2008~2009년 국민건강영양조사를 활용한 45~60세 한국여성의 폐경 여부에 따른 건강인자 특성 (Characteristics of the Health Factors in 45~60 Year Old Korean Women related to Menopausal Stages - Based on 2008~2009 Korean National Health and Nutrition Examination Survey -)

  • 본 연구는 2008~2009년도 국민건강영양조사 자료를 이용하여 45세~60세 중년여성의 식사의 질을 포함한 다각적인 건강 행태를 파악하고자 폐경 전 후의 인구사회학적인 특성, 신체적, 정신적, 혈액학적, 식사의 질의 특성을 분석하여 건강 요인과 폐경과의 관계를 분석하고자 하였으며, 그 결과는 다음과 같았다. 1) 조사대상자 중 폐경 후 여성이 폐경 전 여성에 비해 연령이 유의적으로 높았고(p < 0.001), 교육수준(p < 0.001)과 월 소득(p < 0.01)은 유의적으로 낮았다. 2) 체지방률(p < 0.001)과 허리둘레(p < 0.001)는 폐경 후 여성이 폐경 전 여성에 비해 유의적으로 높았다. 3) 혈액학적 지표 특성 중 혈당(p < 0.05), 총 콜레스테롤(p < 0.001), LDL-콜레스테롤(p < 0.001), 중성지방(p < 0.001), GOT(p < 0.001), GPT(p < 0.001)의 농도가 폐경 후 여성이 폐경 전 여성에 비해 유의적으로 높았다. 4) 삶의 질은 폐경 전 여성이 폐경 후 여성에 비해 유의적(p < 0.01)으로 높은 것으로 나타났으나, 불안/우울 정도와 스트레스 수준은 두 그룹 간 차이가 없었다. 5) 식사의 질은 평균 영양소 적정섭취비(MAR)가 0.78로 다소 낮았으며, 폐경 전 후 각 군을 비교 한 결과에서는 비타민 A, 비타민 $B_1$, 비타민 $B_2$, 나이아신의 NAR 값이 폐경 후 여성에서 폐경 전 여성에 비해 유의적으로 낮았다(p < 0.05). 6) 중년여성의 연령, 허리둘레, 체지방률, BMI는 혈당, 총 콜레스테롤, LDL-콜레스테롤, 중성지방과 모두 양의 상관성을 보였다. 이상의 결과를 종합할 때, 폐경 후 여성의 비만도가 폐경 전 여성에 비해 다소 높은 것으로 나타났으며, 혈중 지질 농도 또한 폐경 후 여성에서 유의적으로 높은 수치를 나타내어 폐경 후 여성의 비만 및 혈중 지질 관리가 필요한 것으로 나타났다. 또한 칼슘, 칼륨, 비타민 $B_2$ 등의 비타민, 무기질 영양상태가 한국인의 영양섭취기준을 충족시키지 못하는 수준인 것으로 확인되었으며, 이러한 양상은 폐경 후 여성에서 더욱 뚜렷하게 나타나 앞으로 기대 수명이 증가하면서 폐경 후 의 삶이 증가된다는 점에서 볼 때 폐경 후 여성의 세밀한 건강관리와 식사의 질적 보완을 위한 체계적인 건강 및 영양교육 프로그램 구축이 사회적으로 반드시 필요할 것으로 사료된다.

