This study was conducted to investigate feeding management and milk production in domestic organic dairy farms and find out ways to overcome difficulties in organic dairy farms. The number of domestic organic dairy farms was 35, which representing 0.57% among 6,068 of total dairy farms in 2011. Eleven farms among 35 organic dairy farms were surveyed. Average total raising head was 142, composed of 69 milk cow, 13 dry cow and 60 heifer and calf. The ratio of cow replacement was 42.4% in surveyed organic dairy farms. Among surveyed farms, 14.3% showed under 20kg of milk production, 57.1% represented 25~30kg of milk and 28.5% produced more than 30kg of milk. Average milk fat percentage in surveyed organic farms was 3.3%, which was lower than 4.04% milk fat percentage of whole country (2010). Based on bacterial counts (5,775 CFU/ml) and somatic cell counts (192,500 number/ml), milk quality appeared excellent in surveyed farms. 90% of surveyed farms agreed that organic milk production increased income. Among reasons for switching to organic dairy farm, environment-friendly farm management was the highest reason (54.5%). However, 45.5% of surveyed farms suffered difficulty in supply of organic feed. Therefore, stable supply of organic feed will be necessary to expand organic dairy farm in the future.

A non-thermal pasteurization technology, high Pulsed Electric Field (PEF) has been thought to be a new alternative processing technology instead of heating. The objective of this study was to examine and compare the effect of PEF and High Temperature Short Time (HTST) treatments on the physicochemical, microbiological and sensory characteristics of citrus juices. Total sugar and titratable acidity values of fresh citrus juice and two treatments were not significantly different each other at p<0.05. The concentration of vitamin C in fresh citrus juice $(31.2{\pm}0.59\;mg%)$ was not significantly different with the value of PEF treatment $(29.4{\pm}0.75\;mg%)$ but was significantly higher than the value of HTST treatment $(27.4{\pm}0.75\;mg%)$. The color values (L, a, and b) in PEF treatment were significantly lower than the fresh citrus juice, but were higher than the values of HTST treatment. Both total bacterial cell counts $(6.65\;{\pm}\;0.08\;log_{10}(cfu/mL))$ and yeast counts $(7.79{\pm}0.07\;log_{10}(cfu/mL))$ in fresh citrus juice were significantly reduced by PEF $(1.39{\pm}0.14,\;2.42{\pm}0.1\;log_{10}(cfu/mL))$ as well as HTST treatment (0, 0). PE activity of fresh citrus juice $(1.3{\pm}0.12\;units/mL)$ was significantly reduced by PEF treatment $(0.11{\pm}0.01\;units/mL)$ and was totally inactivated by HTST treatment. Sensory evaluation scores in flavor, taste and overall acceptability between the fresh and PEF treated citrus juices $(7.2{\sim}7.5)$ were not significantly different but the values of HTST treatment $(5.1{\sim}5.8)$ were lower than others. Consequently, PEF treatment is thought to be a good alternative pasteurization method for fresh citrus juice to HTST treatment due to its strong pasteurization effect, reduced destruction of nutrients and good sensory characteristics.

We explored the effects of curing and smoking conditions on the shelf life of Dombaeki (shark meat). Dombaeki cured for 12 h in an aqueous solution containing (per 100 ml) salt 5.6 g, sugar 14 g, and garlic powder 0.6 g, showed the best sensory quality among various samples cured for 0, 3, 6, 9, 12 or 24 hours. The optimum conditions for preparation of smoked Dombaeki (SD) were drying at $60^{\circ}C$ for 30 min, followed by cooking at $80^{\circ}C$ for 30 min and smoking at $65^{\circ}C$ for 40 min, as judged by sensory evaluation of taste, color, flavor, texture, and overall acceptability. The volatile basic nitrogen content of air- or vacuum-packed unsmoked Dombaeki (NSD) was above 20 mg% after storage for either 12 days or 5 weeks. However, the nitrogen contents of air- and vacuum-packed SD were less than 20 mg% after either 21 days or 10 weeks of storage at $10^{\circ}C$. The DPPH free radical-scavenging ability of SD (73.9%) was significantly higher than that of unsmoked meat (4.54%). The total polyphenol content of SD (745.6 g/g) was about 4-fold greater than that of unsmoked meat (179.5 g/g).The viable bacterial count of air- or vacuum-packed unsmoked meat was over $10^6\;CFU/g$ after storage for either 12 days or 5 weeks. However, air- or vacuum-packed SD had counts under $10^4\;CFU/g$ at all storage times tested. Changes in coliform bacterial levels paralleled those of total viable cells. The sensory quality (taste, color, flavor, appearance, texture, and overall acceptability) of SD was significantly better than that of NSD.
