  • 토성 조사 특히 토양 중의 점토 함량의 측정은 토양과 관련된 연구에서 흔히 이루어지는 분석이다. 본 연구에 관련된 연구에서 흔히 이루어지는 분석이다. 본 연구에서는 현재까지 점토 함량 측정에 널리 이용되고 있는 표준 hydrometer법이나 pipette법과 비교하여 보다 간편하고 신속한 분석법으로 제안되어 있는 micro-pipette법의 이용 가능성을 검토하였다. Micro-pipette법과 hydrometer법으로 측정된 점토 함량은 유의성이 높은 1:1의 상관관계를 가졌으며. micro-pipette법치 분석의 정밀도는 hydrometer법에 비교하여 크게 떨어지지 않는 것으로 나타났다. 또한 micro-pipette법은 짧은 침강 시간과 작은 침강 용기를 사용함으로써 작은 실험실 공간에서 많은 시료를 분석할 수 있었다.

Gel Color and Texture of Surimi-like Pork from Muscles at Different Rigor States Post-mortem

  • Gels were made from surimi-like pork (SLP) made from muscles obtained at 1, 24 and 72 h post-mortem. The SLP from pre-rigor muscle had higher pH and moisture percentage compared to in- or post-rigor muscles. Also, SLP from pre-rigor muscle showed higher concentration of water-soluble protein that was washed out during the process. Gel from post-rigor muscle exhibited higher a* and b* value, and also resulted in higher Chroma and lower hue values. The dark color of gel from post-rigor muscle was related to higher concentration of sarcoplasmic protein in SLP and denser structure in the gel matrix. SDS-PAGE showed higher intensity of the phosphorylase in the sarcoplasmic protein fraction from pre-rigor muscle. Gel from post-rigor muscle showed higher hardness and sensory firmness, and the greater firmness was related to higher concentration of protein in SLP, and a compact network with smaller pockets in the gel matrix.

쑥 분말이 첨가된 식빵의 물성 및 관능성 (Rheological Properties and Sensory Characteristics of White Bread with Added Mugwort Powder)

  • This study was designed to investigate the possible utilization of mugwort as a source of functional ingredients. The approximate composition for mugwort powder was 5.06% moisture, 1.98% crude protein, 4.65% crude fat, 5.85% ash and 82.46% carbohydrate. The highest mineral content was potassium. The contents of total phenolic compounds and condensed tannin were 114 mg% and 11,000 mg%, respectively. The highest electron donating ability(EDA) was observed from the ethyl acetate and butanol fractions of mugwort powder but the lowest was shown by the hexane fraction. In color values, with increasing mugwort powder content, the 'lightness', 'redness' and 'yellowness' decreased in the crust, while in the crumb bread the 'lightness' decreased and the 'redness', and 'yellowness' increased. With the addition of mugwort powder as a substitute for strong flour over the range from 2.5% to 10.0%, the ratio of the volume and specific volume of white bread decreased while its weight increased. In the texture measurements for white breads, the hardness decreased slightly with the addition of 2.5% mugwort powder, but then increased with further additions of mugwort up to 10.0%. The addition of 2.5% mugwort powder increased the springiness and gumminess of white bread. The highest sensory scores for color, flavor, taste, texture and overall acceptance as evaluated by a student sensory panel were obtained from white bread with 2.5% mugwort powder and from the control. The highest sensory scores as evaluated by a baker sensory panel were obtained from white bread with 2.5% mugwort powder. In ranking test, overall acceptability of white bread was the highest in the control. Overall acceptance scores by sensory evaluation of white bread with 2.5% mugwort powder were not significantly different from those of control.

