Effects of Added Corn Oil on the Formation of Volatile Flavor Compounds in Dry Shrimp During Roasting Process (볶음 과정중 첨가한 옥수수 기름이 마른 새우 향기성분 형성에 미치는 영향)

  • Flavor components of dry shrimp, roasted-dry shrimp and roasted-dry shrimp with corn oil (w/w: 10%, 25%) were investigated to evaluate the effects of added corn oil on the formation of volatile components in dry shrimp during roasting process. The identified volatile included 20 nitrogen-containing compounds (7 pyrazines, 7 pyridines 3 pyrroles, others) 14 aldehydes, 5 alcohols, 4 ketones and 11 others. The largest quantities of lipid-derived products hexanal, nonanal, 2-pentylfuran, 1-octen-3-ol, trans-2-decenal, trans, cis-2,4-decadienal, trans, trans-2,4-decadienal were detected in the roasted-dry shrimp samples with corn oil. The lipid-derived aldehydes might be involved in the formation of 3- ethyl-2,5-dimethylpyrazine, 2,3,5-trimethyl-6- ethylpyrazine, 2-ethyl-5,6-dimethylpyrazine, 2,3,5- trimethylpyrazine, 3- ethyl-2,6-dimethylpyridine, 2-propylpyridine, ben-zopyrrole and the others. The nitrogen-containing compounds seem to be a major flavor component and responsible for characteristic flavor in roasted-dry shrimp with corn oil.

A Study of Characteristics of Foot Pressure Distribution in Trans-tibial Amputee Subjects (하퇴 의지 사용자의 족저압 분포 특성에 관한 연구)

  • The purpose of this study was to compare the static pressure, dynamic pressure, dynamic pressure-time integral, relative impulse, and contact time between the sound lower limb and amputated lower limb in trans-tibial amputee subjects using Parotec system. Seventeen trans-tibial amputee subjects wearing endoskeletal trans-tibial prosthesis voluntarily participated in this study. The results were as follows: 1) In static standing condition, there were significantly higher static pressure in sound lower limb insole sensor of 10, 14, 15, 18, 19, 23, and 24 and in amputated lower limb insole sensor of 9, 12, and 16 (p<.05). 2) In dynamic gait condition, there were significantly higher dynamic pressure in sound lower limb insole sensor of 2, 18, 22, 23, and 24 and in amputated lower limb insole sensor of 5, 9, 10, 11, 12, 14, 15, and 16 (p<.05). 3) In dynamic gait condition, there were significantly higher pressure-time integral in sound lower limb insole sensor of 2, 4, 18, 19, 20, 21, 23, and 24 and in amputated lower limb insole sensor of 5, 11, 12, and 15 (p<.05). 4) In dynamic gait condition, there were significantly higher relative impulse in sound lower limb insole sensor of 18, 19, 20, 22, 23, and 24 and in amputated lower limb insole sensor of 5, 9, 10, 11, 12, and 15 (p<.05). 5) In dynamic gait condition, there was significantly higher percentage of contact time in push off phase of sound lower limb and in support phase of amputated lower limb (p<.05). These results suggest that trans-tibial amputee subjects had characteristics of shortened push off phase due to unutilized forefoot and of lengthened support phase with higher pressure in the midfoot.

  • Homogeneous catalytic oxidation of hydrazobenzene was investigated by employing pentadentate Schiff base complexes such as [Co(II)(Sal-DPT)(H$_2$O)] and [Co(II)(Sal-DET)(H$_2$O)] in oxygen-saturated methanol solvent. The oxidation product of hydrazobenzene(H$_2$AB) was trans-azobenzene(trans-AB). The rate constants of oxidation reaction measured by UV-visible spectrophotometry were observed as $6.06{\times}10^{-3}sec^{-1}$ for [Co(II)(Sal-DPT)(H$_2$O)] and $2.50{\times}10^{-3}sec^{-1}$ for [Co(II)(Sal-DET)(H$_2$O)]. The mechanism of oxidation reaction for H$_2$AB by homogeneous activated catalysts has been proposed as following. H$_2$AB + Co(II)(L)(H$_2$O) + O$_2$ $\rightleftharpoons^K_{MeOH}Co(III)(L)O_2{\cdot}H_2AB + H_2O\longrightarrow^{k}Co(II)(L) + trans-AB + H_2O_2$ (L: Sal-DPT and Sal-DET)

Production of Sialytrisaccharides Using $\beta$-Galactosidase and trans-Sialidase in One Pot

  • Sialytrisaccharides based on $\beta$-galactosyldisaccharides were synthesized using $\beta$-galactosidase and trans-sialidase in one pot. Using $\beta$-galactosidase from Bacillus Ciculans and trans-sialidase from Trypanosoma cruzi simulaneously, 6mM sialyltrisaccharides composed of about 95% NeuAc$\alpha$(2,3)Gal$\beta$(1,4)GlcNAc and 5% NeuAc$\alpha$(2,3)Gal$\beta$(1,6)GlcNAc were produced from a reaction mixture containing 25mM o-nitropheny1-$\beta$-D-galsctolneuraminic acid. One beauty of this reaction was that a secondary hydrolysis of the disaccharide intermediate occurring between the activated galactopyranoside and N-acetylgucosamine was prevented. Using $\beta$-galactosidase from Escherichia cloi and the same trans-sialidase, 15mM sialyltrisaccharides composed of about 90% NeuAc$\alpha$(2,3)Gal$\beta$(1,6)GlcNac and 10% NeuAc$\alpha$(2,3)Gal$\beta$(1,4)GlcNAc were produced from a reaction misture containing 400nM galactose, 800nM N-acetylglucosylation rection between galactose and N-actylgucosamine was diminant since the disaccharide intermediate mainly resulted sreulted in the silylated product.

