뽕잎 분말을 첨가한 매작과의 품질 특성 및 항산화 활성 (Quality Characteristics and Antioxidant Activities of Maejakgwa added Mulberry Leaf Powder)

  • This study was conducted to investigate the effect of mulberry leaf powder on the antioxidant activity and the quality characteristics of maejakgwa (a Korean traditional cookie). Maejakgwa was prepared with different amounts of mulberry leaf powder (in ratios of 0, 3, 6, 9 and 12% to the flour quantity). The antioxidant activity was estimated by DPPH free radical scavenging activity and the total phenol content in mulberry leaf powder and maejakgwa. For analyzing the quality characteristics, bulk density and the pH of the dough, moisture contents, color, texture profile analysis and sensory evaluations were measured. The total phenol contents, DPPH free radical scavenging activity, bulk density of the batter and the a values of maejakgwa significantly increased with increasing mulberry leaf powder, whereas the pH of the batter, L values and b values of the maejakgwa significantly decreased with increasing mulberry leaf powder content. Finally, the results of the acceptance test indicated that maejakgwa containing 6% mulberry leaf powder had the highest scores. From these results, we suggest that mulberry leaf is a good ingredient for increasing consumer acceptability as well as the functionality of maejakgwa.

연근가루를 첨가한 설기떡의 품질 특성 (Quality Characteristics of Sulgitteok Added with Lotus Root Powder)

  • This study examined the quality characteristics of Sulgitteok samples prepared with different ratios of lotus root powder over 4 days of storage. The moisture contents of the lotus root powder-containing samples ranged from 35.39 to 37.31% and that of the Sulgitteok without lotus root powder control was 35.92%. The results showed that the various samples had the inconsistent changes during the storage period. As the content of lotus root powder increased, the L-values of samples decreased and the a- and b-values increased. However, their L-, a- and b-values did not show large differences with storage. When compared to the control, the hardness, gumminess, and chewiness of samples slowly increased as the amount of lotus root powder increased. Springiness and cohesiveness decreased according to the amount of added lotus root powder. And increasing amounts of lotus root powder and storage time resulted in greater reductions in adhesiveness. In addition, increasing storage time caused cohesiveness to decrease and springiness to increase. The sensory evaluation results showed that the 20% lotus root Sulgitteok received the highest scores, therefore, this samples was deemed superior.

  • The aim of this study was to investigate the effects of adding different amounts (0, 4, 8, 12, 16%) of green laver powder to Sulgidduk, a traditional Korean rice cake product, in terms of textural properties and sensory characteristics. During storage, moisture content was reduced less in the green laver-added samples as compared to the control group. With increasing additions of green laver powder, L-values decreased, a-values increased significantly, and b-values decreased; however, no changes were observed in the control group. In the mechanical evaluations, hardness increased less during storage in the green laver added samples than in the control group. Adhesiveness did not differ significantly by the addition of green laver powder. Springiness, cohesiveness, gumminess, and chewiness showed significant differences, and increased or decreased repeatedly during storage. In the sensory evaluations, the 16% green laver group received the highest scores for color, flavor, and taste Moistness and softness were evaluated higher in the green laver groups as compared to the control group; however, moistness, softness, and elasticity did not differ significantly during storage.

  • Flooded lead acid batteries are still very popular in the industry because of their low cost as compared to their counterparts. State of Charge (SOC) estimation is of great importance for a flooded lead acid battery to ensure its safe working and to prevent it from over-charging or over-discharging. Different types of Kalman Filters are widely used for SOC estimation of batteries. The values of process and measurement noise covariance of a filter are usually calculated by trial and error method and taken as constant throughout the estimation process. While in practical cases, these values can vary as well depending upon the dynamics of the system. Therefore an Adaptive Unscented Kalman Filter (AUKF) is introduced in which the values of the process and measurement noise covariance are updated in each iteration based on the residual system error. A comparison of traditional and Adaptive Unscented Kalman Filter is presented in the paper. The results show that SOC estimation error by the proposed method is further reduced by 3 % as compared to traditional Unscented Kalman Filter.