냉간 압연 방향에 따른 Zr-1.1Nb-0.05Cu 합금의 크리프 거동 (Effect of Cold-Rolling Direction on Creep Behaviors in Zr-1.1Nb-0.05Cu Alloy)

  • Creep behaviors of the Zr-1.Nb-0.5Cu (HANA-6) alloy strips with different orientations were investigated. Anisotropy was observed in the samples depending on their physical orientations due to the formation of texture in their microstructures. The creep strain rate was increased as the test stress and temperature increased. The rate was higher along the rolling-direction than in the transverse-direction irrespective of annealing conditions. However, the samples with $45^{\circ}$ direction showed different behaviors depending on the annealing temperature. When strips were finally annealed at $600^{\circ}C$ for 10 min, the primary creep rate of the $45^{\circ}$ strip was the highest among the various orientations although the saturated creep rate was the lowest. In the case of final annealing at $660^{\circ}C$ for 4 h, the highest creep rate occurred throughout the creep test in the $45^{\circ}$ strip. It is considered that the fraction of (100) planes along the direction of creep deformation affect the creep rates.

Anatomical variations of trabecular bone structure in intraoral radiographs using fractal and particles count analyses

  • Purpose : This study was performed to evaluate possible variations in maxillary and mandibular bone texture of normal population using the fractal analysis, particles count, and area fraction in intraoral radiographs. Materials and Methods : Periapical radiographs of patients who had full mouth intraoral radiographs were collected. Regions of interest ($100{\times}100$ pixels) were located between the teeth of the maxillary anterior, premolar, and molar area, as well as the mandibular anterior, premolar, and molar areas. The fractal dimension (FD) was calculated by using the box counting method. The particle count (PC) and area fraction (AF) analyses were also performed. Results : There was no significant difference in the FD values among the different groups of age, gender, upper, and lower jaws. The mean FD value was $1.49{\pm}0.01$. The mean PC ranged from 44 to 54, and the mean AF ranged from 10.92 to 11.85. The values of FD, PC, and AF were significantly correlated with each other except for the upper molar area. Conclusion : According to the results, patients with normal trabecular pattern showed a FD of approximately 1.5. Based on these results, further investigation would be recommended if the FD value of patient significantly differenct from this number, since the alteration of this value indicates microstructural modification of trabecular pattern of the jaws. Additionally, with periapical radiographs, simple and cost-effective, PC and AF could be used to assess the deviation from the normal.

야콘의 항산화성 및 야콘 초절임제품의 저장 중 품질특성 (Antioxidative Activity of Yacon and Changes in the Quality Characteristics of Yacon Pickles during Storage)

  • The purpose of this study was to measure the antioxidant activity of yacon root and to manufacture yacon pickles for commercialization as a functional food. The total phenol content in yacon roots were the highest, 29.96 mg GAE/ 100 g, in the ethyl acetate fraction and the DPPH radical scavenging activity and ABTS radical scavenging activity was 37.07%, and 91.60%, respectively, in the ethyl acetate fraction. The optimum recipe for the pickling solution was determined to be vinegar, water and high fructose corn syrup, at 34%, 22% and 44%, respectively. The quality characteristics of yacon pickles using this solution were monitored during storage at $25^{\circ}C$ for 43 days. The pH value decreased to 2.98 (42 days) during storage and $^{\circ}Brix$ gradually increased during storage. The L-value decreased significantly during storage but there were no significant changes detected in the a and b values. No significant changes were detected in the hardness of the yacon pickles. According to the sensory evaluation, no significant changes in taste, texture and overall acceptance of yacon pickle were observed during storage. These results indicated that yacon was an excellent functional food in terms of its antioxidant activity and that pickling might be a promising methods to maintain the taste and quality of yacon during storage.

향신료(香辛料)에 의한 생선 비린내 억제효과(抑制?果)에 관(關)한 연구(硏究) - 식초 및 생강의 효과(?果)에 관(關)하여 - (A Study on the Suppressing Effects of Spicies for Fishy Odor - The Effect of Vinegar and Ginger -)

