Evaluation of vegetable oil rancidity by headspace gas chromatographic analysis (Headspace 가스크로마토그라피를 이용한 식용유의 산패도 측정)

  • Several commercial cottonseed, corn and rapeseed oils were stored at $60^{\circ}C\;and\;70^{\circ}C$ with daily exposure of fluorescent light for 12 hours and evaluated their rancidity by headspace gas chromatographic analysis of pentanal and hexanal. The data of gas chromatographic analysis was compared with organoleptic flavor evaluation. For headspace gas chromatographic analysis, the volatile compounds were recovered by porous polymer trap and flushed into a fused silica capillary column at $250^{\circ}C$. Twenty-three GC peaks were identified on the basis of relative retention time of reference compounds and gas chromatography-mass spectrometry. The results showed that the contents of pentanal and hexanal were linearly increased during storage. A very simple linear relationship was found between organoleptic flavor scores and amounts of two volatile compounds with very high correlation coefficient. This results suggested the possible implication of pentanal and hexanal as an quality index for rancidity evaluation of cottonseed, corn and rapeseed oils.

  • An anomalous current characteristics which show the superposition of a low current level and high current level at the subthreshold region when SONOSFETs are in memory states were investigated. We have assumed this phenomena were resulted from the effect of parasitic transistors by LOCOS isolation and were modeled to a parallel equivalent circuit of one memory transistor and two parasitic transistors. Theoretical curves are well fitted in measured log I$_{D}$-V$_{G}$ curves independent of channel width of memory devices. The difference between low current level and high current level is apparently decreased with decrease of channel width of devices because parasitic devices dominantly contribute to the current conduction with decrease of channel width of memory devices. As a result, we concluded that the LOCOS isolation has to selectively adopt in the design of process for charge-trap type NVSM.VSM.

Small-Scale Dynamics of Moths in Spring from a Coniferous Forest of Southwestern Korea

  • The small-scale dynamic of moth populations in spring was examined in a coniferous forest of southwestern Korea. Moths were collected with one 22-watt light trap for 29 days in April 2007. A total of 450 individuals of 38 species in 5 families were collected. The most abundant species was an epiplemid moth, Epiplema plagifera. The relationship between these dominant moths and their host plants is briefly discussed. We also examined influence of weather factors on the number of species and individuals collected. Multiple regression analyses showed that the two-day temperature difference explained 18% of the variance in the number of species collected, while air and ground temperatures explained 51% of the variance in the log-transformed number of individuals collected. This suggests that temperature affects local population sizes in spring, but variables other than weather may also affect the diversity of local moth populations.

  • A group of Pinus densiflora trees attacked by Rhizina root rot were observed at Kangnung. Diseased roots are characterized by rot patches, radial rot traces or formation of adhesive soil masses. The damage has proceeded about 6m per annum, and the pathogen in the infected soil was detected by trap logs. Ascospores of Rhizina undulata was germinated by heat shock at $37^{\circ}C$ for 24 hours or at $40^{\circ}C$ for 17 hours. The mycerial growth was optimum on PDA medium at $25-30^{\circ}C$and pH 5.6-6.3. Coniferous trees were more susceptible than non-coniferous trees in inoculation test in vitro.

  • Several commercial soybean oils were stored at $20^{\circ}C,\;40^{\circ}C$ and $60^{\circ}C$ with daily exposure of fluorescent light for 12 hours and evaluated their rancidity by headspace gas chromatographic analysis of pentanal and hexanal. The data of gas chromatographic analysis was compared with organoleptic flavor evaluation. For headspace gas chromatographic analysis, the volatile compounds were recovered by porous polymer trap and flushed into a fused silica capillary column at $250^{\circ}C$, The pentanal and hexanal separated were identified by gas chromatography and gas chromatography-mass spectrometric method. The results showed that the contents of pentanal and hexanal were linearly increased during storage for 100 days. A very simple linear relationship was found between organoleptic flavor scores and amounts of two volatile compounds with very high correlation coefficient. A similar linear relationship was also obtained for acid and peroxide value with sensory data. This results suggested the possible implication of pentanal and hexanal as an quality index for rancidity evaluation of soybean oil.

Molecular identification of fungus gnats from shiitake mushroom in Korea (국내 표고버섯 주요 버섯파리의 분자생물학적 종 동정 및 발생양상)

  • Fungus gnats are usually found in mushroom farm and have recently become important pest because they can cause severe damage and reduce the production on shiitake mushroom. Usually shiitake mushrooms are cultivated on both oak bed logs and in the artificial sawdust beds in greenhouses. Using yellow sticky trap, the dipteran species in shiitake mushroom farm were collected from May to September in Kyonggi-do and Chungcheong-do in 2013. To identify the main species of fungus gnat on the shiitake farm in Korea, the collected samples were determined the sequence of cytochrome c oxidase subunit I (COI) by DNA barcoding. The phylogeny based on maximum likelihood analyses from COI sequence showed that Bradysia difformis and B. alpicola were main species of shiitake bed log and Scatopsidae sp. and B. difformis were dominant species of sawdust beds.

Usage Status Survey on Some Essential Facilities, Equipment and Documentary Records for HACCP Implementation in Contract Foodservices (HACCP 적용에 필요한 시설 . 설비 . 문서의 위탁급식소 구비 실태에 관한 조사)

  • In this study, based on SSOP (Sanitation Standard Operating Procedure) for HACCP in Food Sanitation Act, essential facility, equipment and documentary records for HACCP implementation were identified. Usage and adoption of these devices at Korea Food & Drug Administration appointed HACCP foodservices ("Appointed"), voluntary HACCP applying foodservices ("Voluntary applying") and HACCP non-applying foodservices ("Non-applying") have been compared. Total 46 contract foodservices were surveyed: 13 "Appointed" (65% of nation-wide all appointed food services in February, 2002),17 "Voluntary applying" and 16 "Non-applying". For usage and adoption of facility and equipment, 18 out of total 27 surveying items showed significant differences at the three foodservice groups (p<0.01 or p<0.05). Specifically, following items showed lower usage than 70% in the "Appointed": ′A trench including grease trap′, ′3-compartment sink with hot water′. Regarding CCP monitoring tool installation, 8 out of total 9 items showed significant differences among the groups (p<0.01 or p<0.05). For the usage of 10 documentary recording items for HACCP application log, 7 items showed significant differences among the groups (p<0.01 or p<0.05). Resultantly, most of those essential facilities, equipment and documentary records ;were used only in the "Appointed". The limited usages of those were showed for the "Voluntary applying" where the dietitian answered they applied HACCP voluntarily. The "Non-applying" didn′t have many surveyed items.