A bacterium, identified as $Bacillus$$amyloliquefacies$, CNL-90 using 16S rDNA analysis, was isolated from malt grain. The optimal activities of its ${\alpha}$-amylase and protease were observed at pH 6 and $60^{\circ}C$, and at pH 6 and $50^{\circ}C$, respectively although their activities remained stable at pH 7 and $40^{\circ}C$for ${\alpha}$-amylase and at pH 7 and $50^{\circ}C$ for protease. After solid-state fermentation of $B.$$amyloliquefacies$, CNL-90 on wheat bran for 72hr or 144hr, the ${\alpha}$-amylase and protease activities were 170,000 and 290,000 units/kg, and 290,000 and 310,000 units/kg, respectively. The viable bacterial cell counts were $1.5{\times}10^9$ CFU/g and $2.2{\times}10^9$ CFU/g at 72hr and 144hr of the solid-state fermentation, respectively. A feeding trial with a total of 127 piglets was also conducted. The animals were divided into two groups: an experimental group fed with the fermented product (63 piglets) and a control group (64 piglets). The growth rate of the experimental group was 6.66% higher than that of the control group (P<0.05). The results of this study indicate that the ${\alpha}$-amylase and protease from $B.$$amyloliquefacies$, CNL-90 can be used for industrial applications due to their activity in production of carbohydrate hydrolysates.
The objective of this study was to evaluate the potential of an alumninosilicate clay, marketed under the trade name Biotite V, to improve growing-finishing pig performance and to determine its effects on nutrient digestibility and excretion. Sixty crossbred pigs (22.3${\pm}2.7kg$, Camborough 15 Line female${\times}$Canabred sire) were assigned on the basis of sex, weight and litter to one of four dietary treatments in a $2{\times}4$ (two sexes and four treatments) factorial design experiment. The experimental diets were based on barley and soybean meal and contained 0, 0.25, 0.5 or 0.75% biotite during the growing period (22.3-60.5 kg) and 0, 0.5, 1.0 or 1.5% biotite during the finishing period (60.5-110.3 kg). Each pig was allowed access to its own individual feeder for 30 min twice daily (07:00 and 15:00 h). Individual pig body weight, feed consumption and feed conversion were recorded weekly. The pigs were slaughtered at a commercial abattoir when they reached an average weight of 110.3 kg. Carcass weight was recorded and dressing percentage calculated. Carcass fat and lean measurements were obtained with a Destron PG 100 probe between the 3rd and 4th last ribs, 70 mm of the midline. Total tract digestibility coefficients for dry matter, energy, nitrogen and phosphorus were determined using three males and three females per treatment starting at an average weight of $52.2{\pm}3.8kg$. These pigs were housed under identical conditions as those used in the growing stage and were fed the same diets modified only by the addition of 0.5% chromic oxide as a digestibility marker. Over the entire experimental period (22.3-110.3 kg), daily gain was unaffected (p>0.05) by the inclusion of biotite in the diet. There was a cubic response for feed intake (p=0.06) and a quadratic response (p=0.07) for feed conversion due to biotite. Feeding biotite produced no significant (p>0.05) linear or quadratic effects on any of the carcass traits measured. Dry matter digestibility decreased linearly (p=0.02) with increasing levels of biotite in the diet. However, digestibility coefficients for energy, nitrogen and phosphorus were unaffected (p<0.05) by biotite inclusion. Lactobacilli and enterobacteria numbers were unaffected by inclusion of biotite while Salmonella was not detected in any of the fecal samples. The overall results of this experiment indicate that biotite inclusion did not reduce fecal excretion of nitrogen or phosphorus and failed to improve nutrient digestibility. Neither growth rate nor carcass quality was improved while a modest improvement in feed conversion was observed at lower levels of inclusion. Based on the results of this experiment, it would be difficult to justify the routine inclusion of biotite in diets fed to grower-finisher pigs. Whether or not a greater response would have been obtained with pigs of a lower health status is unknown.
