각종 약용 식물 첨가가 전통 인삼주의 품질 특성과 생리기능성에 미치는 영향 (Effects of Medicinal Plants on the Quality and Physiological Functionalities of Traditional Ginseng Wine)

  • 고부가가치를 가진 전통 인삼주를 개발하기 위하여 각종 약용식물들의 첨가가 인삼주의 품질과 생리기능성에 미치는 영향을 조사하였다. 먼저 전통 인삼주 제조용 최적효모를 선발하기 위하여 2종류의 시판 알코올발효효모와 청주제조용 Saccharomyces cerevisiae를 이용하여 인삼주를 제조한 결과 시판효모인 Fermivin으로 발효시킨 전통 인삼주가 에탄올 함량이 17.0%로 비교적 높았고 기호도도 제일 우수하였다. 또한 각종 약용식물첨가가 전통 인삼주의 품질에 미치는 영향을 조사한 결과 시판효모인 Fermivin을 0.4%, 시판곡자와 정제효소를 각각 g당 36sp씩 2:1의 비율로 혼합하여 담금한 주모에 1% 인삼과 0.5%의 하수오와 갈근을 첨가하여 $25^{\circ}C$에서 20일간 발효시킨 인삼주가 에탄올함량이 16.8%로 제일 높았고 기호도도 제일 우수하였다. 최적 발효일수를 결정하기 위하여 발효 중 생리기능성의 변화와 기호도를 조사한 결과 발효 20일에 항고혈압활성을 나타내는 안지오텐신전환 효소 (ACE)저해활성이 78.9%로 높았고 기호도도 제일 우수하였다. 그러나 HMG-CoA reductase 저해활성은 발효 15일에 8.2%, 20일에 9.2%를 보였을 뿐 여타의 생리기능성은 없거나 매우 미약하였다. 이상의 결과를 종합하여 볼 때 항고혈압활성이 우수한 고급 전통 인삼주를 제조하기 위해서는 시판곡자와 정제효소를 각각 g당 36sp씩 2:1로 혼합하여 증자미와 물과 시판효모인 Fermivin 0.4%와 인삼 1%로 1차 담금하여 $25^{\circ}C$에서 4일간 발효시킨 후 갈근과 하수오를 각각 0.5%첨가하여 다시 $25^{\circ}C$에서 16일간 발효시키는 것이 제일 좋은 것으로 사료된다.

  • 본 연구는 인삼의 가공방법을 개발하고 제품을 다양화하기 위해 우리나라의 전통주인 탁주로 인삼을 증자한 후 홍삼의 항산화성 및 아질산염 소거능, 항암효과를 비교 연구하였다. $A1\~~A9$시료의 $60\%$ 에탄올 추출물에서의 DPPH 라디칼 소거효과는 1,000 ppm에서 인삼의 증자 횟수와 비례하여 증가하였고, 특히 A3에서 $79.5{\pm}3.3\%$로 라디칼 소거율이 뚜렷하게 증가함을 보였다. 아질산염 소거능은 pH 1.2에서 W.G는 $25.9{\pm}4.4\%$, R.G는 $12.9{\pm}1.1\%$, $A1\~A9$$26.2{\pm}0.1\~56.1{\pm}0.5\%$로 증자 횟수가 증가할수록 높은 아질산염 소거능을 나타냈다. 인체유래 간암세포(Hep3B)에서의 항암효과로 실험에서 W.G는 에탄올 추출물 5,000 ppm으로 처리했을 때, $19.6{\pm}4.5\%$로 나타나 증식 억제율이 미미하였으나, R.G는 에탄을 추출물 5,000 ppm으로 처리했을 때 $54.5{\pm}6.1\%$를 나타냈으며, A9에서는 $96.3{\pm}2.4\%$로 높은 항암효과 가 관찰되었다. 이상의 결과로 볼 때 탁주를 이용한 증자홍삼이 일반 홍삼 및 백삼보다 본 실험의 항산화 및 항암 system(in vitro)을 이용하여 실험한 결과 더 높은 항암 및 항산화 효과를 나타내었다.

