Discovery of Chitin Deacetylase Inhibitors through Structure-Based Virtual Screening and Biological Assays

  • Chitin deacetylase (CDA) inhibitors were developed as novel antifungal agents because CDA participates in critical fungal physiological and metabolic processes and increases virulence in soil-borne fungal pathogens. However, few CDA inhibitors have been reported. In this study, 150 candidate CDA inhibitors were selected from the commercial Chemdiv compound library through structure-based virtual screening. The top-ranked 25 compounds were further evaluated for biological activity. The compound J075-4187 had an IC50 of 4.24 ± 0.16 µM for AnCDA. Molecular docking calculations predicted that compound J075-4187 binds to the amino acid residues, including active sites (H101, D48). Furthermore, compound J075-4187 inhibited food spoilage fungi and plant pathogenic fungi, with minimum inhibitory concentration (MIC) at 260 ㎍/ml and minimum fungicidal concentration (MFC) at 520 ㎍/ml. Therefore, compound J075-4187 is a good candidate for use in developing antifungal agents for fungi control.

Metaverse and the Evolution of Food and Retail Industry

  • Purpose: This study aims to examine the opportunities in the food industry in the context of non-fungible tokens (NFTs) and the metaverse. The metaverse expands offline experiences into a virtual space and provides users with the advantage of overcoming the limitations of physical space. Research design, data and methodology: With the development of various contents based on advanced technology, the metaverse is becoming popular among the MZ generation (comprising millennials and Gen Zs), who are skilled at navigating digital platforms. Moreover, the previously entertainment game focused service has expanded to the business field after COVID-19; activities on the metaverse are now making space for economic value creation. I examined the recent global trends in the context of NFTs and the metaverse as well as the existing cases in Korea. Results: Globally, gaming and performance platforms such as Roblox, Fortnite etc. are still concentrated in the entertainment industry. However, as shown by ZEPETO and ifland in Korea there are many opportunities in the retail and food industries. Conclusions: We analyzed the ecosystems of the retail and food and beverage sectors, where the metaverse will be useful in the future, and have suggested the implications of the opportunities provided by the metaverse.

Virtual Simulation of Temperature Distribution throughout Beef Packages with Time-temperature Indicator (TTI) Labels

  • If the time-temperature indicator (TTI) experienced a different temperature than the accompanied packaged food, influenced by heat transfer between the TTI, package, and ambient air, TTI would incorrectly predict the food quality changes with temperature. Temperature distributions of a finite slab with different sizes, representing beef packaged with TTI, were estimated by the finite element method (FEM). The thermal properties of the beef and TTI, such as heat capacity, density, and heat conductivity, were estimated from the relevant equations using their chemical compositions. The FEM simulations were performed for three cases: different locations of TTIs on the beef, different thicknesses of beef, and non-isothermal conditions of ambient air. The TTIs were mounted in four different locations on the beef. There was little difference in temperature between four locations of the TTI on the package surface. As the thickness of the slab increased, the temperature of the TTI changed faster, followed by the corner surface, as well as middle and bottom parts, indicating the possible error for temperature agreement between the TTI and the slab. Consequently, it was found that any place on the package could be selected for TTI attachment, but the package size should carefully be determined within a tolerable error of temperature.

A Study on the Water Footprint of Korean Food Guide and Recommended Meal Plan (한국인 식사구성안의 식품군 및 권장식단의 물발자국에 관한 연구)

  • Sustainable and healthy diet is a challenge in recent world. Despite the global depletion of water resources, Korea has no system for controlling its water footprint. This study established the water footprint tables of Korean food using the Water Footprint Network databases, and applied them into two meal plans for 19~64 year-old adults recommended in the Dietary Reference Intakes for Koreans 2020. Nut, oil, and meat's water footprints were higher and those of fruit and vegetable were lower. Sesame oil had the highest water footprint of 21,793 L/kg and pineapple had the lowest domestic water footprint of 102 L/kg. Water footprint of one serving size of beef was 925 L, that of chicken was 260 L, and those of soybean were 43 L in global and 81 L in domestic. The water footprint of the recommended 2,400 kcal meal plan was 2,882 L, and that of 1,900 kcal meal plan was 1,915 L. The water resources can be saved by choosing food with lower water footprint. The results of this study can be used in the further researches for more sustainable and healthier Korean diet.

Food/Nutrition Attitudes, Views and Practices of Adults in Seoul Area (서울지역 성인의 식품.영양.건강 태도와 식품영양표시 활용실태)

  • Food/nutrition related views, beliefs, attitudes, and behaviors were investigated for three hundred randomly selected men and women, aged 20-60 years, residing in Seoul metropolitan area. Food/nutrition views, attitudes, and beliefs were found to vary greatly between groups of different age, sex, education and income level. Adults of 20-35 years of age showed significantly less strong views about keeping traditional food habits, while exhibiting a significantly high level of acceptance towards the use of convenience foods as compared to the adults aged 36 years or older. Food safety was found to be a major concern to most of the subjects accounting 69.7% for pesticides residues in fresh produce items, 94.7% for food additives in processed food, and 56.3% for food poisoning in foods eaten outside of the home. Male adults aged 45 years or older showed a strong tendency to rely on a few promotional food products for the maintenance of their health and for them the development and implementation of a sensible feed nutritin/health education program including a way to avoid nutrition quackery might be beneficial. Eighty percent of the subjects were found to read food labels with higher rates shown among young adults and females. Due to the virtual absence of nutrition labeling however, the percentage of subjects who idicated that they are looking for the information on nutrient content was low (<10%) compared to the rates for other informations such as date of manufacture(80.2%), expiration data(55.8%), ingredients(40.9), and additives(40.9%). Ninety one percent of the subjects indicated that they would like to see the sources for nutrition label the nutritional value of the foods. The top five most frequently (68.3%), food packages(50.7%), and radio(43.3%). Health professionals such as physicians, nurses, and nutritionists/dietitians were utilized less frequently as sources of nutrition information than lay sources, with reported rate of only 38%, 22%, and 0.7%, respectively. These results collectively suggest that strategies are to be developed to provide accurate nutrition information to adults.

