호중구감소증 환자의 식품별 섭취허용에 대한 간호사와 환자의 인식 비교 (Comparison of Perception of the Neutropenic Diet between Nurses and Patients)

  • Purpose: This descriptive study aimed to compare the perception of the acceptable foods for the neutropenic diet between nurses and patients by food type. Methods: The participants were 225 nurses working at chemotherapy wards and 71 patients in chemotherapy treatment. Data were collected with a self-administered questionnaire from January 2 to February 24, 2012, and analyzed with SPSS 12.0 program using descriptive statistics and the ${\chi}^2$-test. Results: Eighty-eight point eight percent of nurses and 76.1% of cancer patients thought the patients needed the neutropenic diets. The most important decisional criteria to determine dietary restriction was neutrophil count for nurses and food type for patients. The two groups showed significantly different allowance to raw fruits and raw vegetables, sterilized canned juice, fried vegetables, yogurt, uncooked tofu, salted fish, cooked fish, cooked shellfish, uncooked grain powder, jellified food, home-made bread/cookies, nuts including peanuts, instant coffee or tea and tea brewed. In general, patients were more permissive about the neutropenic diet than nurses. Conclusion: It is recommended to consider patients' preference as well as nurses' professional knowledge and publish standardized clinical diet guidelines for neutropenic patients with collaboration between nurses and patient representatives.

Traditional Living Habits of the Taz Tundra Population: A Paleoparasitological Study

  • An excavation of the Vesakoyakha II-IV and Nyamboyto I burial grounds was conducted during the 2014 field season, and soil samples from intact burials dating from the 19th and 20th centuries, respectively, were analyzed to determine interactions between parasites and host/vectors. Considering the discovery of Diphyllobothrium sp. and Taenia sp. eggs in soil samples from the pelvic region, diphyllobothriasis was the most frequent helminthic infection among the Taz Nenets. The Nyamboyto Nenets mainly consumed uncooked fish, while the Vesakoyakha Nenets had a bigger variety in food choices, including reindeer meat. Nenets children were given raw fish from early childhood. The paleoparasitological results corroborate rare ethnographic records about the consumption of uncooked reindeer cerebrum which led to beef tapeworm helminthiases. This is the first parasitological report of helminthic diseases among the Taz Nenets, and, as such, it provides insight into their subsistence activities and food patterns and broadens our understanding of their health condition.

무증자 전분의 당화에 관한 연구 (Saccharification of Uncooked Starch)

  • 본 연구는 전분을 증자하지 않고 직접 효소제를 작용시켜 효율적인 당화를 시키고자 하였다. 원료 전분의 산침지와 macerating enzyme, ${\alpha}-amylase$, glucoamylase 를 처리하여 증자 전분의 당화율보다 더 높은 당화율을 얻었다. 실험에 사용한 전분질의 전당은 시료 g당 쌀 4.53, 고구마 4.26, 타피오카 3.92 mmole 이었다. 현재 주정공업에서 사용하는 알코홀 발효 조건을 기준으로 하여 당화시킨 결과는 전당의 $70{\pm}10%$가 당화되었다. 무증자 전분의 당화시 전분질 입자의 크기에 따른 당화율은 입자가 적을수록 효율적이었다. 산 전처리에 있어서 산의 농도와 온도 및 처리 시간은 시료 : 처리 용적 - 1 : 2 일때 5 % $H_2SO_4$, $60^{\circ}C$, 12시간에서 좋은 결과를 나타내었다. 전분질의 무증자 당화에 사용하는 효소의 최적 조건은 pectin depolymerase는 pH 4. 5, $45^{\circ}C$, 2시간이 우수 하였으며, ${\alpha}-amylase$ 는 pH 6.0, $60^{\circ}C$, 1시간, 그리고 glucoamylase는 pH 3.5, $60^{\circ}C$, 1시간의 조건이 유리하였다. 효소의 처리방법은 동시 처리가 단계별 처리보다 효과가 좋았고 jar fermenter 를 사용하여 행한 것이 삼각 후라스크에서 행한 것보다 효과가 좋았다. 각 처리 결과에서 얻은 최적 조건으로 무증자 전분을 당화시킨 결과 전당을 기준으로 타피오카는 82%, 쌀은 90.5%, 그리고 고구마는 84.5%가 당화 되었다.

