연변지역 탈북 아동 및 청소년의 체위와 식생활 양상 (Anthropometric Measurements and Dietary patterns of North Korean Migrant Children in China)

  • A deteriorating North Korean economy, coupled with a devastating natural disaster such as flooding and drought in recent years, brought about a severe food shortage and malnutrition problem which caused a migration of its population including young children to neighboring countries. We conducted a nutritional survey on a total of 436 children, aged 4-19 years old, who migrated to the China side of the border from July to September, 1999. The study subjects were interviewed by Korean-Chinese interviewers who were trained for anthropometric measurements and dietary surveys. Heights, weights, and chest circumference of the subjects were 70-90% of the South Korean reference values for the corresponding age and sex. Dietary intakes of the subjects were found to be extremely poor-the average number of food, mostly of plant origin, consumed in a day was 2.8, and the proportion of the subject who reported to take all three meals in a day while residing in North Korea was as low as 36.2%. Ninety five percent of the subjects had at least one clinical symptom related to malnutrition, 68.6% had 2-4 symptoms, and 15.1% had 5 or more symptoms. The results of this study provided an objective data for the first time on the severity of the food crisis and malnutrition problem that afflicted North Korean older children and adolescents as well as children aged 7 or under as previously reported elsewhere. the wasted and stunted children and youths prevailing in North Korea could exert a negative influence on the country's health and economy. More researches are needed in the future to investigate on the impact of malnutrition in North Korean children on the country's social, economic, and cultural state as well as on the health and nutrition situation.

Dietary sodium intake in young Korean adults and its relationship with eating frequency and taste preference

  • Dietary sodium intake is considered one of the major causal factors for hypertension. Thus, to control the increase of blood pressure and reduce the risk of hypertension-related clinical complications, a reduction in sodium intake is recommended. The present study aimed at determining the association of dietary sodium intake with meal and snack frequency, snacking time, and taste preference in Korean young adults aged 20-26 years, using a 125-item dish-frequency questionnaire. The mean dietary sodium intakes of men and women were 270.6 mmol/day and 213.1 mmol/day, which were approximately 310% and 245% of the daily sodium intake goal for Korean men and women, respectively. Dietary sodium intake was positively correlated with systolic blood pressure in the total group, and BMI in the total and men-only groups. In the total and men-only groups, those who consumed meals more times per day consumed more dietary sodium, but the number of times they consumed snacks was negatively correlated with dietary sodium intake in the total, men-only, and women-only groups. In addition, those who consumed snacks in the evening consumed more sodium than those who did so in the morning in the men-only group. The sodium intake was also positively associated with preference for salty and sweet taste in the total and women-only groups. Such a high intake of sodium in these young subjects shows that a reduction in sodium intake is important for the prevention of hypertension and related diseases in the future.

Nutrient intakes and medication use in elderly individuals with and without dry mouths

  • BACKGROUND/OBJECTIVES: The nutrition of the elderly depends on various factors. Oral health, especially oral dryness, can be an important risk factor. In this study, we attempted to determine whether dry mouth is associated with compromised nutrient intakes. SUBJECTS/METHODS: A total of 120 participants aged 65-86 yrs (mean age: 69 ± 1 y) were included in this study. Demographic and health-related characteristics, living status, meals, number of medications, medical conditions, chewing ability, and quality of life, the Oral Health Impact Profile (the OHIP-14) were assessed. We performed one day 24-hr recall assessment for nutrient analyses. The differences of the means between the dry-mouth and non-dry-mouth groups were analyzed. Elderly subjects with xerostomia-induced dry mouth were classified as those who reported at least one dryness symptom on a questionnaire. RESULTS: A significant difference in population distribution was observed among the elderly who took medications for hypertension, diabetes and osteoporosis and was significantly higher in the dry-mouth group (70.2%) than in the non-dry-mouth group (44.4%) (P = 0.005). Compared with the non-dry-mouth group (50.8%), a significantly higher proportion (73.7%) of participants in the dry-mouth group took multiple medicines (≥ 4 medications) (P = 0.019). The intakes of vegetable fat, vitamin E, folate and water in the dry-mouth group were lower than in the non-dry-mouth group. The intakes of fluoride and ω-3 fatty acids were significantly lower in the dry-mouth group than in the non-dry-mouth group. CONCLUSION: The participants in the dry-mouth group exhibited low nutrient and water intakes. It is recommended that the elderly with dry mouth should drink sufficient water and receive targeted and specific nutritional guidance to prevent malnutrition.