Substituting Bakery Waste for Barley Grains in Fattening Diets for Awassi Lambs

  • Bakery waste (BW) is much cheaper than barley (20 to 40% the price of barley). Bakery waste and barley grain have similar chemical composition; they contain 99 and 97% organic matter (OM), 1.1 and 1.8% fat, 18 and 15% neutral detergent fibre (NDF) and 14.0 and 14.5% crude protein (CP), respectively (DM basis). The objectives of this study were to determine the effect of substituting BW for barley grain in high concentrate fattening diets for lambs on nutrient intake, growth and carcass characteristics. Forty Awassi lambs (21.75${\pm}$1 kg) weaned at the age of 65 days were assigned randomly to four experimental fattening diets differing in BW ratio in a completely randomized design. The control diet (CON) contained 20, 60, 11, 7, and 2% (DM basis) wheat straw, barley grain, soybean meal, corn grain, and minerals and vitamin mix, respectively. Bakery waste substituted barley grain by 10, 20 and 30% of the diet DM in the LBW, MBW and HBW diets, respectively. The experiment lasted for 56 days. Dry matter intake (DMI) decreased (p<0.05) in LBW diet compared to the CON diet by approximately 10%. No further reduction in DMI was observed with the higher substitution levels. Metabolizable energy intake for the CON diet (3.6 Mcal/d) was also reduced (p<0.05) compared with LBW, MBW and HBW diets (3.4, 3.4 and 3.3 Mcal/d, respectively). Final body weight for lambs fed the CON diet (34.8 kg) was higher (p<0.05) compared with lambs fed the LBW, MBW and HBW diets (30.6, 32.0 and 31.1 kg, respectively). Growth rate for lambs fed the CON diet (232 g/d) was also higher (p<0.05) compared to lambs fed the LBW, MBW and HBW diets (170, 189, and 167 g/d, respectively). Feed to gain ratio was higher (p<0.05) for lambs fed the LBW, MBW and HBW diets (7.2, 6.6 and 7.3, respectively) compared with lambs that consumed the CON diet (5.7). Body weight gain cost was reduced by approximately 8% by the MBW and HBW diets as compared with the CON diet. Dressing percentage, full gut weight, empty gut weight and liver weights were all unaffected by the BW addition to the diets and averaged 48.9%, 6.8 kg, 2.8 kg and 0.444 kg, respectively. However, fat tail weight was increased (p<0.05) with the higher levels of the BW inclusion. In conclusion, substituting BW for barley grain reduced DMI and growth performance. However, when BW substituted barley grain at the 20 and 30% of the diet DM, body weight gain cost was reduced by approximately 8%.

체성분, 영양소 섭취상태 및 생화학적 지표가 민감성 피부 여대생의 피부건강상태에 미치는 영향 (Effects of Body Composition, Nutrient Intakes and Biochemical Indices on Skin Health Status of Female University Students with Sensitive Skin)

  • The purpose of this study was to investigate the effects that body composition, nutrient intake, and biochemical indices have on skin status, as well as their associations with skin health status, by assessing 44 female university students. The subjects were classified into 3 groups according to skin sensitivity: sensitive skin (n=11), slightly sensitive skin (n=24), and normal skin (n=9). The study included anthropometric measurements and body composition analyses, dietary intake evaluations, blood chemical analyses, and skin health status assessments. Based on % body fat, the results indicated the subjects were moderately obese (29.6%). Obesity indices were not different among the groups, but the sensitive skin group tended to have higher skinfold thickness. Dry skin was determined as the skin type of all subjects. In the sensitive skin groups, U-zone and T-zone sebum were significantly lower (p<0.05), and spots were significantly higher (p<0.05) than in the normal skin group. In terms of nutrient intakes, the sensitive skin groups consumed significantly lower amounts of P and vitamins A and E (p<0.05). There were no significant differences in serum lipid fractions or total antioxidant status among the groups. In correlation coefficients analysis, skin elasticity had significant negative correlations with subscapular and midaxillary skinfold thickness, body protein, and body minerals (p<0.05). Wrinkling had positive correlations with triceps and thigh skinfold thickness (p<0.05). Skin evenness had negative correlations with energy intake, vitamins A, $B_1,\;B_2$, C, E, niacin, and zinc (p<0.05), as well as folate and P (p<0.01) and vitamin $B_6$ (p<0.001). A similar correlation tendency was observed for spots and nutrient intake, showing negative correlations with vitamins A, $B_6$, and E, as well as folate, Fe, and P. U-zone sebum showed significant positive correlations with serum levels of total cholesterol and triglycerides. From these findings, skin health status appears to be affected by both nutrient intake and body composition. Therefore, having a proper balance between dietary intake and body composition may influence skin health status in females with sensitive skin.

