Microbial and Physicochemical Characteristics on Raw Cereal for Sunsik by Hot-air Drying Methods (열풍건조에 따른 선식용 곡류원료의 미생물 및 이화학적 특성)

  • To know proper drying condition for making a safe Sunsik, uncooked food, microbial and physicochemical characteristics of cereal dried by hot-air drying was investigated. As moisture content of 3 Sunsik samples was reduced to about 8%, protein, carbohydrate, fat and ash content of those was increased. But approximate composition of black bean, black rice and glutinous millete and black bean showed little changes during hot-air drying (30, 40, $50^{\circ}C$). Lightness (L value), redness (a value) and yellowness (b value) was increased after hot-air drying. In case of black rice and glutinous millet, b value and L value wasn't changed individually. When we measured a texture for 3 kinds of raw cereal for, hardness of dried cereals was lower than raw cereals. Hardness of dried cereals was increasd as drying temperature was increased. As results of mocrobiologicl experiment for 3 kinds of sunsik on hot-air drying conditions, total cell count was reduced 2 log - 3 log and other pathogenic microorganism wasn't detected except B. cereus.

Inhibitory Effect of Various Cereal and Bean Extracts on Carcinogenicity in vitro (곡류 및 두류 에탄올 추출물의 in vitro 발암 억제 효과 비교)

  • To investigated the anticarcinogenic activity of 70% ethanol extracts from various cereal in vitro, antimutagenic activity, inhibitory effect of DNA strand scission and tumor promotion were examined. The antimutagenic activity of the beans such as black bean and small red bean was generally higher than that of cereals examined. However inhibitory activity of 70% ethanolic extracts against DNA strand scission induced mitomycin C showed that millet, job's tear, black bean and soy bean among cereals and beans tested in this study inhibited effectively the DNA strand scission. Antioxidative activity of some cereal extracts determined by using linoleic acid model system showed that Job's tear, millet and black bean were higher antioxidative activity than other cereals and beans. Conventional short-term antipromoter assay system using activation of Epstein Barr virus (EBV) clearly demonstrated that sorghum, buckwheat, black bean and small red bean have inhibitory effects on promotion in cellular carcinogenesis.

Changes of Heading Response and Leaf Production of Winter Cereals as Spring Living Mulch According to Cultivar and Sowing Date (춘파 리빙멀치(living mulch)용 맥류의 파종기 및 품종에 따른 출수반응 및 엽중 변화)

  • Changes of heading response and leaf production of winter cereals according to cultivar and sowing date in spring, were investigated in Suwon Korea during three years from 2007 to 2009 to obtain information on use as spring living mulch of winter cereals for weed suppression without herbicide in environment-friendly crop production. Rye showed variation among cultivar in heading response according to sowing date, which means that cultivar selection for living mulch is important in rye. Cultivar Prima and Wintergreen had not headed in sowing during March with low soil temperature in contrast to cultivar Koolgrazer and Gokwoo which had headed somewhat even until sowing in early May with relative high soil temperature. Barley and wheat showed distinct characteristics in heading response between sowing before and after early April compared to rye. Leaf production for soil covering was higher in barley than wheat, and cultivar Mirak than Ol within barley in 2007, respectively. Leaf production were not different much among rye cultivar in sowing during early or mid April, but it was different in sowing after mid April indicating that winter cereal cultivar with high leaf production could be selected in late sowing. It is thought that rye cultivar Duru was the most proper cultivar for spring living mulch in the point of high leaf production in addition to low heading in sowing after March.

