The effects of the mouth care using cool sterile normal saline on oral stomatitis were investigated in 59 patients on chemotherapy. The subjects were divided into two groups, one was experimental group(N=31) in which the subjects were provided mouth care 4 times a day (after meals, before bedtime)with cool normal saline, the other was the control group(N=28), The Oral Assessment Guide(OAG) which it includes eight items(voice, swallowing, lips, tongue, salivation, oral mucous membrane, gingiva & teeth) was used to assess oral status six times(once in the Prechernotherapy Period, and on the third, 5th, 7th, 10th & 14th day postchemotherapy). The means of the total scores at each time were analyzed by repeated ANOVA The results are as follows : 1. The incidence of stomatitis was higher in the control group than in experimental group. The incidence of third grade stomatitis characterized by bleeding, sore, infection & severe pain was 3.3% in the experimental group, and while 21.4% in the control group(p=0.01). 2. The number of stomatitis sites which were occurred in the experimental group were significantly lower than in the control group(p=0.046). 3. The grade of stomatitis(mean of total score) for patients in the control group was significantly higher than for patients in the experimental group (p=0.005). 4. In the control group, voice change increased in the period between the seventh and tenth day after chemotherapy (p=0.04). 5. In the control group, swallowing difficulty was mest severe in the period between seventh and tenth day(p=0.05), and decreased by the fourteenth day(p=0.01). 6. Changes in the lips gradually increased after chemotherapy in the control group(p=0.0025), while they were significantly lower in the experimental group(p=0.0002). 7. The increment of tongue changes started on the third day after chemotherapy reached a peak on the tenth day and decreased by the fourteenth day in both groups(p=0.0016). 8. Driness of the mouth reached a peak on the seventh day after chemotherapy in the control group (p=0.05). 9. The degree of oral mucositis was significantly higher in the control group than in the experimental group(p=0.02) . In the control group, the mucosal change started three days after chemotherapy and reached a peak on the tenth day(p=0.03). 10. Changes in the gingia were significantly higher in the control group(p=0.03). In control group, the degree of gingivitis reached a peak on the tenth day. In conclusion, meuth care with normal saline four times a day could reduce the incidence and grade of stomatitis. Stomatitis was shown to begin on the third day after chemetherapy, reach a peak on the tenth day and be reduced by fourteenth day.
The purposes of this study were to a) measure the IC identified of CFMC (contract foodservice management company) ,b) examine IC circumstance of CFMC, c) evaluate practically IC measurement tool of CFMC, and d) present information for selecting an adequate CFMC to clients. The questionnaires of IC measurement were handed out to 108 CFMCs, there composing of main office employees, foodservice managers, customers, and clients of 207 school,38 hospital, and 86 husiness/industry foodservices. The statistical data analysis was completed using SPSS Win (ver 12.0) for descriptive analysis, t-test, Mann-Whitney U test. First, CFMCs had operational experience for an average of 8 years and 8 months, and served an average of 38,540 meals a day. Most of the respondent companies specialized in the school foodservice field and managed an average of 66 clients for the contract period of 2 years and 3 months. Second, the respondent companies had gotten a score of 77.78 points for the total average, 77.7 points in the large enterprise group and 78.1 points in the small and medium-sized enterprise group. Therefore, the minimum number of points for the accrediting license on Qualification is suggested to be over 70 out of a 100 point scale; this study would be serve as reference for the certification license on qualification. On the level of evaluation category, the scores were 14.15 to 20 points on $\ulcorner$finance$\urcorner$, 19.24 to 25 points on $\ulcorner$customer$\urcorner$, 19.33 to 25 points on $\ulcorner$process$\urcorner$, 14.31 to 20 points on $\ulcorner$human resource$\urcorner$, and 8.6 to 10 point on $\ulcorner$renewal and development$\urcorner$ . $\ulcorner$Renewal and development$\urcorner$ and $\ulcorner$customer focus$\urcorner$ received better grades than other evaluation categories. Third, $\ulcorner$Finance$\urcorner$ indicated similar distribution overall. Small and medium-sized companies had lower