녹차분말 첨가 소시지의 아질산염 잔유량과 저장성 (Nitrite Contents and Storage Properties of Sausage Added with Green Tea Powder)

  • 돈육소시지에 녹차의 다양한 생리 기능성을 부여하고 소시지의 저장성과 품질을 유지하면서 아질산염의 사용을 감소시킬 수 있는지 알아보기 위하여 녹차 분말을 첨가하여 돈육 소시지를 제조하여 저장 중 품질 특성을 살펴보았다. 아질산염(50, 100, 150 ppm)과 녹차(0, 0.5, 1.0%)를 첨가한 총 9개 시험군의 소시지를 제조하여 1$0^{\circ}C$와 2$0^{\circ}C$에 나누어 저장하면서 아질산염, TBARS와 VBN 등 저장성을 검사하였다. 수분, 조단백, 조지방, 조회분 등 일반성분은 녹차와 아질산염 첨가에 의해 영향을 받지 않았다. 색깔은 녹차 첨가량이 많을수록 밝기와 적색도가 감소한 반면 황색도가 증가하였다. 소시지의 아질산 잔류량을 분석한 결과 아질산염 첨가량이 동일한 경우 녹차 첨가량이 많을수록 아질산 잔류량이 적어 녹차 첨가가 아질산 잔유량 감소에 도움이 되는 것으로 나타났다. 녹차의 첨가는 소시지 제조 초기 및 저장 중 TBARS 값을 유의적으로 감소시켰으며, 이러한 녹차의 TBARS 감소 효과는 낮은 농도의 아질산염을 사용한 경우에 더욱 감소효과가 컸다. 저장 중 휘발성 염기태질소(VBN) 함량도 녹차와 아질산염을 첨가한 군에서 낮은 값을 보였다. 이상의 결과로 보아 돈육소시지에 녹차를 첨가함으로써 아질산 잔류량을 감소시킬 수 있을 뿐 아니라 저장성을 크게 훼손하지 않고 아질산염의 사용을 줄일 수 있다고 사료된다.

식물성유와 동물성유 CLA가 유화형 Sausage의 지방산패도, 육색 및 지방산 조성의 변화에 미치는 영향 (Effects of CLA-vegetable Oils and CLA-lard on TBARS, Color and Fatty Acid Composition of Emusion-type Sausage)

  • Emulsion-type sausages were manufactured to investigate the effects of CLA-vegetable oils and CLA-lard on quality of emulsion-type sausage. Each treatments replaced pork back fat with CLA-sesame oil (CLA-SO), CLA-lard (CLA-LD) and CLA-safflower seed oil (CLA-SSO) were stored during 1, 7, 14, 21 and 28 days at 4$^{\circ}C$. The changes in physico-chemical properties, thiobarbituric acid reactive substances(TBARS) and fatty acid composition of each treatments were measured during 1, 7, 14, 21 and 28 days at 4$^{\circ}C$. The pH values of all treatments significantly(p<0.05) decreased as storage time increased. Sausage products containing CLA-vegetable oils showed higher pH value than that of CLA-lard among the treatments. Color a*-value of CLA-SSO was higher than that of other treatments. During storage, TBARS values of treatments were significantly (p<0.05) increased, sausage products containing CLA-vegetable oils showed lower (p<0.05) TBARS value than CLA-lard, and TBARS of sausage products containing CLA-SSO was the lowest. This result indicated that CLA concentration in emulsion-type sausage did affect the lipid oxidation stability. Fatty acids composition was changed by addition of CLA-vegetable oils and CLA-lard. All kinds of fatty acids content decreased whereas CLA content extremely increased by replacement of CLA-vegetable oils and CLA-lard. The level of CLA content in CLA-vegetable oils was higher than CLA-lard. It may be concluded that emulsion-type sausage could be manufactured using CLA-vegetable oils as a pork fat substitutor without any negative effects on general components or physico-chemical properties.