부인과 암 생존자와 정상 대조군의 영양소 섭취와 식사의 질(Diet Quality Index-International) 비교 - 2013~2016년 국민건강영양조사 자료이용 - (A Comparisons of Nutritional Intake and Diet Quality Index-International in Gynecological Cancer Survivors and Normal Women - Using the Korea National Health and Nutrition Examination Survey 2013~2016 -)

  • Objectives: The aim of this study was to compare the nutritional intake and Diet Quality Index-International (DQI-I) of gynecological cancer survivors and normal women. Methods: This study compared the anthropometric indices, dietary behavior, nutritional intake, and DQI-I in women with previous history of breast or uterine cancer [Gynecological cancer survivors group (GCSG, n=126)] and normal women [Normal control group (NCG, n=7,011)] using the 2013~2016 Korea National Health and Nutrition Examination Survey data. Results: Body mass index and waist circumference were lower in the GCSG compared the NCG. The frequency of skipping breakfast and eating out was higher in the NCG compared to GCSG. Energy and fat intake were significantly higher in the NCG than in the GCSG, whereas intake of all minerals and vitamins (excluding thiamine), and dietary fiber intake were higher in GCSG. It was observed that the fatty acid intake of the GCSG was significantly lower than that of the NCG. The diet quality evaluation using DQI-I results showed that GCSG was higher in the "within-group" diet variety and adequacy of vegetable group than the NCG, whereas the intake level of the fruit group was higher in NCG. Besides, protein, calcium, and vitamin C intake were higher in the GCSG than in the NCG. The GCSG showed higher levels of total fat and saturated fat moderation than the NCG, whereas cholesterol moderation showed the opposite results. The results of DQI-I comparison according to the cancer survival years showed that the overall score and scores related to diet adequacy and balance were higher in the below 5-year group, whereas the over 5-year group scored higher in terms of moderation of diet. Conclusions: The results of this study suggest that a chronic disease based management approach is needed in cancer survivors. The study provides important data which can help in the preparation of guidelines for long-term lifestyle and diet management, in these patients.

유청단백 함유 체중조절용 식사대체제를 이용한 4주 다이어트 프로그램이 과체중 및 비만 여성의 체중, 체지방 및 체성분에 미치는 영향 (Effects of Whey Protein-rich Meal Substitute in 4-Week Diet Trial on Body Weight, Body Fat, and Body Composition of Overweight or Obese Females)

  • The study was performed to investigate the effects of whey protein-rich meal substitute added with vitamins, minerals, and lactobacillus powder probiotics on weight loss, body fat, and body composition in 24 female volunteers for 4 weeks. Whey protein-rich meal substitute was consumed with low-fat, high calcium milk (1% fat, 260 mg/200 mL) twice a day. Subjects submitted 3-day diet records and a life-style questionnaire before the study. During the study, subjects were required to turn in a diet record every day and consume the meal substitute formula in the metabolic ward at C university for 4 weeks. Anthropometric measurements were carried out weekly by Inbody 7.0. The dietary intake and anthropometric data were analyzed to compare changes before and after the study by paired t-test with SPSS version 23.0. The subjects were mostly early 20's and either overweight or obese and highly motivated to lose weight. Most of the subjects consumed three meals per day regularly and spent mostly 10~15 minutes for a meal. Their caloric intake was relatively low and decreased from 1,360 kcal at week 0 to 1,100 kcal after 4 weeks. However, total protein intake increased while carbohydrate and fat intakes decreased (p<0.05) after the trial. Nine vitamin intakes after the study improved compared to those before the study (p<0.05). After the study, subjects showed lower body weight (-1.8 kg), body fat (-0.94 kg), percent body fat (-0.86%), as well as waist circumference (-4.52 cm), hip circumference (-0.44 cm), waist hip ratio (-0.05), and triceps skinfold thickness (-2.39 mm) compared to those at week 0 (p<0.05). Muscle mass tended to be less compared to week 0, although there was no significant differences between weeks 0 and 4. In conclusion, diet trial with whey protein-rich meal substitute induced weight loss and positively changed body fat parameters and body composition.

