The inhibitory effects of vegetables, collected from Jinju district, on the growth of Listeria monocytogenes were investigated. Among 12 vegerables, garlic, leek, onion and cabbage were remarkably effective to inhibit the growth of the strain. Especially with the addition of extract equivalent 0.25g of raw garlic per ml broth, the population of the strain was decreased wignificantly, and completely inhibited with the addition of 0.625g or more. During the incubation with the addition of extract equivalent 0.25g of raw garlic per ml broth, the degree of inhibition was gradually increased with the lapse of time, and completely inhibited the growth of the strain after 48 hrs. While the pH value of treated broth remained unchanged almost, those of control were slightly reduced.
Stigmastanol, a functional agent of cholesterol-lowering in humans, was synthesized from stigmasterol. To investigate the usability as a raw material, the contents of sterol in vegetable oils and extract of soybean chaff were analyzed. The total sterol contents showed high values of 213.7 and 209.8 mg/100g in corn and soybean oils respectively. The extract of soybean chaff has played a good role as a raw material with high sterol contents. The kinetics of hydrogenation of stigmasterol was studied using a 5% Pd/AC catalyst in the temperature range of 30~$60^{\circ}$C. Increasing temperature showed a prominent decrease in conversion. The optimum temperature was $40^{\circ}$C for high yield of stigmastanol. The effects of $H_2$ pressure, agitation speed, catalyst loading, and stigmasterol concentration on reaction rate profile were also examined. From the power law model analysis using the initial rates of reaction, the reaction order was calculated as 0.705 for stigmasterol concentration and 0.147 for hydrogen pressure.
Chenopodium album Linne (CAL) is a fast-growing weedy annual plant. The leaves and young shoots may be eaten as a leafy vegetable. In oriental medicine, CAL has been used for treatment of skin disease, fever, stomach ache, toothache, and paralysis. After a preliminary screening of CAL ethanol extract and its fractions obtained from CAL leaves for anti-gastritic and anti-Helicobacter pylori (H. pylori) activity, the butanol (BuOH) fraction was found to have the most significant effect. We also examined antioxidative properties of the total CAL extract and its fractions, and also betaine as an ingredient of the BuOH fraction. To investigate the antioxidant effects of CAL on gastritis, the reducing power, free radical scavenging activity using 1,1-diphenyl-2-picrylhydrazyl (DPPH), and lipid peroxidation effects were determined. Additionally, the BuOH fraction reduced cell viability in a concentration dependent manner in human gastric cancer cell lines. The results of this study revealed that CAL has excellent antioxidant activity, and may be useful in treating gastritis and gastric cancer.
Some microorganisms including yeasts produce surface tension-decreasing biosurfactants. The strain G-1, the best producer of biosurfatants was isolated from the soil and identified as Rhodotorula sp., which was not discribed any report. The Rhodotorula sp. G-1 produced biosurfactant from vegetable oils, but failed to produce it from n-alkane or carbohydrate. Yeast extract was found to be more effective for the biosurfactant production as nitrogen source than any other inorganic nitrogen source. The composion of the optimal medium contained the following conponents: soybean oil 4%, glucose 2%, yeast extract 0.5%, KH$^{2}$PO$^{4}$ 0.1%, K$^{2}$HP0$^{4}$ 0.l%, MgSO$^{4}$ 5%, CaCl$^{2}$ 0.01%, NaCl 0.01%, pH 6.0. The surface tension activity was increased to 14% when, at first, the culture broth was fermented with only soybean oil as carbon sourse, and after 90 hours, feeded glucose, than that Of glucose and soybean oil added to it simultaneously. The maxium yield of the biosurfactant was about 15 g/l by after 90 hours, the feeding method of glucose.
Artemisia iwayomogi(A. iwayomogi) is a major edible vegetable in Korea. A iwayomogi containing a strong bitter taste, particularly, is known to manifest an effect on cough, abdominal pain, indigestion and bleeding. In this experiment, ethanol extract of A. iwayomogi(50mg/kg body weight) was fed to growing male Sprague-Dawley rats for four weeks in order to examine the lipid lowering effect of A. iwayomogi in the live and serum. High fat diet included 10% lard, 1% cholesterol and 0.25% sodium cholate. The administration of A. iwayomogi extract decreased serum cholesterol compared with the control. At the same time, serum triglyceride(TG) was decreased to 25%. Although atherogenic index and HTR tended to decrease, phospholipid level in the serum was shown to increase by A. iwayomogi administration. At the same token, total liver lipids were decreased to 40%. The group fed both high fat and ethanol extract showed 28% decrease of liver lipids compared with the group fed only high fat diet. On the other hand, HDL cholesteol level of high fat and extract fed group was increased to 30% compared with the non-extract-fed control. Liver TG also was decreased to about 21% in the extract fed groups. Liver phospholipids, particularly, exceeded more than double of the level of high fat control. The above results indicate than A. iwayomogi exert a strong hypocholesterolemic and hypolipidemic effect which may lead to the protection from hypertention, obesity, stroke and many other circulatory diseases.