Comparing Physicochemical Properties, Fatty Acid Profiles, Amino Acid Composition, and Volatile Compounds in Dry-Cured Loin: The Impact of Different Levels of Proteolysis and Lipid Oxidation

  • The aim of this study is to compare the quality characteristics of dry-cured loins with different levels of proteolysis and lipid oxidation and to investigate the relationship between these factors on quality characteristics. The dry-cured loins were divided into four groups [proteolytic index (PI) and 2-thiobarbituric acid reactive substances (TBARS) of high levels (HH), PI of high level and TBARS of low level (HL), PI of low level and TBARS of high level (LH), and PI and TBARS of low levels (LL)] based on the proteolysis index and TBARS. Moisture, protein, and fat content were all significantly influenced by proteolysis and lipid oxidation (p<0.05). The total fatty acid content in the high proteolysis groups (HH and HL) was significantly lower than that in the low proteolysis groups (LH and LL; p<0.05). For total free amino acid content, HH was the highest, and LL was the lowest (p<0.05). On the other hand, there was no significant difference between HL and LH (p>0.05). In the amount of total volatile compounds, there was no significant difference between HH and HL (p>0.05), but LH and LL significantly differed (p<0.05). In conclusion, proteolysis and lipid oxidation can influence the quality characteristics of dry-cured loin. Additionally, proteolysis might be as influential in generating volatile compounds as lipid oxidation.

Effects of Addition of Herbs on Pork Patties during Storage

  • This study was conducted to investigate the effects of herbs (dill weed, fennel seed and rosemary) on color stability and lipid oxidation of ground pork patties during storage at $2^{\circ}C$ and $-20^{\circ}C$. Lipid oxidation was determined by the thiobarbituric acid reactive substances (TBARS) method. Fennel seed was identified as being the most effective ingredient in terms of meat redness (Hunter a-values) during storage at $2^{\circ}C$ (p<0.05). Patties treated with rosemary had lower Hunter a-values than control, and dill weed was the least beneficial in influencing meat redness, having significantly lower a-values than control patties. During frozen storage at $-20^{\circ}C$, no significant differences in a-values were observed between the control patties and those treated with fennel seed. Patties treated with rosemary had lower a-values than control and patties with dill weed had negative a-values throughout storage. The cooking process increased Hunter L-values and decreased a-values in all patty samples. TBARS values increased during storage. Rosemary displayed excellent antioxidative activity as evidenced by the completely inhibition of TBARS formation of cooked pork patties. Dill weed and fennel seed also exerted an intermediate but significant antioxidant effect during storage (p<0.05).

비타민 E가 쥐간 세포의 암화과정에서 태반형 Glutathione S-transferase(GST-P) 양성 병소와 항산화요소계에 미치는 영향 (Suppressive Effects of Vitamin E on the Induction of Placental Glutathione S-transferase(GST-P) Positive foci and Antioxidant Enzyme Activity in Rat Hepatocarcinogenesis)

  • The influences of dietary supplements of vitamin E on hepatocellular chemical carcinogenesis have been studied, Placental glutathione S-transferase(GST-P) positive foci area, antioxidant enzymes(superoxide dismutase(SOD), catalase, glutathione reductase, glutathione peroxidase, glutathione S-transferase(GST)), glucose 6-phosphatase(G6Pase) activities, and lipid peroxidation of mecrosomes(thiobarbituric acid reactive substances(TBARS) contents) were investigated. For is purpose , we used the murine chemical hepatocardinogenic procedure induced by modified Ito model, which consists of 200mg/kg body weight diethylinitrosamine (DEN) injection, 0.01% 2-acethlaminoflurene(2-AAF) feeding for 6 weeks, and partial hepatectomy on week 3. Weanling Sprague-Dawley male rats were fed pulverized Purina rat chow with 15, 000IU/kg diet vitamin E from initiation or promotion stages. We found that vitamin E supplement decreased the area of GST-P positive foci. Catalase, glutathione peroxidase, glutathione reductase. GST activities, and TBARS contents were decreased. On the other hand G6Pase activities were increased by vitamin E supplement. It seemed that vitamin E supplements helped endogenous defense systems against carcinogenesis by decreasing TBARS contents, $H_2O$$_2$ and organic peroxides. So, vitamin E seemed to protect cell from free radical damage in carcinogenesis. Anticarcinogenic effects of vitamin E were more effective at intiation that at promotion stage. These results suggest that vitamin E has suppressive effects on hepatocellular chemical carcinogenesis, probably through antioxidant effects against TBARS contents $H_2O$$_2$ and orgainc peroxides.

층꽃나무(Caryopteris incana Miq.) 추출물의 생리활성 (Biological activities of extracts from Caryopteris incana Miq.)