국내 시판 주요 냉동수산식품의 영양 특성 (Nutritional Characteristics of the Major Commercial Frozen Seafood Products in Korea)

  • We investigated the nutritional components of the major commercial frozen seafood products (MCFSP) [sliced frozen-skipjack tuna (ST), -bigeye tuna (BET), -bluefin tuna (BFT), -yellowfin tuna (YT), fish steaks (FST), fish pancakes (FP), fish cutlets (FC), seafood cake balls (SCB), fried shrimp (FS), shrimp patties (SP), shrimp cutlets (SC)] in Korea. All species of sliced frozen tuna and FST were classified as low-calorie foods; the other frozen seafood products were classified as medium-calorie foods. The MCFSP were significant sources of nutritional and functional minerals: the SCB and SC provided calcium; the FST, FC, and SCB provided phosphorus; the BET, YT, and FST provided potassium; the FST, FC, and BFT provided magnesium; the FST, FP and SC provided iron; the SCB, FS, SP, and SC provided zinc; the YT and SCB provided copper; and the FC provided manganese. The total amino acid contents of the MCFSP were in the range of 6.85-26.34 g/100 g. Glutamic acid was the major amino acid in the SCB, FS, SP, and SC. Fatty acid contents were in the range of 386-2,925 mg/100 g; the major fatty acids in the ST, BFT and YT were 16:0, 18:1n-9, 22:6n-3. The MCFSP were not a significant source of vitamin A or riboflavin.

국내산 청과물 (자두)의 품질 영양표시에 관한 연구 (Quality and Nutrition Labeling Study of Domestic Fruit (Plum))

  • 청과물의 품질 영양표시 모델을 개발하기 위하여 경북의성군 옥자두를 대상으로 품질 및 영양적 성분을 분석하고 품질 영양표시 모델을 확립하였다. 일반성분은 수분 92%, 조단백 0.74%, 조지방 0.64%, 조섬유 1.65%, 조회분 0.32%, 무질소물 4.29%로 확인되었으며, 열량은 32kcal/100g 으로 계산되었다. 당도는 $10.33{\pm}0.85Brix^{\circ}$로, 산도는 $1.08{\pm}0.12%$로 나타났으며, 자두의 비타민 C 함량은 $7.037{\pm}0.317mg%$로 나타났다. 무기질은 황, 칼륨, 칼슘, 나트륨, 마그네슘 등의 순으로 함량이 높았고, 주요 유리당으로는 과당, 포도당, 자당로 나타났다. 유기산으로는 호박산, 사과산, 구연산이 확인되었다. 총 페놀화합물의 함량은 과육과 과피 간에 현저하게 차이를 보였으며 전과로는 $75.55{\pm}0.73mg%$의 함량을 보였다. 품질 표시에는 당과 산 함량, 영양 정보 표시에는 열량, 미네랄, 비타민 C, 총 페놀 성분이 표기된 자두의 품질 영양 표시 모델을 개발하여 제시하였다.

친환경 황토 가공 신소재 적용 재배법에 의한 무의 품질 특성 (Quality Characteristics of Radish Treated with Environmentally-friendly Red Clay-processed Materials)

  • 본 연구는 무의 재배 시 가공황토 처리 여부에 따른 무 시료의 품질 특성을 비교하고자 무 시료를 동일한 조건으로 재배하여 일반성분, 물성, 영양소, 기능적 특성을 분석하였다. 조회분과 조지방 함량에서 실험구1, 2가 대조구 대비 더 높은 함량을 나타내었다. 또한 분석된 모든 무기성분 및 비타민 함량에서 실험구1, 2가 대조구 대비 유의적으로 높은 함량을 나타내었다. 실험구1, 2에서 비타민 C의 함량이 대조구보다 높게 나타남과 동시에 항산화 활성 또한 유의적으로 높은 것을 확인할 수 있었다. 또한 견고성 측정 결과 대조구에 비하여 황토처리 된 실험구1, 2의 경우 저장기간 동안 견고성 감소율이 낮아 저장기간 동안 조직감의 유지가 가능한 것으로 나타났다. 따라서 무 재배 시 친환경 가공황토소재를 화학비료 대신 적용하여 재배할 경우 무의 저장성이 강화된 고품질의 무 생산이 가능해지고 기능성이 부가된 다양한 무를 활용한 고부가가치 제품이 가능해져 국내 무 시장의 활성을 촉진시킬 수 있다고 판단된다.

