Hunter value ($L^*$, $a^*$, $b^*$) is a rapid and convenience method for compare with different skin color, but not suitable to compare quality with various grape cultivars. Color Index for Red Grapes (CIRG) is one of a simply convert method for grape skin color as numeric data, and many previously result showed that high correlation between CIRG index and various quality factors of grape. In this experiment, we measured CIRG index, total soluble solids (TSS), titratable acidity (TA), and total anthocyanin content on the grapes (Campbell Early, Heukbosuk, Kyoho) from the varaison to harvest. As a result, CIRG index and anthocyanin contents have an exponential correlation; r-square is each 0.8595 in the 'Campbell Early' and 0.8500 in 'Heukbosuk'. And TSS and CIRG index have a positive r-square, at the Campbell Early is 0.7758 and Heukbosuk is 0.7253. Also TA and CIRG index have a positive r-square, at the Campbell Early is 0.7279 and Heukbosuk is 0.6630. These results were shown that CIRG index is a reliable indicator for a none-destructive evaluation of the grape quality.

This study was conducted to examine the effect of light intensity and photoperiod of white LEDs as the artificial light source on the growth of leaf lettuce (Lactuca sativa L.) 'Seonhong Jeokchukmyeon' in a closed-type plant production system. Seedlings, transplanted at a density of $20cm{\times}20cm$ in a completely randomized design, were grown under white LEDs (FC Poibe Co. Ltd., Korea), at one of the 3 light intensities (100, 200, or $300{\mu}mol{\cdot}m^{-2}{\cdot}s^{-1}$), and each with one of 3 photoperiods [12/12, 18/6, or 24/0 (Light/Dark)]. Plants were cultured for 22 days under the condition of $21{\pm}2^{\circ}C$, $60{\pm}10%$ RH, and $400{\pm}50{\mu}mol{\cdot}mol^{-1}\;CO_2$. The greatest leaf length and width, fresh and dry weights, and total anthocyanin content were obtained in the 24/0 photoperiod, regardless of the light intensity. Length of the longest root, fresh and dry weights, and number of leaves were greater in light intensity of $200{\mu}mol{\cdot}m^{-2}{\cdot}s^{-1}$ than 100 or $300{\mu}mol{\cdot}m^{-2}{\cdot}s^{-1}$. Chlorophyll value was the greatest in the photoperiod 12/12 than 18/6 or 24/0. The results obtained suggest that plant grew the best kept by light intensity at 200 or $300{\mu}mol{\cdot}m^{-2}{\cdot}s^{-1}$, and photoperiod of 12/12 or 18/6.
The quality characteristics of strawberry jam containing different levels of sugar alcohols, such as xylitol, sorbitol and maltitol were compared with jam containing 35% of sugar only. Addition of 10-30% of xylitol did not influence pH and total acidity. The intensity of redness and amount of residual anthocyanin were increased according to increase of levels of xylitol, which showed a positive effect on color. However, the addition of more than 10% of xylitol resulted in negative changes in hardness and spreadmeter values. These and consumer preference results showed that the optimum amount of xylitol was less than 10%. Substituting sugar with 10% of xylitol and 25% of sorbitol, 10% of xylitol and 25% of maltitol or 10% of xylitol and 12.5% of sorbitol and maltitol did not change the pH, total acidity, hardness or spreadmeter value, but the redness and the amount of residual anthocyanin were still increased by these ratios. The most preferred ratio according to the sensory test was 10% of xylitol with 12.5% of sorbitol and maltitol each.
This study was carried out to investigate functional quality characteristics of extract obtained after sugar-leaching for 12 weeks (SLE) and extract obtained after lactic acid fermentation for 8 weeks (LFE) of mulberry leaves. The yield, sugar content, pH, and total acidity of SLE were 27%, 43 $^{\circ}Brix$, 4.6, and 0.45%. The yield, sugar content, pH, and total acidity of LFE were 166%, 33 $^{\circ}Brix$, 3.6, and 1.17% respectively. The lactic acid bacteria viable numbers ($1.2{\times}10^{10}$ CFU/ml) of LFE were more than those of SLE ($2.8{\times}10^2$ CFU/ml). The LFE expressed activities of hydrolytic enzymes (amylase, cellulase, pectinase, protease), but SLE did not express. The contents of acetic acid, citric acid, and malic acid of SLE were higher than those of LFE, but lactic acid content of LFE was higher than that of SLE. The main free sugars of SLE were glucose (200.93 mg/g), fructose (236.32 mg/g), and sucrose (18.41 mg/g), but LFE did not detect all free sugars. The contents of polyphenol, anthocyanin, and piperidine alkaloid of LFE were higher than those of SLE. ${\alpha}$-Glycosidase activities were inhibited 3.4% and 16.2% by SLE and LFE. These results suggest that lactic acid fermentation extraction is an effective method to increase the yield and contents of functional quality of mulberry leaves extract.
This study was carried out to improve the fruit color through ABA treatment and to determine the optimum harvest time for producing high quality fruits in 'Hongisul' grapes. Spraying of $1000 mg{\cdot}L^{-1}$ exogenous ABA at early verasion (70 days after full bloom, DAFB) brought increase of endogenous ABA and soluble solid contents and enhanced fruit coloration. So, it was possible to harvest ABA treated fruits from 85 days after full bloom (15 days after treatment) by accelerated anthocyanin content which increased continuously until 110 DAFB. An increase of soluble solid and decrease of total acidity appeared steadily with the onset of berry ripening. After 100 DAFB, soluble solid content and total acidity did not change significantly, but the berry firmness was suddenly decreased. Consequently, it was suggested that ABA treated fruits need to be harvested at about 100 DAFB because of their short period of marketing by over ripening. On the contrary, harvesting of untreated fruit was totally impossible at 85 DAFB because of their poor berry coloration. But it was possible to harvest them at 100 DAFB based on the soluble solid/acidity ratio, whereas the berry coloration was progressed poorly. On the other hand, the fruits harvested at 110 DAFB showed acceptable berry coloration but their berry firmness was dropped significantly coincide with overripening. Therefore, it was needed to develop an altered production system for improving coloration at around 100 DAFB in 'Hongisul' grapes.

