채식을 하는 중$\cdot$노년기 여성의 영양소 섭취 상태와 식사의 질 평가 (A Evaluation Study on Nutrient Intake Status and Diet Quality of Middle and Old Aged Vegetarian Women in Korea)

  • The purpose of this study was to evaluate on nutrient intake status and diet quality of middle and old aged vegetarian women in Korea, The research group was composed of vegetarian women (n=91), all of them were Seven Day Adventists, who had been on vegetarian diets, over 20 yrs. Their anthropometric measurements, dietary intakes, and diet quality indices were compared to omnivores (n=122). The average age of vegetarians and omnivores were 61.8 yrs and 60.3 yrs, respectively. The mean daily energy intakes of vegetarians and omnivores were 1428.8 kcal and 1424.5 kcal, respectively and there was no significant difference. The vegetarians consumed significantly lower intakes of protein (p < 0.05), zinc (p < 0.001) and vitamin $B_{2}$ (p < 0.05) compared to omnivores. In the diet quality, zinc and vitamin $B_{2}$ nutrient adequacy ratio (NAR) of vegetarians were significantly lower than those of omnivores. Mean adequacy ratio (MAR) of vegetarians and omnivores were 0.80 and 0.77, respectively and there was no significant difference. The KDDS (Korean's Dietary Diversity Score) of vegetarians and omnivores were 3.7 and 4.0, respectively, and there was significant difference (p < 0.01). The KDQI (Korean's Diet Quality Index) of vegetarians (1.5) was significantly lower than that (2.1) of omnivores (p < 0.001). In conclusion, vegetarian women have low intake status of protein, zinc and vitamin $B_{2}$, and partly low diet quality. Therefore it was needed that well planed diets to replace the nutrients supplied from excluded food groups in middle and old aged vegetarian women. 남성 뇌혈관질환자의 혈청지질과 항산화비타민 상태에 관한 연구 (The Status of Serum Lipids and Antioxidant Vitamins in Male Patients with Derebrovascular Disease)

  • This study was conducted to investigate serum lipids and antioxidant vitamins status of male patients with cerebrovascular disease. The study consisted of 16 hospital patients(57.8$\pm$13.7 years) at 3 General Hospitals in Taegu who suffer from cerebrovascular disease and 21 healthy adults(55.5$\pm$7.2 years). The results were as follows: The systolic blood pressure of the patients(150.0$\pm$13.7mmHg) was sig nificantly higher than healthy control(126.0$\pm$17.4mmHg). In patients the percentages of drinking alcohol(more than 5 times/week) and smoking were also higher. And the patients had more stress than control. Total calorie, protein, carbohydrate, vitamin B1 and niacin intakes were significantly lower in the patients. The energy nutrients consumption reached the recommended level in all subjects who were investigated. HDL cholesterol(24.99 vs 37.86mg/dl) and vitamin E(12.94 vs 20.88mg/L) level showed significantly lower, but triglyceride level(175.50 vs 117.69mg/dl), total cholesterol/HDL cho lesterol(6.22 vs 4.39) and atherogenic index(5.22 vs 3.39) were significantly higher in the patient group. Therefore, it might be expected that refraining from drinking alcohol and smoking, and that having proper exercise and certain other healthy living habits which can decrease stress in addition suitable consumption of antioxidant vitamins can prevent the occurrence of cerebrovascular disease.

Pycnogenol attenuates the symptoms of immune dysfunction through restoring a cellular antioxidant status in low micronutrient-induced immune deficient mice

