  • Inadequate nutritional status of pregnancy can cause underweight and premature birth, undergrowth and deliverance of physically and mentally defected babyies. The purpose of this study is to provide guidelines for preventing preterm delivery in the aspect of nutritional factors. The nutrient intakes were compared between a preterm delivery group and a normal term delivery group to recognize risk factors of preterm delivery. The results obtained are summarized as follows. The pregnancy period was statistically longer in the normal term group (p<0.0001). Weight increase was statistically higher in the normal term group (p<0.0001). Calories (p<0.05), carbohydrates (p<0.0005), dietary fibers (p<0.0001), potassium (p<0.0005), vitamin $B_1$ (p<0.0005), vitamin $B_6$ (p<0.05), vitamin C (p<0.0001), and folic acid (p<0.05) intakes were statistically higher in the normal term group. Nutrient density of vitamin $B_1$ (p<0.05) and vitamin C (p<0.0001) in the normal term group was statistically higher. Nutrient adequacy ratio of zinc (p<0.05), vitamin $B_1$ (p<0.05) and folic acid (p<0.05) were statistically higher in the normal term group. Index of Nutritional Quality of vitamin $B_1$ (p<0.05) and vitamin C (p<0.0001) were statistically higher in the normal term group. In this study, the normal term delivery showed higher intakes of calories, carbohydrates, dietary fiber, crude fiber, potassium, vitamin $B_1$, vitamin $B_6$ vitamin C and folic acid than the preterm delivery group. Deficiencies in various nutrients may lead to preterm delivery, therefore, balanced nutrient intake is recommended to prevent preterm delivery.

  • According to economical status, under-nutrition and over-nutrition coexist in preschool children in Korea. Subjects consumed more than RDA in most nutrients, and children in of the upper income class tended to have more nutrients than those of the low income class. Especially in case of energy, protein, fat, vitamin $B_2$, and P there were significant differences among the different classes. The mean calorie compositions of carbohydrates, protein and fat were $57{\sim}59:\;16{\sim}17:\;26{\sim}27$ and fat calorie percentage was higher than quantity recommended for Korean adults. Energy, protein, Fe, vitamin A, $B_1$ and C intakes were taken mostly from plant food sources. In the upper income class group, intakes of protein and vitamin $B_2$ from animal food sources were higher than in any other income classes. Intakes of iron, vitamin A, $B_1$ and C were largely provided by plant food group. Especially 44-45% of vitamin A were taken from vegetable and fruits group, which indicated that about 50% of vitamin A intake was the form of ${\beta}-carotene$. Also compared with other groups, in the upper income class group, the intakes of energy, protein, Ca, p, vitamin $B_1$ and vitamin $B_2$ from cereal and potatoes were significantly lower, and those of Ca and P from milks and meats, fishes & eggs were significantly higher(p<0.05). The mean fat intake in all subjects was $38{\sim}43g/day$. Regardless of income class, oleic acid($6.6{\sim}8.4g$) and linoleic acid($6.7{\sim}8.1g$) were the most abundant fatty acids contained in the diet. The upper class group consumed significantly more total saturated fatty acids and total monounsaturated fatty acids(p<0.05). In polyunsaturated fatty acids, there were no differences between 3 different income classes, but intakes of total ${\omega}6$ fatty acids in the upper class tended to be higher and those of total o3 fatty acids in low class tended to be higher. Therefore, ${\omega}6/{\omega}3$ tended to be higher in the upper class group. Regardless of income classes, P/M/S and ${\omega}6/{\omega}3$ ratios in all subjects were $0.9{\sim}l.3/1.0{\sim}1.1/1.0$ and $5.2{\sim}7.4/1.0$, respectively and were in a desirable range. Cholesterol intake of subject was 184-218 mg/day, which was comparable to the value of Korean adult intake.