Total polyphenolic compounds, DPPH radical scavenging activity, superoxide dismutase (SOD), vitamin A, C, E, flavonoid and anthocyanin of Rubus coreanus Miquel during maturation were investigated to expand the utilization of Rubus coreanus Miquel as functional food material. Physiological activities of unripened, middle-ripened and ripened fruit of Rubus coreanus Miquel were examined. The ripened fruit included higher contents of total polyphenolic compound compared with those of the other sample groups, unripened and middle-ripened fruit. SOD of unripened, middle-ripened and ripened fruit were 59.15, 80.05 and 95.03%, respectively. Scavenging concentration ($SC_{50}$) of unripened and middle-ripened fruit for 0.4 mM DPPH (1,1-diphenyl 2-picryl hydrazyl) was 2.3 mg/mL by weight, but only 1.6 mg/mL for ripened fruit. The vitamin A content of the Rubus coreanus Miquel was found to be lower as the fruit ripened; however, vitamin E showed the reverse pattern. In addition Rubus coreanus Miquel is a fruit which has a high vitamin C content regardless of maturity. The flavonoid contents of Rubus coreanus Miquel were in order of ripened fruit ($49{\mu}m/mg$)>middle-ripened fruit ($16.4{\mu}m/mg)$>unripened fruit ($15.4{\mu}m/mg$). Also, the contents of anthocyanin in ripened fruit were $394.50{\mu}m/mg$, which were higher than those of middle-ripened ($12.43{\mu}m/mg)$ and unripened fruit ($7.89{\mu}m/mg$).

The purpose of this study was to investigate antioxidant characteristics and anti-adipogenic effects of colored rice and brown rice extracts in 3T3-L1 adipocyte depending on cultivar (Josaengheugchal, Heugjinmi, Hongjinju, Geongganghongmi, Seolgaeng, Milyang 320, Sindongjin, Baegjinju). Colored rice and brown rice was extracted with 100% ethanol, followed by the analysis of polyphenol, flavonoid, anthocyanin, antioxidant, and anti-adipogenic activity. Total polyphenol and flavonoid content ranged from 6.86~314.08 mg GAE/g and 1.47~56.88 mg CE/g the highest total polyphenol and flavonoid content was observed in Heugjinmi cultivar. Anthocyanin composition was analyzed by HPLC, cyanidin-3-gluoside and peonidin-3-glucoside was found in black rice including Josaengheugchal and Heugjinmi. Also, the ABTS and DPPH radical scavenging activity of colored rice cultivars was higher than that of brown rice cultivars, the highest ABTS radical scavenging activity also was observed in Heugjinmi (128.20 mg TE/g). The anti-adipogenic effects of colored rice and brown rice extracts on differentiation of 3T3-L1 preadipocytes evaluated that extracts of Heugjinmi cultivar significantly reduced intracellular lipid accumulation. These results provide valuable information for the use of Korean colored rice cultivar as a functional food materials relative to anti-obesity.