  • BACKGROUND/OBJECTIVES: We investigated the effect of Pycnogenol (Pyc) on survival and immune dysfunction of C57BL/6 mice induced by low micronutrient supplementation. MATERIALS/METHODS: Female C57/BL/6 mice were fed a diet containing 7.5% of the recommended amount of micronutrients for a period of 12 wks (immunological assay) and 18 wks (survival test). For immunological assay, lymphocyte proliferation, cytokine regulation, and hepatic oxidative status were determined. RESLUTS: Pyc supplementation with 50 and $100mg{\cdot}kg^{-1}{\cdot}bw{\cdot}d^{-1}$ resulted in partial extension of the median survival time. Pyc supplementation led to increased T and B cell response against mitogens and recovery of an abnormal shift of cytokine pattern designated by the decreased secretion of Th1 cytokine and increased secretion of Th2 cytokine. Hepatic vitamin E level was significantly decreased by micronutrient deficiency, in accordance with increased hepatic lipid peroxidation level. However, Pyc supplementation resulted in a dose-dependent reduction of hepatic lipid peroxidation, which may result from restoration of hepatic vitamin E level. CONCLUSION: Findings of this study suggest that Pyc supplementation ameliorates premature death by restoring immune dysfunction, such as increasing lymphocyte proliferation and regulation of cytokine release from helper T cells, which may result from the antioxidative ability of Pyc.

일부 여대생의 커피 섭취수준에 따른 영양 섭취상태에 관한 연구 (A Study on Nutrient Intake Status According to Coffee Intake in Korean Female College Students)

  • This study was performed to evaluate the nutrient intake status according to coffee intake among Korean female college students. Two-hundred subjects were asked for their daily coffee intake using a questionnaire. Daily intakes of nutrients and food groups were calculated 3-day food records. The mean height and weight of the subjects were 161.6cm and 51.2kg. The mean daily intake of coffee and milk were 0.5 and 0.6 cups, respectively. When nutrient intake was compared to RDA for Koreans, intakes of energy, iron, vitamin A were short of recommendations. The mean intakes of calcium, sodium, vitamin B$_2$ in BMI<20 group were significantly higher than those in BMI $\geq$20 group. The mean intakes of calcium and phosphorous in no-coffee group were significantly higher than those in $\geq$2 cup-coffee group. The mean intake of beverage and others significantly increased as the level of coffee intake was increased. However, intake of milk and its product decreased. There were significantly negative correlation between coffee and calcium intake, and positive correlation between milk and calcium intake. These results indicate that coffee consumption decreases calcium intake because of decrement of milk and its products. Therefore, it could be suggested that there is increased need for nutritional education on proper eating patterns for female college students.

일부 여대생의 영양소 섭취상태, 빈혈 지표 및 혈청 지질간의 상관성에 관한 연구 (Relationship among Nutrient Intake, Indices of Anemia and Serum Lipids in Korean College Women)

  • This study was conducted to evaluate nutrient intake, indices of anemia, serum lipids, and their correlations in 40 Korean female college students aged 21 to 25 years. Fasting blood samples were collected in October. 1997 Nutrient intake was investigated by 24-hour recall method for three days. Anthropometric measurements, blood pressure, iron status and serum lipids of the subjects were determined. The mean values for age. height, weight, BMI and blood pressure of the subjects were 22.1 years, 160.6cm, 54.4kg and 109.1/66.9mmHg, respectively. According to the body composition analysis, total body water, % body fat, lean body mass and WHR were 26.7L. 29.5%, 36.5kg and 0.8, respectively. Average daily intake of energy was 1,858.4kcal. Protein, phosphorus, vitamin B$_1$, vitamin B$_2$, niacin and vitamin C intakes were higher than the Korean recommended dietary allowence(RDA), whereas calcium, iron, vitamin A intakes were tower than that. Hemoglobin(Hb), hematocrit(Hct), serum iron(SI) and total iron binding capacity(TIBC) were measured and transferrin saturation (TS%) was calculated from serum. The mean values for Hb, Hct, SI, TIBC and TS were 13.6$\mu\textrm{g}$/㎗, 41.6%,97.8$\mu\textrm{g}$/㎗, 319.6$\mu\textrm{g}$/㎗ and 31.9%, respectively. The Prevalence rates of iron deficiency assessed by Hb and Hct were found to be 10% and 2.5%, respectively. However, when assessed with TIBC, the prevalence rate of iron deficiency was increased to 32.5%. The mean values for serum triglyceride(TG), total cholesterol(TC), HDL-Chol, LDL-Chol concentrations and atherogenic index(AI) were 154.7mg/㎗, 80.0mg/㎗, 47.4mg/㎗, 91.3mg/㎗ and 2.6, respectively. Correlations among indices of anemia. there were positive correlations between Hb and Hct, between SI and TS : negative correlations between TIBC and TS or SI. Correlations among serum lipids, there were positive correlations between TC and TG or LDL-cholesterol. Energy intakes were correlated positively with TIBC(p<0.05), and vitamin C intakes negatively correlated with Hb(P<0.05). And vitamin A intakes were negatively correlated with TG(p<0.01). TC(p<0.05) and LDL-Chol(p<0.01). Hb negatively correlated with TG(P<0.05). Body weights(p<0.05), lean body mass(p<0.05) and total body water(p<0.01) werenegatively correlated with Hb. BMI and WHR correlated with TG and TC(p<0.01). These results indicated that subjects with higher energy intake and overweight had a tendency to have iron deficiency. Increases in BMI and WHR were related to increases in serum lipids levels and decreases in TIBC. The results also showed that serum lipids were decreased when vitamin A and iron intakes were sufficient.

