  • The use of food frequency questionnaire to estimate dietary intake has become widespread in epidemiologic studies. It has been suggested that knowledge about a person's usual serving size of each food, in addition to consumption frequency, will improve the accuracy of this method. This study was performed to investigate the nutritional status and one sowing sizes of commonly consumed dishes in Korean college women. Intakes of dish or food in 156 college women were measured by 7-day weighed food records in May, 1992 and May, 1993. For each dish or food, variance in one serving size was partitioned into within-person(intraindividual) and between-person(interindividual) components. All nutrient intakes except vitamin A and vitamin C were less adequate. The major dish groups which contributed to the most daily nutrient intakes were boiled rice, bread, fruits, dairy product, and biscuit and snack groups. In more than 50% of dishes, the within-person variation was greater than between-person variation. And the variety and amount of food which was used in one dish were too variable to make standard recipe.

  • This study was conduced to investigate the seasonal variation of dietary intake and quality obtained by 24 hour recall method in Korean adults living in rural area. The mean daily intakes of 4 seasons were 1,692kcal for energy, 63g(14.8% of energy) for protein, 30g(15.7% of energy) for fat, 257g(60.7% of energy) for carbohydrate. Mean daily intakes were significantly highest in winter for most of the nutrients, and lower in summer for energy, fat, calcium, iron. Mena adequacy ratio(MAR), an index of overall nutritional quality was 0.65 in winter, 0.67 in spring, 0.65 in summer and 0.72 in autumn and nutrient adequacy ratio(NAR) was significantly different fro vitamin C agmong different seasons. Subjects consumed usually 15.3 different foods in winter, 14.5 in summer, 13.9 in spring and 13.7 in autumn. The number of food consumed was positively correlated with intake of most nutrients, especially in autumn. For variety among the five major food groups(grain, meat, dairy, fruit, vegetable) with a dietary diversity scores(DDS) calculated, the average socre of DDS was 3 in all seasons and omitted food groups were usually dariy and fruit. In conclusion, dietary intake and quality of Korean adults were different according to seasons.

  • Changes in nutritional and health status brought on by a two-year balanced diet were assessed with anthropometric measurements as well as hematological and lipid profiles in 56 healthy young men. Recommended dietary allowances (RDA) were adjusted with estimated daily weighted activity factor. The weighted resting energy expenditure factor of the subjects was 2.37 $\pm$ 0.05. Compared with RDA, all nutrient intakes were adequate and 56% of energy was supplied by carbohydrates, 18% by protein and 26% by fat. The vitamin and mineral intakes except vitamin B-2 were higher (26.46-129.88%) than RDA. Vitamin B-2 intake was 92.15 \ulcorner 14.16% of RDA. There was no seasonal variation on nutrient intakes. Height was increased and systolic blood pressure was decreased by balanced diet for two years. Body weight, diastolic blood pressure and body mass index (BMI) were unchanged. The level of hemoglobin and hematocrit was not changed, the level of plasma protein was decreased and the level of plasma total cholesterol and albumin was increased. These results suggest that a balanced diet can increase height and complement health status achieved through vigorous exercise, even in adults, and that the level of Korean RDA for energy is adequate to maintain existing body weight.

  • General purpose of the study was to understend nutritional status of the Korean farmers and thus provide rural nutrition intervention programs with more useful in formation and data. The data for the study was collected two times from the 603 sample farm households in 1982 and 1987. The main results of the study were as follows ; 1) Food intake of the Korean farmers was highly dependent upon vegetable foods especially on cereals and gains. However the unbalanced food intake pattern was gradually improved as consumption of vegetable foods was decreased from 992.8 grams per person per day in 1982 to 946.4g in 1987 and that of animal foods increased from 54.2g to 91.4g . 2) In mean value analysis on nutrient intake of the farmeres intakes of energy and protein were nearly reached to Recommended Dietary Allowances(RDA) level; intakes of calcium vitamin A and riboflavin were quite deficient whereas iron thiamin niacin and ascorbic acid were well over. From 1982 to 1987 intakes of all nutrients except energy were increased. 3) In distribution analysis on nutrient intake coefficient of variation(CV) of all nutrients except iron was increased. skewness(SK) the coefficients of calcium iron vitamin A riboflavin and ascorbic acid were decreased Kurtosis (Ku) of iron and vitamin A was increased. On the whole distributions of nutrient intake of the farmers were changed in undesirable ways although the mean values of the nutrient intake were improved 4) In relationship analysis among 115 relationships 76 relationships were consistent between 1982 and 1987. Of 76 consistent relationships only 10 relationship were significant at 5% level such as the protein intake level and the balance of food intake calcium intake level and the age etc.