대학생들이 지각하는 전통시장 선택속성이 관계품질에 미치는 영향: 소비감정의 조절효과와 소비자 가치의 매개효과 (The Effect of College Students' Perceived Choice Attribute of Traditional Market and Relationship Quality: Moderating Effects of Consumption Emotion and Mediating Effects of Consumer's Value)

  • 본 연구는 유통시장의 개방과 함께 다양한 형태의 유통 업태들과의 경쟁으로 인해 어려움을 겪고 있는 시장에 관심을 가진 연구이다. 특히, 미래의 소비자인 대학생들의 관점에서 시장에 대한 점포선택속성과 시장에 대해 갖는 소비감정, 소비자 가치와 관계품질의 관계를 분석함으로써 장기적인 차원의 시장 경쟁력 강화를 위한 단서를 찾고자 하였다. 이를 위해 점포선택속성의 3개 요인의 관계품질의 정도와 함께 점포선택속성과 소비자 가치, 소비자 가치와 관계품질 간을 대학생들이 지각하는 소비감정의 정도가 조절역할을 하는지를 분석하였다. 또한 점포선택속성과 관계품질 간의 관계에 대한 소비자 가치의 매개역할에 대해 분석하였다. 연구 결과는 다음과 같다. 첫째, 점포선택속성 중 서비스 요인과 광고 요인이 관계품질에 정(+)적인 영향을 나타내었다. 이런 결과는 대학생들이 시장에 대해 신뢰하고 만족하는 요인이 서비스와 광고임을 의미하고 있다는 것과 시장의 점포분위기가 관계품질에 미치는 영향이 미미함을 의미한다. 추가적인 분석을 하지 않아 속단할 수는 없지만 대학생들이 갖는 시장이라는 이미지의 고정관념은 관계품질에 크게 영향을 주지 않기 때문이라 추정할 수 있다. 둘째, 대학생들은 시장의 점포선택속성에 있어 서비스 요인을 가장 중요한 것으로 선택하여 시장이 대형점포들과의 경쟁에서 우위를 차지하기 위해서는 대형점포들의 셀프서비스 방식이라는 한계점을 넘어 서비스 요인의 강화가 필요함을 의미하고 있다. 셋째, 점포선택속성과 소비자 가치, 소비자 가치와 관계품질 각각의 관계에 대한 소비감정의 조절효과는 모두 통계적으로 유의미하지 않았다. 즉, 소비감정의 정도는 점포선택속성과 소비자 가치의 인과관계에 영향이 없음을 의미하며, 소비자 가치와 관계품질의 인과관계에도 영향이 없음을 뜻한다. 이는 대학생들을 대상으로 설문을 실시한 결과일 가능성이 있어 추가 연구에 일반인을 대상으로 다시 분석해볼 필요가 있다. 마지막으로 소비자 가치는 서비스 요인과 관계품질, 광고 요인과 관계품질 모두에 완전 매개함을 나타내 시장과 소비자의 관계품질 향상을 위해 가장 중요한 요인임을 알 수 있었다. 즉, 시장이 소비자들에 대한 관계품질 개선을 위해서는 미래의 잠재고객인 대학생들에게 시장에 대한 가치를 충분히 느낄 수 있는 다양한 전략을 수립해야 함을 의미한다. 말미에는 이 연구결과를 통해 얻을 수 있는 영향과 향후 연구 방향을 제시하였다.