국민기초생활보장사업 수급 가정에서의 식품공급안정성과 아동의 영양상태 (Food Security and Children′s Nutritional Status of the Households Supported by the National Basic Livelihood Security System)

  • In order to provide basic data for the means to improve food situation and nutritional status of those supported by the National Basic Livelihood Security System (NBLSS), we examined household food insecurity and nutritional status of children under the support of NBLSS. This study included 209 children aged 3-12 years (99 boys and 110 girls) and their caretakers. We measured house food insecurity using Radimer/cornell Scale, children's body sizes and nutrient intake by semi-quantitative food frequency questionnaire, and caretakers' nutritional management skills. Only 9.6% of the households were in food secured (FS) while 8.1% were in household food insecured, but without hunger (HFI), 42.1% were in adult food insecured with hunger (AFI), and 40.2% were in child hungry (CH). Important predictors of food security were nutritional management skills of the caretakers as well as their education, but neither income nor food expenditure of the households. Mean energy intake of the children was 86.0% of the Korean Recommended Dietary Allowance (RDA). Intakes of protein, phosphorous, vitamin A and B$_1$ were relatively high ranging from 112.3% to 124.4% of the RDAs while those of calcium, iron, niacin, vitamin C were low showing 74.8-83.3% of the RDAs. Height, weight and weight/height ratio were close to the reference levels. Lower nutrient intakes of children were observed as the households were more food insecured. However, nutrient intakes and body sizes of children did not differ as a function of household socioeconomic status representing by income, food expenditure and caretakers' education. Results of this study suggest the importance of food security and nutritional management skills for the children's nutrient intakes. Concerning this matter, a need for nutrition education in the program for NBLSS was discussed.

경남지역 간호사의 영양지식, 식생활태도 및 영양소 섭취상태 평가 (Evaluation of Nutrition Knowledge, Dietary Attitudes and Nutrient Intakes of Nurses Working in Kyungnam Area)

