이산화염소 처리에 의한 적색육의 저장 중 품질변화 (Quality Change of Red Meat by Chlorine Dioxide Treatment during Storage)

  • 돈육과 우육의 품질 변화에 이산화염소 처리가 미치는 영향을 연구하였다. 돈육 삼겹살과 우육 안심은 이산화염소 용액 30, 50, 100 ppm 처리한 후 $4{\pm}1^{\circ}C$에서 저장하였다. 이산화염소 처리는 총 호기성 균수, 곰팡이 및 효모 수를 처리 농도 증가에 비례하여 감소시켰다. 저장 10일 후 총 호기성 균수는 삼겹살의 경우, 이산화염소 100 ppm 처리군이 1.48 log CFU/g에서 4.73 log CFU/g으로 증가한 반면에 대조군은 2.19 log CFU/g에서 6.22 log CFU/g으로 증가하였다. 안심의 경우, 대조군이 3.98 log CFU/g에서 5.97 log CFU/g로 증가하는 동안 100 ppm 처리군은 3.13 log CFU/g에서 4.73 log CFU/g으로 증가하였다. pH와 VBN 값은 모든 시료가 저장 중 증가하였으나 처리군 사이에 유사한 결과를 보였다. 저장 기간이 증가함에 따라 모든 처리군에서 TBARS 값이 증가하였는데, 처리군 간에는 차이를 보이지는 않았다. 관능평가는 돈육과 우육이 각각 저장 8일, 6일 이후에는 바람직하지 않음을 보여 주었다. 본 연구 결과는 이산화염소 처리가 적색육의 위생적인 안전성 확보와 품질수명 연장을 통한 저장성 증대에 도움을 줄 수 있다는 것을 시사한다.

비육돈 생산단계에 따른 도체 및 부분육 생산 특성 (Characteristics of Carcass and Meat Yields of Fattening Pigs by Production Step)

  • 본 연구는 수출규격돈 생산과 고품질 돈육 생산에 필요한 기초자료를 제시하고자 도체 및 부분육 생산 특성을 조사한 것으로 도체중량에서는 듀록종이 원종, $F_1$종 및 비육돈에 비하여 적었다(p<0.05). 거래정육중량은 요크셔종과 $F_1$종이 다른 원종과 비육돈에 비하여 높은 반면 듀록종이 가장 낮았다(p<0.05). 도체길이는 랜드레이스와 $F_1$종이 다른 원종 및 비육돈에 비하여 길게 나타났고(p<0.05), 도체폭은 $F_1$종이 다른 순종 및 비육돈 보다 넓었다. 도체후도는 $F_1$종과 비육돈이 원종에 비하여 유의적으로 두꺼운 것으로 나타났다(p<0.05). 안심과 등심의 생산량은 랜드레이스와 요크셔 및 $F_1$종이 듀록 및 비육돈에 비하여 높게 나타났고 듀록이 가장 적었다(p<0.05). 목심 생산량은 요크셔와 $F_1$종이 다른 순종 및 비육돈에 비하여 높게 생산되었고(p<0.05), 듀록과 랜드레이스종이 가장 낮았다. 삼겹살 생산량은 듀록종이 낮았으며, 뒷다리는 요크셔와 $F_1$종이 다른 순종과 비육돈에 비하여 높게 생산되었고, 앞다리는 요크셔종이 생산량이 많았다(p<0.05). 일본 수출 기준에 따른 등심 합격율은 전체적으로 대단히 낮았고, 안심 합격률은 랜드레이스종이 100%로 가장 높았다. 앞다리와 뒷다리 합격률은 요크셔종이 각각 90.91%, 87.88%로 가장 높았다. 이상의 결과를 종합하면 비육돈의 부분육 및 수출규격육 생산이 미흡하므로 이를 만족시킬 수 있는 순종의 도입과 교배체계의 확립이 필요할 것으로 사료된다.