비만성인의 영양소 섭취량 및 식사 다양성 평가 (Evaluation of the Dietary Diversity and Nutrient Intakes in Obese Adults)

  • The purpose of this study was to assess the diet diversity, food habit and nutrient intake of obese adults who were visiting the health promotion center. This study was accomplished with the 138 obese adults (men = 103, women= 35) aged over 20 years old whose BMI were above $25 kg/m^2$. Nutrient adequacy ratio (NAR), the number of foods (Dietary Variety Score DVS), and food group consumed (Dietary Diversity Score, DDS) by using the data from the three days record were analyzed and the food habit and lifestyle were assessed by self reporting questionnaire. The average enemy intake of men was 2150.2 kcal which was significantly higher than that of women (p < 0.05). The intake ratio of carbohydrate, protein and fat over total energy was 54.8% : 19.3% : 25.8% in men, 59.5% : 17.8% : 22.6% in women respectively. Frequency of the breakfast in a week above 4, $2{\sim}3$ time and under one time was 75.7% 10.7% and 9.7% in men 77.1%, 5.7% and 14.3% in women respectively. frequency of eating between meals in a day under one time was 73.8% in men, 57.1% in women (p < 0.05). The average DDS and DVS was $3.63{\pm}0.07$ and $14.10 {\pm}3.45$, respectively which was significantly correlated with MAR (r=0.40 in DDS, r=0.64 in DVS, p < 0.01). The most frequent style of food pattern was DMGFV = 01101 in 35% of men, and DMGFV= 01111 in 37.1% of women. Our results show that dietary diversity and variety are useful parameters far evaluating nutrient intakes in obese adults. These findings suggest that nutritional education based on obese persons' eating behavior and eating diversity may be required to increase educational efficiency of weight control programs.

경남지역 위탁급식업체 조리종사자의 위생교육 및 근무환경에 따른 위생 직무수행도 평가 (A Study on the Hygiene Practices of Foodservice Employees by Hygiene Education and Work Environment in the Gyeongnam Area)

  • This study examined the hygiene practices of contract foodservice employees and investigated the influence of education and work environment on these hygienes practices. A questionnaire was distributed to 250 contract foodservice employees and a total of 232 responses were received and analyzed. The overall score for hygiene practices of contract foodservice employees was 3.89 based on a 5-point scale. Cross-contamination was prominent (highest score at 4.46) and the heating temperature was less prominent (lowest score at 3.49). The factors most affecting contract foodservice employees were their work period, the size of the contract foodservice management company, the number of meals served daily, the frequency of meal service per day and the frequency of hygiene education. Compared to small and medium-sized contract foodservice management companies, the major contract foodservice management companies showed higher scores for refrigerator/freezer control (P<0.001), vegetable/fruit disinfection (P<0.001), thawing (P<0.001), heating temperature (P<0.001), cleaning/disinfection (P<0.01), and personal hygiene (P<0.05). The frequency of hygiene education had a significant effect on the performance levels for refrigerator/freezer control (P<0.001), vegetable/fruit disinfection (P<0.001), thawing (P<0.001), heating temperature (P<0.001), cleaning/disinfection control (P<0.001), food supply control (P<0.05), and personal hygiene (P<0.05). From these results, to increase the sanitation quality of contract foodservice operations, hygiene practice levels need to increase and hygiene education systematically should be enforced for foodservice employees.