  • Comparative studies regarding the nutritional status of 93 home-living elderly people taking free congregate lunch meals(FL) and 87 middle income class elderly people(MI) were performed in Taejon city. Data was obtained from questionaires, anthropometry and interviews for the 24-hour dietary recall of 2 nonconsecutive days during August, 1996. The average age for FL was 75.8 years. The monthly familly income for FL belonged to the low-income class. FL females had lower heights and weights than MI females. The average daily nutritional intake of both FL and MI were low, particularly in FL whose %RDA of energy was 68.5%, protein 65%, Ca 29.6%, Fe 50.8%, vitamin A 34.5%, vitamin E 30.5%, riboflavin 40.6%, vitamin C 76.9%. MI's %RDA of energy was 76.4%, protein 80.a2%, Ca 48.1%, Fe 78.6%, vitamin A 67.3%, vitamin E 117.4%, riboflavin 45.6%, vitamin C 136.5%. Comsumption of Zn, vitamin $B_6$ and folic daily average. There was no nutrient having average INQ(Index of nutritional quality) over 1 for either group. The INQs for protein, Ca, Fe and vitamin A were 0.802, 0.377, 0.625 and 0.296 in FL, and 0.900, 0.601, 0.784 and 0.602 in MI, respectively. The MAR(Mean adequacy ratio) was low with the value of 0.500-0.518 in FL and 0.630-0.723 in MI. The percentage of main nutrients from lunch was the highest among the three meals for FL males, while that from breakfast was the highest for MI. Free lunches taken by FL supported higher percentages of main nutrients than home-lunches taken by MI. Eating-out was done more frequently by MI than by FL and that eating-out brought them more nutritional intake. The above data indicated that the dietary nutritional intake status of the FL elderly was very poor in both quantity and quality and that free congregate lunch significantly contributed to the daily nutrient-intake for the FL elderly.

  • This article concerned with the nutritional status and the taste of the lunch box of 311 middle school girls in Kwangju City from May 18 to June 12 in 1987. The purpose of this research was making materials to show direction of the education about nutrition by checking relationships among the nutritional status for the lunch box, the taste of food and the environmental factors. The results observed in the study were as follows: 1. The intake of nutrition from the lunch box and the ratio between the recommended dietary allowance and the contained nutrients in the lunch box as follows. Calorie(603 Kcal, 78.6%), protein (21.7g, 93.1%) Animal protein (10.3g, 132.1%) calcium (151.7 g, 56.9%) Ferrum 93.1 mg, 51.7%), Vitamin a (129.3 RE, 55.4%) Vitamin B1 (0.29 mg, 72.5%), Vitamin B (0.26 mg, 55.3%) Niacin (4.7 mg, 94.0%), Vitamin C 913.2 mg, 79.0%). Except animal protein, all the recommended dietary allowance. 2. According to the intake of calorie, the ratio of taken carbohydrate, protein and fat was 77.7 : 15.5 : 6.8. The intake of protein was desirable but most of calorie depended on carbohydrate. Among the total intake of protein, the ratio of animal protein was 47.5%, which was a high rate. 3. Most of calorie (75%), was taken from staples, protein (41.5%), vitamin B1 (48.3%) were taken at the same rate from staples and side dishes. Most of fat, calcium, ferrum, vitamin A, vitamin B, and vitamin C, was taken from side dishes. 4. In taking among the five basic food groups, proportion of the grain fourth food group was the highest, light color vegetable the third food groups, proportion of the grain fourth food group was the highest, light color vegetable the third food group was second, and Calcium food the second food group was the lowest. 5. As the staples, students liked tchajangmyon, mandu and ttokkuk as written order. They disliked Kongbap and Patpap. As the side dishes for the lunch box, they liked kimchi, ham, sausage, cuttlefish, dried slices of filefish, eggs and green seaweed as written order. As a side dishes they liked Laver, Cucumber, Squid, lettuce, Potatoes. They disliked pork fat, cow's intestines, cow's liver, Crussian carp, pickled fish. The favorite snack was fruits, ice cream, hamburger, Chocolate and milk. 6. In taking condition of the principal food, rice rate (65.6%) was the most, and mixed food was 5 or 10%. 7. Favorite cooking was frying, roasting and kimch. But disagreeable cooking was pickling. 8. Favorite food was what was pungent but disagreeable food was what was salty. 9. the higher parents educational background was, the higher their income was. Also the more various the information about the nutrition was, the better the intake of nutrition was. 10. The preference tendency influenced in choosing the side dish of the Lunch box. The higher the preference tendency of the girl students became, the better their nutrition condition became.

