thigh meats from 595 chickens were analyzed. The initial pH at 15 min post-slaughter of the breast and thigh meats was affected by the line and sex of Korean native chicken (P<0.05). However, there was no line and sex effect on ultimate pH and WHC of the breast and thigh meat except that the ultimate pH of thigh meat had line effect. Except for the $L^*$ value of breast meat, the meat color was significantly affected by line and sex (P<0.05). The ultimate pH showed consistently negative correlation with the $L^*$ value and positive correlation with the $a^*$ value in breast and thigh meats. Based on the results, we concluded that the line W in male chickens and the line G and W in female chickens may be good candidates for the selection to develop breed for high-quality meat because these lines showed property of high initial pH or/and ultimate pH.

Skeletal Ryanodine Receptor 1-Heterozygous PSE (Pale, Soft and Exudative) Meat Contains a Higher Concentration of Myoglobin than Genetically Normal PSE Meat in Pigs

  • Comparisons of properties between skeletal ryanodine receptor 1 (sRyR1)-heterozygous-mutated and normal types of meat were carried out in pigs using PSE (pale, soft and exudative) meat found during the butchering process. All samples considered to be PSE meat showed irregular running and disorder of the muscle fibers and a wider inter-fiber space upon light microscopic observation. Electron microscopy revealed disintegration, twisting, and disorder of the myofibril arrangement and elimination of the Z line in PSE meat, compared with normal meat. Meat property tests demonstrated greater decreases in water holding capacity, moisture and sarcoplasmic protein, and higher $L^*$ values for the meat color index in PSE meat than in normal meat, but there were no differences in these factors between genetically normal and sRyR1-heterozygous PSE meat. On the other hand, higher $a^*$ and $b^*$ values were observed in sRyR1-heterozygous than in normal PSE meat, and similar alterations to the a* value were observed in terms of the amount of myoglobin and density of the 17-kDa protein band, corresponding to the molecular mass of myoglobin, on SDS-PAGE gels. These results suggest that sRyR1-heterozygous PSE pork contains much more myoglobin than genetically normal PSE meat.