전라남도 지역아동센터의 급식관리 지원을 위한 시범사업 평가 (Assessment of the Support Program of Foodservice Management for Community Child Centers in Jeollanam-do, Korea)

  • This study aimed to evaluate the effectiveness of the foodservice management support program focusing on menu management in community child centers. The support program provided reference menus, staff training, and field consulting to 10 community child centers in the Jeollanam-do province for one month, August in 2010. One month menus were developed, based on children's preference for menu items, foodservice personnel's preference for food materials, and availability of local specialty foods, and offered as reference menus. In addition, staff training and field consulting focusing on menu management were conducted before and during the pilot period, respectively. To evaluate the support program, menus, foodservice personnel's knowledge level and perceived performance in foodservice management, and children's level of satisfaction for foodservice were analyzed before and after the support program. As a result of analysis of 222 and 210 menus of before and after the support program, respectively, the number of dishes per meal increased from five to six on average, and the proportion of meals including five food groups, which were grain, meat, vegetable, fruit, and milk and dairy product, rose from 2% to 24%. Foodservice personnel's knowledge level regarding foodservice management increased significantly (p = 0.007), however, their perceived performance in foodservice management did not show any significant changes. Children were more satisfied with 'food' (p = 0.001), 'sanitation' (p = 0.001), and 'environment' (p < 0.008) of foodservice in community child centers after the support program. In conclusion, the foodservice management support program focusing on menu management in this study was effective for improving menu quality of and children's satisfaction with foodservice in community child centers.

수도권에 거주하는 중국인 여성결혼이민자의 한국 식생활적응 관련 요인 (Factors related to Korean Dietary Adaptation in Chinese Female Marriage Immigrants living in the Seoul Metropolitan Area)

  • This study aimed to investigate factors related to Chinese female marriage immigrants' dietary adaptation. An in-person survey was conducted by a research institute on Chinese female marriage immigrants married to Korean men, having one child or more aged 1~6 years old, and having resided in Korea for at least 1 year before the survey. Data were collected from 309 respondents comprising 151 Han Chinese and 158 Korean-Chinese during the summer of 2013. About two-thirds of respondents were in their 30s and had resided in Korea for 5 to 10 years. Based on the overall mean score for dietary adaptation level (3.50 out of 5 points), the respondents were classified into two groups: low dietary adaptation group (mean score 3.11) and high dietary adaptation group (mean score 3.81). The results of comparative analysis between the two groups showed that the levels of acculturation (p<0.01) and healthy dietary behavior (p<0.01) for the high dietary adaptation group were significantly higher than those of low dietary adaptation group. The number of respondents of the high dietary adaptation group reporting increased food diversity (p<0.01) and decreased frequency of skipping meals (p<0.01) was significantly higher compare to the low dietary adaptation group. Multiple regression analysis was conducted to identify factors related to dietary adaptation. General characteristics, levels of acculturation, and healthy dietary behavior were included as independent variables. As a result, levels of acculturation and healthy dietary behavior as well as education level, monthly household income, and length of residence in Korea were associated with dietary adaptation. In conclusion, Chinese female marriage immigrants showing acculturated and healthy dietary behaviors adapted well to Korean dietary life. The results from this study suggest that diet-related adaptation support programs for Chinese female marriage immigrants may positively affect their acculturation and dietary behaviors.

Properties of fermented soybean meal by kefir and its biological function

  • Yeast strains are capable of hydrolyzing non-digestible saccharides, such as melibiose, raffinose, and stachyose, found in soy meal components. This study revealed the biochemical properties of fermented soybean meal during 72 hours with kefir. Starchyose and raffinose, non-digestible components, were almost digested in kefir 150 mL + soybean meal 500 g + water 70 mL and galactose was produced. Proteolysis of the soybean meal produced most of the small molecule peptides in kefir 150 mL + soybean meal 500 g + water 70 mL. The production of the vitamin B group and C were the highest in kefir 250 mL + soybean meal 500 g. The yeast number of the fermented soybean meal was 7.0 × 106 CFU·mL-1 which was the highest in kefir 250 mL + soybean meal 500 g. The lactic acid bacteria of the fermented soybean meal was the highest at 3.5 × 109 CFU·mL-1 in kefir 70 mL + soybean meal 500 g. The antioxidant effect was the highest at 57% in kefir 250 mL + soybean meal 500 g. Expression of inflammation-related cytokine (interleukin [IL]-1β, tumor necrosis factor [TNF]-α, and interleukin [IL]-6) was significantly inhibited in fermented soybean meals with different treatments. These results suggest that fermented soybean meal by kefir has an antiinflammatory and anti-oxidation activity and could be utilized in feed manufacturing, and inhydrolyzing non-digestible soy meal components.