grades than large companies on 'market ability' of $\ulcorner$customer$\urcorner$ , but, clients of small and medium-sized companies had higher grade for 'client satisfaction' than large companies. Most of the companies supported 'infrastructure support for foodservice operation' of $\ulcorner$process$\urcorner$ by the main office of CFMCs, but, the branch chain offices of CFMCs were not applied efficiently. Large companies made more effort to improve the 'employee ability' of $\ulcorner$human focus$\urcorner$ than small and medium-sized CFMC. The 'research and development cost' of $\ulcorner$renewal and development$\urcorner$ was increased compared to the previous year. In conclusion, if CFMCs were to perform self-evaluation and a routine checkups by utilizing CFMC's IC measuring tool, improvements in CFMC operational capacities as well as foodservice quality can be noted. This study was conducted to investigate the situation of internal facilities and sanitary management of elementary, middle, and high school foodservice in Chonbuk area. Self administered questionnaires were collected from 252 nutrition teachers and school dietitians. Statistical data analysis was completed using a SPSS 11.5 program. The results are summarized as follows: Approximately 99.2% of the subjects were women and those who were married accounted for 76.6%. Those in their 30s to 40s accounted for over 87%, those with more than 11 years experience accounted for 56.8%, and those 69.0% were regular nutrition teachers. Among the 280 school foodservice systems, 51.6% of the schools were located in urban areas and 48.0% in rural areas. About 68% of the schools prepared meals the conventional way and 32.3% prepared them the commissary way. The number of employees accounted for in the schools was 37.7% with 1 to 3 employees, 27.8% with 4 to 6 employees, and 25.4% with 7 to 9 employees. About 54% of schools have an expectance of school meal service for more than 11 years. However 67.5% of their facilities had not been remodeled since the implementation of the foodservice. As a result of the conditions of the school foodservice facilities, there were significant differences between elementary and middle & high schools; preparation room (p<0.01), toilet (p<0.01), and boiler room (p<0.01). About 62% of the nutrition teachers responded that they were dissatisfied with the situation of the facilities (e.g. size and materials of the kitchen, heating and cooling systems). The washing and disinfection methods in elementary, middle and high schools were very different, because they had no sanitizers and disinfectant guidelines. Therefore the governmental regulating agencies must review and approve of the plans prior to new construction or extensive remodeling of the school foodservice facilities. In addition, we suggest that it is necessary to provide practical sanitizers and disinfectant guidelines and other useful education.
Objectives: The number of schools offering school lunches has increased in China. This study examined the dietary quality of the lunches consumed by Chinese school-age children and adolescents, with a focus on comparing school lunches with home lunches. Methods: The first weekday 24-hour dietary recall data of 6~17-year-old students (n=1,084) from the 2011 China Health and Nutrition Survey were analyzed. The subjects were divided into the school lunch group and the home lunch group, and the dietary quality of lunches was compared between the two groups among 6~11-year-old students (n=634; 177 in the school lunch group and 457 in the home lunch group) and 12~17-year-old students (n=450; 144 in the school lunch group and 306 in the home lunch group), respectively. Frequently consumed foods, amount of food group intake, food group intake pattern, Dietary Diversity Score (DDS), and Dietary Variety Score (DVS) were examined. Results: The most frequently consumed foods in both lunch groups were rice and pork. An excessive intake of meat and insufficient intake of seafood were noted in both lunch groups. The school lunch group showed a lower level of vegetable consumption than the home lunch group (P=0.017 in 6~11-year-old students, P=0.003 in 12~17-year-old students). Although more students ate meals with a better dietary pattern in the school lunch group than the home lunch group, there were no significant differences in DDS and DVS between the two groups. Conclusions: Overall, the dietary quality of lunches was not superior in the school lunch group compared to the home lunch group. This suggests that much room remain for improving dietary quality of school lunches in China.