과육이 포함된 무즙으로 반죽한 국수의 품질특성 (Quality Characteristics of Noodle Added with Radish Juice Containing Pulp)

  • Purpose: This study was to investigate the quality characteristics of wet noodle added with radish juice containing with pulp. Methods: Wet noodles were prepared with different amounts of radish juice (0%, 20%, 40%, 60%, 80%, 100%, w/w) instead of water. Results: As the amount of radish juice was increased, water absorption, volume increasing rate, and turbidity of soup were decreased. Lightness (L) values of uncooked wet noodles and cooked noodles were decreased with the addition of radish juice, while redness (a) and yellowness (b) values had no tendency of increasing or decreasing, regardless of the amount of radish juice. Moreover, lightness, redness, and yellowness values of uncooked noodles were higher than those of cooked noodles. The texture of cooked noodles showed significant differences in hardness and chewiness. It was increased as the amount of radish juice was increased. Their adhesiveness and springiness were lower than those of the control. Appearance, texture, and overall acceptability of sensory evaluation revealed that the noodle added with 80% of radish juice had the highest scores, although there were no differences among noodles added with different amounts of radish juice. Conclusion: In summary, the most desirable blending ratio of radish juice and water for the kneading of wet noodles was 80:20.

Quality Properties of Bulgogi Sauce with Crust Derived from Dry-Aged Beef Loin

  • This study aimed to determine the physicochemical properties (proximate composition, color, pH, salinity, water holding capacity (WHC), curing yield, and shear force) and sensory properties (electric nose and sensory evaluation) of Bulgogi sauce with added crust derived from dry-aged beef loin. Increasing the amount of crust in the Bulgogi sauce tended to increase the protein content, fat content, and pH. Uncooked Bulgogi also tended to have elevated fat content, ash content, pH, and shear force. Increasing the crust content tended to decrease the water content, lightness, redness, and yellowness of Bulgogi sauce. The yellowness of uncooked Bulgogi with 6%-12% crust in sauce was significantly lower than that of the control (no crust) and the sample with 3% crust in sauce (p<0.05). The redness of the cooked control Bulgogi was significantly lower than that of the samples with crust in sauce (p<0.05). The WHC of uncooked Bulgogi with 6%-12% crust in sauce was significantly higher than that of the control and the sample with 3% crust in sauce (p<0.05). The flavor, texture, and overall acceptability of the Bulgogi with 9% crust in sauce were significantly higher than those of the control (p<0.05). These findings showed that the crust did not degrade the physicochemical properties of Bulgogi sauce and meat. The sensory characteristics of Bulgogi marinated with 9% crust in sauce were rated the best as persensory evaluation. Therefore, crust is a suitable flavor enhancer for Bulgogi sauce, and a 9% addition amount is optimal in terms of quality.

건조방법에 따른 생식 원료의 이화학적 특성 및 기능성 성분의 변화 (Change of Physicochemical Characteristics and Functional Components in the Raw Materials of Saengsik, Uncooked Food by Drying Methods)

  • 생식 제조공정 중 주요공정인 건조방법에서 효율적인 방법을 찾기 위하여 건조방법에 따른 생식 원료 이화학적 특성 및 기능성 성분의 변화를 조사하였다. 당근, 양배추, 표고버섯, 양송이버섯, 미역 김의 단백질, 지방, 탄수화물, 회분 등 성분의 함량은 열풍건조(50, 55, $60^{\circ}C$) 및 동결건조를 통하여서는 거의 변화가 없는 것으로 나타났다. 당근, 표고버섯, 미역은 열풍건조 및 동결건조를 실시한 후 변화가 없는 것으로 관찰되었고 양배추(a값), 양송이버섯(L, a, b값), 김(a값)의 변화가 있는 것으로 나타났다. 식이섬유의 함량은 열풍건조를 거친 시료에서 증가를 나타냈다. 당근, 양배추, 미역, 김 중의 Vitamin C와 ${\beta}-carotene$ 함량은 열풍건조를 진행한 시료가 동결건조를 진행한 시료보다 손실이 많이 것으로 나타났고 총 페놀성 화합물과 lectin의 함량은 열풍건조 및 동결건조를 거쳐도 거의 변화가 없는 것으로 나타났으며 pectin, alginic acid, porphyran 등의 함량은 열풍건조를 실시한 시료에서 증가를 나타냈다. 총 페놀성 화합물, lectin pectin, alginic acid, porphyran과 같은 기능성 물질을 함유한 생식 원료는 열풍건조방법을 이용하는 것이 경제적일 것으로 생각되며 Vitamin C와 ${\beta}-carotene$과 같이 열에 약한 비타민을 많이 함유한 생식 원료는 동결건조 방법을 사용하는 것이 바람직할 것으로 생각된다.