  • This study was performed to assess the nutritional status of low income elderly women aged ${\geq}$65 years residing in Gyeongnam Masan (n=124). Nutrition intakes, food intake frequency, and health-related behaviors including smoking, drinking, and exercise were investigated. Nutrition intake was calculated by the 24-hour recall method using CAN-pro (ver. 3.0). Average daily intakes of energy were $1,142.3{\pm}39$ kcal (71.4% of EER) in subjects aged 65~74 years and $1,071.0{\pm}41.7$ kcal (66.9% of EER) in subjects aged ${\geq}$75 years and the subjects consumed energy less than both 75% of estimated energy requirement (EER). The proportions of energy derived from protein, fat, and carbohydrate were 15.4:15.5:70.6 (aged 65~74 years), and 15.3:13.4:70.8 (aged ${\geq}$75). Nutrients consumed at less than estimated average requirements (EARs) were Ca (60.4%), P (98.4%), Zn (91%), vitamin E (48% of adequate intake, AI), vitamin $B_1$ (63.3%), vitamin $B_2$ (54%), niacin (87.7%), vitamin C (62.5%), and folate (50.5%). Especially, the intakes of Ca (58%), vitamin E (41% of AI), vitamin $B_1$ (60%), vitamin $B_2$ (50%), folate (46.5%), and vitamin C (54%) were 75% less than the EAR for people aged ${\geq}$75 years. According to the food intake frequency survey, the intakes of calcium, milk, fruits, and vegetables were very poor. In conclusion, this study suggests that a nutritional support program for elderly women of low socioeconomic class must be provided by the government to improve the quality of remaining life.

  • This survey was accomplished to investigate the patterns of vitamin/mineral supplements usage in the middle-aged. Eight hundred seventy two persons of middle age were chosen from various cities and rural communities in Korea. In this study, those factors affecting vitamin/mineral supplements consumption, and usage patterns were examined. In addition, vitamin and mineral intakes through supplements were calculated, and then compared with RDA. As a result, vitamin/mineral supplements were taken by 40.8% of subjects. The higher the age, education level, family income and socioeconomic status were, the higher the percentage of supplements consumption was. City-dewellers used them more often than rural-dewellers. And vitamin/mineral supplements were taken frequently in subjects who perceived their health as poor, and concerned much about health. Illness and climacteric symptoms were also related with elevated usage. However, nutritional knowledge and food habit did not affect supplements consumption. Users mostly received information about supplements from TV/radio/newspapers, of family/friends. One of the mainly cited reasons for taking supplements, next to ' to give energy', was 'to be healthier'. The four most favored supplements, in ranking order, were vitamin B-complex, vitamin E, vitamin A and Ca. Most vitamin and mineral intakes through supplements were much greater than RDA except Ca. Especially, vitamin B1 intake was the highest as 49.6$\pm$34.9 times of RDA. In conclusion, vitamin/mineral supplements used by the middle-aged in Korea was as high as those of western countries. Supplements consumption seemed to be related with affluence, poor health status, and high level of health consiousness. And supplements tended to be taken for health promotion irrespective of scientific background. Most vitamin and mineral intakes by supplements were exceeded RDA, and their intake ranges were very wide. Thus some subjects should give attention to the potential harms of megadose.

  • The surveys of food intakes were carried out on 49 healthy infants aged 4-9 months at the first interview and repeated 3 more times at the interval of 2 months by using food diary recorded by their mothers. Of the subjects 12 were breast-fed, 28, formula-fed, and 9, mixed type-fed. Foods introduced first as the weaning food were commercial weaning foods, fruit juices, yoghurt, egg and rice. Supplemental food was introduced at the age of 4 months in 57% of the infants, but it amounted to a significant proportion of overall food consumption from the age of 6 months. The levels of nutrients except energy, iron and niacin were similar or in excess of RDA, and breast-fed infants tended to have lower intakes of energy and protein compared to infants formula-fed or mixed type-fed. Average intakes of vitamin A, vitamin B1, vitamin B2, vitamin C and calcium were above RDA, but iron intake did not meet RDA of infants of all ages. In conclusion, the average status of nutrient intakes of infants was fairly good, however, food consumption besides milk was less in breast-fed infants than in formula-fed infants, and iron status seemed to be poor, Although it is well-known that breast-milk compared to formulas is more beneficial for infants, mothers feeding breast-milk to their infants should be educated for the importance of supplemental food and its practice to support good nutrition.