This study was carried out to assess the food habit index of the long-lived elderly who were aged over 85 years living in Ganghwa-gun. A survey was conducted during December 2003. Dietary nutrient intake data was obtained through the 24-hr recall method. The subjects were 96 (32 males, 64 females) aged people and divided into three groups based on food habit index scores. Such as group A: good $16\∼20$, group B: fair $11\∼15$, and group C: poor $5\∼10$. The three groups of the subjects were 90.7 years of age and $21.3\;kg/m^{2}$ of BMI on average. Healthy eating index scores of the subjects were $9.4\%$ in group A, $54.2\%$ in group B and $36.5\%$ in group C. Their level of education were lower and their levels of living standards tended to have been middle and lower of the middle class. The percentage of living together with their families or spouses in all groups were over $60.0\%$ and the rates of the subjects who have responsibility for their meal preparations were also very high in all groups. Most subjects tended not to drink nor smoke, and spend $8\~10$ hours for their sleep. The percent of number of diseases in group A was lower than in groups B and C. Their dietary habits such as taking three meals a day regularly have shown that they have good eating habit in general. There was a positive correlation between the eating behaviors and nutrient intakes. The protein, animal protein, fat, PUFA, vitamin E, vitamin $B_{2}$, niacin, P and K intaks in group A were significantly higher than that of the groups B and C. For group A of good food habits aged had no sufficient intake of Ca and vitamin A than the Korean RDA and long-lived elderly of group C in Ganghwa areas had worse nutrients intakes, especially Ca, vitamin A, vitamin $B_{2}$ and vitamin E. This study was undertaken to evaluate the relation between obesity and dietary life of children aged 4-7 divided into two groups based on height for age, weight for age and weight for height. Controls were selected based on sex and age similar with those of cases. Cases and controls were selected using the combination of weight for height, weight for age and height for age by the World Health Organization standard. Cases were 23 children judged as obese. Controls were 37 judged as normal. Whether their mother had a job or not, showed relative risk 1.35(95% C1 0.32-5.64). In obese group, employmental statue of mother was 17.4% compared with 13.5% in control group. In mother's concern for cooking pattern, the relative risk was 5.64 and 95% CI was 1.70-18.66 in the item of "We consider the color arrangement when we serve foods" which was the highest rate. The item having the lowest relative risk was "We cook the meal by ourselves with spending time" which of the relative risk was 0.52 and 95% CI was 0.16-1.65. The item having a great significance in the dietary habit of subjects were "They beat the tablewear with the chopstick"(RR:1.64, 95% CI:0.22-12.73) and "I talk with food in my mouth"(RR :1.11, 95% CI:0.39-3.15), and the other items didn't show significancy. Number of food eating per day for male was 30.0$\pm$10.93 in obese group where as 23.2$\pm$9.80 in control group. 22.3$\pm$4.56, 21.8$\pm$10.91 were taken obese group and control group respectively in female. In the survey for general habit in life, the item of "We has a time for conversation with our family regularly" was high correlation to obesity and item of "We made our children change clothes and go to toilet themselvesj has slight relation to obesity. From above, we observed normal and obese children had different factors such as mother's attitude for preparing meals, table manners and habit of living. So we should take a continuous interest in children's dietary life in order to correct the wrong dietary habit and to protect from future problems.
Objectives: This study was performed to identify the epidemiological features of a food poisoning outbreak in a company cafeteria located in Chungcheongnam-do Province, Korea in June of 2020 and to suggest preventive measures for a similar incidence. Methods: A total of 84 patients with acute gastroenteritis were examined. Environmental samples were obtained from 16 food handlers, six food utensils, 135 preserved foods served over three days and nine menus, and six drinking water samples. These are analyzed to detect viruses and bacteria. Results: Ninety-four out of the 402 people who were served meals (23.4%) predominantly showed symptoms of diarrhea, and the number was over 3 times. Among the 84 patients under investigation, 17 cases (20.2%) were positive for Enteropathogenic E. coli (EPEC) and 18 cases were positive for Clostridium (C.) perfringens (21.4%). Based on the investigation, it was concluded that the main pathogens were EPEC and C. perfringens. For EPEC, it was detected in three of the food service employees and in the preserved food and curry rice. The results of pulsed field gel electrophoresis indicate that all EPEC cases are closely related except for one food service employee. Assuming that isolated EPEC originated from the preserved food, the incubation period is about 25 hours. The origin of the C. perfringens was not determined as it was not detected in the food service employees or environmental samples. Conclusions: This case suggests that food provided in group food service centers must be thoroughly managed. In addition, identifying the pathogens in preserved food is very important for tracing the causes of food poisoning, so food must be preserved in an appropriate condition. To prevent similar food poisoning cases, analyzing cases based on epidemiological investigation and sharing the results is needed.
