녹차 페놀류가 corn oil-in-water emulsion의 산화 중 hydroperoxide 생성에 미치는 영향 (Effect of Polyphenolic Compounds from Green Tea Leaves on Production of Hydroperoxide for Lipid Oxidation in Corn Oil-in-Water Emulsion)

  • 5% corn oil과 17 mM Brij 700으로 제조한 corn oil-in-water emulsion(O/W)의 droplet의 크기는 첨가되는 phenol의 양이 많아질수록 지방구가 다소 커지는 경향을 보였으며, continuous phase의 surfactant 양은 대조구에 비해 다소 낮아졌다. O/W에 녹차로부터 분리한 phenol류를 100-200 ppm의 농도로 첨가하고 30일간 저장하며 hydroperoxide의 생성량을 측정한 결과 대조구에 비해 낮은 hydroperoxide 함량을 보여 유도기간이 길어지는 것으로 나타났으며, phenol 종류별 hydroperoxide 생성억제 효과는 BHT > procyanidin B3-3-O-gallate>(+)-gallocatechin>(+)-catechin의 순서로 나타났다. 지방 산화의 결과 발생하는 aldehyde의 함량을 측정함으로서 산화정도를 측정하기 위하여 headspace hexanal 양을 측정한 결과, 대조구는 15일까지 hexanal이 검출되지 않았으나 phenol 첨가구는 20-30일로 headspace aldehyde의 불검출기간이 길어졌으며, 농도가 증가할수록 낮은 함량을 나타내었다. Phenol 종류별 headspacealdehyde 생성 억제 효과는 BHT > procyanidin B3-3-O-gallate > (+)-gallocatechin >(+)-catechin의 순서로 나타났다.

Effects of Various Cooking Methods on Quality Characteristics of Korean Boiled Pork (Soo-yuk)

  • This research was conducted to evaluate the effects of cooking conditions on quality characteristics of Soo-Yuk, a traditional Korean food. The cooking conditions were as follows: boiled until the core temperature of a sample in $20^{\circ}C$ cold water reached at $75^{\circ}C$ (T1); boiled until the core temperature of a sample in $90^{\circ}C$ boiling water reached at $75^{\circ}C$ (T2); and boiled with sample from $20^{\circ}C$ to $100^{\circ}C$ and kept at $98^{\circ}C$ for 25 min (T3, Korean traditional method). The sample cooked at $90^{\circ}C$ water (T2) had the fast cooking time, and the highest cooking yield and moisture content. Soo-yuk boiled in $100^{\circ}C$ water (T3) showed the longest cooking time, the lowest cooking yield and moisture content, and the highest shear force. The instrumental color showed a significant difference among the cooking conditions. The sarcomere length of soo-yuk boiled in $100^{\circ}C$ water (T3) was the shortest, but the myofibrillar fragmentation index and thiamine content of the sample cooked at $90^{\circ}C$ (T2) were the highest. In sensory evaluation, the evaluation of soo-yuk boiled in $98^{\circ}C$ water (T3) was of superior flavor and overall acceptability.

대두침출액으로부터의 대두올리고당 생산을 위한 효모발효 효과 (Effects of Yeast Fermentation on the Production of Soy-oilgosaccharides from Bean Cooking Water)

  • 대두침출액중의 비소화성 올리고당인 라피노스나 스타키오스함량에는 영향을 주지 않으면서 수크로스함량을 낮추기 위한 효모는 균주의 선택적 당이용 능력을 기준으로 선발하였다. 14종의 대상균주 중 스타키오스 이용율이 낮았던 Saccharomyces cerevisiae(ATCC 9763, KCTC 7039)와 Hansenula anomala KFRI 626이 적합하였다. 일정량의 대두침출액에 선정된 3종의 효모배양액을 각각 첨가하여 발효시간에 따른 올리고당 함량의 변화를 조사한 결과, 균주간에 차이는 있었으나, 전반적으로 균주 첨가량과 발효시간이 증가함에 따라 각 올리고당 함량이 감소경향을 보였다. 또 이들 3균주의 첨가량을 2%로 고정하고 발효 시간을 연장하여 당함량을 조사한 결과 수크로스 제거에 적당한 균주는 S. cerevisiae KCTC 7039와 H. anomala KFRI 626이었다.

Strategies to improve irrigation water management for rice production in Pulangui River Irrigation System

  • Rice has always been the anchor of food security in the Philippines and the government is adamant about sustaining rice production by ensuring reliable irrigation water availability. Among the numerous irrigation schemes, the importance of the Pulangui River Irrigation System (PRIS) is undeniable, as it is the largest and primary irrigation source for rice production areas which are considered the food basket in Northern Mindanao. However, the ageing irrigation structures, unlined canals, long-standing water delivery systems, and climate change are compromising the performance of PRIS; and every year, during the dry and wet season, the maximum rice irrigable area is not achieved. From the field-scale water management perspective, untimely irrigation application, an unregulated roster of turn for irrigation among farmers, and the traditional practice of flooding the rice fields are the main causes of substantial water losses in conveyance, distribution, and farm application of irrigation water. Hence, proper irrigation scheduling is crucial to cultivate the maximum irrigable area by ensuring equity among the farmers and to increase the water use efficiency and yield. In this study, the FAO single crop coefficient approach was adopted to estimate rice water requirements, which were subsequently used to suggest appropriate irrigation schedules based on the recommended field-scale rice cultivation practices. The study results would improve the irrigation system management in the study area by facilitating in regulating the canal water flows and releases according to suggested irrigation schedules that could lead to increased benefited area, yield, and water efficiency without straining the available water resources.