Nondestructive Estimation of Lean Meat Yield of South Korean Pig Carcasses Using Machine Vision Technique

  • In this paper, we report the development of a nondestructive prediction model for lean meat percentage (LMP) in Korean pig carcasses and in the major cuts using a machine vision technique. A popular vision system in the meat industry, the VCS2000 was installed in a modern Korean slaughterhouse, and the images of half carcasses were captured using three cameras from 175 selected pork carcasses (86 castrated males and 89 females). The imaged carcasses were divided into calibration (n=135) and validation (n=39) sets and a multilinear regression (MLR) analysis was utilized to develop the prediction equation from the calibration set. The efficiency of the prediction equation was then evaluated by an independent validation set. We found that the prediction equation - developed to estimate LMP in whole carcasses based on six variables - was characterized by a coefficient of determination ($R^2_v$) value of 0.77 (root-mean square error [RMSEV] of 2.12%). In addition, the predicted LMP values for the major cuts: ham, belly, and shoulder exhibited $R^2_v$ values${\geq}0.8$ (0.73 for loin parts) with low RMSEV values. However, lower accuracy ($R^2_v=0.67$) was achieved for tenderloin cuts. These results indicate that the LMP in Korean pig carcasses and major cuts can be predicted successfully using the VCS2000-based prediction equation developed here. The ultimate advantages of this technique are compatibility and speed, as the VCS2000 imaging system can be installed in any slaughterhouse with minor modifications to facilitate the on-line and real-time prediction of LMP in pig carcasses.

The meat quality, muscle fiber characteristics and fatty acid profile in Jinjiang and F1 Simmental×Jinjiang yellow cattle

  • Objective: This study compared the meat quality, muscle fiber characteristics, and fatty acids between Jinjiang yellow cattle (JJ) and F1 Simmental${\times}$Jinjiang yellow cattle (SJ) which were offered the same diet. Methods: Six JJ and six SJ individuals were reared and fattened from 10 to 26 months of age. After feeding, the highrib (HR), ribeye (RB), and tenderloin (TL) samples were taken from the carcass for meat quality evaluations. Results: The results showed that growth performance of SJ was higher than that of JJ (higher live weight and average daily gain), and the hot carcass weight of SJ was higher than that of JJ (p<0.05). pH of JJ was higher than that of SJ in TL (p<0.05); the color of $a^{\ast}$ of SJ was higher than that of JJ in TL and RB (p<0.05); the cooking loss of SJ was significantly lower than that of JJ in TL and RB (p<0.05); the shear force value was significantly lower in SJ compared to JJ (p<0.05); the muscle fiber diameter was higher and the fiber density was lower in SJ compared to JJ in HR and TL (p<0.05); compared to SJ, the muscles of JJ had higher saturated fatty acid (SFA) composition; the sum of monounsaturated fatty acid and polyunsaturated fatty acid (PUFA) were lower in the muscle of JJ; the mRNA expressions of myosin heavy chain-I (MyHC-I) and MyHC-IIa were higher in SJ compared to JJ in muscle of HR and RB; the mRNA expressions of MyHC-IIx and MyHC-IIb were lower in SJ compared to JJ in HR and RB (p<0.05). Conclusion: Meat quality and fatty acid profile differed between SJ and JJ; the muscle of SJ had higher $a^{\ast}$ and SFA; SJ had lower cooking loss, shear force and PUFA compared to the muscle of JJ. In addition, the type and development characteristics of the muscle fiber had some difference between SJ and JJ; these might be factors which caused the differences in meat quality and fatty acid profile between SJ and JJ.