  • 향신료 중(中) 식초와 생강의 생선 비린내 억제효과에 관하여 관능검사를 실시하였으며, gas chromatography에 의해 TMA량(量)을 측정하였다 그 결과(結果)는 다음과 같다. 1 관능검사의 결과, 식초 첨가량이 증가할수록 생선 비린내는 점점 감소되었으나, 고등어 100g당(當) 식초를 16m1이상 첨가했을 때는 신맛이 강하게 느껴졌으며 Texture가 단단해져서 질(質)이 저하되었다. 고등어 100g당(當) 식초 6ml를 첨가한 것은 비린내를 싫어하는 사람에 있어서 좋은 점수를 보여 주었다. 2. 고등어 100g 중(中)에는 $0.4{\sim}0.7{\;}mg$의 TMA이 함유되어 있었다. 3. gas chromatography로 분석해 본 결과(結果), 식초 첨가량이 증가할수록 TMA량(量)은 감소되는 경향이 보여졌다. 4. 생강의 phenolic fraction과 TMA과를 4시간(時間) 동안 반응시켰을 때 TMA량(量)은 67.5%로 감소되었다.

석회암지역 소나무림에서 지렁이의 생태학적 역할 (Ecological Role of Earthworms in Red Pine Forest in the Limestone Areas)

  • Ecological role of earthworms in red pine forest was investigated with emphasis on the population size, cast production and changes of physicoKDICical properties of soil by earthworm's activities. The density of earthworms was 62.8/m2 in August, 1992. Average biomass of earthworms was 16.3 g/m2. N and P concentrations in the tissue of earthworms were 28.5 mgN/g and 0.5 mgP/g, respectively. Cast production continued from April to November, with a peak in August. Annual production of earthworm casts was 5,379 g/m2. Bulk density of surface soil decreased due to the earthworm's cast-forming activity. Clay fraction in surface soil increased by addition of casts. Soil KDICical properties were significantly different between the surface soil and the earthworm casts. The amounts of organic matter, N, P, K, Ca and Mg added to the soil via earthworm casts during one year were 9.3t/ha, 11.29 kg/ha, 0.78 kg/ha, 12.36 kg/ha, 140.29 kg/ha and 20.96 kg/ha, respectively. Earthworms can feed on waxy and resinous litter when it became palatable by decomposing processes.

  • 8품종 변이체 쌀 전분의 청가에 의한 아밀로오스 함량의 차이는 남풍벼>화청벼>분질미>남풍 CB243>화청 du-1>남풍 EM90>화청찰벼>shr.의 순이었다. 아밀로펙틴의 미세구조는 효소처리에 의해서 debranching시킨 전분의 glucose chain length분포 비교에 의해서 수행되었고, 품종별로 미세구조상에 차이가 있었다. 아밀로오스 함량이 낮을수록 씹힘성이 좋은 쌀빵의 제조가 가능하였으며, 아밀로펙틴 분획에 짧은 쇄장을 많이 함유하는 품종일수록 질감 및 기호도가 높은 쌀빵의 제조가 가능하였다.

Antifungal Activities of Streptomyces blastmyceticus Strain 12-6 Against Plant Pathogenic Fungi

  • Streptomyces blastmyceticus strain 12-6 was isolated from a forest soil sample of Cheonan area on the basis of strong antifungal activities against plant pathogenic fungi. Butanol extracts of the cultural filtrates were active against C. acutatum, C. coccodes, C. gloeosporioides, F. oxysporum, and T. roseum. Active fractions were prepared by thin layer chromatography using silica gel plate; 12-6-2 ($R_f$ 0.36), 12-6-3 ($R_f$ 0.44). Scanning electron microscopy showed that the active fractions caused a change in surface texture of fungal spores from smooth surface to wrinkled surface. The lethal effect on the spores of the active fractions varied from 56% to 100%. It was shown that the spores of C. acutatum were more sensitive to the antifungal fractions than the spores of F. oxysporum. Fluorescence staining using TOTO-1 indicated that the antifungal fractions could make the spores more sensitive to the fluorescence dye. Thus, it was suggested that antifungal agents prepared in this study exhibited the antifungal activity by damaging the plasma membrane of both fungal spores and hyphae. Identification of antifungal agents in the active fraction using GC-MS analysis revealed the presence of cyclo-(Leu-Pro) and 9-octadecenamide as major components that have already been known as antifungal substances.