  • The male rats after weaning were fed with the mixed diets of rice and some cereals for three weeks in a ad-libitum method. The growthgain of rats were determined by feeding those diets and the contents of free basic amino acids level in plasma were analyzed by amino acid analyzer. The results were as follows; 1. Rice diets group was highest in growthgain and weightgain, the second was the mixed of 80% rice-20% barley, and the last was the 80% rice-20% wheat group. 2. It was similar in the contents of plasma free basic amino acids of every diet group. The contents of Lys was highest and Arg, His were low in order. The mixed diet of 80% rice-20% barley group was higher than the rice only diet group in the contents of Lys and His. but rice only group was highest in Arg. The mixed of 80% rice-20% wheat diet group was lowest in the contents of Lys, His, Arg. Therefore feeding mixed diets of rice and cereals. the contents of Lys was highest, the second was Arg and the last was His in the plasma free basic amino acids level.

A study on the Consumer Recognition and Consumption of Misitgaru(the Traditional Powder of Roast Grain) (전북지역 주부들의 미싯가루에 대한 소비자 인식 및 이용에 관한 실태조사)

  • This study was carried out to investigate the consumer recognition and consumption of Misitgaru(the traditional powder of roast grain). Data were collected from the 605 housewives(average age, 42.9 years old) residing in Chonbuk area by the self-administered questionnaire. The results from this study were as follows. The respondants were generally concerned regarding Misitgaru as a between-meal snack(33%). And there were recognition on Misitgaru as a weaning food(17%), health food(16%), and substitute food(14%). Of the respondants, good consumers of the Misitgaru were high ratio in age below 30 years old and in number of family member between 6 to 7. Among the demographic variables, age, educational level and housing form especially affected the purchasing place and educational level affected the kinds of mixing cereals. The higher the educational level, the more the kinds of mixing cereals. The methods of storage were significantly different according to age and income level. The older in age and higher in income level, the higher the storage at room temperature.

Dietary Fiber Intake of Korean (한국인의 식이섬유 섭취 실태)

  • According to the data published in 1990s on the intake of dietary fiber(DF) of Korean, DF intake of Korean has been gradually decreasing in the last two decades. Mean daily intake of DF in 1990s is estimated to be in the rage of 17-20g per capita and over seventy five percent of the subjects examined appeared to consume DF less than 20g per day. The major food sources of Df in Korean diet include cereals, vegetables, fruits, seaweeds and seasonings. The present level of DF intake of Korean is lower than the tentatively recommended minimum intake of DF. It is predicted that, if the present trend of change on food consumption pattern is maintained, the gradual increases in the incidence of chronic degenerative diseases will be continuing. Therefore, the beneficial effects of DF on health care and disease control should be emphasized through the nutritional education and high level consumption of DF needs to be strongly recommended in the dietary guideline. In order to raise the daily consumption of DF, more whole grain cereals need to be used as a part of staple and more frequent intake of legumes and seaweeds is required as well as the development of high-fiber diet recipes and natural high-fiber products.

The Quality Characteristics of Muffins Made with Various Cereal Powders in Dietary Fiber (섬유소가 풍부한 곡분으로 만든 머핀의 품질 특성)

  • The purpose of this study was to promote the consumption of cereals rich in dietary fiber by substituting brown rice, barley, oat and goami powder for flour in making muffins. All cereals powder was prepared by grinding for 15 min. The appropriate water quantity for cereal powders muffins was set at 105 mL. The volume index of the flour muffins was 132 mL, while that of cereal powders muffins was 117 mL for broun rice muffins, 118 mL for barley muffins, 132 mL for oat muffins and 119 mL for respectively for goami powder muffins. The hardness of the flour muffins, measured by a texture analyzer, was $2.03{\times}10^3\;g/cm^2$, and the other powder muffins were $3.27{\times}10^3\;g/cm^2$ for broun rice muffins, $3.33{\times}10^3\;g/cm^2$ for barley muffins, $2.38{\times}10^3\;g/cm^2$ for oat muffins, and $2.33{\times}10^3\;g/cm^2$ for goami powder muffins respectively. The L-values and moisture contents of goami powder muffins were higher than those of the other muffins. In the sensory evaluation the overall preference was the highest in oat powder muffins.