  • This study was performed to develop new processing methods and products from steamed ginseng with rice wine. The brownnes, turbidity and the total ginsenoside in ginseng were examined All the values of examined premonitory materials, intermediate products, coloring matters and turbidity were increased as the steaming continued The quantity of total ginsenoside was increased when the steaming with rice wine continued in A1 - A9($1^{st}$ traditional rice wine steamed red ginseng: $A1{\~}9^{th}$ traditional rice wine steamed-red ginseng:A9). The quantity of ginsenoside-Rc, ginsenoside-Rd, ginsenoside-Re in Al were increased as the steaming continued. The quantity of ginsenoside-$Rg_2$ and ginsenoside-$Rg_3$ was increased when the number of steaming increased.

The Bioconversion of Red Ginseng Ethanol Extract into Compound K by Saccharomyces cerevisiae HJ-014

  • A ${\beta}$-glucosidase producing yeast strain was isolated from Korean traditional rice wine. Based on the sequence of the YCL008c gene and analysis of the fatty acid composition, the isolate was identified as Saccharomyces cerevisiae strain HJ-014. S. cerevisiae HJ-014 produced ginsenoside Rd, $F_2$, and compound K from the ethanol extract of red ginseng. The production was increased by shaking culture, where the bioconversion efficiency was increased 2-fold compared to standing culture. The production of ginsenoside $F_2$ and compound K was time-dependent and thought to proceed by the transformation pathway of: red ginseng extract ${\rightarrow}Rd{\rightarrow}F_2{\rightarrow}$ compound K. The optimum incubation time and concentration of red ginseng extract for the production of compound K was 96 hr and 4.5% (w/v), respectively.

수도권 지역 외식업계 종사자의 약주 및 동반 음식에 대한 인식 조사 (Perception of Korean Rice Wine and Food Pairings among Foodservice Employees in Seoul Metropolitan Area)

  • The present study was performed to obtain data that could be used to popularize yakju(Korean traditional rice wine) by surveying how well rice wine goes with pairing foods. The survey was given to 302 men and women living in the Seoul and Gyunggi areas and work in the food service industry. The Jeon group, Gui group, Jeongol and Jjigae group, Pyeonyuk and Bossam group, and Muchim group were selected as menu items that go well with available rice wines. The survey aimed to identify foods that go well with four rice wines with different sensory characteristics. The survey results showed that both men and women replied that rice wines with Nuruk aroma and Nuruk taste go well with the Jeon group, rice wines with sour and flower aromas and common characteristics go well with the Muchim group, and rice wines with sweet and fruit tastes go well with the Muchim group. However, men and women had different opinions on rice wines having ginseng, soil, and herbal medicine aromas. Men replied that such rice wines go well with grilled meat, whereas women replied that these rice wines go well with Pyeonyuk and Bossan groups.

  • Chemical and sensory profiles of 5 Korean commercial rice wines (yakju) were developed using descriptive, physicochemical, and volatile analyses. Color, 6 aroma, and 5 taste attributes of these rice wines were evaluated by a panel of 13 judges. Sample wines were analyzed for titratable acidity, ethanol content, pH, Hunter colorimeter value, organic acids, and free sugars. Volatile analysis of the samples revealed the presence of 2 acids, 7 alcohols, 19 esters, and 5 miscellaneous compounds. Based on principal component analysis of the descriptive data, rice wines were primarily separated along the first principal component, which accounted for 57% of the total variance between the rice wines with high intensities of 'color' and 'sweet aroma' versus 'ginseng' aroma.

  • To develop a new traditional Gugija tagju, various koji were prepared using several starch sources along with Aspergillus awamori var. kawachi, and then their effects on the quality of the tagju were investigated. Ethanol contents(11.1${\sim}$13.8%) were not significantly different among the Gugija tagju made from the various types of koji, whereas the tagju made using non-glutinous rice koji had the best total acceptability. The addition of 1% Gugija extracts into the mash increased its total acceptability and anti-hypertensive angiotensin I-converting inhibitory activity, and the optimal fermentation period for brewing the Gugija tagju was 10 days.