Two experiments were conducted to evaluate nutritive value of cell mass from lysine production (CMLP) as a protein supplement for ruminants. In each experiment, animals were fed a diet containing 40% of forages and 60% of concentrates, mainly composed of rice straw and ground corn, respectively, to meet the maintenance requirements, and the diets were formulated to supply equal amounts of energy and nitrogen among treatments. In order to investigate the effect of CMLP on ruminal fermentation (Experiment 1), three Korean native goats weighing $26.1{\pm}1.4kg$ were allotted into individual cages with a $3{\times}3$ Latin square design. Each animal was fed one of three protein sources (CMLP, soybean meal (SBM), and urea). Rumen pH, bacterial and fungal counts, volatile fatty acid concentrations and acetate to propionate ratio were not significantly different among treatments. Concentration of propionate, however, was higher in SBM treatment (14.1 mM) than in CMLP (8.7 mM) or urea (9.3 mM) treatments. There was significantly more branch-chain volatile fatty acid production in CMLP (1.9 mM) and SBM (1.8 mM) treatments than in urea (1.3 mM) treatment. The number of protozoa was the highest in urea treatment, followed by CMLP and SBM treatment with significant differences. A metabolic trial (Experiment 2) was conducted to measure in vivo nutrient digestibility and nitrogen retention in Korean native goats fed CMLP and SBM. Two heavy ($35.0{\pm}1.2kg$) and two light ($25.0{\pm}0.9kg$) Korean native goats, caged individually, were used in this experiment. A heavy and a light animal were paired and supplemented with either CMLP or SBM. The animals fed CMLP showed a trend of lower total tract digestibility in all the nutrients measured; however, there was no statistical significance except for digestibility of ether extract. Nitrogen digestibility of CMLP was estimated to be about 7% units lower than that of SBM. There was a tendency for lower nitrogen retention in CMLP treatment (35.9%) compared to SBM treatment (42.3%). In summary, CMLP can be a good protein source for ruminant animals from nutritional and economic perspectives and may replace some, if not all, of SBM in a diet without losing nitrogen utilization efficiency. Further research is warranted for investigating the effect of CMLP fed with easily fermentable forage and the effective level of CMLP for replacing SBM.
