Effect of different short-term high ambient temperature on chicken meat quality and ultra-structure

  • Objective: This study investigated the effect of different acute heat stress (HS) levels on chicken meat quality and ultra-structure. Methods: Chickens were randomly divided into 7 groups to receive different HS treatments: i) $36^{\circ}C$ for 1 h, ii) $36^{\circ}C$ for 2 h, iii) $38^{\circ}C$ for 1 h, iv) $38^{\circ}C$ for 2 h, v) $40^{\circ}C$ for 1 h, vi) $40^{\circ}C$ for 2 h, and vii) un-stressed control group ($25^{\circ}C$). Blood cortisol level, breasts initial temperature, color, pH, water holding capacity (WHC), protein solubility and ultra-structure were analyzed. Results: HS temperatures had significant effects on breast meat temperature, lightness ($L^*$), redness ($a^*$), cooking loss and protein solubility (p<0.05). The HS at $36^{\circ}C$ increased $L^*{_{24h}}$ value (p<0.01) and increased the cooking loss (p<0.05), but decreased $a^*{_{24h}}$ value (p<0.05). However, as the temperature increased to $38^{\circ}C$ and $40^{\circ}C$, all the values of $L^*{_{24h}}$, cooking loss and protein denaturation level decreased, and the differences disappeared compared to control group (p>0.05). Only the ultimate $pH_{24h}$ at $40^{\circ}C$ decreased compared to the control group (p<0.01). The pH in $36^{\circ}C$ group declined greater than other heat-stressed group in the first hour postmortem, which contributed breast muscle protein degeneration combining with high body temperature, and these variations reflected on poor meat quality parameters. The muscle fiber integrity level in group $40^{\circ}C$ was much better than those in $36^{\circ}C$ with the denatured position mainly focused on the interval of muscle fibers which probably contributes WHC and light reflection. Conclusion: HS at higher temperature (above $38^{\circ}C$) before slaughter did not always lead to more pale and lower WHC breast meat. Breast meat quality parameters had a regression trend as HS temperature raised from $36^{\circ}C$. The interval of muscle fibers at 24 h postmortem and greater pH decline rate with high body temperature in early postmortem period could be a reasonable explanation for the variation of meat quality parameters.

  • In existing systems, the best method inhibiting corrosion control in water distribution systems is to reduce water corrosiveness. Water corrosion can be decreased by controlling water quality through simple water treatment in treatment plants. On this research, we study the characteristics of tab water qualities in domestic areas, assessment of corrosive water quality and the method of water quality monitoring. This review presents the method of water quality monitoring which is the most applicable. Monitoring for corrosion control in waterworks system is the most proper method; It can prevent serious accidents economically and reduce civil appeals. Surely we should assess corrosive water quality in tab water, and introduce water treatment methods to control corrosive water quality before monitoring for corrosion. According to a lot of researches, it has been proved that simple water treatments can reduce the pipe corrosion. In this review we should indicate that we do not control of the corrosive water quality due to domestic conditions, we should monitor the water quality basically. Therefore, we recognize how the existing water quality can cause problems on pipeline corrosion, how to deal with it. Then it will be possible to apply water quality monitoring for corrosion control in water distribution system. Monitoring for corrosion control can be expressed by LI index, it is already known in literatures. This review presents more simple method than existing methods than existing ones we expect to apply these methods to SCADA in the future.

  • According to database and information technology development, many interests of database quality control have being increase. The purpose of database quality control is improvement quality of data itself as well as database system to satisfy user's need. As this paper was especially written about quality control of bibliographic database, to embody complete bibliographic database, it was invested numerous errors and its case by analyzing MARC records. In addition, it was presented that high degree's cataloging education, introduction of su n.0, pporting systems, and development of intelligent quality control system for quality improvement.

  • The present survey was made through mail questionaires aiming at understanding the conditions of quality control, finding problems and making improvement for manufacturing companies located in the Chonbuk area. The conditions of quality control were compared between KS marking companies and non KS marking companies regardless of manufactured products. The main check points were the function of process control, the function of quality assurance, the function of quality survey, the function of quality system, quality education, quality training, the function of QC circle and general functions excepting the scale of enterprise.