딱총나무(Sambucus williamsii var. coreana) 추출물의 항산화효과 (Antioxidative Activity of Extracts from Sambucus williamsii var. coreana)

  • 본 연구에서는 딱총나무의 항산화 활성을 조사해 보았다. 딱총나무 잎과 줄기의 물추출물에는 6.6 mg/g과 2.0 mg/g의 phenolic compound가 함유되어 있었다. 추출물의 항산화 활성 실험에서 전자공여능은 딱총나무 잎의 물과 에탄올 추출물 phenolic 200 ${\mu}g/mL$의 함량에서는 99.5%, 89.7%, 줄기의 물과 에탄올 추출물 phenolic 200 ${\mu}g/mL$의 함량에서는 92.2%, 94.3%의 높은 항산화 효과를 나타내었다. 또한 ABTS radical cation decolorization 측정에서도 딱총나무 잎의 물과 에탄올 추출물 phenolic 200 ${\mu}g/mL$의 함량에서는 79.8%, 99.1%, 줄기의 물과 에탄올 추출물 phenolic 200 ${\mu}g/mL$의 함량에서 90.8%, 97.2%의 매우 높은 항산화 효과를 나타내었다. Antioxidant protection factor에서는 딱총나무 잎의 물과 에탄올 추출물 phenolic 200 ${\mu}g/mL$의 함량에서는 1.1과 1.1 PF, 줄기의 물과 에탄올 추출물 phenolic 200 ${\mu}g/mL$의 함량에서는 1.4와 1.0 PF의 항산화효과를 나타내었다. Thiobarbituric acid reaction substance 측정에서도 딱총나무 잎의 물과 에탄올 추출물 phenolic 200 ${\mu}g/mL$의 함량에서는 88.7%, 98.1%, 줄기의 물과 에탄올 추출물 phenolic 200 ${\mu}g/mL$의 함량에서는 93.6%, 90.6%로 positive control인 BHT 및 vitamin C보다 우수한 항산화 효과를 나타내었다. 본 연구의 결과로 딱총나무의 항산화 활성을 이용한 천연 기능성 식품소재로서의 활용이 가능할 것으로 판단되었다.

Microbial contamination including Vibrio cholerae in fishery auction markets in West Sea, South Korea

  • Background: The monitoring of pathogens of fishery auction markets is important to obtain safe fishery products regarding hygiene and sanitation. In this study, aerobic, coliform, Escherichia coli, and Vibrio cholerae were monitored in the fishery products and environmental samples obtained from fishery auction markets. Methods: The fishery products (flounder, octopus, skate, rock cod, sea bass, snail, monkfish, flatfish, comb pen shell, corb shell, conger eel, hairtail, croaker, and pilchard) were placed in filter bags, and the environmental samples (samples from the water tanks at the fishery auction markets, seawater from the fishery distribution vehicles, ice from wooden or plastic boxes, and surface samples from wooden and plastic boxes used for fish storage) were collected. Aerobic bacteria, E. coli, and coliform in the samples were enumerated on aerobic count plates and E. coli/coliform count plates, respectively. For V. cholerae O1 and V. cholerae non-O1 quantification, most probable number (MPN)-PCR analysis was performed. Results: Aerobic and coliform bacteria were detected in most samples, but E. coli was not detected. Wooden boxes were contaminated with high levels of aerobic and coliform bacteria in all seasons (spring, summer, and fall). During fall, V. cholerae non-O1 were detected in snails, hairtails, croakers, flatfishes, pilchards, plastic boxes, and water samples. Conclusions: These results indicate an increased prevalence of V. cholerae contamination in fishery products in fall, including food contact samples, which can be vehicles for cross-contamination.

