The effects of dietary vitamin E and selenium(Se) supplementation on meat color stability in M. Longissimus of Hanwoo(Korean native cattle) bull beef during retail display(5$^{\circ}C$, 1,200 lux) were investigated. Experimental groups were divided into control(Vit E 27 IU/head/day, Se 0.09 mg/head/day), Vit E (2,500 IU/head/day), Se(20 mg/head/day), Vit E+Se(Vit E 2,500 IU/head/day, Se 20 mg/head/day) groups. CIE a*(redness), chroma(C*) values, oxymyoglobin(%) and R630-R580 were significantly (p<0.05) decreased among the 4 treatment groups during retail display, in particular, those values decreased more rapidly in the control group. The metmyoglobin (%) of 0 day(before storage) was not significantly (p<0.05) different among the 4 treatment groups. However, the rate of metmyoglobin accumulation during storage increased more rapidly in the control group. Therefore, discoloration in the control group was more accelerated compared to the other groups. TBARS(thiobarbituric acid reactive substances) which represent lipid rancidity was significantly(p<0.05) lower in Se and Vit E+Se groups than in the control and Vit E groups. Reducing ability of 0 day(before storage) was significantly lower in the control group than in the other groups, and it decreased more rapidly in the control group after 3 days of storage. Consequently, Se-supplemented groups(Se and Vit E+Se groups) were more resistant to lipid oxidation than were the control and Vit E groups. The stability of meat color and myoglobin forms(%) were significantly (p<0.05) higher in Vit E, Se and Vit E+Se groups than in the control group, but there were no difference among Vit E, Se and Vit E+Se groups.
Four experiments were conducted to investigate the effect of fat-soluble vitamin administration to sows or newborn pigs on plasma vitamin status. In Exp. 1 and 2, a total of 24 and 43 newborn pigs were allotted to control and vitamin treatments (vitamin $D_3$ with variable addition of vitamins A and E) orally or by i.m. injection. In Exp. 3, pigs from Exp. 2 were allotted to 2 treatments (${\alpha}$vitamins $D_3$ and E in drinking water) for 14 d postweaning. In Exp. 4, twenty-four gestating sows were used for 2 treatments (${\pm}injection$ of a vitamin $D_3$/A/E product 2 wk prepartum). In Exp. 1 and 2, when vitamin $D_3$ was administrated orally or by i.m. injection on d 1 of age, pigs had increased plasma 25-hydroxycholecalciferol (25-OH $D_3$) concentration 10 d after administration compared with control pigs (p<0.05). The injectable administration with vitamin $D_3$ and E was able to achieve higher plasma 25-OH $D_3$ (p<0.05) and ${\alpha}$-tocopherol (p<0.05) concentrations than oral administration. At weaning, the pigs in the injection group had higher plasma 25-OH $D_3$ concentration than those in the other groups in both studies (p<0.05). In Exp. 3, water supplementation of vitamin $D_3$ and E postweaning increased plasma 25-OH $D_3$ and ${\alpha}$-tocopherol concentrations at d 14 postweaning (p<0.01). In Exp. 4, when sows were injected with the vitamin $D_3$ product prepartum, serum 25-OH $D_3$ concentrations of sows at farrowing (p<0.01), and in their progeny at birth (p<0.01) and weaning (p<0.05) were increased. These results demonstrated that fat-soluble vitamin administration to newborn pigs increased plasma 25-OH $D_3$ concentration regardless of administration routes and ${\alpha}$-tocopherol concentration by the injectable route, and that water supplementation of vitamin $D_3$ and E to nursery pigs increased plasma 25-OH $D_3$ and ${\alpha}$-tocopherol concentrations. Additionally, injecting sows with vitamin $D_3$ prepartum increased 25-OH $D_3$ in sows and their offspring. If continued research demonstrates that the serum levels of 25-OH $D_3$ are critical in weanling pigs, a variety of means to increase those levels are available to swine producers.
This study was longitudinally conducted to evaluate vitamin A intake of exclusively breast-fed infants compared with the Recommended Dietary Allowances (RDA) for Korean infants. Twenty-seven Korean lactating women and their infants during the first 6 months of lactation in Cheongju and Anseong areas were participated. Retinol and $\beta$-carotene contents in the milk were determined using HPLC and also the milk consumption of the infants was measured by the test-weighing methods. Vitamin A (retinol and $\beta$-carotene) contents of the milk were 65.7, 57.2, 48.1, 43.9, 38.2, 38.7 and 44.0 R.E./100 ml, and vitamin A intakes of the breast-fed infants were 361, 402, 348, 331, 304, 305 and 322 R.E./day at 0.5, 1, 2, 3, 4, 5 and 6 month of lactation, respectively. The average intake of vitamin A was 339.1 R.E./day and the percentage to RDA was 96.9% during 6 months. Vitamin A intakes per body weight of the breast-fed infants were 96.7, 88.3, 62.1, 50.0, 41.8, 39.3 and 39.6 R.E./kg/day at 0.5, 1, 2, 3, 4, 5 and 6 month. The body weight increased normally from 3.4 $\pm$ 0.5 kg at birth during lactation. It is suggested that the breast-fed infants in Cheongju and Anseong areas consumed adequately vitamin A from the milk compared with RDA for Korean infants.