  • Investigated kinds and utilization frequency for traditional food and Particular food to systematize Gwangju city and Chollanamdo area traditional food culture. Awareness for traditional food had pride because taste is various, and did that must use much when was festive day. Investigation subject were feeling necessity about accession, development of traditional food, and manufacture of traditional food, succession did that must take charge in home. Characteristic of taste for Gwangju city, Chollanamdo food was deep taste. Difference between variable was significant that age, religion that have pride about traditional food, attainments in scholarship, monthly income that used time much traditional food, degree that give from traditional food to snack is age, attainments in scholarship, years of married life, religion, reason that give snack to traditional food is daughter-in-law order, kind of traditional food that give to snack is age, monthly income mouth, opinion about accession and development of traditional food is age, religion, daughter-in-law order, reason that must inherit and develop traditional food is attainments in scholarship, time that eat much traditional food is attainments in scholarship, a person, medium that learn cuisine of traditional food is age, opportunity that is been interested to traditional food is age, attainments in scholarship, years of married life. By utilization rate of food-tasting food subdivisions of the season, used much by rice-cake soup, fermented rice punch, order of cake made from glutinous rice New Year's Day, by herbs, Gimgui, Ogokbap's order January Full Moon Day on the lunar calendar. By a cake made in the shape of a flower, azalea honeyed juice mixed with fruits as a punch order to Samjitnal, by beans panbroiling, dropwort raw order Buddha's Birthday, Tano Festival uses Charyunbyeong and used Tteoksudan in Yudu and used much by young chicken soup with ginseng and other fruits, watermelon order period of midsummer heat. Used songpyon and fermented rice punch in Full-moon Harvest Day, and Junggujeol used Chrysanthemum griddle cakes made in flower Pattern, and red-bean gruel taken on the winter solstice, and Nappyeongjeolsik was utilizing Goldongban. Pyebaek food utilization ratio was high the utilization rate by chestnut, jujube, chicken, wine order. The contributiveness food utilization rate was high the utilization rate by rice cake, dried croaker, fruit, oil-and-honey pastry order. The large table food utilization rate was high the utilization rate by fermented rice punch, fruit, steamed short-ribs order.

안동 권씨 충재 권벌 종가음식의 상품화 연구 (Study on Ritual Food Bulcheonwi's Commercialization of Andong Kwon Clans of Choongjae Kwonbeol's Head Family)

  • This study was conducted on the head family house of Panseogong coterie of Andong Kwon clans in Daksil village, Bongwha gun, Kyungbuk: historical sources survey and field visit over four rounds were conducted from March to June 2014. In-depth interview, storytelling, and nutrition facts were used as methods of research using 49 participants, and the potentials of trend goods were the main purpose of this research. The specialties of bongwha prefecture in the Chosun Dynasty were pine nut, manna lichen, ginseng, sweetfish, and wild honey. Ritual food bulcheonwi's offerings a feature in Choongjae Kwonbeol's head family - were sacred wine, me, gang, otang, myun, myunjeok, pyunjeok, pyunchung, pyun, po, chungpomook, dojeok, sookchae, ssam, chimchai, sikhye, chogwa, silgwa, soojunggwa, etc. The ritual foods of bulcheonwi's head family house Choongjae Kwonbeol were commercialized through storytelling. Choongjae Kwonbeol's ritual ceremonies, recognized for their national royalty, were reorganized as the traditional Korean table settings, so that the Korean people could easily access them. The special meal called "Geumgyeporansang" represented the head family house foods' essence to share and serve others through the Dacshil village's natural beauty, Bonghwa's local ingredients, and festivities after the "Chungjae Gwunbal Bulchun" rituals. The ritual foods called "Cheongamjungsang", utilizing "Chungjae Gwunbal Bulchun" rituals, were represented in the form of a lunch box: such foods illustrate the classical scholar's mindset that enjoys the nature and arts through education and virtue.