  • This study was performed to investigate the dietary attitudes and nutrient intakes of nurses. A total of 291 nurses working at hospitals in the Kyungnam area participated in the study. The general characteristics and dietary attitudes of the subjects were surveyed using a self-administered questionnaire, and nutrient intakes was examined using one-day 24-hour recall method. The results were as follows : 67.7 percent of the subjects were nurses, 32.3% were nursing assistants. Average age of the subjects was 26.9 years old, average nursing experience was 5.7 years, and 70.7% of the subjects graduated from junior college. The rates of shift work (45.4%) and non-shift work (54.6%) were similar, and 91.5% of subjects worked on a three-shift a day schedule. The average nutrition knowledge score was 14.3 $\pm$ 2.5 out of a possible 20 points. Most of the nurses had experienced dietary problems such as skipping meals and overeating. Sixty-eight point three percent of the nurses had breakfast less than 3 times a week, and the main reason for skipping meals was a lack of time. Most of the nurses (74.1%) didn't exercise regularly. The average score on dietary habits was 55.6 out of 100, and most of the subjects belonged to the‘fair’group in terms of dietary habits. Married nurses, and those over 31 years of age, scored significantly higher on dietary habits than unmarried nurses, and those under 25 years of age (p < 0.001), and the scores significantly increased with increasing age. Mean daily carbohydrate and fat intake was 231.5 $\pm$ 66.1 g, 41.1 $\pm$ 18.8 g, and cholesterol and crude fiber intake was 238.2 $\pm$ 184.6 mg, 5.2 $\pm$ 2.0 g. respectively. Compared with the recommended allowances, the energy (1560.0 $\pm$ 448.5 kcal), calcium (453.8 $\pm$ 222.3 mg) iron (10.6 $\pm$ 7.6 mg), vitamin A (658.5 $\pm$ 538.1 R.E) and vitamin B$_2$ (0.96 $\pm$ 0.5 mg) figures were below the Korean RDA, and the protein (65.9 $\pm$ 31.0 g), vitamin B, (1.14 $\pm$ 0.5 mg), vitamin C (143.2 $\pm$ 119.6 mg), niacin (14.4 $\pm$ 6.3 mg) and phosphorus (958.1 $\pm$ 352.1 mg) figures were above the Korean RDA. The average carbohydrate, protein, fat ratio of energy intake was 60:17:23. The intake ratio of Ca and P showed an unbalance of 1:2. The dietary habits had a positive correlation (p < 0.001) with nutrition intake except vitamin A and vitamin C. Therefore, In order to improve overall dietary behavior and nutritional status, systematic nutrition education programs should be developed.

복부비만 관리프로그램이 성인 비만여성의 식이섭취, 스트레스지수 및 복부비만율에 미치는 영향 - 복부비만감소군과 복부비만증가군의 비교를 중심으로 - (Effect of an abdominal obesity management program on dietary intake, stress index, and waist to hip ratio in abdominally obese women - Focus on comparison of the WHR decrease and WHR increase groups -)

  • 본 연구는 비만연구소 복부비만관리 프로그램에 참여한 복부비만율 0.80 이상인 복부비만 여성 195명을 대상으로 12주간 실시하였으며, 프로그램 종료 후 복부비만 감소 여부에 따라 복부비만율 감소군과 복부비만율 증가군으로 나누어 신체계측치의 변화, 식이섭취의 변화, 혈관나이, 스트레스 지수 및 건강지수의 변화를 비교 하였다. 영양소의 섭취량을 살펴본 결과, 체중, 허리둘레, 엉덩이둘레가 유의적으로 감소한 복부비만율 감소군에서 식물성 단백질, 칼륨, 비타민 A, 엽산, 식이섬유, 칼슘, 인, 비타민 $B_2$, 비타민 $B_6$, 비타민 C, 식물성지방, 철분, 나트륨, 나이아신, 비타민 E 및 다가불포화지방산의 영양밀도가 유의적으로 증가하였고, 단백질, 칼슘, 인, 비타민 A, 비타민 $B_1$, 비타민 $B_2$ 그리고 비타민 C의 INQ가 유의적으로 증가하였다. 특히 식이섬유, 칼슘, 인, 아연, 비타민 $B_6$, 비타민 C 그리고 비타민 E의 변화율은 복부비만율 감소군에서 더 컸으며, 두 그룹간의 유의적인 차이를 보였다. 식품섭취 다양성의 변화를 살펴보기 위해 식품군별 섭취 가짓수를 비교해 본 결과, 복부비만율 감소군에서 어패류, 두류, 견과류, 채소류 그리고 버섯류 가짓수가 유의적으로 증가한 것으로 나타났다. 복부비만율 감소군에서는 스트레스 지수와 건강지수가 유의적으로 개선된 반면 복부비만율 증가군에서는 건강지수가 감소하였다. 본 연구에서는 복부비만율 변화와 영양밀도, 혈관나이, 스트레스 지수 및 건강지수 변화간의 상관성을 알아보았다. 그 결과, 복부비만율 감소의 변화율이 높을수록 식물성 단백질, 식물성 지질, 섬유질, 칼슘, 철분, 칼륨, 아연, 비타민 A, 비타민 $B_2$, 비타민 $B_6$, 비타민 C 그리고 엽산의 섭취량이 유의적으로 감소하였고, 복부비만율 증가의 변화율이 높을수록 동물성 단백질과 총 지질의 섭취량이 유의적으로 증가하였다. 스트레스 지수와 건강지수와의 관련성에서는 복부비만율 감소율이 높을수록 스트레스 지수가 유의적으로 감소하는 양의 상관관계를 보인 반면, 건강지수는 증가하는 음의 상관관계를 보였다. 이상을 통해 볼 때, 영양교육과 식습관 및 생활습관 개선 교육으로 구성된 복부비만관리 프로그램은 식이섭취에 긍정적인 영향을 미칠 뿐만 아니라 스트레스도 완화시켜 복부비만율 개선에 도움이 되므로, 후속 연구에서는 이러한 교육을 장기프로그램에 적용시킨 뒤 이러한 복부비만율 개선이 지속적으로 유지되는 지를 살펴보는 것이 필요하다.

