식품에서 땅콩 성분의 신속검출을 위한 PCR 방법 (A PCR Method for Rapid Detection of Peanut Ingredients in Food)

  • 땅콩(Arachis hypogaea)은 예민한 사람들에게 심한 알레르기를 일으킬 수 있다. Agglutinin은 땅콩에서 알레르기 유발 단백질의 하나로 알려져 있다. 식품중의 땅콩성분을 검출하기 위하여 agglutinin 유전자에 특이적인 primer pair를 이용하는 polymerase chain reaction(PCR) 방법을 개발하였다. PCR 반응은 땅콩에서 agglutinin DNA의 특정부분을 증폭시켰으나 11종의 다른 견과류, 두류 및 곡류(피스타치오, 아몬드, 해바라기씨, 잣, 호두, 대두, 검은콩, 강낭콩, 팥, 백미, 흑미)에 대해서는 반응하지 않았다. 이 PCR 방법으로 땅콩성분이 함유된 6종의 가공식품을 모두 확인할 수 있었으며 땅콩이 구성성분으로 표시되지 않은 13종의 다른 가공식품에 대해서는 모두 음성반응을 나타냈다. 본 방법은 정제된 땅콩 DNA를 100 pg까지 검출할 수 있었으며 대두 DNA에 땅콩 DNA가 0.1%까지 혼합된 경우도 검출이 가능하였다.

Comparison of Dietary Habit and Food Consumption among Elementary School Students with or without Rhinitis and Sinusitis

  • Rhinitis and sinusitis are among the most common medical conditions in Korea, as well as Western societies. Environmental factors may influence both rhinitis and sinusitis; however, the role of dietary factors in rhinitis and sinusitis is not clear. The present study aims to compare the dietary habit, food consumption frequency, and food preference of elementary school students with or without rhinitis and sinusitis. The demand of their parents for an education program for the dietary prevention against rhinitis and sinusitis was also examined. The survey was conducted with a total of 200 subjects recruited from two elementary schools located in Gyeonggi area of Korea. The subjects consisted of 101 students with rhinitis and/or sinusitis (RS group) and 99 without rhinitis and sinusitis (control group). The students of the RS group were more likely to have habits of eating-out and street food use, to consume bean, peanut, walnut, almond, yogurt, egg, snack, and French fries frequently, and to prefer the types of foods prepared by stir-frying and deep-frying than the control group. The parents who recognized 'school nutrition teachers or food/nutrition-majored specialists' as the most appropriate educator for the dietary education program in the RS group (48.5% of their parents) were less than those in the control group (67.7% of their parents). The present study suggest that students with rhinitis and/or sinusitis may be different from those without the disease(s) in their dietary habit, frequently consumed foods, and preferred type of foods. More epidemiological, intervention, and laboratory studies are needed in order to elucidate the role of dietary factors in the development and prevention of rhinitis and sinusitis, which will have a significant implication to public health.

우리나라의 명절과 음식에 관한 주부들의 인지도 연구 -서울과 충청지역을 중심으로 - (A Study of Housewives' Attitudes on the Festive Days and Dishes in Korea -In the Region of Seoul and Choongchung Province-)

  • The purpose of this research was to determine the dishes most commonly served during various festive days. This research studied the habits of housewives in Seoul and In the Choongchung province who have children in high school. 1. Most of the housewives in Seoul graduated from high school. On the other hand. those in the Choongchung province graduated from elementary school in their education backgrounds. The monthly income ranged from 1,550,000 won to 1,190,000won to 1,190,000 won for the housewives of Seoul, and from 1,000,000 won to 1,490,000 for those of Choongchung. The nuclear family system was dominated in both areas and 63.8% of the housewives had a full-time job. 2. "Sulnal(The New Year's Day), Chusuk(Thanksgiving Day), Jungwol-daeborum(The 1st Full-Moon Day)" are among the festive days celebrated in 85% of the both areas, and "Yuwol-Yudu(6th, June), Chungyangjul(9th, September), Naphyang(8th, September)" were celebrated in 0.5%. 3. Traditional festive dishes with respect to the festive days were as follows. Tuckuk(rice cake soup) was a favorite food in Sulnal(The New Year's Day), Burum(Peanut,pine-nut, walnut, etc) in Jungwol-daeborum(The 1st Full-Moon Day), Samgyetang(chicken soup) in Dongji Songpyen(rice cake) in Chusuk(Thanksgiving day) and Patjuk(small red beans soup) in Dongji (22th, December). No significance was found in the number of dishes. 4. The Regional differences the festive days such as Sulnal(The New Year's Day), Ipchun(4th, February), Jungwol-daeborum(The 1st Full-Moon Day), Samwol-samjit(3th, March) Sawolchopail(Budda's birthday), Tano(5th, May), Yuwol-yudu(6th, March) Sawolchopail Budda's birthday), Tano(5th, May), Yuwol-yudu(6th, June), Chilwol-chilsok(7th, July), Suddal -gumum (The year's last day) were very significant 5. The festive days should continue. On the other hand, the menu(dishes) of the festive days should be simplified.hould be simplified.