서울지역 대학 기숙사생의 식습관 및 영양서비스 요구도 (Dietary Habits and Demands for Nutrition Service of University Dormitory Residents in Seoul Area)

  • The purpose of this study was to investigate the dietary habits and demand for nutrition service of university dormitory residents. Out of 450 questionnaires distributed to the undergraduate and graduate students residing in a university dormitory, 335(74.4%) returned and 265(58.8%) were analyzed. The analyzed sample included 140 males(52.8%) and 125 females(47.2%). The number of undergraduate and graduate students were 183(69.1%) and 82(30.9%), respectively. Male and undergraduate students tend to more frequently use dormitory foodservice than the respective counterpart. About 21% of respondents skipped breakfast everyday and almost 2/3 of respondents skipped breakfast more often than $3{\sim}4$ times a week. The most often chosen reason for skipping meals was 'lack of time' for lunch and dinner as well as breakfast. Graduate students tend to drink coffee more often than undergraduate students. Male students were more likely to drink carbonated drinks and alcohol compared with female students. Over half(59%) of respondents were taking multivitamins and mineral supplements. About 80% of respondents perceived their health average or above. New residents having moved in to the dormitory less than a semester before tend to perceive their heath status worse than the residents having lived longer in the dormitory. The demand for nutrition service was high as shown by the high percentage of respondents willingness to receive the service: 76% for nutrition assessment service and 63% for nutrition counseling service. Such demand did not differ between males and female respondents. However, graduate students were more willing to participate in nutrition counseling service than undergraduates.

서울지역 학교 영양(교)사의 PHF에 대한 인식 및 CCP 관리기준 수행실태 조사 - HACCP 시스템 CCP 3~CCP 7을 중심으로 - (Research Study on Seoul Region School Nutritionists' Perception of Potentially Hazardous Foods and Execution Conditions of Managing CCP Control Standard of the HACCP System - Focusing on CCP 3~CCP 7 -)

  • This research was conducted on Seoul region elementary, middle, and high school nutritionists to analyze execution conditions of HACCP control standards, focusing on PHF and CCP 3~CCP 7, in order to determine more efficient methods for school meals' sanitation system settlement. All surveys were distributed and collected via email. A total of 305 survey papers were collected, and 300 school results were analyzed. The following percentage of nutritionists perceived the following foods as potentially hazardous foods(PHF): raw or cooked animal foods (94.7%), blossomed seed products (93.7%), packed pickled radish (36.7%), unopened mayonnaise (30.2%), and unopened snails & corn cans 54.8%. Exactly 51.2% of nutritionists believed that foods were properly supplied via CCP 3's food quality standard. Exactly 33.9% of nutritionists answered that they had never corrected the digital thermometer since there were no issues with the CCP 4's digital thermometer correction frequency level. As for CCP 5's chroline disinfection of green vegetables, 57.1% of nutritionists answered that vegetables were slightly softened while 36.2% said there were no changes at all. According to the nutritionists, the most difficult execution level of CCP levels (excluding CCP 3, CCP 4) was CCP 7 (37.1%), CCP 6 (16.4%), and CCP 2 (16.4%). For the above results, proper training/education must be enforced so that nutritionists can have a clear notion of the PHF. A solution must be developed enhancing the execution of CCP 4's digital thermometer correction frequency level. For CP 5's chroline disinfection of green vegetables, food characteristics must be considered to suggest an appropriate number and method of cleansing. Furthermore, cooking employees are needed that properly use and manage cooling & heating equipments to maintain heated foods above $57^{\circ}C$ under the CCP 7 standard.