충북 일부지역 보건소 건강증진프로그램에 참여한 여자 노인의 영양상태 변화 (Changes in the Nutrition Status of Elderly Females in Health Promotion Programs of Health Centers in Chungbuk Province)

  • Materials for nutrition education to promote nutrition intake and prevent diseases in elderly individuals were developed, nutrition education was provided to 46 elderly females for 12 weeks, and its effects on the body composition, blood profile, and nutritional quality of subjects were qualitatively analyzed. After the education program, the weight of subjects decreased from 56.7 kg to 56.0 kg (p<0.001), their body fat dropped from 20.8 kg to 19.6 kg (p<0.01), their body mass index (BMI) declined from $25.2kg/m^2$ to $24.9kg/m^2$ (p<0.01), and their percentage of body fat decreased significantly (p<0.05). On the other hand, blood sugar showed a significant increase from 131.6 mg/dl to 141.8 mg/dl (p<0.05). Overall, the percentage of nutrition intake rose. In particular, the estimated energy requirement increased from 89.3% to 99.5% (p<0.05). Further, the contrast ratio of recommended intake showed significant increases in protein (p<0.01), phosphorus (p<0.05), vitamin $B_2$ (p<0.05), vitamin $B_6$ (p<0.05), and niacin(p<0.001), and that of adequate intake showed a significant increase in sodium (p<0.05). The nutrient adequacy ratio (NAR) showed a significant increase only in niacin (p<0.05), and the index of nutritional quality (INQ) showed significant increases in protein (p<0.05) and niacin (p<0.001). After the nutrition education program, a qualitative analysis of nutrients consumed by subjects was conducted. The results show improvements across the board except for the deficient intake of calcium and folic acid, suggesting that the nutrition status of subjects changed in a positive direction through the program. The implementation of this program for elderly individuals in a continuous and repetitive manner is expected to facilitate their nutrition management.

저소득층 재가 노인을 위한 급식서비스 프로그램 평가 (Evaluation of Home - Delivered Meals Service Program for Home - Bound Elderly with Low Income Class)

  • The purpose of this study were to : a) evaluate the nutrition status of one hundred and forty five recipients and one hundred and forty nine non-recipients of home-delivered meals service program, b) examine the teeth status of recipients of the program, c)analyze the nutritional values of meals, and identify the attitudes of recipients and non-recipients were found. Four meals offered by Nambu seniors center were met the recommended dietary allowances in calorie, protein, and vitamin C. The mean score of meal satisfaction was 3.7 out of five-point scale.