임업경쟁력 강화를 위한 유실수의 지역특화 연구 (A Study on Regional Specialization of Fruit Trees To Strengthen Competitiveness)

  • 본 연구의 목적은 단기소득임산물별 지역특화현황을 분석함으로써 임업경쟁력의 강화를 위한 단기소득임산물 활성화 방향을 제시하는 것이다. 분석결과, 밤은 공주시와 인접한 부여군, 청양군이 인접해있고 이들은 특화심화지역으로 분류되었다. 호두는 경북 김천시, 충북 영동군, 전북 무주군이 호두 재배면적 특화심화지역으로 서로 인접해 있다. 그 외 다른 특화심화지역들은 산발적으로 분포되어 있고, 이 지역들의 생산규모는 미약한 수준을 보이고 있다. 대추는 경산시를 중심으로 특화심화지역인 군위군, 청도군, 영천시가 서로 인접해 있으며, 이들 지역들의 대추생산량은 증가하는 추세이다. 떫은감은 상주시와 영동군이 인접해 있는 것을 제외하고 집단화되어 있지 않고 특화심화지역은 산발적으로 분포하고 있다.

  • 밀 단백 분말을 주재료로 한 인조육을 제조할때 첨가재료의 첨가량이 품질 특성에 영향을 주는 요인을 분석한 결과는 다음과 같다. 1. 반죽하는 물의 양이 증가할 수록 L값과 b값이 증가하여 글루텐 인조육의 색이 밝고 노란색이 짙어지는 경향을 보였다. 또한 전단력, 경도, 저작성은 감소하였으며 보수성은 증가하였는데, 첨가하는 물의 양을 100%로 하였을때 L값, 경도 및 저작성이 가장 쇠고기의 측정치에 가까왔다. 2. 호두와 옥수수기름의 혼합비율은 텍스쳐보다 색에 더 크게 영향을 주는 요인이었고, 특히 호두가 인조육의 색을 쇠고기와 비슷하게 하는데 크게 기여하는 요인이었으며, 가장 적당한 비율은 호두 30%와 옥수수기름 10%이었다. 3. 옥수기름과 물의 상호 효과에서 식용유 첨가량보다 물의 첨가량이 더욱 영향을 주었으며, 옥수수기름 10%, 물 100%의 혼합비율로 조제한 글루텐 인조육이 가장 쇠고기의 측정치에 가까왔다.

호두 첨가가 양조간장의 지방산 조성에 미치는 영향 (Effects of Addition of Walnuts on Fatty Acid Composition of Soy Sauce)

  • This study was conducted to assess effects of addition of walnuts on soy sauce quality. The pH was significantly increased by adding more than 4 percent of walnuts. As the addition of walnuts increased, Hunter's color values and brown color increased. Total solid of soy sauce did not change significantly with the addition of walnuts. Crude fat content increased by two times in the 2 percent added walnuts group compared to the control group, but it was not dependent on the addition of walnuts. DPPH radical scavenging activity was significantly increased with the addition of walnuts. The addition of walnuts decrease saturated fatty acids and increased unsaturated fatty acids. Composition ratio of linoleic acid was highest in the control group and all the additions. These results revealed that soy sauce made with walnuts have a positive effect on functionality and preference.

요양병원 간호 인력의 건강신념, 감염관리 지식이 감염관리 수행도에 미치는 영향 (The Influence of Health Belief and Knowledge on Performance of the Infection Control among Nursing Staffs in Long-Term Care Hospital)

  • 본 연구는 요양병원 간호 인력의 건강신념과 감염관리 지식 및 수행도를 알아보기 위하여 시행되었다. 연구대상은 C시에 위치한 8개 요양병원에 재직중인 간호인력 146명이었고 자료수집은 2020년 9월에 시행되었다. 연구 결과, 감염관리 개인보호구 이용 용이성(β=-.198, p<.05), 건강신념(β=.124, p<.05), 건강신념 하위 변인인 지각된 민감성(β=.104, p<.05), 지각된 유익성(β=.111, p<.05)이 감염관리 수행도에 영향을 미치는 요인이었다. 요양병원 간호 인력의 감염관리 수행도를 향상을 위하여 개인의 건강신념 중 지각된 민감성을 이용하여 감염관리 수행도를 높일 수 있는 연구 및 프로그램 개발과 기존의 교육방법과 다른 요양병원의 특성에 맞는 다양하고 체계적으로 관리할 수 있는 프로그램을 도입 할 것을 제언한다.