이태리 레스토랑의 메뉴선택 속성요인이 만족도에 미치는 영향 연구 (A Study on the Menu Selection Factors of an Italian Restaurant on Satisfaction)

  • 본 연구의 목적은 전주지역 이태리 레스토랑을 대상으로 메뉴 주문시 선택 속성에 관한 중요 내용을 알아보고, 이태리 레스토랑의 이용 형태와 각 메뉴 구성별 좋아하는 음식이 무엇인지 분석을 하는데 있다. 연구 결과의 내용을 요약하면 다음과 같다. 첫째, 이태리 레스토랑 메뉴 주문시 선택 속성에 관한 중요도에서는 요인분석에서 건강관리 요인, 서비스관리 요인, 음식관리 요인, 메뉴관리 요인으로 명명하였는데, 만족도 검증 결과 건강관리 요인에서 유의한 차이가 있는 것으로 나타났다. 둘째, 이태리 레스토랑 이용형태에서는 이태리 음식의 인지도에서 긍정적으로 나타났으며, 방문 횟수는 한 달에 1회- 2회, 주 동반인은 가족, 이용 목적은 식사를 하기 위해서, 음식에 대한 정보는 구전을 통해서 정보를 얻은 것으로 나타났다. 셋째, 이태리 메뉴 중에서 각 메뉴별 좋아하는 음식으로는 안티파스토에서 모짜렐라 치즈요리, 수프에서는 아스파라거스 크림 수프, 파스타에서는 크림소스의 스파게티 까르보나라, 피자에서는 모짜렐라 치즈와 살라미, 검정 올리브, 토마토 소스를 얹어 구운 피자, 샐러드는 모짜렐라 치즈 토마토 샐러드, 주요리 중에서 육류는 쇠고기 안심 스테이크, 생선요리는 광어요리, 후식에서는 신선한 과일과 티라미슈를 좋아하는 음식으로 나타났다. 향후 연구에서는 고객들이 이태리 레스토랑을 방문했을때 메뉴 선택시 중요하게 이루어지는 내용을 조사대상자 표본 집단별로 분석하는 다양한 연구가 진행이 되어야 하겠다.

Effect of Aging and Freezing Conditions on Meat Quality and Storage Stability of 1++ Grade Hanwoo Steer Beef: Implications for Shelf Life

  • This study was conducted to establish the shelf life of $1^{++}$ grade Hanwoo beef by evaluating the changes in meat quality and storage stability under distribution conditions similar to those during export to Hong Kong and China. Four muscles of the loin, striploin, tenderloin, and top round muscles were obtained from 10 animals of $1^{++}$ grade Hanwoo steers. The distribution conditions were 0, 7, or 14 d of aging at $2^{\circ}C$ and continuous storage at $-18^{\circ}C$ for 0, 3, 6, or 9 mon. The lightness (CIE $L^*$) values decreased as the duration of freezer storage increased (p<0.05). The water-holding capacity of 4 muscles increased as the aging time increased when they were frozen for 3 mon (p<0.05). The cooking loss values of the four muscles were significantly increased as the duration of freezer storage increased (p<0.05). The Warner-Bratzler shear force values were significantly decreased in the loin, striploin, and top round muscles as the aging time increased (p<0.05). The changes in volatile basic nitrogen (16.67-18.49 mg%) and thiobarbituric reactive substance values (0.75-0.82 mg MA/kg meat) were significantly increased when the meat was frozen for 9 mon after 14 d of aging. On the basis of these observations, the shelf life of $1^{++}$ grade Hanwoo beef during distribution should be limited to less than 9 mon of freezer storage at $-18^{\circ}C$ after 14 d of aging at $2^{\circ}C$.

Effects of Dietary Treatment, Gender, and Implantation on Calpain/Calpastatin Activity and Meat Tenderness in Skeletal Muscle of Korean Native Cattle