건조방법 달리하여 제조한 더덕 생식의 이화학적 및 관능적 특성 변화 (Changes of Physicochemical and Sensory Characteristics in the Codonopsis lanceolata Saengsik, Uncooked Food by Different Drying Methods)

  • 더덕을 생식 원료로 동결건조 및 열풍건조를 통하여 생식을 제조하여 제조된 생식의 이화학적 및 관능적 특성, 기능성 성분의 함량 조사를 통하여 합리한 제조방법을 찾고자 하였다. 수분, 단백질, 탄수화물, 지방, 회분 등 일반성분 함량은 동결건조 및 열풍건조를 실시한 시험구들 사이에 변화가 없는 것으로 나타났고 색도는 동결건조는 실시한 시험구가 열풍건조를 실시한 시험구에 비해 L값은 높게, b값은 낮게 나타났다. 식이섬유 함량은 열풍건조를 실시한 시험구가 동결건조를 실시한 시험구보다 높게 나타났고 총 페놀성 화합물과 조 사포닌 함량은 동결건조를 실시한 시험구가 높게 나타났다. 관능검사 결과 동결건조를 실시한 시험구가 색, 맛, 향, 전체적 기호도 등에서 모두 열풍건조를 실시한 시험구 보다 높게 나타났다. 위의 결과로부터 더덕을 원료로 생식을 제조 시 동결건조 방법을 사용하는 것이 적절하다고 생각된다.

Effect of Sodium Nitrite, Sodium Chloride and Concentrated Seawater on Physicochemical Properties of Meat Emulsion System

  • The objective of this study was to compare the effects of various salts on the physicochemical properties of pork emulsion sausages. Pork sausages were prepared using two different salts, sodium nitrite (SN) and sodium chloride (SC), and concentrated seawater (CSW). The CIE L*, CIE a*, and CIE b*, and chroma values of cooked and uncooked sausages with added CSW were significantly higher than those of the sausages with added SC (p<0.05). However, uncooked and cooked sausages with added SN and CSW had similar CIE a* values (p>0.05). The residual NO2- content of sausages with added CSW was significantly lower than that of sausages with added SN. Addition of CSW to sausages resulted in a higher cooking yield compared to the other treatments (p<0.05). Addition of SC resulted in significantly higher volatile basic nitrogen (VBN) and thiobarbituric acid (TBA) values compared to the other treatments. Furthermore, addition of CSW enhanced important physicochemical properties, including CIE a*, CIE b*, residual nitrite content, cooking yield, VBN, TBA, textural properties, and cross-sectional area.

The Effects of Potato Puree and Bread Crumbs on Some Quality Characteristics of Low Fat Meatballs

  • The purpose of this study was to determine the effects of using different amounts of potato puree (PP) (10 or 20%) and 10% bread crumbs (BC) as an extender and also control samples (C) with no added extender on chemical composition, energy values, cooking analyses, colour measurements, water holding capacity (WHC), penetration values, thiobarbituric acid value (TBA) and sensory analyses of meatballs. Meatball samples were cooked in a pre-heated $180^{\circ}C$ electric oven. Uncooked meatballs formulated with 20% PP had the highest moisture content. No significant differences were recorded for protein contents of uncooked samples. The highest cooking yield was found in samples extended with 10% BC. Increasing PP from 10% to 20% increased cooking yield of meatballs. 20% PP increased moisture and fat retention values and water holding capacity of meatballs. Meatballs with 10% BC had the lowest (the hardness in the texture) and meatballs with the 20% PP had the highest (the softness in the texture) penetration values. Formulating meatballs at a level of 20% resulted lower $L^*$ values. TBA values of control samples were higher than in PP added samples at the end of the storage period. Flavour scores for meatballs formulated with PP were higher than control and meatballs formulated with BC. Meatballs formulated with 10% PP had similar overall acceptability with meatballs added with 10% BC.

쌀과 해당화를 이용한 식초제조 및 품질평가 (Quality Evaluation of Vinegar Manufactured using Rice and $Rosa$ $rugosa$ Thunb)

  • 쌀을 이용한 식초제조에서 증자 공정과 무증자 공정으로 제조된 쌀과 해당화를 혼합한 조성물을 사용하여 식초를 제조하였다. 1단계로 ethanol 발효를 $25^{\circ}C$에서 12일 동안 진행하고, ethanol 함량을 6%로 조정한 후 $Acetobacter$ $aceti$균을 접종하여 $30^{\circ}C$에서 9일 동안 초산 발효하였다. 식초 발효전에 초산을 첨가하는 공정은 발효의 성공여부를 결정하는 요인으로 나타났으며, 첨가되는 초산의 농도에 의존적으로 최종 식초 제품의 유기산 함량이 증가하였다. 무증자법으로 식초를 제조시 유리 아미노산과 GABA 함량이 높게 나타났으며, 주요 아미노산으로는 glutamic acid, arginine 등으로 나타났다. 본 연구결과는 해당화-쌀 식초 제조시 쌀의 열처리 공정여부가 식초의 품질에 큰 영향을 준다는 것을 보여준다.