  • We examined the relationship among riboflavin intake, work activity, erythrocyte glutathione reductase activity coefficient(EGR AC)and urinary riboflavin excretion. We also attempted to determine factors affecting seasonal riboflavin status of rural women. All information about nutrient intake, work activity and riboflavin biochemical status was repeatly collected in three seasons ; farming season(June), harvest season(October), nonfarming season(February). EGR AC was negatively correlated with riboflavin intake(P<0.005) and positively correlated with the duration(min) of farming activity(P<0.005) and the percentage of lean body mass(LBM) (%) representing long term physical activity(P<0.05) in harvestseason. Urinary riboflavin excretion was positively correlated with the ratio of riboflavin intake to 1,000kcal of energy expenditure (P<0.05) in farming season and negatively correlated with the duration(min) of farming activity (P<0.05) and crude nitrogen balance(P<0.005) in harvest season. It appeared that EGR AC seems to increase and urinary riboflavin excretion seems to decrease as work activity increase. Therefore work activity would be expected to deteriorate riboflavin status. Multiple regression analysis of variables showed that in general EGR AC was affected by riboflavin and energy intakes, energy expenditure, energy balance, the duration(min) of farming activity, LBM (%). Urinary riboflavin excretion was affected by riboflavin and protein intakes, LBM(kg) and crude nitrogen balance. Crude nitrogen balance affected urinary riboflavin excretion in all seasons. The result indicated that work activity as well as nutrient intake seemed to affect riboflavin status, especially EGR AC was affected preferentially be work activity in all seasons.

  • This study was conducted to validate the semi-quantitative food frequency questionnaire that was developed to assess the intakes of fatty acids, as well as energy, carbohydrates, fat, protein, minerals and vitamins in Korean adults. The validity of the semi-quantitative food frequency questionnaire was tested on 78 subjects (31 men,47 women) aged 34 to 66 years. The semi-quantitative food frequency questionnaire included 93 food items and was validated on two 3-day dietary records. The mean intakes and the Spearman Correlation Coefficients between the semi-quantitative food frequency questionnaire and the two 3-day dietary records were analyzed for each nutrient and food group level. The mean nutrient intakes obtained from the semi-quantitative food frequency questionnaire were estimated to be greater than those of the two 3-day dietary records. The Spearman Correlation Coefficients between the energy-adjusted nutrient intakes from the semi-quantitative food frequency questionnaire and the two 3-day dietary records ranged from 0.24 for polyunsaturated fatty acids to 0.55 for fat in men and from 0.29 for polyunsaturated fatty acids to 0.55 for saturated fatty acids in women, respectively. The Spearman Correlation Coefficients for food intake ranged from 0.11 for teas and beverages to 0.58 for grains and their products in men,-0.04 for potatoes and starches to 0.73 for milk and dairy products in women. Foods consumed regularly had lower intra-person variation and tended to have higher observed correlation coefficients. These results indicate that the semi-quantitative food frequency questionnaire is a useful tool for estimating nutrient intakes, particularly of total fat and saturated fatty acid intakes.