Effect of vitamin E and selenium supplementation on immunity was studied in newborn Jersey and buffalo calves. The supplement contained 500 mg vitamin E and $200\;{\mu}g$ selenium; and was fed daily from birth to day 30. Differences in weight gain, total leucocytic count, differential leucocytic count, antibody titre and susceptibility to disease were found to be nonsignificant between supplemented and control calves during the study period of 3 months. Vitamin E seemed to enhance the recovery from disease in buffalo calves. Buffalo calves were found to be more sensitive to selenium toxicity than Jersey calves.

This study aims to examine the relationship between Serum Vitamin E and metabolic syndrome, which is a health risk, and to analyze the effect of Serum Vitamin E on the body. The analysis data were downloaded and used for the 7th 3rd (2018) data of the National Health and Nutrition Survey, and in this study, 944 men and 1,080 women were finally analyzed. For the analysis of the data, The chi-square test and t-test were used for the different values according to collected general characteristics and serum vitamin E, and the risk of metabolic syndrome was analyzed by regression, and Pearson correlation was used to confirm the correlation with each variable. Regression for Metabolic syndrome among the sub items and Serum Vitamin E showed that HDL-cholesterol was higher in the normal group than in the excess group (OR:1.042, CI:1.028-1.056), and triglycerides were significantly higher than in the normal group (OR:1.010, CI:1.009-1.012) (p<0.01). Therefore, it is proposed to develop nutrition and health programs suitable for the age of patients through this study.
The effects of vitamin E supplement on 15%(w/w diet) perilla or corn oils were studied in rat hepatocellular chemical carcinogenesis induced by modified Solt & Farber model, which consists of 20mg/kg body weight diethylintrosamine(DEN) injection, 3 weeks feeding of 0.02%2-acetylaminofluorene(2-AAF) and partial hepatectomy. The area of placental glutathione S-transferase(GST-P) positive foci tended to be smaller in perilla oil group had lower thiobarbituric acid reactive substances(TBARS) CONTENT. Fatty acid compositions in microsomal membrane were reflected by dietary fatty acid compositions, and not affected by carcinogen treatment or vitamin E supplement. By vitamin E supplement, linolenic acid contents of perilla oil group were much increased. By carcinogen treatment, membrane stability decreased significantly in corn oil, but maintained in perilla oil groups Vitamin E supplemental effect was noticed only in the corn-carcinogen group. Perilla oil may prevent hepatocarcinogenesis by maintaining membrane stability and by reducing cytochrome P-450 content. Vitamin E supplement did not seem to have the effect on hepatocarcinogenesis, but prevented lipid peroxidation, reduced cytochrome P-450 content and maintained membrane stability.
We studied daily micronutrient intake from vitamin-mineral supplements, health-related life style, clinical case of diseases and food frequency of the Korean middle-aged (40-59 yr, n = 404) to compare the characteristics of non-user (n = 270) and user (n = 134) of vitamin-mineral supplements. Rate of supplement use of the middle-aged was 33.2% and there was significant difference in education level (p = 0.0084) and family income (p = 0.0476) of user and nonuser. Smoking habit (p = 0.0844) and drinking frequency (p = 0.0606) tended to be lower in a supplement user than a non-user. The medical history of a case was significantly higher in users (67.9%) than in non-users (44.4%) (p = 0.001), which suggests that medical history is one of the important motivations of supplement use. Supplement users had the medical history of digestive disease (34.1%), anemia (11.0%) and hypertension (9.9%) in order. Vitamin C was the most frequently supplemented nutrient (81.3%) among vitamin-mineral supplement, and the next orders were vitamins E (73.1%), B$_2$(68.7%) and B$_{6}$ (60.4%). Mean intakes of vitamin B$_1$, iron, selenium, vitamin E, and vitamin C from supplement was 4,260%, 4,030%, 1,660% and 1,330% of RDA, respectively. The supplement users tended to consume most food items including milk & milk products (p < 0.01), rice (p < 0.01), grains (p < 0.05) and cookies (p < 0.01) less frequently than non-users. Conclusively, nutrient intake of vitamin B$_1$, iron, selenium, vitamin E, and vitamin C from supplement was excessively high compared to RDA. We suggest that the toxic effect of excessive supplementation should he informed to supplement user and nutritional education should be focused on the optimal supplement dose.e.