Glutathione S-transferases(GSTs, EC 2.5.1.18), glyoxalase-I(EC 4.4.1.5) and alliin lyase(alliinase, EC 4.4.1.4) are important enzyme systems in plant bodies. The first two are mainly detoxifying enzymes that utilize glutathione(GSH) in the defense mechanism, and the last one is mainly involved in secondary metabolism and relevant to sulfur compounds derived from GSH. The activities of the three enzymes have been investigated in soluble extracts of vegetable crops, including pumpkin, cabbage, broccoli, radish, carrot, potato, sweet potato, mungbean, and onion. GST activities were detected in all of the vegetables, and the extract of onion bulb exhibited the highest specific activity(648 nmol/min/mgP). The putative GSTs of most of the vegetables were found to be induced by ethanol. The activities of GSTs in onion bulb were found to be markedly inhibited by S-hexyl glutathione and were also inhibited by S-butyl glutathione and S-propyl glutathione. The anti-CmGSTF1 antiserum recognized a thick band for putative onion GST. The estimated glyoxalase-I activity level was also high in onion bulb(4540 nmol/min/mgP), indicating that the thick band detected by Western blot analysis might result from partial recognition of glyoxalase-I by the antiserum. The specific activities for glyoxalase-I were moderate in radish and carrot, and the extracts of other vegetables had rather low levels of activities. The extract of onion also showed the highest specific activity level for alliinase(2069nmol pyruvate/mgP). The extracts of other vegetables also had alliinase activities, although the estimated values were much lower than that of onion.
The objectives of this study were to investigate biological activities such as nitrite scavenging effect of water and methanol fractions obtained from each green juice(Angelica keiskei, kale, carrot) under different pH conditions, and antioxidant vitamin contents in green juice made of green yellow vegetables. The result shows that nitrite scavenging effect of each green juice was 14.0~91.2% in model system. The methanol fraction provided higher effect than the water fraction. The nitrite degradation was the highest at pH 1.2. Nitrite scavenging effect of methanol fraction obtained from kale juice was 91.2% at pH 1.2 which was the highest among tested samples in this experiments. Consequently, extracts of kale juice were shown to provide the greatest functional properties among the vegetables tested. Contents of vitamine E and C in the extracts of kale were higher than the others.
식품의 가공 저장 및 조리 중에 일어나는 식품성분간의 반응 중 대표적인 반응으로 알려져 있는 Maillard 반응생성물의 돌연변이원성에 대한 그 억제 기구를 밝히기 위하여 glucose-arginine계 및 glucose-lysine${\cdot}$HCl계 Maillard 반응 생성물에 일상 생활에서 많이 섭취하고 있는 해조류 및 야채류의 수용성 추출물을 첨가하여 그 억제효과를 조사하였고, 아울러 이들 수용성추출물의 가열($100^{\circ}C$, 10분)에 따른 억제효과의 영향에 대해 조사 검토하였다. 그 결과, 실험에 사용한 해조류 및 야채류 수용성 추출물 전부가 돌연변이원성 억제효과를 나타내었고, 특히 양배추, 파, 산초, 및 청각에 있어서 억제효과가 높게 나타났다. 가열한 경우, 야채류의 돌연변이원성 억제효과는 감소하였으나 해조류는 크게 영향을 받지 않았다. 이 결과로 미루어 보아 당-아미노산계 Maillard 반응생성물의 돌연변이원성 억제에 해조류 및 야채류 추출물에 존재하는 환원성 물질, 고분자 물질 catalase 및 peroxidase와 같은 효소 등이 일조를 하는 것으로 나타났다.
This study aimed to analyze the periodic prevalence of the vegetables during the Joseon era with JoseonWangjoSilrok as a reference. The JoseonWangjoSilrok articles were collected from the Guksapyeonchanwewonhwe site, using web-crawling techniques to extract the relevant information. Out of 384,582 search results, 9,560 articles with vegetable-related keywords were found. According to the annual average vegetable recordings during the regimes of various kings, there were two peaking curves in the 15th and 18th centuryJoseon. The found was: 2,750 in the 18th century, 2,529 in the 15th century, 1,424 in the 16th century, and 1,018 in the 19th century. A Variable Interest Index was designed to ascertain the interestin vegetables of the 27 Joseon kings. The king most interested in vegetables was the 19th king Sookjong. The second most interested king was Youngjo. There were 5,105 vegetable-related findings within the JoseonWangjoSilrok related to specific species and categories of vegetables. Among the words found: 1,194 were stem-leaves vegetables (23.39%), 1,017 were root vegetables (19.92%), 1,148 were flower-fruit vegetables (22.49%), 1,144 were spice vegetables (22.41%), 95 were mushrooms (1.86%), and 507 were seaweeds (9.93%). Statistical analysis using ANOVA revealed the chronological factors that affected the vegetables' prevalence index.

Buckwheat is a important vegetable in asia for long time. Recently, Buckwheat has attracted attention to its potential for health benefit and especially as a gluten-free food. Conventional buckwheat studies have focused on seeds and sprouts, but we studied the components of the aerial parts and roots of buckwheat after harvesting. Therefore, we hope that this research will be a basic study to expand the application range of buckwheat plants which are discarded after harvesting. The ethanol extracts of aerial part and roots of buckwheat (Daegwan, Yangjul) were analysed using high performance liquid chromatography (HPLC). Rutin was detected as the major compound in Daegwan, Yangjul aerial part and Daegwan root extracts, except yangjul root extract. So we analysed Yangjul root extract using liquid chromatography-mass spectrometry (LC-MS) and then obtained the informations about the components in Yangjul root extract. Yangjul root extract was analysed by $LC-MS^n$ in negative ESI mode within the range m/z 150-2000 amu. Totally, four components was found in the Yangjul root extract and obtained the fragments ion patterns of ones. Further study, we have to confirm the structure of components in Yangjul root extract and try to more biological activity test the components for development as useful food or cosmetic ingredients.