  • Metabolomics has been used as a powerful tool for the analysis and quality assessment of the natural product (NP)-derived medicines. It is increasingly being used in the quality control and standardization of NP-derived medicines because they are composed of hundreds of natural compounds. The most common techniques that are used in metabolomics consist of NMR, GC-MS, and LC-MS in combination with multivariate statistical analyses including principal components analysis (PCA) and partial least squares-discriminant analysis (PLS-DA). Currently, the quality control of the NP-derived medicines is usually conducted using HPLC and is specified by one or two indicators. To create a superior quality control framework and avoid adulterated drugs, it is necessary to be able to determine and establish standards based on multiple ingredients using metabolic profiling and fingerprinting. Therefore, the application of various analytical tools in the quality control of NP-derived medicines forms the major part of this review. $Veregen^{(R)}$ (Medigene AG, Planegg/Martinsried, Germany), which is the first botanical prescription drug approved by US Food and Drug Administration, is reviewed as an example that will hopefully provide future directions and perspectives on metabolomics technologies available for the quality control of NP-derived medicines.

A Study on the development quality control by application of QFD and Stage-gate in defense system (QFD 및 Stage-gate 모델을 활용한 국방분야 개발단계 품질관리 방안 연구)

  • Purpose: The purpose of this study is to propose adoption of QFD and Stage-gate in order to analyze the quality of korea defense system. Methods: Drawing change data of initial production phase in korea defense system were anlayzed and a practical method was proposed. Results: The results of this study are as follows; Off line Quality Control should be introduced in development phase. Specially, in case of defense system, the best method is QFD(Quality Function Deployment) and Stage-gate process. At first, QFD 1 step defines product planning from VOC(Voice Of Customer), QFD 2 step specifies part planning from product planning, QFD 3 step defines process planning from part planning, QFD 4 step defines production planning from previous process planning. Secondly, Stage-gate process is adopted. This study is proposed 5 stage-gate in case of korea defense development. Gate 1 is located after SFR(System Function Review), Gate 2 is located after PDR(Preliminary Design Review), Gate 3 is located after CDR(Critical Design Review), Gate 4 is located after TRR(Test Readiness Review) and Gate 5 is located before specification documentation submission. Conclusion: Off line QC(Quality Control) in development phase is necessary prior to on line QC(Quality Control) in p roduction phase. For the purpose of off line quality control, QFD(Quality Function Deployment) and Stage-gate process can be adopted.

Comparison of Quality Control and Hygiene Management for Mackerels in Korea and Japan (한국과 일본의 고등어 품질 및 위생관리 비교)

  • This paper aims to find out the problems and improvement direction of quality control and hygiene management of fishery products in Korea. For this reason, we conducted a comparative analysis of quality control and hygiene management of fishing, landing and selling between Japan and Korea, taking mackerel as an example. Japan has established a systematic freshness management system from fishing to landing (production) areas and consumption areas. On the other hand, Korea is not fully lead-managed in the production area after fishing, and is distributed in a state where the quality of the product is deteriorated due to exposure to room temperature. Accordingly, a certain quality can not be secured at the final consumption stage, and sanitary problems occur. In order to improve the quality control and hygiene management of the fishery products, the following needs to be improved. First, we will improve the fishing level freshness management system. Second, we will improve the quality control and hygiene management of fish in the production area and wholesale stage. Third, we will promote the introduction of innovative sales and consignment sales systems at the production stage. Fourth, we will establish a consistent low temperature distribution system from the production area to the wholesale stage from a long-term perspective. Fifth, we will promote the development and education of manuals on fish quality and hygiene management.

A Study on the Establishing Quality Records System in Quality Management (품질경영 체제에서의 품질기록 시스템 확보 방안)

  • It seems to be less important to quality record than document control. But quality records provide a objectve evidence for certain product. So, the requirements of quality record is more serve than that of design document. It is obvious that quality record control promotes accumulation of know-how. The puepose of this study is to possible implementation methods through analysis of Code requirements. This paper suggests the considerations when establishing the quality records control system.

  • In this paper, we analyze the quality status of Health and Welfare division's standardized log and asses the characteristics of the institutions' logs analysis to establish the criteria to minimize hazards and control the quality of log's institutional details to limit extraction. As a result, extraction condition's proposed development direction to adequately assess and control health and welfare abuses privacy control target log. This improvement over the status and quality of information shared with relation to institutional work of the log quality characteristics is made possible. In addition, quality control and inspection standards were prepared in accordance with the institutional log characteristics. Future research will include performing continuous analysis and improvement activities on the quality of logs with integrated control of sharing personal information and distributing information about logs' quality to proactively target organ. Therefore, we expect that correcting proactive personal information misuse and leakage is possible to achieve.