The increase in size and numbers of general hospitals in the process of conspicuous development of modem medicine has been accompanied by a serious increase in hospital acquired infections. Hospital aquired infections cause pain and discomfort, may threaten life, adds an economic burden, and delays recovery and return to society. Even though respiratory hospital infection rates resulting for tracheostomy and respiratory inhalation therapy, may be low, they are serious because of their bad prognosis and high mortality rates. This study was designed to assess certain aspects of respiratory infections of patients with a tracheostomy and thus provide baseline data for further research related to preventive or therapeutic nursing interventions. The specific objectives were to determine the incidence of colonization in the trachea, clinical signs, type of colonized bacteria and sensitivity to antibiotics. Data were collected from July 1 to December 10, 1989 at two university Hospital in Seoul. Subjects were 20 patients with a tracheostomy admitted to the Intensive Care Unit or Cerebral Vascular Accident Center. Clinical signs related to respiratory infection were observed using a checklist based on previous study outcomes. Bacterial culture, sensitivity test to antibiotics, WBC counts and chest X-ray were also performed. Cultures were done on the day of tracheostomy, and on the third, fifth and seventh day. Cultures were then done on seventh days after the first colonization. The results were as follows : 1. The incidence of bacteria colonization in a week was 90%(18 patients) 50% (10/20 patients) on the day of tracheostomy, 70%(7/10 patients) on the third day, and 0% on the fifth day, and 33%(1/3 patient) on the seventh day. 3 of 18 patients (16.7%) were colonies of mixed growth isolated. 2. The observed clinical signs related to respiratory infection were high fever 38.9%(7 patients), prulent secretion 16.7%(12 patients) and infiltration seen on chest X-ray 33.3%(6 patients). 3. The total number of types of bacteria isolated among the 18 subjects was 21 ; gram negative 71.4%, gram postive 28.6%. The dominant bacteria type was Staphylococcus aureus(5 cases) for gram(equation omitted) and Pseudomonas aeruginosa(3 cases), Klebsiella (4 cases), Enterobacter(3 cases) for gram (equation omitted). The results of culture on 7th day after the first colonization, 6 cases showed same type of bacteria, 3cases showed different type of bacteria and 1 cases showed no growth. 4. The sensitivity tests to antibiotics showed that Pseudomonas aeruginosa and Staphylococcus were strongly resistant to most kinds of antibiotics, but Klebsiella and the rest of gram negative bacteria were moderately sensitive to antibiotics.

Objective: This study aimed to evaluate the microbiological and cellular milk profile for the diagnosis of subclinical mastitis in female buffaloes and to assess risk factors for predisposition of the disease. Methods: Analyses were carried out by standard plate count (SPC), identification of species and antibiotic resistance, somatic cell count (SCC), electrical electrical conductivity of milk (ECM), and lactoferrin content in milk. Teat cups were swabbed to evaluate risk factors, observing hyperkeratosis, milking vacuum pressure and cleanliness of the site. Hence, 30 female buffaloes were randomly selected (15 from a group in early lactation and 15 in late lactation). Results: The most common bacteria in the microbiological examination were Staphylococcus spp., Streptococcus spp. and Corynebacterium sp. In the antibiotic sensitivity test, 10 (58.82%) of the 17 antibiotics tested were sensitive to all isolates, and resistant bacteria were Streptococcus uberis, Streptococcus dysgalactiae, Streptococcus haemolyticus, and Escherichia coli. It was observed that positive samples in the microbiological examination showed total bacterial count between $9.10{\times}10^3$ to $6.94{\times}10^6$ colony forming units/mL, SCC between 42,000 to 4,320,000 cells/mL and ECM ranging from 1.85 to 7.40 mS/cm. It was also found that the teat cups had high microbial counts indicating poor hygiene, and even faults in the cleanliness of the animals' waiting room were observed. It is concluded that values of SCC above 537,000 cells/mL and ECM above 3.0 mS/mL are indications of mammary gland infection for this herd; however, the association of these values with a microbiological analysis is necessary to more accurately evaluate the health status of mammary glands with subclinical mastitis. Conclusion: Through phenotypic characterization of bacteria involved in the samples, the genera Staphylococcus spp., Streptococcus spp., and Corynebacterimum bovis were the most prevalent in this study. Faults in environment and equipment hygienization are factors that are directly associated with mastitis.
This study was conducted to investigate optimal processing conditions, cooking characteristics, antioxidant activity and packaging method of rice coated with bamboo extract. In sensory evaluation of cooked rice, rice coated with bamboo ethanol extract was higher smell and taste than the other extraction methods, but texture showed no difference. As coating concentration increasing, L, a and b values of coated rice were increased. But L value of coated rice after cooking was decreased. On sensory evaluation of cooked rice, smell and taste were best in 10$\%$ coated with bamboo ethanol extract. Mineral contents of coated rice with bamboo extract were higher than those of uncoated. Water absorption and volume expansion of coated rice were lower than uncoated rice but showed higher toyo value. Hardness, gumminess and chewiness values of cooked rice with coated rice were higher than uncoated rice. Antioxidant activity of coated rice was higher than uncoated rice about twice times. Toyo values and alkali digestive values of coated rice were highest in paper package than the other packaging conditions. The total bacterial counts of rice coated with bamboo extract after cooking was lower than uncoated rice during storage at 25 and 6O$^{\circ}C$.