  • Korean breast-fed(BF) and formula-fed (FF) infants(n=31) were studied at their age of 1, 2 and 3 months to compare their intakes of energy, protein, lipid and lactose. Formulas had more energy, protein and lipid than breast milk, but the former had less lactose than the latter. The milk consumption of the FF infants was, however, greater than that of the BF infants with wide individual variation. As a result, the FF infants took in more energy, protein and lipid than the BF infants except lactose. The total daily caloric intakes(kcal/day) of the BF infants were 521.418 and 425 at their age of 1, 2 and 3 months respectively, and those of the FF infants were 676.752 and 723(at their age of 1, 2 and 3 months respectively). Daily protein intakes(g/days) of the BF infants were 9.5, 8.0 and 7.6 at their age of 1, 2 and 3 months respectively, and those of the FF infants were 13.9, 15.5 and 14.8(at their age of 1, 2 and 3 months respectively). The energy and protein of both the BF and the FF infants were deficient compared to the present Recommended Nutrient Allowances, and the deficiency of the BF infants was greater than that of the FF infants. But the energy intakes per kg of body weight of the FF infants at their age of 1 and 2 months were more than the present recommended energy allowances. And the protein intake per kg of body weight of the FF infant at the age of 1 month was the same as the present recommended protein allowances.

  • Although a generation-related difference in nutrient and food-group intake has been broadly recognized in the Japanese population, few studies have examined the difference and correlation of intakes with consideration of a family line and co-habitation status. We conducted a dietary survey using female college students in dietetic course in Aichi, Japan, and their mothers and grandmothers. A validated self-administered diet history questionnaire was used for assessment of intakes. Data from 110 families were included in the analysis. The means of 13 nutrients and 10 food groups (of the 15 and 14, respectively) showed significant differences among the three generations. A significant difference was observed in the carbohydrate, protein, saturated fatty acid, cholesterol, and fish intakes between the students living with their mothers and those apart. In the correlation analyses between generations, moderate correlation was observed for most nutrients and food groups between the students and their mothers living together (correlation range = 0.30-0.61 for nutrients, and = 0.21 -0.56 for food groups). A wide variation with no consistency was observed for the correlation between the students and their grandmothers (-0.18 -0.59 and -0.33 -0.65, respectively), No meaningful correlation was observed between any two generations living apart. Among the food groups examined, pulses, fish, and vegetables showed relatively large differences for the correlation between two groups with different living conditions. When living together, the correlation coefficients for nutrients and food groups between the students and their mothers decreased according to the increase in frequency of eating out by the students. These results suggest that living together and eating together were an important factor for the resemblance in dietary habits between generations in the population with a marked generation-related difference in intakes. • For the rapidly growing elderly population, the achievement and maintenance of good nutritional status is critical to health, functioning and quality of life. Elderly women living alone have been identified as a group associated with poor nutrition. The purpose of this study was to assess dietary intakes of elderly women living alone as compared to those of elderly women living with family in a rural area and to examine seasonal variation. The subjects are 49 elderly women living alone and 41 elderly women living with family who reside in Goryeong-gun, Gyeongbuk, and their food intakes were assessed once each time in summer 2005, winter 2005-2006, and spring 2006. The average ages were 74.7 years for living alone and 72.8 years for living with family. Education level was not different between the two groups. Height, weight, body mass index, systolic and diastolic blood pressures, and fasting blood glucose were not significantly different between the two groups. Average intakes of major nutrients, nutrient adequacy ratio, mean adequacy ratio and index of nutritional quality were lower in the elderly women living alone compared with the elderly women living with family in summer, but the differences in intakes of most nutrients became insignificant both in winter and in spring. High carbohydrate and low fat diet was prevalent and intakes of carbohydrate and fat in summer deviated from macronutrient acceptable distribution ranges. Percentages of the subjects who consumed energy less than 75% of the estimated energy requirement and nutrients less than the estimated average requirement were higher than those reported by the Third National Health and Nutrition Examination Survey. In summer, the percentage of the subjects who consumed energy less than both 75% of the estimated energy requirement and 4 nutrients less than estimated average requirements was 58.5% of the elderly women living alone, which was higher than 26.5% of the elderly women living with family and that of National Nutrition Survey. Therefore, nutrition policies including nutrition education and support are necessary to improve nutritional status of elderly, especially elderly women living alone and should reflect regional and seasonal characteristics.