  • 본 연구에서 층꽃나무(Caryopteris incana Miq.)는 항산화, 피부미백 및 주름개선 활성을 측정하는 데에 사용되었다. 층꽃나무의 생리활성은 고형분 함량보다 첨가된 total phenolic compounds의 농도에 의해 영향을 받는 것으로 확인되어 이후 모든 실험은 층꽃나무로부터 추출한 물과 80 % ethanol 추출물의 total phenolic compounds 함량을 조절하여 실시하였다. 층꽃나무 추출물의 항산화 활성은 1,1-diphenyl-2-picrylhydrazyl (DPPH), 2,2-azinobis(3-ethylbenzothiazoline-6-sulfonic acid (ABTS), antioxidant protection factor (PF), Thiobarbituric acid reactive substances (TBARs)를 측정하였다. $200{\mu}g/mL$의 농도에서 물과 ethanol 추출물로 DPPH free radical 소거능을 측정한 결과 각각 84, 92 %의 활성을 나타내었고, ABTS radical 소거능은 물과 ethanol 추출물 둘 다 약 99 %의 활성을 나타내었다. PF를 측정한 결과 물과 ethanol 추출물이 각각 1.56, 1.67 PF 값을 나타내었고, TBARs는 각각 62, 82 %의 활성을 나타내었다. 주름개선 및 피부미백 활성을 측정하였을 때, $200{\mu}g/mL$의 농도에서 80 % ethanol 추출물이 물 추출물보다 눈에 띄게 높은 효과를 나타내었다. 주름개선과 연관된 elastase와 collagenase 저해활성은 ethanol 추출물에서 각각 58, 89 %로 측정되었다. 피부미백과 연관된 tyrosinase의 저해활성은 ethanol 추출물에서 13 %로 측정되었고, 수렴효과는 50 %로 측정되었다. 이러한 결과로 보아, 층꽃나무 추출물은 항산화 활성, 주름개선 및 미백효과가 우수하므로 기능성 화장품 원료의 새로운 자원이 될 것으로 기대되었다.

Oxidative Stress in the Heart of Rats Infected with Trypanosoma evansi

  • This study was conducted to investigate the occurrence of oxidative stress in the heart tissue of rats infected with Trypanosoma evansi. Rats were divided into 2 groups (A and B) with 12 animals each, and further subdivided into 4 subgroups (A1 and A2, 6 animals/each; and B1 and B2, 6 animals/each). Animals in the groups B1 and B2 were subcutaneously inoculated with T. evansi. Thiobarbituric acid reactive substances (TBARS), superoxide dismutase activity (SOD), glutathione S-transferase activity (GST), reduced glutathione activity (GSH), and non-protein thiols (NPSH) in the heart tissue were evaluated. At day 5 and 15 post-infection (PI), an increase in the TBARS levels and a decrease in the SOD activity (P<0.05) were observed. GSH and GST activities were decreased in infected animals at day 15 PI (P<0.05). Considering the proper functioning of the heart, it is possible that the changes in the activity of these enzymes involved in the oxidative stress may be related, at least in part, in the pathophysiology of rats infected with T. evansi.

브로일러의 혈액지질, 닭고기의 지방산 및 지방산패도에 관한 파리번데기 동충하초 급여효과 (Effect of feeding diet containing Cordyceps with fly pupa on blood lipid, fatty acid and TBARS in broiler chickens)

  • The objective of this study was to determine the feeding effect of a diet containing Cordyceps with fly pupa on the changes in blood lipid profile from broiler chickens, fatty acids and thiobarbituric acid reactive substances (TBARS) in chicken meat. A total of 360 chicks (Ross strain 308) were divided on hatch day into four treated groups with respect to a 35-day feeding regimen: T1 (control group), T2 (2.0% Cordyceps with fly pupa), T3 (3.5% Corceps with fly pupa) and T3 (5.0% Cordyceps with fly pupa). Blood triacylglyceride and total cholesterol level was significantly decreased by 5.32-10.63% and 9.23-12.62%, respectively, in groups T2, T3 and T4 when compared to T1 (p<0.05). Water holding capacity was significantly highest in T2 (p<0.05), while there were no significant differences among groups T2, T3 and T. In chicken meat, the ratio of saturated fatty acid to unsaturated fatty acid was high in the T3 and T4 groups, the ratio of n-6 to n-3 fatty acid was low in the T2, T3 and T4 groups and oleic acid (18:1n-9) was high in the T2, T3 and T4 groups, when compared to T1 (p<0.05). TBARS tended to increase according to the storage time (in days), and was significantly lower in the chicken thigh muscles with skin in groups T2, T3 and T4 as compared to T1 (p<0.05). These results suggest that a diet containing 2.0-3.5% of Cordyceps with fly pupa may decrease blood lipid and improve both the shelf-life and quality of broiler chicken meat.