The objectives of this study were to determine antioxidant activity of the methanolic extracts from some specialty rices and to investigate relationships between antioxidant activities and antioxidant contents in the extracts. ABTS (2,2-azino-bis-(3-ethylbenzothiazoline-6-sulphonic acid)) radical cation scavenging activity, inhibitory effect on lipid peroxidation, chelating activity, reducing power and inhibitory effect on xanthine oxidase have been used to investigate the relative antioxidant activity of the extracts from specialty rices. The concentrations of total polyphenolics, phytic acid, and anthocyanin in the extracts were measured by spectrophotometric methods and vitamin E analysis was carried out by HPLC. The methanolic extracts prepared from black and red rices showed higher antioxidant activities and contained higher antioxidant compounds compared with other rices, apparently due to their intense red-purple color. The correlation coefficient between total polyphenolic content of methanolic extracts and ABTS radical cation scavenging activity, reducing power, and inhibitory effect of xanthine oxidase were 0.9921, 0.9856, and 0.8032, respectively.

The effects of packaging treatments with either low density polyethylene (LDPE) or polypropylene (PP) films on the quality of leaf lettuce were evaluated. It was also stored within a plastic bag (LDPE and PP films) with 4 pelf orated holes (6mm diameter). Changes in weight loss, color difference, anthocyanin, chlorophyll, water content, and general appearance (shape of lettuce) ware investigated Total weight of leaf lettuce packaged within non-pelf orated films decreased slowly over the storage periods at 5 and $20^{\circ}C$. The weight loss of leaf lettuce showed no significant difference between non-pelf orated and perforated films at $20^{\circ}C$. General appearance in leaf lettuce stored at $20^{\circ}C$ was not significantly affected by packaging treatments with LDPE and PP films. The shelf life of non-packaged leaf lettuce at $5^{\circ}C$ was 8 days, whereas packaging treatments with LDPE and PP films showed freshness in leaf lettuce for 30 days of storage. Total chlorophyll and water contents of leaf lettuce packaged within pelf orated and non-pelf orated films decreased gradually during storage. However, no remarkable changes in color difference, levels of chlorophyll and anthocyanin, and water contents were observed in leaf lettuce packaged within perforated and non-pelf orated films. In this experiment, leaf lettuce packaged within LDPE or PP films without any punching holes at $5^{\circ}C$ was the most desirable for extending the quality. These results suggest that non-pelf orated packaging treatment in combination with low storage temperature could be effective in prolonging the shelf life of leaf lettuce
This study was carried out to investigate the quality characteristics and antioxidant activity of Sulgidduk (oriental-style rice cakes) prepared with different amounts (0%, 2%, 4%, or 6%) of maquiberry (Aristotelia chilensis) powder. The moisture content of treated Sulgidduk ranged from 37.75% to 38.79%, with no significant differences between treatment groups. The pH gradually decreased with the increasie in maquiberry powder. The soluble solid content did not show significant differences between groups. The lightness (L) value decreased, while redness (a) value increased with the increase in added maquiberry powder. Hardness of the control group was lower than those of the treatment groups. Consumer acceptance test results revealed no significant differences in smell, taste and overall acceptability scores. The total polyphenol and total anthocyanin contents were 8.66~262.71 mg GAE/100 g amd 0.01~9.76 mg C3G/100 g), respectively. Moreover, the polyphenol and anthocyanin levels increased with increasing levels of added maquiberry powder. In addition. reducing power and 1,1-diphenyl-2-picrylhydrazyl (DPPH) and 2,2'-azino-bis (3-ethylbenzothiazoline-6-sulfonic acid) (ABTS) radical scavenging activities significantly increased with increase in added maquiberry powder. Based on the above results, addition up to 6% maquiberry powder incorporated into Sulgidduk will meet the taste and functional needs for consumers.