주방 디자인의 패션화와 동서양 문화의 퓨전적 현상은 식기의 다양화와 세분화를 요구하고 있으며, 식사는 단지 먹는다는 의미보다 무엇을, 어디에, 어떻게 먹느냐의 문제로 발전되게 되었다. 이러한 문제는 자연이 현대의 식생활과 라이프 스타일에 부응하는 합리적이고 미적인 식기 개발을 요구하게 되었다. 이에 본 연구에서는 전통과 현대의 조화로운 만남, 젊은 감성과 품격을 동시에 충족시켜 줄 수 있는 미래형 식기 및 테이블 클로스 디자인을 연구하여 개발하는데 그 목적을 두었다. 연구의 방향은 식탁문화의 패션화와 퓨전적 현상에 따른 식기 사용의 세분화, 전문화, 다양화 욕구를 효율적으로 만족시키고자 고정된 세트 개념이 아닌 끝없이 연속되는 열린 코디네이션 개념을 식기에 도입하고, 색채 역시 믹스 앤 매치 방식의 칼라 코디네이션으로 다양한 식탁 표현을 연출 할 수 있는 새로운 식기 디자인을 통하여, 보수적인 우일요 이미지를 전통과 현대의 조화로운 젊은 감성과 감각의 이미지로 개선하였다. 연구의 디자인 개발 대상은 런치 웨어로 식기류 15품목 15종, 테이블 클로스 3품목 4종 등 총 19종과 디너 웨어로 식기류 8 품목 8종과 테이블 클로스 1품목 1종 등 총 9종으로 하였다. 연구결과 S/S 런치 웨어 세트로 테이블 웨어 디자인 15품목과 테이블 클로스 3품목이 개발되었으며, F/W 디너 웨어 세트로는 5종이 개발되었다.
이 연구의 주된 목적은 가족형태별로 중년 성인의 노부모 부양인식과 관련 변인에서의 차이를 분석하는데 있다. 분석대상은 평균 45세의 중년 성인 1,258명(남 601, 여 657; 핵가족 1,111, 대가족 147)이었다. 측정도구의 양적 문항 신뢰도는 Cronbach α=.67~.95이었고, 질적문항의 채점자간 신뢰도는 95.1%, Kappa 계수는 .95이었다. 분석 결과, 첫째, 가족형태별로 학력에 차이가 있었으나, 가정경제수준, 직업, 사회계층, 맞벌이 여부에서는 차이가 없었다. 둘째, 가족형태별로 가족관계와 심리특성에서 유의한 차이가 있었다. 핵가족보다 대가족 중년 성인이 자녀에게 정서적 지원과 자녀를 위한 희생 및 은퇴 후 자녀에 대한 기대를 더 많이 하였다. 또한 대가족 중년 성인이 자기효능감 및 행복 수준이 높았다. 셋째, 가족형태별로 노부모 부양행동에서 유의한 차이가 있었다. 대가족 중년 성인이 부모님께 드리는 용돈, 부모님과 식사 횟수, 대화시간, 효도 마음, 노부모 부양행동이 더 많았다. 넷째, 가족형태별로 노부모 부양인식을 살펴본 결과, 핵가족과 대가족 중년 성인 모두, 노부모 부양의 좋은 방법으로 마음 편하게 해 드림을, 노부모 부양할 때 어렵고 힘든 점으로 의견차이 및 경제적 문제를, 노부모 부양할 때 가장 좋은 점으로 자녀교육에 도움이 됨 및 가정화목을 지적하였다. 이러한 결과에 토대하여 후속 연구를 위한 시사점이 논의되었다.

1. (시행일) 이 약관은 2016년 9월 5일부터 적용되며, 종전 약관은 본 약관으로 대체되며, 개정된 약관의 적용일 이전 가입자도 개정된 약관의 적용을 받습니다.