  • The objectives of this study were to investigate 1) the foods intake as well as nutrients intake, 2) the nutritional knowledge, and 3) the relations between the foods and nutrients intakes and nutritional knowledge in adolescent rhythmic gymnasts (RGs). The results are summarized as follows. Average daily intakes of energy, calcium, iron, vitamin A, vitamin B$_1$ vitamin B$_2$ and niacin were in 45-74% of the RDAs for Koreans. Average daily energy intake was only about 50% of energy expenditure by physical activities. Average daily intakes of each food group were generally lower, but intakes of breads and confectionaries, sugar and sweets, milks and dairy products, and instant foods were higher in the RGs compared to the nonathletic students of the same age from the National Health and Nutrition Suvey. The contribution of empty-calorie foods such as breads and confectionaries, beverage and instant foods to the major energy nutrients were high. Mean of total nutritional knowledge score of RGs was 28.4 of total score 50. In categorical score of nutritional knowledge, the RGs make a best score on food sources and they get the lowest marks for food exchange. Among the nutrients, intakes of crude fiber, animal Fe, Na, K, vitamin A, carotene, vitamin B$_1$ niacin and vitamin C and, among the food groups, intakes of mushrooms, fruits and meats had relations with one of the total or categorical nutritional knowledge scores in the RGs. In conclusion, nutritional status of adolescent RGs was poor due to their unbalanced diet composed of empty-calorie foods, and their undesirable food intake pattern was supposed to be related to the low nutritional knowledge score of them. These results indicate that the RGs should be given more nutritional knowledge to improve their nutritional status and the exercise performance.

  • Objective: The objective was to evaluate the effects of UV-B irradiated vitamin D-enriched yeast supplementation on milk yield, milk composition, vitamin D in milk, milk fatty acids, blood chemistry, and 25(OH)D status in dairy cows. Methods: Six Thai Friesian cows (milk production, 11.2±2.0 kg/d; body weight, 415.0±20.0 kg; and days in milk, 90.0±6.0) were allocated to each treatment in a 3×3 Latin square design, with three treatments and three periods. Each period of the Latin square lasted 49 days consisting of 14 days for diet adaptation and 35 days for sample collection. Dairy cows were randomly assigned to one of three treatments: i) feeding a basal diet without yeast (CON); ii) basal diet + 5 g of live yeast (75 IU/head/d of vitamin D2; LY); and iii) basal diet + 5 g of UV-B irradiated vitamin D enriched yeast (150,000 IU/head/d of vitamin D2; VDY). Feed intake and milk production were recorded daily, milk sample collection occurred on days 14 and 35 of each collection period, and blood plasma was collected on days 0, 7, 14, 21, 28, and 35 of each collection period. Results: The results show that after a trial period of 14 and 35 days, the VDY group had significantly higher vitamin D content in milk than the LY and CON groups (376.41 vs 305.15, 302.14 ng/L and 413.46 vs 306.76, 301.12 ng/L, respectively). At days 7, 14, 21, 28, and 35 of the experiment, cows fed the VDY group had significantly higher 25(OH)D2 status in blood than the CON and LY groups (51.07 vs 47.16, 48.05 ng/mL; 54.96 vs 45.43, 46.91 ng/mL; 56.16 vs 46.87, 47.16 ng/mL; 60.67 vs 44.39, 46.17 ng/mL and 63.91 vs 45.88, 46.88 ng/mL), respectively. Conclusion: In conclusion, UV-B irradiated vitamin D-enriched yeast supplementation could improve vitamin D content in the milk and 25(OH)D status in dairy cows during the lactation period.