제조 방법이 다른 솔잎 추출물 첨가가 유화형 소시지의 냉장 저장 중 항산화 및 아질산염 잔존량에 미치는 영향 (Effects of Addition of Pine Needle Extracts in Different Forms on the Antioxidant and Residual Nitrite Contents of Emulsified Sausages during Cold Storage)

  • 유화형 소시지에 제조 방법을 다르게 추출한 솔잎 추출물을 첨가하여 냉장온도($4{\pm}1^{\circ}C$)에서 30일간 저장하면서 pH, TBARS, 총 미생물수, 육색 및 아질산염 잔존량을 조사하였다. 시험구는 솔잎을 첨가하지 않은 대조구, 솔잎즙 첨가구는 T1, 솔잎 에탄올 추출물 첨가구는 T2, 솔잎중탕 추출물 첨가구를 T3 등 4개 처리구로 나누어 0, 10, 20 및 30일간 저장하면서 실험하였다. pH는 저장기간이 경과하면서 모든 처리구에서 서서히 감소하였다(p<0.05). TBARS와 총미생물수는 저장기간 동안 증가하였으며, 솔잎 즙과 에탄올 추출물을 첨가한 유화형 소시지는 대조구보다 낮아 솔잎의 첨가는 지방산화와 미생물 성장을 지연시켰고, 특히 에탄올 추출물 첨가구인 T2에서 TBARS 값과 미생물수는 가장 낮은 경향이었다(p<005). 육색은 저장기간이 지나면서 CIE $L^*$ 값과 $a^*$ 값 및 $b^*$ 값은 감소하였고, 처리구간에는 CIE $L^*$ 값과 $a^*$ 값은 T1과 T2에서 낮았고, $b^*$ 값은 T1과 T2에서 높은 결과로 솔잎 추출물의 첨가는 소시지 색을 어둡게 하는 경향이었다. 아질산염 잔존량은 저장기간이 경과하면서 감소하였는데 T2에서 다른 시험구보다 유의하게 감소하였다. 이상의 결과를 종합적으로 고찰해보면 솔잎 에탄올 추출물 첨가는 지방의 산화와 미생물 성장 억제 및 아질산염 잔존량 감소에 효과가 가장 있을 것으로 생각된다.

대구지역 중년 남성의 혈중 항산화성 영양소와 지질상태에 관한 연구 (A Study on the Status of Antioxidant Nutrients and Lipid in the Middle-aged Korean Men Living in Taegu)

  • Serum levels of antioxidant vitamins and lipids were determined along with anthropometric measurements in 174 healthy male subjects with mean age of 50.3$\pm$6.8 years from Taegu area in Korea. Body mass index (BMI) and waist/hip(W/H) ratio of the subjects were 23.18$\pm$2.46 and 0.88$\pm$0.04, respectively and their systolic and distolic blood pressures were 127.8$\pm$15.5 and 83.9$\pm$10.8mmHg. Twenty one percent of the subject had BMI over 25. Average seum levels of total cholesterol, LDL- and HDL-cholesterol and triglyceride were 187.7$\pm$34.9, 117.6$\pm$33.5, 41.1$\pm$9.0 and 140.7$\pm$83.6mg/dl, respectively. Sixteen percent of the subject had LDL-chole-sterol over 130mg/dl. Serum level of lipid peroxide measured as thiobarbituric acid reactive substances(TBARS) of the subject was 2.01$\pm$0.77 MDA nmoles/ml and those of $\alpha$-tocopherol, retinol. ascorbic acid and sum of $\alpha$- and $\beta$-carotene were 9.59$\pm$3.11$\mu\textrm{g}$/ml, 1.15$\pm$ 0.38$\mu\textrm{g}$/ml, 10.5$\pm$3.8$\mu\textrm{g}$/ml and 64.6$\pm$43.$\mu\textrm{g}$/dl, respectively. About 14% of the sujects had low vitamin E status of less than 7.0$\mu\textrm{g}$/ml,. while 6% had low vitamin C status of less than 4.0$\mu\textrm{g}$/ml, Serum vitamin E showed positive correlations with total cholesterol and LDL-cholesterol and triglyceride, but no correlation with TBARS. Fatty acids of serum total lipid were composed of 42.9% as saturnted. 19.3% as monounsaturated and 36.7% polyunsaturated fatty acids(PUFA). N-6 and n-3 PUFA were 27.7% and 8.3% of total fatty acids. N-6/n-3 PUFA ratios were negatively correlated both with serum total cholesterol and TBARS.