  • The objectives of this study were to examine calpain activity and meat tenderness by three different feeding patterns in Korean native cattle (KNC). Total forty-five animals were assigned each fifteen in long term restriction feeding (LTFR), long-term restriction feeding and hormone treatment (LTFR-tH), and short term non-restriction feeding (STFNR), respectively. Concentrate was restricted based on body weight in exp 1 and 2. However, it was fed ad libitum in exp. 3. Hormonal implantation was made with $M-PO^{TM}$ for bulls and with $F-TO^{TM}$ for heifers at 18, 20, 22 months of age in exp. 2. Animals were purchased (3-5 month old) from local cattle market and managed in two local farms and university research unit at three different years. Animals were slaughtered at 24 months for long-term trial and at 18 month for short term-trial. Loin and tender loin muscle was used for calpain activity and meat quality. Calpain proteolytic system was not changed by treatment. However, calpastatin activity was low in short-term trial. The calpain and calpastatin activity is reciprocal relationship, therefore, the high calpain activity may effect on quality grade. The shear force value was decreased as the processing of aging after postmortem. On the other hand, the cooking loss was significantly higher in short-term than in long-term trial, and then gradually decreased by the aging. Hormone implants to increase meat yield influenced to calpastatin activity more powerfully than calpain activity to meat tenderness. In meat color-a*, there was not significant difference in loin. Meat color-b* was decreased as postmortem aging time increased in tenderloin. Western blots were done to learn whether these proteins are degraded during postmortem storage and whether this degradation temporally parallels the decrease of shear force value. Vinculin was detected at 0 day and 1 day and degraded after 3 day. In conclusion, Calpain activity was affected slightly on meat tenderness. But meat tenderness was influenced by calpastatin, more effectively.

필리핀 돼지고기 시장 분석 및 수출 전망 (A Study on the Pork Market Analysis of the Philippines and the Export Prospect of Korea Pork)

  • 본 연구에서는 필리핀의 돼지고기 시장을 분석하고 향후 우리나라 돼지고기의 대필리핀 수출 전망을 가늠해 보고자 필리핀의 돼지고기 생산 및 수급현황, 돼지고기 가격, 돼지고기 수입현황 등에 관한 현지 조사 자료를 분석하였으며, 이를 토대로 향후 수출 전망을 하였는 바, 그 내용은 다음과 같다. 1. 필리핀에서 소비되는 육류 중에서 돼지고기의 소비가 가장 많으나, 기후여건이 돼지 사육에 불리하고 생산기술이 발달되지 못하여 매년 소비량 중에서 일부분을 수입에 의존하고 있다. 대필리핀 주요 수출국은 독일, 캐나다, 벨기에, 덴마크, 네덜란드, 프랑스 등이다. 2. 2004년 1월부터 10월까지 우리나라의 대필리핀 수출물량은 2,885톤으로 필리핀이 돼지고기를 수입하는 주요 13개국 중 8위이며, 전체 수입량의 5.1%를 차지하고 있다. 3. 필리핀에서 돼지고기 소비자 판매 가격은 박피가 탕박에 비해서 20% 높았으며, 국내 가격이 필리핀에 비해서 삼겹살은 281%, 등심은 118%, 후지는 106%, 안심은 117%가 높았다. 4. 향후 우리나라가 필리핀에 수출할 수 있는 돼지고기부위 및 물량은 전적으로 국내에서 형성되는 돼지고기의 부위별 가격에 달려 있으나, 필리핀의 돼지고기 소비자 가격 등을 고려할 때 후지 등 일부 저급 부위와 부산물이 해당될 것이며, 물량은 많지 않을 것으로 예측된다. 그러나 소비 부진 등에 따른 양돈업 불황에 대비하기 위하여 수출 시장 다변화 차원에서 지속적인 수출이 필요하다고 생각된다.

The Impact of Feeding Diets of High or Low Energy Concentration on Carcass Measurements and the Weight of Primal and Subprimal Lean Cuts