현대한옥의 집합구성 유형과 모델특성 연구 (A Study on Cluster Housing Model and Characteristics of Modern Hanok)

  • Hanok is Korea's traditional housing, which is build detached unit. Most of the People who live in the environment of residential high-rise apartments likes new residential environment, and pursue eco-friendly homes, health homes, especially traditional Hanok was reassure potential. In urban context, resident think more compact land use in Hanok also, because Hanok is dissatified in compact land use, and it should be build as more economic aspect. The purpose of this study is to propose a typology which traditional Hanok also can be build higher land use and traditional values as a modern housing type; First of all, clustered Hanok is formed by traditional houses and interior spaces in modern house., and its types are configured by lifestyle of modern and image element of traditional Hanok. This kinds of clustering Hanok can be seen from historical city, but the trends is a minority of the housing type and form. Now, the modern clustering Hanok, even though handful of cases, appears as sustainable housing type, its possibilities as a new housing should be more detailed researches. A elements of Modern cluster Hanok discused in layout, plan, envelopment of house, structure, roofs, and the coordination of the element can be so much diverse.

참죽 분말을 첨가한 쌀국수의 항산화 활성 및 품질 특성 (Antioxidant Activities and Quality Characteristics of Rice Noodle added with Cedrela sinensis Powder)

  • This study measured the functionality and quality characteristics of rice noodles pulverizing Cedrela sinensis leaves, whose antioxidant effects and various bioactive components were confirmed, and then producing rice noodles with different amounts of Cedrela sinensis powder. Total phenolic contents of Cedrela sinensis rice noodles, the control group lowest phenolic content, significantly increased as the amount of Cedrela sinensis powder increased. DPPH free radical scavenging activity was lowest in the control group and significantly increased as Cedrela sinensis powder content increased. In the sensory evaluation, all items significant differences, and 1% content specimen showed the highest values overall acceptability including color, appearance, taste and texture but not flavor. The possibility of developing rice noodles with Cedrela sinensis powder and rice noodles with functionality were confirmed through the above results.

The Effects of Attitude, Subjective Norm, and Behavioral Intention on Perceived Values in Traditional Marketplaces

  • Purpose: Traditional markets have served as important locations for social-cultural and economic activities. It is a hub of economic transactions and where people gather and exchange information and goods, while also serving as the center of social activities, including commercial exchanges. Accordingly, this study aimed to contribute to the studies on the perceived value in traditional markets for customers in different aspects. Research design, data, and methodology: To analyze the proposed model, data was collected from 456 respondents and analyzed with SPSS 21.0 and AMOS 21.0. The data was analyzed with structural equation modeling (SEM) using path analysis. Results: According to the results of the analysis, the perceived value comprises utilitarian value, emotional value, economic value, and social value, all of which had a positive impact on attitude. Emotional value and social value had a positive impact on subjective norms, while utilitarian value and economic value did not have an impact on subjective norms. Also, attitudes and subjective norms were found to have a positive impact on behavioral intention. Conclusions: Through this study, the value that the traditional markets need to provide to consumers have been identified. Traditional markets should develop into places that can provide value for their consumers.

한의학 전통 지식 데이터베이스 관리 시스템 현황 (Currently Provided Database Management System of Traditional Korean Medical Knowledge)

  • Objectives: The objective of this study is to investigate and valuate currently provided database management systems (DBMS) of traditional Korean medical knowledge. Methods: We searched DBMS on the web and smart device application markets (Apple App Store and Google Play Store). Key words for searching were 'traditional medicine', 'acupuncture', 'moxibustion', 'herbal medicine', and '한의학'. We looked into each DBMS to find out its scopes and limits, and each was valuated according to its functionality, accessibility, and utility. Results: 186 DBMS of traditional Korean medical knowledge were investigated and 91% of them were applications for smart devices. Almost all DBMS provided acupuncture and herb information, and a small amount of DMBS provided prescription and research paper information. Functionality, accessibility, and utility valuation were performed by using scoring system from 0 to 2. Mean values of functionality, accessibility, and utility were 0.86, 1.29, and 1.09. Conclusions: On the whole, high accessibility and low functionality were found, and various data-calculating functions were not implemented. Further researches and developments about traditional Korean medical knowledge DBMS are necessary to provide correct traditional Korean medical information and to support the studies about Korean medicine.