Citation Relationship Trend Analysis of Virtual Water and Water Footprint Studies in Korea (국내 가상수 및 물발자국 산정 연구의 인용관계 동향 분석)

  • South Korea is a nation highly reliant on virtual water imports, which raises concerns of water crisis and food crisis at the national level. Virtual water and water footprint studies that consider the environment, social, and economic issues have been consistently addressed. However, there is a lack of Korean research, so the calculation method and comparison analysis are greatly dependent on foreign research results. The calculation results for Korean domestic agricultural products have been released in earnest since 2014. Thus, there has been an increase in comparison studies using domestic virtual water and water footprint results. This study identified the Korean agricultural and livestock water footprint research direction to determine the citation relationship trends. Domestic and foreign research results were analyzed from Korean water footprint related literature from the past 10 years. Therefore, a citation relationship diagram was formed from the literature analysis results. Virtual water and water footprint related research performance are provided in the appendix so researchers can utilize the various information related to this field in the future. In addition, national strategy policy making is expected to be presented for effective water resources management.

Control Strategy for Accurate Reactive Power Sharing in Islanded Microgrids

  • This paper presents a control strategy to enhance the accuracy of reactive power sharing between paralleled three-phase inverters in an islanded microgrid. In this study, the mismatch of power sharing when the line impedances have significant differences between inverters connected to a microgrid has been solved, the accuracy of the reactive power sharing in an islanded microgrid is increased, the voltage droop slope is tuned to compensate for the mismatch of voltage drops across the line impedances by using an enhanced droop controller. The proposed method ensures accurate power sharing even if the microgrid has local loads at the output of the inverters. The control model has been simulated by MATLAB/Simulink with two or three inverters connected in parallel. Simulation results demonstrate the accuracy of the implemented control method. Furthermore, in order to validate the theoretical analysis and simulation results, an experimental setup was built in the laboratory. Results obtained from the experimental setup verify the effectiveness of the proposed method.

Estimation of Crop Virtual Water in Korea (한국의 농산물 가상수 산정)

  • Virtual water is defined as the volume of water required to produce a commodity or service. The degree of food self-sufficiency is currently about 27 % in South Korea, so that Korea is one of the largest net virtual water import countries for agricultural product, thus it is necessary to estimate suitable virtual water for South Korea. The objective of this paper is to quantify the agricultural virtual water use (AWU) and virtual water content (VWC) using the method suggested by Chapagain and Hoekstra during the period 1991-2007. To calculate the virtual water content, 44 different crop production quantity and harvested area data were collected for 17 years and FAO Penman-Monteith equation was adapted for computing crop consumptive use of water. As the results, AWU has been estimated at 15.1 billion $m^3$ in average showing a tendency to decrease. Rice has the largest share in the AWU, consuming about 10.1 billion $m^3$/yr which is about 75 % of gross AWU, and the VWC is 1600.1 $m^3$/ton for paddy rice. The largest VWCs of crops are oilseed and tuber crop, and the smallest are leaf and root vegetables. The primary crop production VWC can be used for calculating the VWC of various secondary products using the contribution ratio, therefore the results of this study are expected to be used as basic data for national agricultural water footprint.

Hybrid Behavior Evolution Model Using Rule and Link Descriptors (규칙 구성자와 연결 구성자를 이용한 혼합형 행동 진화 모델)

  • We propose the HBEM(Hybrid Behavior Evolution Model) composed of rule classification and evolutionary neural network using rule descriptor and link descriptor for evolutionary behavior of virtual robots. In our model, two levels of the knowledge of behaviors were represented. In the upper level, the representation was improved using rule and link descriptors together. And then in the lower level, behavior knowledge was represented in form of bit string and learned adapting their chromosomes by the genetic operators. A virtual robot was composed by the learned chromosome which had the best fitness. The composed virtual robot perceives the surrounding situations and they were classifying the pattern through rules and processing the result in neural network and behaving. To evaluate our proposed model, we developed HBES(Hybrid Behavior Evolution System) and adapted the problem of gathering food of the virtual robots. In the results of testing our system, the learning time was fewer than the evolution neural network of the condition which was same. And then, to evaluate the effect improving the fitness by the rules we respectively measured the fitness adapted or not about the chromosomes where the learning was completed. In the results of evaluating, if the rules were not adapted the fitness was lowered. It showed that our proposed model was better in the learning performance and more regular than the evolutionary neural network in the behavior evolution of the virtual robots.

Guidance Line Extraction Algorithm using Central Region Data of Crop for Vision Camera based Autonomous Robot in Paddy Field (비전 카메라 기반의 무논환경 자율주행 로봇을 위한 중심영역 추출 정보를 이용한 주행기준선 추출 알고리즘)

  • In this paper, we propose a new algorithm of the guidance line extraction for autonomous agricultural robot based on vision camera in paddy field. It is the important process for guidance line extraction which finds the central point or area of rice row. We are trying to use the central region data of crop that the direction of rice leaves have convergence to central area of rice row in order to improve accuracy of the guidance line. The guidance line is extracted from the intersection points of extended virtual lines using the modified robust regression. The extended virtual lines are represented as the extended line from each segmented straight line created on the edges of the rice plants in the image using the Hough transform. We also have verified an accuracy of the proposed algorithm by experiments in the real wet paddy.