Assessment of the physico-chemical quality and extent of algal proliferation in water from an impounding reservoir prone to eutrophication

  • Background: Piton du Milieu (PdM) impounding reservoir is suspected to be eutrophic based on the elevated level of orthophosphate and nitrate. Water supplies from three adjacent rivers are primarily thought to contribute to the nutrient enrichment of the reservoir. It is also suspected that there is leaching of orthophosphate, nitrate and organic matter into the rivers during rainfall events and also as a result of anthropogenic activities within the catchment area. The aim of this study was to ascertain the impact of nutrient loading on the water quality of PdM water and on the population of freshwater microalgae in the reservoir. The enumeration and identification of algae from PdM were performed by differential interference contrast microscopy. Dissolved oxygen (DO) and pH were determined by electrometric methods, whereas nutrient levels, silica and total organic carbon (TOC) were determined by instrumentation techniques. Results: Annual mean orthophosphate, nitrate and total organic carbon input from the three feeders within the catchment area of PdM reached levels as high as 0.09 mg/L, 0.4 mg/L and 2.62 ppm respectively. Over a 12-month period, mean TOC concentration in the reservoir was 2.32 ppm while the mean algal cell count was 4601 cells/mL. The dominant algal species identified were Oscillatoria, Cyclotella, Navicula and Cosmarium. Conclusion: This study highlights the trophic state of the reservoir water and clearly points to the need for constant monitoring in order to avoid the occurrence of an impending harmful algal bloom.

컵라면 용기중의 스티렌다이머와 트리머의 분석 (Analysis of Styrene Dimer and Trimer in Cup Noodle Containers)

  • 발포 폴리스티렌 컵라면 용기로부터 스티렌다이머와 스티렌트리머를 침출용매로 용출하여 GC와 GC/MS를 이용하여 정성 및 정량실험을 하였다. 표준물질로 1,3-diphenylpropane(DP)과 benzyl-n-butyl phtha-late(BBP)가 정량에 사용되었다. 각 검체의 재질 중에는 스티렌다이머가 평균 603 ppm, 스티렌트리머는 평균 5731 ppm으로 분석되었다. 스티렌다이머는 1.2-diphenyl-cyclobutane 등의 4종, 스티렌트리머는 2.4.6-triphenyl-1-hexene등 7종이 확인되었다. 컵라면 용기에 끓는 물을 침출용매로 5, 30분 후의 용출과, 또다른 침출용매인 식용유 및 헵탄을 각각 사용하여 식품으로의 이행실험을 행하였다. 또한 라면을 넣고 끓는 물을 부은 후, 각각 5, 10, 20, 30분 경과 후의 스티렌다이머 및 트리머의 분석도 병행하였다. 라면을 조리 후 n-hexane으로 초음파 추출한 후, 추출액은 헥산/아세토니트릴 분배, florisil 칼럼을 통해 불순물을 제거하였다. GC를 이용하여 DP과 BBP를 사용하여 정량한 결과, 컵라면 용기에 끓는 물과 식용유를 침출용매로 사용한 경우 스티렌다이머 및 트리머는 검출되지 않았으나, 라면을 넣고 조리한 검체의 이행시험의 경우 5분, 10분에서는 검출되지 않았으나, 20, 30분 조리한 일부의 검체에서는 스티렌다이머와 트리머가 각각 평균 0.009 ppm, 0.019 ppm 검출되었으며, 헵탄의 경우 각각 평균 1.18 ppm, 14.21 ppm으로 확인되었다.

홍게 가공회수 단백질의 거품 형성력 및 안정성 (Foaming Capacity and Foaming Stability of Protein Recovered from Red Crab Processing Water)

  • Foaming capacity (FC) and stability (FS) of protein recovered from red crab (Chitinonecetes opilio) processing in water and soybean protein isolate were determined at pH 2.0~10.0 in water and NaCl solution. The FC values for both proteins showed the lowest values at the isoelectric point (pH 4.0) and increased nth an increase in pH above the isoelectric point. FC of RCP was higher than that of SPI at pH 10.0 in water and both NaCl solutions. FC of SPI increased with an increase in NaCl concentration at pH 4.0 and 6.0, but FC of RCP was not affected. The highest FS values for both proteins were obtained at pH 4.0 in water. At pH 2.0, FC of RCP decreased with NaCl concentration increase, but FS increased. NaCl concentration had little effect on FS of RCP at pH 4.0 and 6.0, but the FS decreased at pH 10.0. FS of SPI was similar to that of RCP at pH 2.0 and increased with NaCl concentration Increase from 0.1 to 0.5M NaCl at pH 10.0.

휴경지의 웅덩이와 여울에 의한 수질정화특성 (Water Quality Improvement Characteristics in Fallow Paddy by the Shallow Pool and Shallows)

  • Fallow paddy areas have been increased due to the import of cheap agricultural product, and the unbalance between farming cost and rice price since 1990. In domestic, rice production control that decrease paddy field area has been introduced for the control of rice demand and supply and stabilization of rice price since 2003. Because of the desire of paddy field's owner to create benefit by using paddy for other object, fallow paddy would be continuously increased. In the other aspect, many people in the world is suffering from hunger because of the shortage of food. In case of Korea, continuous drought and flood damages will be potential concern of stable food supply. From this viewpoint, the increasing fallow paddy area needs to be protected from the devastation by weed breeding for the re-cultivation. In this study, fallow paddy managed with the shallow pools and shallows was selected fur monitoring and analyzing of water quality and plant body change. As the results, the managed fallow paddy found to be effective in the purification of water quality and the control of plant growth.