조선시대 식물문양의 현대화를 위한 패턴디자인 개발 연구 (A study on the development of pattern design for the modernization of the plant pattern in the Joseon dynasty)

  • A pattern is a symbolic mark of the psychological expression and ornamental desire of the human interior. In particular, plant patterns, from ancient times to modern times, express beauty across both the east and the west. The Joseon dynasty had a strong national will, and it was a time when the symbolism of Korea was established. Plant patterns were decorative and symbolic, filled with meaning in both the textile and craft sectors. This study looked at the frequency and figurative characteristics of the types of plant patterns in textiles, ceramics, woodworking, and metal craftsmanship of the Joseon dynasty. In addition, pattern designs were developed by extracting unit patterns to maintain the original shape, and by adding, magnifying, reducing, and superimposing flat steps and employing the four-fold sequence. The data collected was 826 examples in textiles and crafts, and 34 species of plants were analyzed as follows. In general, the flower patterns preferred soft flowers, flowers, apricot, and peony patterns, and fruit patterns emerged as decorative designs for pottery and woodwork from the 17th century, featuring pomegranates, grapes, fluorines, peaches, and walnut floss. Textiles and woodwork were arranged with many circular designs, while pottery and metal crafts were filled in many ways. Expressive types appeared to be the same as stylistic types for textiles and ceramics, and the construction types were the same in pottery and metal crafts. As such, it was found that even in the different areas of the sculpture, the same aesthetic values were reflected in the common figurative features today. Therefore, in this study, we developed a unique and competitive pattern design that accommodates the modern times and the Joseon dynasty. This development is expected to contribute not only to the development of cultural and tourism products in the future, but also to the tourism industry induced by the Korean wave.

경도 인지장애 환자의 병원선택 요인 (Hospital Selection Factors of Patients with Mild Cognitive Impairment)

  • 본 연구는 경도 인지장애 환자들이 병원을 선택하는 기준에 대해 알아보고자 실시하였다. 연구는 2018년 5월 1일부터 9월 30일까지 연구참여에 동의한 36명을 대상으로 설문을 실시하였다. 자료수집은 재활병원과 요양병원에 입원한 환자를 대상으로 하였으며 K-MMSE를 이용하여 인지 선별평가를 시행하고, 병원선택요인 도구를 본 연구에 맞게 수정 보완하여 사용하였다. 연구의 결과를 종합해보면 거주지 또는 직장과의 거리가 가깝고 교통용이, 간편한 행정적 절차, 병원의 유명도, 새로운 서비스, 물리치료와 작업치료 등과 관련된 서비스 등이 경도 인지장애 환자의 병원 선택에 영향을 미쳤다(p<.05). 본 연구의 결과를 토대로 증가하는 경도 인지장애 환자의 병원 내원을 대비하여 임상가들과 환자를 유치하는 의료기관의 마케팅 전략에도 변화가 필요할 것이라 사료된다.

Antioxidant and Anti-Obesity Effects of Juglans mandshurica in 3T3-L1 Cells and High-Fat Diet Obese Rats

  • Juglans mandshurica Maxim. walnut (JMW) is well-known for the treatment of dermatosis, cancer, gastritis, diarrhea, and leukorrhea in Korea. However, the molecular mechanism underlying its antiobesity activity remains unknown. In the current study, we aimed to determine whether JMW can influence adipogenesis in 3T3-L1 preadipocytes and high-fat diet rats and determine the antioxidant activity. The 20% ethanol extract of JMW (JMWE) had a total polyphenol content of 133.33 ± 2.60 mg GAE/g. Considering the antioxidant capacity, the ABTS and DPPH values of 200 ㎍/ml of JMWE were 95.69 ± 0.94 and 79.38 ± 1.55%, respectively. To assess the anti-obesity activity of JMWE, we analyzed the cell viability, fat accumulation, and adipogenesis-related factors, including CCAAT-enhancer-binding protein alpha (C/EBPα), sterol regulatory element-binding protein-1c (SREBP1c), peroxisome proliferator-activated receptor-gamma (PPARγ), fatty acid synthase (FAS), and acetyl-CoA carboxylase (ACC). We found that total lipid accumulation and triglyceride levels were reduced, and the fat accumulation rate decreased in a dose-dependent manner. Furthermore, JMWE suppressed adipogenesis-related factors C/EBPα, PPARγ, and SREBP1c, as well as FAS and ACC, both related to lipogenesis. Moreover, animal experiments revealed that JMWE could be employed to prevent and treat obesity-related diseases. Hence, JMWE could be developed as a healthy functional food and further explored as an anti-obesity drug.