온주밀감 부산물 급여가 교잡종 돈육 등심의 영양성분 및 기호성에 미치는 영향 (Effect of Feeding of Unshiu Orange Byproducts on Nutritional Composition and Palatability of Crossbred Pork Loin)

  • 본 연구는 제주도에서 대량 폐기되고 있는 온주밀감 부산물을 돼지에게 급여하여 폐기물의 이용 가능성과 기능성 돈육 생산을 위하여 실시하였다. 시료는 온주밀감 부산물을 급여하지 않은 등심육(TP-0), 육성기에 온주밀감 부산물을 3$\%$ 급여한 후 비육기에 5$\%$ 급여한 등심육(TP-1), 그리고 육성기에 6$\%$ 급여한 후 비육기에 10$\%$ 급여한 등심육(TP-2)을 대상으로 제반 영양성분 분석과 관능검사를 행한 결과, 수분, 조단백질, 조지방 및 조회분 함량은 시료들 사이에 차이가 없었다. 열량은 TP-1이 높았으며 , 콜레스테를 함량은 온주밀감 부산물 급여량이 증가할수록 낮았다(0 < 0.05) 무기질 중 Na은 TP-2가 낮았으며, 비타민 $B_{1}$$B_{2}$는 시료들 사이에 차이가 없었다. 총아미노산 함량은 TP-0, TP-1 및 TP-2가 각각 18.86, 20.03 및 20.44$\%$로 처리구간의 유의성은 없었다. 그리고 총유리아미노산 및 포화지방산 불포화지방산의 비율은 시료들 사이에 유의한 차이가 없었다. 육 및 가열육의 기호성은 온주밀감 부산물 급여에 의한 영향은 없는 것으로 나타났다.

천안 지역의 3 종류의 유아원 유아들의 신체 발육과 영양 실태 (A Survey on Anthropometric and Nutritional Status of children in Three Different Kinds of Kindergartens in Cheonan)

  • According to economical status, malnutrition and overnutrition coexist among preschool children in Korea. Malnutrition have been a serious problem for children in some of rural. Many children have deficiencies of some nutrients such as riboflavin A, and simultaneously they have overcaloric intakes with empty calorie foods. Preschool children have nutritional problems which can affect the growth and development. To investigate whether nutritional intakes can influence on the growth or not, nutritional intakes and anthropometric measurements were determined for infants aged 4~6 years old in three different kinds of preschools. Daily nutrient intakes were calculated by the combination of a direct measurement and 24 hour recall, and the diet consumption patterns were determined by diet quality index. Overall growth of infants in Cheonan area was under the normal growth in Korea. Preschool children in orphanage consumed almost all nutrients much less than the recommended daily allowances, on the other hands, children in private preschool had over-intakes of nutrients when it is compared with the daily requirements. However, the scores of the diet quality index were similar in three preschools since children in private preschool consumed more fat and junk food than those in orphanage. The weight and height of preschool children in orphanage was lower than those in private preschools. This was due to the lower consumption of the important nutrients in infants in orphanage. The consumption of all nutrients except fat did not show any correlation with height or weight. The quality index of fat, cholesterol, grains and protein intakes was higher in children in private preschool than in orphanage. In conclusions, 1)the private preschool children had worse nutrient intake patterns. Better consumption of vitamin $B_2$, calcium and grains were, bigger height and chest circumferences children obtained. 2)Since most of energy intake of preschool children came from junk foods, they needed to consume more supplementation of vitamins and minerals, which is necessary for normal growth. 3)It is desirable for the children to cut down junk foods and empty calorie foods.