This study was conducted to examine the effects of recombinant Bovine Somatotropin (rBST), vitamin E(Vit. E) and selenium (Se) administration on the blood chemical values and hormone concentrations of serum in Hanwoo sires. Hanwoo sires were randomly assigned to five groups; 1) control, 2) rBST,0.09mg/kg body weight (BW), 3) Vit E, 1,500IU/kg BW, 4) Se 0.1mg/kg BW, 5) Vit E, 1,500IU plus Se 0.1mg/kg BW. rBST, Vit. E and Se for each experimental group were given 6 times at 15 days interval by intermuscular injection. Blood samples were collected ten times for experimental periods and separated the serum by centrifugation and stored into deep freezer. The concentration of albumin was the highest in Se group than those of any other groups (P<0.05) and Vit. E plus Se group was significantly higher than in the control and rBST groups (P<0.05). The concentrations of blood urea nitrogen (BUN) and creatinine were significantly higher in rBST group than any other groups (P<0.05). The concentration of total protein in rBST, Se and Vit. E plus Se groups were significantly higher than in control group (P<0.05). The concentrations of calcium, cholesterol,, glucose, inorganic phosphorus and triglycerides in serum were not difference in all experimental groups (P>0.05). The concentration of estradiol was slightly higher in Se and Vit. E plus Se groups than those of any other groups, but not significantly difference among the experimental groups (P<0.05). The concentration of testosterone was not affected by the administration of rBST, Vit. E and Se.

It is shown that the risk of chronic disease is increased not only by the concentration of fat in the diet but also by the composition of dietary fatty acids. We investigated the anti-oxidant effects of vitamin E on dietary polyunsaturated fatty acid-fed mice. Ninety male Sprague-Dawley rats were randomly divided into 9 groups: a normal diet group (C), 4 dietary polyunsaturated fatty acid diet groups (OA, LA, LNA, DHA), and 4 dietary polyunsaturated fatty acid diet with 0.05% vitamin E groups (OAE, LAE, LNAE, DHAE). The food efficiency in the dietary polyunsaturated fatty acid diet groups was higher than in the normal diet groups. The concentration of malondialdehyde (MDA) was significantly increased by LA and DHA fatty acids. Vitamin E significantly decreased LA and LHA-induced lipid peroxidation. The activity of superoxide dismutase and glutathione peroxidase was increased in the dietary polyunsaturated fatty acid diet groups compared to the control group, while these were decreased by supplements with vitamin E, except in the OAE group. Also, the protein expression of CYP2E1 was significantly increased in only the LNA group, while these were decreased by supplements with vitamin E. These results taken together indicate that vitamin E may have positive effects on a dietary polyunsaturated fatty acid diet-induced oxidative stress in brain tissue.
Because the intake of vitamin A had been consistently found to be low among Koreans, there has been a concern that mild vitamin A deficiency might be prevalent in the population. However, the inaccuracy of vitamin A database has long been suspected database for the nutrient. This study was performed to assess the vitamin A and E status in 208 adults over 20 years of age living in a rural area of Korea. Newly modified database for vitamin A and E was used to estimate the dietary intake of the subjects in this study. A cross sectional survey of dietary intake with 24-hour recall method was conducted. Serum retinol and $\alpha$-tocopherol levels of the subjects were analyzed in fasting samples using HPLC. For vitamin A, mean levels of dietary intake and percent of RDA were 620.3$\pm$1087RE/day and 88.6$\pm$155.4%, respectively, which were considerably higher than the levels reported in 1995 Korean national Nutrition survey(470.1RE/day and 67.2%, respectively). For vitamin E, the levels were 9.74$\pm$6.30mg/day and 97.4$\pm$63.0%, respectively. Mean concentration of serum retinol was 83.1$\pm$30.1$\mu\textrm{g}$/dl and none of the subjects was below 10$\mu\textrm{g}$/dl, or deficient level. Mean serum retinol in men, 99.8$\pm$30.4$\mu$g/dl, was significantly higher than in women, 70.7$\pm$23.4$\mu\textrm{g}$/dl (p<0.01). Mean concentration of serum $\alpha$-tocopherol was 1.17$\pm$0.52mg/dl and that of one subject was below 0.5mg/dl, or deficient level. Serum $\alpha$-tocopherol levels of the old subjects were higher than the younger subjects in both sexes(p<0.05). These data suggest that contrary to the previous reports about low intake of vitamin a, intake and serum levels of vitamin A among the subjects are not low. Also, in this study, intake and serum levels of vitamin E are not low, either. (Korean J Nutrition 34(2) : 213~221, 2001)