To reduce saft content of kochujang, various combinations of sub-materials such as ethanol mustard and chitosan were added to kochujang, and their effects on microbial characteristics, enzyme activities, and physicochemical characteristics of kochujang were investigated after 12 weeks of fermentation. Activities of ${\beta}$-amylase and pretense were low in ethanol-mustard-chitosan-added kochujang, whereas no significant difference was observed in ${\alpha$-amylase activity among all groups. Number of viable yeast cells decreased remarkably in mustard-added kochujang during late aging period, and anaerobic bacterial counts decreased in sub-material-added groups. Consistency of kochujang increased by addition of sub-materials, and oxidation-reduction potential was low in chitosan-added group. Mustard-chitosan-added kochujang showed lowest increase in total color difference(${\Dalta}E$) and decrease in water activity. PH of kochujang wns highest in mustard-chitosan-added kochujang, resulting in significantly increased titratable acidity. Addition of sub-material increased reducing sugar contents of kochujang, whereas ethanol production was significantly repressed in mustard-chitosan-added kochujang. Amino nitrogen content was Highest in mustard-chitosan-added kochujang during late aging period, whereas ammonia nitrogen content was lower in ethanol-mustard-added kochujang. Results of sensory evaluation indicated ethanol-mustard-added kochujang was more acceptable than other groups in taste and overall acceptability.

④ NDSL에서 제공하는 콘텐츠를 무단 복제, 전송, 배포 기타 저작권법에 위반되는 방법으로 이용할 경우
저작권법 제136조에 따라 5년 이하의 징역 또는 5천만 원 이하의 벌금에 처해질 수 있습니다.
제 14 조 (유료서비스)
① 당 사이트 및 협력기관이 정한 유료서비스(원문복사 등)는 별도로 정해진 바에 따르며, 변경사항은 시행 전에
당 사이트 홈페이지를 통하여 회원에게 공지합니다.
② 유료서비스를 이용하려는 회원은 정해진 요금체계에 따라 요금을 납부해야 합니다.
제 5 장 계약 해지 및 이용 제한
제 15 조 (계약 해지)

제 16 조 (서비스 이용제한)
① 당 사이트는 회원이 서비스 이용내용에 있어서 본 약관 제 11조 내용을 위반하거나, 다음 각 호에 해당하는
경우 서비스 이용을 제한할 수 있습니다.
- 2년 이상 서비스를 이용한 적이 없는 경우
- 기타 정상적인 서비스 운영에 방해가 될 경우
② 상기 이용제한 규정에 따라 서비스를 이용하는 회원에게 서비스 이용에 대하여 별도 공지 없이 서비스 이용의
일시정지, 이용계약 해지 할 수 있습니다.
제 17 조 (전자우편주소 수집 금지)
회원은 전자우편주소 추출기 등을 이용하여 전자우편주소를 수집 또는 제3자에게 제공할 수 없습니다.
제 6 장 손해배상 및 기타사항
제 18 조 (손해배상)
당 사이트는 무료로 제공되는 서비스와 관련하여 회원에게 어떠한 손해가 발생하더라도 당 사이트가 고의 또는 과실로 인한 손해발생을 제외하고는 이에 대하여 책임을 부담하지 아니합니다.
제 19 조 (관할 법원)
서비스 이용으로 발생한 분쟁에 대해 소송이 제기되는 경우 민사 소송법상의 관할 법원에 제기합니다.
[부 칙]
1. (시행일) 이 약관은 2016년 9월 5일부터 적용되며, 종전 약관은 본 약관으로 대체되며, 개정된 약관의 적용일 이전 가입자도 개정된 약관의 적용을 받습니다.