  • Pigs from four sire lines were allocated to a series of low energy (LE, 3.15 to 3.21 Mcal ME/kg) corn-soybean meal-based diets with 16% wheat midds or high energy diets (HE, 3.41 to 3.45 Mcal ME/kg) with 4.5 to 4.95% choice white grease. All diets contained 6% DDGS. The HE and LE diets of each of the four phases were formulated to have equal lysine:Mcal ME ratios. Barrows (N = 2,178) and gilts (N = 2,274) were fed either high energy (HE) or low energy (LE) diets from 27 kg BW to target BWs of 118, 127, 131.5 and 140.6 kg. Carcass primal and subprimal cut weights were collected. The cut weights and carcass measurements were fitted to allometric functions (Y = A $CW^B$) of carcass weight. The significance of diet, sex or sire line with A and B was evaluated by linearizing the equations by log to log transformation. The effect of diet on A and B did not interact with sex or sire line. Thus, the final model was cut weight = (1+$b_D$(Diet)) A($CW^B$) where Diet = -0.5 for the LE and 0.5 for HE diets and A and B are sire line-sex specific parameters. Diet had no affect on loin, Boston butt, picnic, baby back rib, or sparerib weights (p>0.10, $b_D$ = -0.003, -0.0029, 0.0002, 0.0047, -0.0025, respectively). Diet affected ham weight (bD = -0.0046, p = 0.01), belly weight (bD = 0.0188, p = 0.001) three-muscle ham weight ($b_D$ = -0.014, p = 0.001), boneless loin weight (bD = -0.010, p = 0.001), tenderloin weight ($b_D$ = -0.023, p = 0.001), sirloin weight ($b_D$ = -0.009, p = 0.034), and fat-free lean mass ($b_D$ = -0.0145, p = 0.001). Overall, feeding the LE diets had little impact on primal cut weight except to decrease belly weight. Feeding LE diets increased the weight of lean trimmed cuts by 1 to 2 percent at the same carcass weight.

Effects of L-carnitine, Selenium-enriched Yeast, Jujube Fruit and Hwangto (Red Clay) Supplementation on Performance and Carcass Measurements of Finishing Pigs

  • Fifty castrated crossbred ($Landrace{\times}Yorkshire$) pigs, weighing an average of $60.6{\pm}3.1kg$ were allotted to one of five treatments in a randomized block design to examine the effects of dietary inclusion of 0.1% L-carnitine (50 ppm carnitine), 0.1% selenium-enriched yeast (0.3 ppm selenium), 0.1% Jujube fruit or 0.1% Hwangto (Red clay) on pig performance and carcass quality. All diets were based on corn, wheat, soybean meal and wheat bran and were formulated to supply 13.8 MJ DE/kg. Dietary supplementation did not influence daily gain (p = 0.57), feed intake (p = 0.52), or feed conversion (p = 0.32). Digestibility of dry matter (p = 0.60), organic matter (p = 0.74), crude protein (p = 0.76), crude fibre (p = 0.70) and energy (p = 0.75) were also unaffected by inclusion of any of the additives. Tissue samples taken from the longissimus muscle showed that the levels of carnitine (p = 0.0001) and selenium (p = 0.0001) were significantly higher with dietary inclusion of carnitine or selenium-enriched yeast. Dietary treatment did not affect dressing percentage (p = 0.33), carcass lean yield (p = 0.99) or first, $10^{th}$ and last rib midline backfat depth (p = 0.45, 0.82 and 0.47, respectively). Dietary treatment also did not affect the percentages of tenderloin (p = 0.37), bacon (p = 0.36), fat and bone (p = 0.56), picnic shoulder (p = 0.25), skirt (p = 0.80), fresh ham (p = 0.31) or ribs (p = 0.79). However, pigs fed the diet containing Jujube fruit had a higher percentage of Boston butt than pigs fed the carnitine or selenium supplemented diets (p = 0.01). Pigs fed added Hwangto had a higher (p = 0.04) percentage of loin compared with pigs fed supplementary selenium or Jujube fruit. Loin muscle from pigs fed carnitine had a significantly lower Hunter colour value for L (whiteness, p = 0.004) and a higher value for $a^*$ (redness; p = 0.069). The overall results indicate that supplementation with L-carnitine and selenium-enriched yeast can produce pork containing higher levels of carnitine and selenium, which could provide health benefits for consumers of pork without detrimental effects on pig performance.