  • When typical Z-source DC/AC inverter(ZSI) is operated in high voltage gain area, because of its high duty ratio, voltage and current stress in Z-network of typical ZSI are increased. This paper proposes a new switched trans ZSI(STZSI) with two switched trans cells which consist of one trans and two diodes. To confirm the operation performance of the proposed system, the PSIM simulation is performed for typical ZSI, switched inductor ZSI and the proposed STZSI. Voltage / current stress and transient state characteristics of each method are compared under the condition of DC input voltage 100[V] and output phase voltage 66[Vrms]. As a result, we confirmed that transient state of the proposed STZSI is short compared with the conventional ZSI because the high voltage gain is obtained using the same duty ratio, also a low duty ratio is required for the same output voltage. Finally, we could know the proposed system have low voltage and current stress in Z-network compared with the conventional ZSI.

  • The conversion of trans-cinnamic acid to phenylalanine using phenylalanine ammonia lyase (PAL) was examined. The optimum concentration of trans-cinnamic acid for the reaction was observed at 100 mM in cells and at 20 mM in cell free extracts, respectively. The production of L-phenylalanine was increased in both experiments as the concentration of ammonia was increased up to 10 M. The optimal pHs for the maximal conversion of trans-cinnamic acid to L-phenylalanine were 9.5 and 9.0 in experiments carried out with cells and with cell free extracts, respectively.

Straight-Forward versus Bicortical Fixation Penetrating Endplate in Lumbosacral Fixation-A Biomechanical Study

  • Objective : Many lumbosacral fixation techniques have been described to offer a more screw-bone purchase. The forward anatomical fixation parallel to the endplate is still the most preferred method. Literature revealed little knowledge regarding the mechanical stability of lumbosacral trans-endplate fixation compared to the traditional trans-pedicular screw fixation method. The aim of this study is to assess the pull-out strength of lumbosacral screws penetrating the end plate and comparing it to the conventional trans-pedicular screw insertion method. Methods : Eight lumbar and eight sacral vertebrae, with average age 69.4 years, Left pedicles of the 5th lumbar vertebrae were used for trans-endplate screw fixation, group 1A, right pedicles were used for anatomical trans-pedicular screw fixation, group 1B. In the sacral vertebrae, the right side S1 pedicles were used for trans-endplate fixation, group 2A, left side pedicles were used for anatomical trans-pedicular screw fixation, group 2B. The biomechanical tests were performed using the axial compression testing machine. All tests were applied using 2 mm/min traction speed. Results : The average pull-out strength values of groups 1A and 1B were $403.78{\pm}11.71N$ and $306.26{\pm}17.55N$, respectively. A statistical significance was detected with p=0.012. The average pull-out strength values of groups 2A and 2B were $388.73{\pm}17.03N$ and $299.84{\pm}17.52N$, respectively. A statistical significance was detected with p=0.012. Conclusion : The trans-endplate lumbosacral fixation method is a trustable fixation method with a stronger screw-bone purchase and offer a good alternative for surgeons specially in patients with osteoporosis.

Simulating Logistics Changes in South Korea Caused by Trans-Eurasia Logistics Passing through North Korea (북한 통관 유라시아 횡단 물류에 따른 국내 물류 변화 시뮬레이션 분석)

  • Ever since Korea was geopolitically divided into North and South Korea in the 1940s, South Korea has depended on maritime transportation for global trade and logistics. Now, however, South Korea is preparing to develop a new global route for trans-Eurasia logistics passing through North Korea. Even though there are difficulties to overcome, South Korea expects that a new overland route, shorter than the existing seaways in the Europe-Asia section, will bring more frequent trade with more rapid and cost-effective logistics services in the future. Related to this issue, this study aims to proactively analyze dynamic logistics changes in South Korea when a trans-Korea railway is developed and linked with the trans-China railway and the trans-Siberian railway. This study employed a system dynamics simulation approach to model the logistics system in South Korea. The simulation results indicated that the traffic of the Uiwang inland container depot near the capital area may increase but the traffic of the Port of Busan may decrease. With supplementary research, consequently, follow-up studies on adjusting the traffic capacity in Korea are required to attain successful trans-Eurasia logistics by rail.

Conjugated Linoleic Acid in Korean Mothers' Milk and Infant Formula (한국인 모유와 조제분유 중의 공액리놀레산)

  • The concentrations of conjugated linoleic acid (CLA) in twelve Korean mothers' milk samples collected in October 2006 and four infant formula samples produced by Korean manufacturers were determined. CLA detected from both mothers' milk and infant formula samples was only cis-9, trans-11 CLA isomer. The amount of cis-9, trans-11 CLA in Korean mothers' milk (100 mL) ranged from 4.32 to 10.12 mg ($6.27{\pm}0.28\;mg$). Infant formula (13 g), which is the manufacturers' recommended amount to make up 100 mL with water, contained cis-9, trans-11 CLA isomer in amounts ranging from 1.61 to 2.97 mg ($2.27{\pm}0.31\;mg$).
